Perloo SauceIngredients:

4 ounces Applewood

Smoked Bacon1/2 cup yellow onions, diced1/2 cup celery, diced

1 teaspoon garlic, chopped1 teaspoon fresh lemon juice1 quart roma tomatoes,

diced1/2 quart heavy whipping cream

2 cups chicken stock2 dashes Tabasco1 cup fresh okra, sliced 1/2 inch

Directions:Heat a medium-size sauce pot until hot. Add baconand sauté until crisp. Add onions, celery, and garlicand sauté on mediumheat for 2 minutes. Addfresh lemon juice, romatomatoes, cream, chickenstock, Tabasco and okra.Bring to a boil then reduceheat and simmer overlow heat for 10 minutes.

Smoked Bacon Garlic GritsIngredients:

1/2 cup olive oil4 ounces Applewood Smoked Bacon

1/2 cup white onion, chopped1/4 cup garlic, chopped

1 & 3/4 quarts chicken stock2 cups stone ground grits1 tablespoon kosher salt1 teaspoon black pepper

Directions:Heat oil in a stock pot, add bacon andbrown, add onions and cook until soft.Add garlic and cook until golden brown.Add chicken stock and bring to a boil.Slowly add grits and reduce heat. Add saltand pepper and stir occasionally until gritsare soft.

Final preparation and serving:Heat 2 oz. of olive oil in a sauté pan add48 (16/20 count) shrimp and cook untildone. Spoon Smoked Bacon Garlic Gritsinto the center of a large rimmed bowl,place 6 cooked shrimp with tails facing inaround the grits, pour Perloo Sauce overtop and garnish with shaved green onions.Serves 8.

Although mucky and smelly, the salt marsh is an important part ofthe Lowcountry.

In actuality, the salt marsh produces more food for the environmentthan rain forests. The green grass that dominates the marsh is calledsalt marsh cord grass or Spartina. When this cord grass dies eachwinter and decomposes, its nutrients are released into the marshmud, creeks, streams and even into the ocean. These nutrientsbegin the food chain for the entire Southeastern coastal area.

So, the next time you enjoy a meal of shrimp, mussels, oysters, bluecrab, stone crab or saltwater fish, thank the muddy salt marshes.

Local anglers always look for-ward to the month of May witheager anticipation because thistime of year is the peak of cobiaseason.

One of the largest apex predators inour local inshore waters (only sharksand tarpon get bigger), cobia offerbig game angling for the smallest ofboats. Currently the South Carolinastate record is 92 pounds, 10 ounces– a whopper fish by any standards.However, I have seen several fishweighing more than 100 pounds,including one last year on a reef thatswam right up to the boat. Muchto my despair, a “little” 65-poundfish grabbed the bait I dropped infront of him, instead of the big oneI had my eye on. That was one ofthe few times I was disappointed tohook a 65-pound cobia!

Probably the most popular way tofish for cobia is to anchor over achoice piece of bottom and deploythe chum bag. Menhaden are oftenused as chum and bait. Either live ordead will work. Other favorite baitsinclude live eels, whiting, shad chunksor even a half or whole crab. Linesare generally fished on the bottom,but top water baits often score.

is successful because cobia love structure. They are alsoknown to follow large tiger sharks, manta rays and turtles.I have even caught them under floating rafts of marshgrass.

Several years ago while fishing for sailfish in Florida, Ispied a huge leatherback turtle cruising the rip we hadset our kites on. Sure enough, there was a squadron ofcobia underneath. With the quick pitch of a bait, we hadone on the line. Seconds later, a large sail snatched oneof the kite baits and we had a double header on... cobiagoing one way and sailfish going the other!

Cobia often drive anglers crazy by turning their nose upat everything you throw at them. Talk to anyone who hasexperience cobia fishing and they usually have numer-ous stories about days of being surrounded by fish thatsimply refused to eat. Last year, I had one trip where Icounted more than 60 cobia swimming on the surfacearound the boat. We threw everything in the bait well andthe tackle box to no avail. We finally hooked up one witha large live shrimp we had caught while throwing the neton menhaden that morning.

These big brown battlers are plentiful in local waters atthis time of year, and you can also catch them inshore.The fight usually involves powerful line-stripping runs,occasionally accented by a jump now and then.

One thing is sure: once you’ve tangled with the “bigbrown,” you’ll be hooked!

Have you ever stumbled upon something strange-looking on Hilton Head Island’s beaches? Whatlooks like meat or organs washed up along ourshore is actually an oceanic creature called SeaPork. This marine filter feeder, which is abundantin our waters and a common sight on localbeaches, received its common name due to itsresemblance to salted pork and fatback.

Aplidium stellatum, or Sea Pork, is a colonialtunicate. Tunicates are filter feeding organismswith a sack-like body structure. Tunicates can beeither singular or colonial organisms. Other typesof tunicates that can be found in South Carolinawaters include sea squirts and sea grapes. Theseimmobile creatures attach to hard substrates suchas docks, pilings, boat bottoms, groins and jetties.

Sea pork is typically made up of hundreds andat times, millions of tiny zooids. To create newcolonies, these zooids, as larvae, can be freeswimming creatures. They gather together andattach themselves to hard substrates.

Then they begin to metamorphose into sedentarycreatures. They lose their tails and mobility, whiletheir nervous system essentially disintegrates. Thesecreatures then secrete digested cellulose that theyacquire from filtering the sea water. This createsthe outer covering of what will be the colonialsea pork.

