What prompted you to set up home here in The Meadows? I’ve been in Dubai since 2004 and, back then, this was pretty much the only area to live if you wanted a villa. Before that my wife and I lived opposite the Emirate Towers on Sheikh Zayed Road, but it was very noisy. In terms of what brought me to the UAE, before my family and I came here we lived in Afghanistan – we always lived in war zones as I used to be with the United Nations, on the civilian side. After working in those zones for many years I got old and tired of sleeping in bad conditions and on bad bed sheets and eating bad food and managed to stumble in to a Scandinavian retail brand, I then later set up one of my own (Kollektion & Co) here in Dubai, selling regular and luxury Scandinavian furniture brands.
Did you decide to rent or buy? We bought it. This was in 2004 so the prices were really too good to be true. It was amazing. I wish I had seen the property boom coming – we bought a few houses at the time, but sold not long after because we were so focused on our own business and doing well with that, so we didn’t think ahead. But if we’d have been sitting on those for a while – wow.
Do you think Dubai is a good place to invest? Absolutely, my wife and I have two companies that we own and run here. We’ve come across quite a few strange laws, but there are also a lot of advantages. For example, I don’t have to pay 75 per cent tax, like I would do in Sweden, so it makes much more sense.
How do you find the neighbourhood as a whole? We lived here from the day the street opened and have always found it to be very private. There is another British couple I

know of, who are fairly new, and an Iranian family whose daughters we know as they play with our youngest son. I find it a bit sad that we don’t really know our neighbours, but if you look at the way the area is built; we all drive in to drives, we have gates, the walls in the garden are high and everything is facing that way, so it’s easy to miss people.
What is there to do in the area? We have two golf courses in the Emirates Hills, four community centres with four Choithrams and two Spinneys. We also have a Wagamama’s, Indian restaurants, Starbucks, Pizza Express and the Lakes Club for food and drink. In terms of sport, there’s tennis courts, football pitches and gyms – all for the residents. Each town centre also has a health care centre, there’s a clinic up the road and nail bars and barbers too – everything you need is here, it’s phenomenal. To get to
The Dubai Mall it takes 15 minutes, and with a new airport opening in Jebel Ali, it will take only 20 minutes to reach an airport.
Do you feel there’s anything missing? No, if you want the beach it’s only 10 minutes away, if you want to dine out you have the Marina nearby or one of the best restaurants in Dubai – La Classique at the Emirates Golf Course – which has phenomenal food. The new access road means you can get around very easily; you are at the Mall of the Emirates in no time, for example.
You’ve really made the villa your own; how would you sum up your interiors? I think that a good home should reflect the personalities of the people living in the house, so it’s a personal style: the African pieces you’ll see are my wife’s style (she’s part Sierra Leonian, part Lebanese and
part Scottish), and there’s kids’ stuff that our sons have painted for us over the years. I also think that if you are born Scandinavian or Swedish or Danish, you’re naturally into your home making. I grew up with all the classic chairs you’ll see here – a Mathsson Jetson 1959 and an Arne Jacobsen egg chair from 1962.
It’s a very ‘Scandinavian’ style. Did you import the items? Yes and most things here are originals. The egg chair is from 1963, our yellow chairs are actually from Boston, the red chairs from Germany and the table is from New York. Anyway, when you are born with that style, as most Swedes are, in the ‘50s ‘60s and ‘70s this was the standard kind of set up in any home. We like this type of style and, thanks to the US sitcom Mad Men, the rest of the world loves it too. This Scandinavian design that everyone talks about is no longer a geographical term but an aesthetics term. That’s the background to our interios, combined with the fact that, when I was in the UN the longest I lived anywhere was two years – sometimes only three months – so when we finally moved here we said we should create that home we’ve always wanted.
Where would you shop in Dubai for home furnishings? We don’t tend to shop a lot here as there aren’t really any true Middle Eastern elements. But, if I did, perhaps it would be at a Christie’s Middle East auction. You could get furniture similar to the pieces we have from De Marco, too, or try furniture from THE One, which is similar. For accessories there is a shop called D.tales that I like.
Finally, Lars, are there any drawbacks to living here?Well, we’ve been talking about moving a few times, just because the house is a little bit too big for us now that our two older sons have moved out. With all of us here it made sense, but now, with just the three of us, it’s a little bit big. But then we think, where would we move to? Financially the service charges are probably the best in town and in terms of amenities, such as shops, you have everything here you could possibly want.

