Gary, when did you decide to set up home in Dubai?We’ve been here for just over seven years now. We originally came on holiday and before that we’d never really heard of it. We’d been to Mexico and Spain but just loved the way of life here so much. The freehold on properties wasn’t here back then, so I came over to invest with another couple of people. I didn’t arrive with a lot of money, just came at the right time, buying and getting rid of properties quickly before the crash – money was quick and fast then and it gave us a great way of life. Claire’s from my hometown in Liverpool and came with me; we were living in a friend’s maid’s room at first, then, once we finally had a deposit for a property in Saheel, I put it down and didn’t look back.

How does it compare to life in the UK? One of the main plus points has to be the way of life for your kids, which is great, the weather is also marvellous and it’s tax free. You hear people moaning about the city but I personally think it’s the best place in the world; I wouldn’t want to live anywhere else – no chance!

What made you buy a family home in the Arabian Ranches? When we were living at my friend’s you couldn’t actually buy in the Ranches, only rent, so I invested money in two and three-bed properties in the Springs and made a profit on them but I wanted to better myself. Come late 2004 expats could buy here and so I came to look and really felt the size and look of the houses had the

‘wow factor’. Back then people did ask ‘why are you moving out there?’, as there wasn’t much around but I thought this villa and the area had a really good feel and now so many people want to live here: for security and community spirit I think it’s the best place to live – and the construction’s all finished so there’s no building sites cropping up. I had my chance to live on The Palm but this was it for me.

Is there much for you and your family to do in the area? The community spirit means there’s plenty of chances to socialise – we know all our neighbours and the kids can play; there’s no crime whatsoever and security keep it safe. When we first arrived the Arabian Ranches Golf Club wasn’t particularly

child-friendly but now the Polo Club has a manager with a lovely attitude, there’s horse-riding and everyone from the Ranches goes there. There is only one school here (JESS) which is a bit baffling as there’s so many residents with kids but we send ours to a school near the Springs, which isn’t too far away. Le Marche is the local supermarket but it’s no good if you’re after things like bacon on a Friday morning. That said, Motor City’s now open and it’s like a new lease of life. It’s only two minutes over the road and has a Spinneys, London Fish & Chips shop, pizza place, spa and a mini gym.

Back to the house, what changes did you make when you moved in? We went for a ‘super luxury upgrade’, so we didn’t have to make many changes to the interior. Arabtec came in and took care of the wooden finishing throughout, the ceilings, wooden doors, a marble finish on the floors – we had Kashmiri gold flown in from India – and did the kitchen, too. It was all done before we moved in, so we didn’t have to do anything more, whereas we know friends who are permanently having

to do work on their places, which are just like a white box when they arrive.

How about your interiors, where did you shop to furnish your home? We did a lot of our shopping at THE One. We got our Versace table and collected a good selection of Versace plates from The Dubai Mall. We really hit the summer sales too, as there’s great stuff to be had then. In terms of other bits, it’s a mix: the glass table and shoe-shaped chairs we picked up at a handcrafted centre in Sharjah; the lights were specially made by THE One; there’s even a karaoke deer from a shop in Deira no one knew about. There’s Dubai Outlet Mall and Dragon Mart now too, where you can get a wide range of knick knacks so it’s a lot cheaper to furnish than it was.

But the garden seems to be the place where major changes have happened! Talk us through them. Basically we were always taking the kids to Wild Wadi and as they’re in the garden 24/7 I wanted something to keep them entertained. It’s a 21,000 square-feet space so I couldn’t put a little pool in it. We went

for a big swimming pool with a lazy river round it then a lounge area-cum-nightclub, sunbathing area, and the stone round table. I designed it all and it took various companies over the years to complete it. We used a Spanish company for all of the rock works and Hennessy and Pools Are Us were two of the best companies for the pool. Now it’s all up and running it means the guys come round and watch the football, the women are in the pool and the kids are in the play area – so there’s no arguments! That’s what I always wanted. All our friends come round and it means a lot to me when they walk in and say ‘wow’.

You’re obviously a huge Liverpool fan, tell us how you incorporated that into your garden design. The main thing that you’ll see is the mural of the four Liverpool FC managers behind the round stone table which means a lot to me – everyone has a photo with that when they come round, even the Manchester

United fans! There’s also an arch above the lounge area that says ‘You’ll Never Walk Alone’. I head up the Dubai Red Supporters Club here, so people come here to watch the football, Claire does a bit on the barbie – it’s a great way to spend a weekend!