Upon examining sea pork on the beach, you maynotice tiny holes that are similar to human pores.Each of these pores houses its own zooid. Thezooids have incurrent siphons that allow seawaterin. The water is then filtered and passed throughthe ex-current siphon, once nutrients are takenfrom it. When you find sea pork washed up on thebeaches, the entire colony has died. The zooidswill then fall out of the larger cellulose body.

Sea pork appears as a tough globular colonythat feels rubbery to the touch. They can formcolonies stretching up to 12 inches long. Thesesub-tidal creatures can be found from the low tidemark to about 30 feet deep. They are commonalong the Atlantic coast from Maine to Floridaand also found throughout the Gulf of Mexico.

Once attached to a substrate these creatures arehermaphroditic. However, each zooid will releasesperm into the water to cross fertilize its neighbors.Each zooid will filter in the sperm and continueto grow that individual colony.

Sea pork can come in a variety of colors includ-ing pink, green, red, lavender and black. Oncewashed up on our beaches, they becomebleached by the sun and may appear muchduller in color.

These unusual creatures tend to show up on ourbeaches after storms, strong currents and power-ful surf rip them from their hard substrate. Skatesand bottom dwelling fish feed on the zooids thatcreate the colonial sea pork.

Surprise Guests

After many years serving as a guidein the Lowcountry, I sometimesthink I’ve seen it all.

Enveloped by nature on a dailybasis, I know I must remain everalert to the unexpected. I’mdiscovering that some of thesightings I once considered highlyunusual are now becoming more...well, usual.

Many years ago, it was rare to hear of amanatee cruising through local waters. Theyprefer warmer brackish waters, especially theestuaries in central Florida. Over the last sev-eral summers however, visits by manatees haveincreased to the point that, once the watertemperature exceeds about 72 degrees, I’vecome to expect their arrival in Broad Creek.

As herbivores, manatees are typically foundaround structures that support an abundance ofmarine vegetation. They tend to favor marinas,as they are always in search of fresh water. TheMarine Mammal Act prohibits the feeding –or watering – of all marine mammals.

The Roseate Spoonbill is also thought to beunusual in our little neck of the woods. Until adecade ago, I’d never seen one. Then, whileleading a group from a local marina, I observedwhat I considered to be a strangely coloredIbis. Intrigued, I consulted my Sibley Guide toBirds and learned it was actually a RoseateSpoonbill, a bird typically found along the Gulfcoast and in South America.

Last June, a small flock of Roseate Spoonbillssuddenly appeared in Broad Creek. Theylingered in the marsh surrounding the creekthroughout the summer. By August, two individ-

uals were frequently seen atthe mouth of Shelter CoveMarina casually swayingtheir distinctive spoon tippedbills side to side, feeding onfry shrimp and small fish.

For me, the most excitingsighting of all is seeingWhite Pelicans in areawaters. Much larger than our

resident Brown Pelican, White Pelicans haveestablished a sizeable colony 100 miles up thecoast, but they are still considered fairly unusualhere. Years ago, I observed a large flock soar-ing on thermals high in the sky. The followingyear, I saw a dozen of them hanging around ashell bank across the Calibogue Sound. Theflock came and went within a few weeks.

Every year since then, I’ve searched in vain.That is, until a month ago when I saw six WhitePelicans feeding in the shallows just up thecreek from the marina.

What amazing surprises are in store thisseason? Will manatee lumber up Broad Creek?Will the Roseate Spoonbill flock return? Andwill the White Pelicans flock in the Lowcountryagain?

Adjusting your club head can affect yourswing on the green.

Toe Up, Toe DownBy Doug Weaver, Palmetto Dunes Oceanfront Resort

Would you like to think less as you playgolf?

This pointer can help you. Knowing how toadjust your hands and club head can improveyour swing on many levels. Let your toe helpyou on the green, as its position can affectyour swing in different ways.

When the toe of the club head is up in yoursetup, it will help you draw, hook and put topspin on the ball. You can lower your hands inyour setup to achieve this effect.

This is a positive adjustment for a right-hand-ed player if you have water on the right anda slice will take you there. Lower your handsand watch your toe of the club head go up.Now take your normal swing and trust it. Theshot pattern will be a draw or hook, and theworst shot you will have is a straight shot,therefore avoiding the water on the right.

When the toe of the club is down, this willcause a fade or slice with side spin. For a right-handed player with water on the left, raise yourhands up in the setup and watch the toe of theclub head go down. Now take your normalswing and trust it. Your worst shot may be astraight shot, but favoring a fade and slice,therefore avoiding the water and a penalty.

As an instructor, I can read the divots in yourshots and tell you if your toe was up or down.Here is a clue: if the outside of the divot isdeeper, then your toe was down and youmost likely hit a fade or slice. As you walk the

fairways you can observe the patterns of thedivots and know what shots are being made.

Whether you keep your toe up or down thismonth, be sure to take advantage of the greatweather to spend as much time as possible onthe golf course. It’s no wonder Hilton HeadIsland is a mecca for golfers, with so manychampionship courses to choose from.

Make the most of your time on the course thisseason. Always wear a hat and sunscreen,even when the temperatures seem moderate.There’s no better time of year to test yourmettle on Lowcountry courses, perfecting yourputt and improving your swing.

Remember that golf is a game that can takea lifetime to master. The fact that it’s so chal-lenging is part of its appeal. Plus, the gamechanges depending upon the season, weatherconditions and other factors beyond our control.However, there are always new tips to learnand new strategies to try to maximize youreffectiveness on the green.