Renting
Sprawling neighbourhoods of picture-perfect villas form the green, family-friendly community of The Meadows. Shopping and a bite
Set up home in The Meadows and you’ll have the best of both worlds; essential grocery stores and quality eateries, both just minutes away. The former can be
found at the heart of the community; Meadows Village and the Meadows Town Centre. These quaint shopping hubs house a Spinneys (ideal for those essential everyday items) and a scattering of handy shops and cafes, including the likes of Costa Coffee (an ideal stop off for busy mums). On the higher-end scale is the five-star Address Montgomerie Dubai – a hotel that’s not only home to views of the world-class Emirates Golf Club but quality eateries too. At the golf club, Le Classique (04 380 222) is a show of polished woods, pea green interiors and quality French cuisine – it’s headed by award-winning chef, Francois Porte. It’s views across the golf course, meanwhile, serve as a winning spot day or night. Nineteen (04 363 1275) is also not to be missed, set before an idyllic backdrop of rolling greens and serving what is a fabulous Friday a la carte-style brunch.
Leisure time
Those of you who want to perfect your swing will find few finer spots to tee off close to home than the Emirates Golf Club (dubaigolf.com), a Majlis
championship course that offers 36 holes of golf, no less, and is the only course of its kind to offer night golf – so you needn’t hang up your clubs if you’re at work all week. If you prefer sports of another ilk, Meadows Village has just the thing: Hayya! (hayya.ae) A residents’ members’ club, here you can turn a hand to all manner of activities, from tennis and squash on its courts to swimming in its pool or, for those of you who prefer to just relax during your time off, a sauna and steam room.
Schooling
With such family-friendly surrounds on your doorstep, it’s no surprise that quality schools are not far away. GEMS (gemsworldacademy.com) is a renowned international school that sits just a five-minute drive away. If it’s a British curriculum you’re after, meanwhile, pay a visit to the Dubai British School (dubaibritishschool.ae). On top of these two popular choices are The Dubai International Academy (diadubai.com) and Emirates International School (eischool.com).

I would sum up my home style as eclectic and glamorous and always comfortable. I always like to make sure my guests feel like they are surrounded by luxury and glamour but in a place they can curl up and chat. Each of my rooms has a major burst of colour – for example our living room has twin Amethyst velvet sofas with accents of gold and shimmer throughout the room.
Dubai’s textile and spice souks are my favoured spots to shop. They delighted all of my senses and provided great inspiration for colour, pattern and design – I took kilos of spices like dried lemons, frankincense and indigo balls back to the US with me and filled my bowls with them.
I have large trays and bowls everywhere at home – imagine a large Lily bowl filled with lemons or sea glass collected from the French Riviera. I love to pile books and candlesticks on trays, too, and always have them handy for impromptu party platters.
No home should be without candlelight, which is why I introduced a collection of candle holders this past season. Everyone looks better in candlelight.
I love a design style that mixes natural textures, like warm woods and dramatic animal prints, with more womanly elements, like shimmer and shine. I looked to Kelly Wearstler interiors for my great room, which combines leopard prints, velvets sofas, fur throws and a fireplace inlaid with iridescent tiles.
‘Ooh-la-la’ was our reaction when spying the latest piece from French brand GRANGE’s wonderfully-named ‘Pompadour’ collection (above). Black is the new black and is bang on trend as a high gloss finish – try it on wardrobes with oversized chrome handles.
Neutrals will be cooler this year – think greys and slate hues. These work very well as wall finishes and as a backdrop for bolder, brighter accent colours.
Pink and purple undertones are stronger than ever. They’re a great choice for accents, such as cushions or bed throws and can add both texture and colour to an otherwise monotone bedroom.

Whilst every child is an individual, as a child grows and develops they start to become more aware of the world around them, usually showing increased curiosity and a desire to explore their surroundings. Readiness for nursery can usually be judged according to a child’s need for greater stimulation and social interaction. If your child is showing signs of restlessness, dissatisfaction or boredom with the daily routine at home, some time spent at nursery can be very beneficial.
2 look out for certifications All nurseries should have a
Professional License issued by the Department of Economic Development as well as a license issued by the Ministry of Social Affairs to show that they are duly authorised to operate a business and conduct nursery activities. Such licenses should be prominently displayed, so they are clearly visible to the public.
3 Be happy with the staff All members of staff should be
friendly, approachable and understanding of your requirements. You should feel
comfortable entrusting your child to their care. Staff should be qualified and experienced in the particular curriculum or methodology which your chosen nursery is offering. CRUSTED BLACK COD WITH MUSHROOM BROTH Serves 4
• 480g Black cod fillet (no skin)
• 10g Corn starch
• 100g Flour
• 50ml Extra virgin olive oil
• 4g Cayenne pepper
• 120g Leeks juliennes (washed)
• 120g Potato juliennes (blanched)
• 2 sprigs fresh thyme leaves
• Salt to taste
• Black peppercorns to taste
• 200ml Vegetable stock
• 40g Butter Mushroom broth
• 500g Button mushrooms (sliced)
• 2 ½ tbsp Sherry vinegar
• 150g Salted butter
• 2 ½ tbsp Honey
• 2 ½ tbsp Lemon juice
• 2 ½ tbsp Soy sauce
• 500ml Water
Spice Mix
• 30g Hazelnut (ground coarsely)
• 30g Almond (ground coarsely)
• 7g Black pepper (cracked)
• 15 g Coriander seeds (cracked)
• 15g Sesame seeds (ground coarsely)
• 25g Flour (seasoned)
• 500ml Oil (for frying)
• 20g Mixed herbs
• 40g Enoki
1. Season the cod with salt and cayenne.2. Brush fish on one side with the corn starch and water mix then dip into the spice mix and dust with flour.3. Pan fry the fish (spice mix side down) in a hot pan with oil then continue cooking in the oven as required.4. For the mushroom broth, sauté the sliced mushrooms in 50g of butter. Add honey, caramelise and then deglaze with soy, lemon juice and sherry vinegar. 5. Add water and simmer for 30 minutes. 6. Strain the stock into a bowl, pressing out
all the juice from the mushrooms. 7. Make a clarified brown butter (nut butter) with 100g salted butter by cooking it in a heavy bottom pan until all the milk fat in thebutter is caramelised and only the clarified
nutty flavored butter is left. Slowly drain the butter by pouring in a container, leaving the residue behind. Stop further cooking of the butter by dipping the pan in ice water. 8. Whisk into the mushroom broth.9. Make sautéed leeks and potato by heating the butter in a pan and sautéing the leeks.10. Add in the potato juliennes and mix in the thyme leaves and season. 11. Serve as a base to the fish.