What would you say is the best thing about living here? It’s definitely the outside area – that’s what I always dreamed of, having, an entertaining household. The garden really serves a purpose in that way, it entertains people on three different levels, from the kids to the wife and myself and friends as well. In the future – firstly I’d love for Liverpool to win the league, but that would be a miracle at the moment! – I have no intention of leaving, it’s my dream home and, to be honest, I want to stay in Dubai til the day I die. I see people come in and out of the city all the time and, while it has its ups and downs, I remain so pro-Dubai, I’m never moving out!

Arabian Ranches An all-you-need-to-know guide to life in this idyllic, villa-strewn development

Love Thy Neighbourhood

Renting and buying

Set on the Emirates Road, the Arabian Ranches is a picture-perfect community that paves the way for family living. Once there you’ll find street upon street of generous-sized properties – ten villa communities to be exact – each of which presents a more individual facade to the next. If you have a soft spot for Mediterranean-style architecture you’ll be in your element here. What’s more, all building has been completed which means would-be residents can not only bid farewell to unsightly building works but stroll along pedestrianised pavements and enjoy landscaped gardens. Plus, whether it’s a large, seven-bedroom villa complete with private pool you’re after, or a more modest home, you can choose between renting or buying.

Shopping and a bite

At the heart of the Arabian Ranches, residents will find the Village Community Centre which serves as a

convinient spot to take care of all those daily chores, whether it’s leaving your laundry (try Eezi Clean) or picking up dog food (head to Pets Delight). The centrally-placed outlet also gives way to an array of coffee and lunch spots, whether it’s a Costa Coffee you crave or a bigger bite. For the latter, try locals’ favourite MBCO (04 430 9774) and take your pick between salads, sandwiches and more. Alternatively, treat your kids and head to Pizza Hut (04 361 9023) for a fast food fix. If you don’t mind venturing a little further, there’s more shops at Motor City where a large Spinneys (www.spinneys-dubai.com) will cater to your grocery needs and take-away favourite London Fish & Chips (04 434 0540) will satisfy your appetite.

Leisure time

The main place to while away your hours of leisure has to be the Dubai Polo & Equestrian Club (04 361 8111). Not only does it offer an expanse of horse-riding facilities for equine-enthusiasts (from

desert hacks to dressage) but a whole host of fixtures where you can see the professional polo players in full swing – keep an eye out for Friday brunches when you can feast with family or friends as you watch. If you don’t fancy getting fit on horseback, leave it to those who do and head to the club’s gym or swimming pool or test your flexibility at Exhale’s (04 4474220) Pilates and yoga classes. Golfers of the house, meanwhile, can take to the greens at the Arabian Ranches Golf Club (04 366 3000) and, when you’re all played-out, take a pew on the terrace at Ranches Restaurant and Bar (04 360 7935) and eat with views of the 9th and 18th holes. If you have relaxation in mind, though, local women swear by Shima Beauty Lounge (04 361 9990) and Tips & Toes (04 368 9944).

Schooling

If you have toddlers on the move at home, keep them occupied by taking them to Little Ponies at the Dubai Polo & Equestrian Club – the newest offering from better-known Jebel Ali Village Nursery (04 368 9882). Take slightly older pre-schoolers to Jebel Ali and they too can play in an English-speaking environment, supervised by qualified staff. If your kids are at school age, however, take your pick from ‘JESS’ aka the Jumeirah English Speaking School (04 394 5515) or GEMS World Academy (04 373 6373), the latter of which offer students an international education from the age of three to 18-years-old.

1950s: Mid-century ModernismThe fifties was a time when women were women and men were men, with faces like Marilyn Monroe and Cary Grant taking centrestage. With it, two contrasting looks took charge at home: mid-century modernism – a pared-down designer look fit for a scene from US hit show Mad Men, where New York ad men sit

amongst a display of simple wooden furniture, newspapers in hand. The other was ‘American diner’, seen at its best in the kitchen (the housewife’s domain), where bubblegum colours and kitsch details reigned supreme. With the post-war boom there was money to spend – and there’s no place like home.

Get the Look • Smegfridges in bubblegum pink or baby blue are still for sale and have the look down to a tee. • Vinylflooring in a black and white check print will make your kitchen floor look like a real US diner. • Chromestools at a kitchen island will give a ‘milkshake bar’ effect. 1960s: Swinging Sixties The sixties turned its back on simplicity with the birth of ‘pop art’ and ‘op art’ and emergence of colouful artists like Andy Warhol. Op art used colour in patterns that appeared to move (think psychedelic prints) and both styles found their way onto wallpaper and furniture alike. Fabrics were just as experimental with plastic and PVC coming into play. For a sixties revival, then, there are two major choices: a hippy look synonymous with the ‘free love’ movement or plastic space age, inspired by cult film ‘Barbarella’ – and perhaps the first landing on the moon in 1969. Either way, this is the era to inject a little fantasy into your home.

