IT’S SUMMER SQUASH SEASONFrom: Bruce Robertson, Community Educator, CornellCooperative Ext. of Rensselaer Co.Though zucchini is available year ‘round in grocery stores,there is simply nothing like summertime zucchini: firm; smooth;and just-picked. If cut into small pieces, zucchini can be eatenraw in salads. Of course there is a near-endless list of recipesfor cooked zucchini: steamed; sautéed; even baked (as in,“zucchini chocolate cake.”) Here’s one that combines thissummer vegetable with another summer icon, the grill. Likemany of the squash family, zucchini likely originated in CentralAmerica. The green squash that we call “zucchini” made itsway back to Italy where it was cultivated to the squash weknow. “Zucca” is Italian for “pumpkin/squash.” Zucchini is thediminutive, plural form: “little squashes.” Zucchini is high infiber and is also a good source of potassium ~ good for theheart.

GRILLED ZUCCHINI WITH TOMATO AND OLIVE SALAD

Makes 4 servingsINGREDIENTS: •1 lbs. zucchini 2 TBS olive oil

1 ½ tsp minced, fresh thyme 1/3 lbs. tomatoes, diced small

1 large clove garlic, mined 2 dozen black olives, pitted

1 ½ tsp red wine vinegar 8 to 10 fresh basil leaves

salt/pepper to taste

DIRECTIONS:

Cut zucchini length-wise in slices ¼” thick. Place on large

platter, drizzle with 1 TBS olive oil, and sprinkle with thyme.Toss to coat evenly.In a bowl, combine tomatoes, garlic, olives, wine vinegar,

and remaining olive oil.

Grill zucchini strips on both sides until brown (about 3 minutesper side.)Transfer to large platter, arranged in a single layer.Spoon tomato mixture evenly over the zucchini.Tear the basil leaves and scatter over the top of the tomato

The Uncle Sam Parade Committee is accepting applicationsfrom young ladies from Rensselaer County to take part in thisyear’s Miss Uncle Sam Pageant.There will be a winner and two runners up in each age divisionof the pageant, which will be held August 15, 2015. Age isdetermined the day of the pageant.Age division include Miss Uncle Sam 16-18, Teen Miss 13-15,Preteen Miss 10-12, Young Miss 7-9, Little Miss 4-6, and TinyMiss 2-3. Categories include competitions based on poise,personality and appearance. An optional Miss Photogeniccategory is judged based on photos submitted by thecontestants.All participants receive a trophy. FIREFLY5K FESTIVAL and TWILIGHT

RUNNING EVENTGoToGuide Events will be conducting our 3rd Annual Firefly5Festival and Twilight Run on August 1, 2015. This event will raisemoney for the Food Pantries for the Capital District. The FoodPantries for the Capital District is a coalition of 52 food pantries inAlbany, Rensselaer, and Saratoga Counties. They provide funding,delivery, coordination of services and food drives, and educationand training to their member food pantries. Membership and allservices are free to member food pantries. The event is takingplace at Westfall Village in Averill Park. The race starts at 7:00 pmfor walkers and 7:30 pm for runners and is being timed by FinishRight Timing. Westfall Village is located approximately 1 mile east ofthe 43/150 intersection in West Sand Lake. Registrations are nowbeing accepted and will be accepted until 7:00 pm. Pre day of raceparticipants will receive neon commemorative t-shirts. The festivalstarts at 4pm with bounce houses, face painting, dancers, andmultiple food and drink vendors. Two local bands are scheduled toperform – up and coming Rearview at 4:30 pm and local favoriteSchmooze at 7:00 pm. A zumba run warm up will begin at6:30pm.Many runners create teams and try to out do each otherwith costumes. Runners generally cover themselves in neon clothing,LED lights, crazy costumes, glow paint and glow sticks. After eachparticipant crosses the finish line, awards are given to the top 3finishers (male and female) and a costume contest is held. GREAT HUDSON ESTUARY FISH COUNT

Seine Net Fishing event to celebrate the 4th Annual GreatHudson Estuary Fish Count: Saturday, August 15, 11AM to1PM at the main boat launch on the Hudson River at SchodackIsland State Park. Participants will have the opportunity toassist with netting fish species with a 40-foot seine net.Volunteers are also needed to use their social media skills toshare catch results with other groups along the estuary bytexting and/or posting to Twitter or Facebook. CONJUNCTION WITH OPEN MIC NIGHTSchodack Island State Park comes alive with music and poetryon Fridays evenings with open mic nights. Kugler’s Red Barn Furniture and Gift Store

is located in a historic barn in Albany

County. The barn originally housed dairy

cows and horses in the 1930’s when the

proprietor’s parents purchased the property

in the late 1930’s. Mr. Kugler (Al’s father)

operated a successful antiques business

in the barn for many years.

In 1977, Al and Karen Kugler opened Kugler’s Red Barn selling

unique country, traditional, Shaker and primitive furniture and gifts. It

has since continued to grow and change with the years. The annex

was added in 1988 that increased the store’s size. One thing that

hasn’t changed is the store’s policy to bring unique, quality furniture

and gifts to its customers.

To this day the store is family run. Scott Henderson, Karen’s son,

manages the business. Al and Karen stay actively involved in the

day to day business as well. The family and employees are committed

to a high level of customer service and personal attention.

our furniture is still made in the USA by small family owned factories
