What I dislike most about tipping is basing the tip on a percentage of the check. It doesn’t require more effort to serve a $50 dinner than a $35 dinner. Why should we tip this way?

This practice isn’t about service. (Tips are commonly pooled.) It’s like a voluntary surcharge that helps pay the staff. Say a restaurant decides to eliminate tipping, raise wages and increase the price of menu items by 15 percent to make up the cost. The customer pays the same: A $50 dinner plus the average tip totals $57.50. The same dinner with the price of items increased by 15 percent—no tipping—also costs $57.50.

Serves 15 | Prep time: 10 min. | Total time: 30 min., plus marinating time

Marinated Oliveand Cheese Skewers

DIRECTIONS

1. Add olive oil, orange juice and zest, rosemary,

garlic and hot pepper fl akes to small saucepan

over medium-high heat. Cook, stirring occasionally,

until mixture is warm and garlic is fragrant, about

2 minutes.

2. Place olives and pimientos in medium, non-reactive

bowl. Pour warm olive oil mixture over olives

and pimientos; set aside until cool. Stir in cheese;

cover with plastic wrap. Refrigerate at least 4

hours, or up to 3 days.

3. Alternately thread cheese, olives and pimientos

among thirty 6” skewers. Transfer to serving

plate; drizzle with marinade.

Warm Spiced Caulifl owerand Chickpea Salad With

Pomegranate Seeds

Harissa is a fiery North African condiment made with chiles.

Find it in specialty stores or online.

Whisk 3 Tbsp olive oil, 2 tsp cumin seeds and ½ tsp ground cinnamonin a large bowl. Add 1 small headcaulifl ower, cut into fl orets; toss to coat. Spread caulifl ower in a single layer in a small roasting pan. Roast 15 minutes at 425°F. Toss 1 (15 oz) can drained, rinsed chickpeas with 1–2 Tbsp harissa. Stir in 4 quartered small tomatoes; add to caulifl ower. Roast 15 minutes or until caulifl ower is tender. Sprinkle with 1 tsp kosher salt and 2 Tbsp pomegranate seeds. Divide 2½ cups fresh parsley between each of 2 to 4 plates. Top with caulifl ower mixture; sprinkle with 2 Tbsp pome-granate seeds. Serves 2–4.