CRAB COCKTAIL WITHFENNEL SORBET Serves 4
Crab salad
• 280g Crab meat
• 70g Fresh tomatoes (diced)
• 10g Ripe avocado
• 15g Gherkins
• 6g Capers
• Salt to taste
• 3g Black peppercorns (crushed)
• ½ pc Lemon (juiced)
• 40g Mixed lettuce
• 5 sprigs fresh coriander Cocktail sauce
• 100g Mayonnaise
• 40g Tomato ketchup
• ¼ tsp Paprika powder
• 10ml Tabasco sauce
• ¼ pc Lemon (juiced)
• Sea salt, to tasteFennel sorbet
• 1ltr Water
• 200g Fresh fennel bulb
• 15g Fennel seeds
• 250g Liquid glucose
• 200g Sugar
• 15g Stabiliser/gel glaze Fennel crisp
• 50g Fennel (thinly sliced)
• 150ml Water
• 40g Sugar 20ml Corn oil
• 2 Sheets parchment paper
Dressing
• 250ml Balsamic vinegar reduction
• 5 ml Red pepper oil
• 30ml Basil oil
1. For the cocktail sauce, mix all of the aforementioned ingredients together and blend with a ballon whisk.2. For the crab salad, add the crab meat to the capers, gherkins, chives, diced tomat-oes and avocado, season it and add the lemon juice.3. Add the cocktail sauce and fold well.4. Place the salad in a ring mould and top it with the mixed lettuce and coriander leaves.5. For the side of fennel sorbet, heat the water, remove from the flame and let it cool until it’s lukewarm. Next, add the fresh fennel and fennel seeds, cover and let it get cool.6. Blend and strain it through a fine sieve, add the sugar, liquid glucose and stabiliser and blend again.7. Churn this mixture in a sorbetier and serve frozen with a fennel crisp on top. (If you don’t have a sorbetier, try a plain flavoured sorbet instead.)8. To make the fennel crisp, cut the fennel bulb into thin slices.9. Make a thin syrup with the water and sugar and then dip the slices in it.10. Arrange two sheets of butter paper between two stainless steel trays. Place the fennel in between and bake it at 70 degrees Celsius for 12 minutes.
RED SNAPPER WITH YABBIS TAIL, SCALLOPS AND LEMON EMULSION Serves 4
• 800g Red snapper fillet (scaled, pin boned)
• Sea salt flakes to taste
• Black peppercorns (crushed) to taste
• ¼ tsp Lemon juice
• 20g Butter
• 40ml Extra virgin olive oil Lemon Emulsion
• 240g Yabbis tail (peeled)
• 160g Scallop (cleaned)
• ¼ pc Lemon juice
• 5g Parsley (curly)
• 150g Tomato Kenya Beans
• 200g Kenya beans
• 10g Salted butter
• 1 pc Garlic clove (peeled)
• 30g Shallots
• Black peppercorns (crushed) to taste
• 30g Cherry tomatoes
• 5g Mixed herbs
1. For the Red Snapper, marinate the fish fillet with salt, black peppercorns and olive oil.2. Grill the fish (skin side down) on a hot grill, as soon as there are grill marks, turn it over onto a stainless steel plate and top with butter, lemon juice and finish it in a 160 degree Celsius oven for 3 minutes.3. For the lemon emulsion, clean and peel the yabbis tail and cut it length wise.4. Cut the scallop meat lengthwise along the grain of the meat.5. Poach the tomato then peel skin off. Dice it into neat cubes.6. In a pan, melt the butter then add in the yabbis, scallops and sauté.7. Mix in the lemon juice and nape the meat constantly.8. Finish off with chopped parsley, diced tomatoes and a touch of crushed peppercorns.9. For the Kenya Beans, cut the strings on the side of the beans. Blanch them in hot water then flash chill them in ice water. Strain and place in an absorbent cloth.10. Heat the butter in a pan then add in the chopped shallots and sauté till translucent.11. Toss the beans and finish with crushed black peppercorns.
