As legislative representatives of District 3, including the townsof Brunswick, Pittstown and Schaghticoke, we are happy toprovide our constituents with a report on actions taken at theJune 9, 2015 legislative meeting. The Legislature has done considerable work to improve andupgrade county sewer facilities. We are pleased our efforts toupgrade and modernize the Sewer District have been recognizedon a regional level in recent weeks. The Sewer District wasselected by the state Environmental Facilities Corporation toreceive $8 million in low-interest loans to help fund themodernization efforts. The state EFC loan will help reduce costs to rate-payers andalso recognizes the solid financial position the county has earned, following a series of positive independent audits and reviews.Earlier this spring, the county received the latest in a series ofpositive independent financial audits, crediting the county withstrong financial management, growth of the rainy-day fund, and success navigating challenges presented by a sluggisheconomy and unfunded mandates. The county has managedto stay under the state tax cap each of the past four years, and also recently saw an upgrade in the county’s bond rating.Members of the Legislature also joined with representativesfrom Albany County, state officials, other communities and theCapital District Regional Planning Commission to recognize majorimprovements and advances made to protect water quality inthe Hudson River. The event was held June 17 at the countySewer District facility, in recognition of the considerable workto modernize and update the facility. The Legislature approved purchase of equipment for upgradeof emergency communications system equipment, replacementof three pick-up trucks for the county Highway Department, and purchase of materials for use in maintenance and repair ofcounty roads. We were also pleased to be joined by Isabella Wiley, who wasrecently crowned the 2015-2016 County Dairy Princess. AN “aMAIZEing” TIME OF YEARFrom: Bruce Robertson,Community Educator,Cornell Cooperative Extension,Rensselaer CountyThis is truly an “aMAIZEing” time of year. Corn-on-the-cob, known for thousands of years inmany civilizations, is available locally at farmers’ markets and road-side stands. We call it “corn,”but the more universal name, “maize,” derives from the Spanish word for the plant “maiz.”Archaeologists have found evidence that corn, or “maize” was first cultivated in southernMexico 9,000 years ago, making it one of the oldest of cultivated crops. A U.S. Census ofAgriculture report says corn is harvested in all 50 states.Sweet corn is one of the best sources of dietary fiber: 100 grams of kernels have 2 grams offiber. That’s 5% of our daily fiber requirement. Further, a study by Cornell University scientistsrevealed that cooking the corn (rather than leaving it raw) actually increases its antioxidantpowers. Corn is great “on-the-cob,” as we all know. Here is a recipe for corn “off-the-cob.” [Didyou know: there is one strand of silk for each kernel of corn.]

ROASTED CORN SALSA, Makes 4 cupsINGREDIENTS:4 large ears of corn ½ C minced red onion 1 ½ C chopped tomato1 or 2 jalapeno peppers minced (to taste) ¼ C minced cilantro1 TBS olive oil 1 TBS fresh lime juice 1 tsp ground cuminSalt/Pepper to tasteDIRECTIONS:Pull down corn husks and remove silk. Wash. Pull husks back up to cover the corn ear. Tie upwith string or a piece of the outer husk. Place on baking sheet, partially covered with aluminumfoil. Bake for 50 minutes at 375 degree F. Cool. Cut kernels from ear to yield 2 ½ C.Combine with onion, tomato, peppers (seeds removed). Add olive oil, lime juice and cumin. Salt& pepper to taste. Cover and chill for 30 minutesNutrition Facts: 40 calories; .5 grams fat; 1 gram fiberSource: Fletcher, Janet. Fresh From The Farmers’ Market.