Get the look • Shagpilerugs are a must. White was a

popular shade – the shaggier, the better. • Vibrantcolours look super-sixties if

they clash: try reds and purples or hot pink and orange.

• Plasticfurniture or blow-up pieces will add a space age look. Quirky shapes work best.

1970s: Going GroovyWhile traces of Sixties bohemian were evident in the early seventies, an injection of all-out glamour came as a result of extravagant glam rock stars and arrival of the ‘disco’ era. With it came a flurry of glitter and luxurious textures – think crushed velvet and fake fur. At home furnishings followed: warm tones like oranges, reds and browns topped the popularity stakes while disco divas added an accent of pink, lime or yellow. Beanbag chairs and lava lamps added to the groovy vibes, while shag pile carpets adorned floors. Plus, sliding glass doors became a state-of-the-art feature.

Get the look• Bedspreads came in key colours– go for yellows,

browns, greens or oranges. • Candledisplays add a chilled ‘70s vibe. Buy over-

sized, thick-set candles. • FauxFur will bring a touch of glamour to your

After the headache-inducing décor of the eighties, the nineties took a back-to-basics stance where the only shade worth having on your walls was beige or cream. The biggest name in the fashion world was Calvin Klein, whose designs were all about clean lines and minimalist style. Unlike the ‘80s, less became more. Right on cue, floorboards arrived to replace carpets; walls and doors were white; and windows were freed from net-curtains. When it came to texture, soft and fluffy features were replaced with stainless steel and wrought iron. With a new sense of space and calm, Feng Shui became popular; a Chinese technique that sought to achieve a sense of well-being based on the flow of energy throughout the home and positioning of (minimal) furniture.

camels, beige or any shade of cream. • LeathersofasWhile pop stars like Bon

Jovi and Kylie Minogue donned leather trousers, minimalists brought white or black leather sofas into their homes for a touch of cool comfort.

• Scandanavian and European looks prevailed and IKEA reigned as a household name, so visit its Festival Centre branch for signature pieces.

1990s : Muted Minimalism

2000s: Mix and Match While society remains style-conscious, the noughties recession prompted a reassessment of spending big. In the first decade, homeowners resisted decking their new pads in the latest products and instead focused on creating comfy abodes with malleable décor. ‘Shabby chic’ and vintage trends have become firm favourites, with tatty items finding a new lease of life through reupholstering and revamping. The ‘signature wall’ has made a comeback, too, where one key wall is decorated in a luxe, bold wallpaper and can be replaced at little expense. With more time spent at home, interiors have also seen a shift to cosier surrounds. The ‘home is where the heart is’ mentality has returned; and it looks better than ever.

Get the look• Comfortiskey; use your home as a stylish yet cosy retreat from

daily stresses and strains. • Oldandnew items can be combined with great effect; so paint

that old dressing table, reupholster that favourite chair, and create your own fab look.

• Open-planliving has never been more important now that we all entertain at home. If you don’t have an open kitchen, find out about knocking down those adjoining walls.

1980s: Florals and Frills The 1980s was an era of excess and everything was supersized: big hair, big shoulder pads, chunky jewellery, over-the-top make-up and hit shows such as Dallas, with even bigger stars like Joan Collins emerging. With such overwhelming images all around, the same approach was made at home. Patterns were floral (the bigger the better, naturally) and the colour palette was either bold hues (golds, reds and blacks, a la Dallas) or pastel tones of peach, pistachio and salmon pink. Mirrors were also big; carried through from the disco era of the 1970s, and reflected the ‘look at me’ attitude of the time.

you please, from walls and curtains to sofas, chairs and bedcovers.

• Carpetsare the floor covering of choice; go for short and plush cuts, with colours like blue and pink.

Practical solutions for your household dilemmas

1 MaxiMise space Wet rooms can work on bathrooms of all sizes. So, make a large space spectacular with a spa-like feel, convert an awkward space with standout tiling throughout, or maxmise a modest one by making it appear more spacious without bulky fixtures or awkward cubicles.

2 No bathiNg Wet rooms should dedicate themselves to an amazing shower and sink so, if you do want a bath in the same room (and have the space), have wall-to-ceiling glass erected around your wet room and place a freestanding tub outside. 3 terrific tiles Think about the feel you want your wet room to evoke; light cream, gold or taupe tiles will give a sense of space and light in an otherwise enclosed space. Or, for added ‘wow’ factor, experiment with lighting or have a pattern incorporated into the tiling.

4 iNside storage Have a tiled raised area or bench-style seat along the length or width of the wet room where you can place essential items, like shampoo and shower gel, without having to step outside to find them.

Six ways to wow rooms

How do I…turn my bathroom into a wet room?

Waterproof The whole room has to be watertight so it’s critical that the flooring and tiling is carried out correctly to ensure the floor is raised and sloped towards the drain.

Wall-to-wall As the wet areas are not enclosed, the best solution to protect the walls is to go for floor-to- ceiling tiles throughout.

Divide and conquer A true wet room is completely open plan but you can ask for a glass screen to be added (especially if your bathroom is small), which will provide the same effect but prevent your external toilet and towels being splashed.

On the wall For extra space, go for wall-hung basins and toilets. They’re not only modern and stylish but create a sense of space – and their position makes it a lot easier to mop the floor!

Timescale You should allow the whole wet room to take around four to seven days to complete. Time will vary depending on how many new fixtures you plan to change and how much tiling is being undertaken.

Budget basics Costs vary dramatically depending on the size of the bathroom and the choice of finish, so shop around and find the look you want, at a budget you can afford.

• 400g refined wheat flour

• 4 egg yolks

• 2g salt

• 10g squid ink

• 1 garlic clove, chopped

• 5g onion, chopped

• 10g extra virgin oil

• 3gs salt

• 2g crushed black pepper

• 20g cherry tomatoes

• 100g tomatoes

• 100ml fish stock

• 2g rosemary sprig

• 100g zucchini

• 400g lobster tails

1. For the pasta, knead the refined wheat

flour, egg yolks, two grams of salt and squid ink together in a bowl for 10minutes until it reaches a tight consistency, then set aside for 10minutes. 2. Roll the dough out into sheets, 3mm thick, and cut it into thin, long strands at about 2mm in thickness. 3. Cook the pasta in boiling water, with salt, for four minutes or until al dente. Strain and set aside. 4. For the sauce, add the virgin oil to a hot pan, followed by the chopped garlic, onion, cherry tomatoes and whole tomatoes. 5. Simmer until the tomatoes are mashed together in a wholesome puree form. 6. Add to the tomatoe mix the fish stock, lobster and zucchini. 7. Finally, add the pasta and toss well until the sauce evenly covers the pasta. 8. Serve the dish hot with an optional garnish of a scented rosemary sprig and a lobster head.

Strain and set aside. 4. Pour the oil into a hot plan, followed by the chopped garlic, onion and cherry tomatoes. Simmer together until the tomatoes become mashed in a puree form. 5. Add all of the shrimps to the sauce and cook through. 6. Blend in the fish stock and then add the pasta, tossing it well until the sauce is evenly distributed. 7. Serve hot.

farfalloni with pesto sauce Serves 4

• 400g refined wheat flour

• 4 egg yolks

• 2g salt

• 20g tomato puree

• 1 garlic clove, chopped

• 5g onions, chopped

• 60g extra virgin olive oil

• 3g salt

• 2g crushed black pepper

• 100g parmesan cheese, grated

• 100g fresh basil leaves

• 50g pine nuts

• 50g pecorino cheese

1. For the pasta, knead the refined wheat flour, egg yolks, salt and tomato puree in a bowl. 2. Knead for 10 minutes until the dough reaches a tight consistency and then set aside for 10minutes. 3. Roll the dough out into sheets, 3mm thick, and make into rectangles, then fold it again to form a bow. 4. Cook the pasta in plenty of boiling water for four minutes or until al dente. Strain and set aside. 5. Blend the rest of the ingredients (excluding the parmesan and basil) into a coarse pesto paste. 6. Put a spoon of the paste on the bottom of a plate and place the pasta on top. 7. Garnish with grated parmesan cheese, basil and a trickle of olive oil.

• 400g tomatoes

• 100ml vegetable stock

• 100g parmesan cheese, grated

• 2g fresh basil leaves

1. For the pasta, knead the refined wheat flour, egg yolks, salt and spinach in a bowl for 10minutes and then set aside for a further 10minutes. 2. Roll the dough out into sheets, 3mm thick and cut into diamond shapes using a sharp knife. 3. Cook the pasta in plenty of boiling water, alongwith the spinach, for four minutes or until it is al dente. Strain and set aside. 4. Add the oil to a hot pan and then add in the chopped garlic, onion and tomatoes and simmer until it forms a puree. Finally add in the vegetable stock. 5. Add the pasta to the aforementioned sauce and toss together well. 6. Garnish with basil and parmesan cheese and serve hot.

Roll the dough out into sheets, 3mm thick and cut into 2cm broad strips. 3. Cook the pasta in plenty of boiling water for four minutes or until al dente. Strain and set aside. 4. Put all of the other ingredients into a bowl and mix together until they achieve a creamy texture. 5. Add in the cooked pasta and toss until uniformly mixed. Serve hot.
