November is a beautiful time to get out and enjoy the world-class golf courses, marvelous restaurants and amazing shops and boutiques spread all across our boot-shaped island. With cool weather finally settling in, there’s no better time to enjoy the outdoors and do a little exploring, so be sure to grab a bicycle and see where the 50 miles of bike paths take you!

It might be a little too chilly to go swimming but that doesn’t mean you can’t get out on the water with dolphin and discovery cruises and off shore fishing charters. Just don’t forget to relax and enjoy this beautiful gem of the Lowcountry, which has 12 miles of shoreline, beach parks at every other beach access point, hammocks hanging around resorts as well as beach volleyball and tennis courts waiting to be enjoyed.

Whether you decide to stay in Shipyard, Palmetto Dunes, Harbour Town, South Beach or around Coligny, there are all kinds of excit-ing activities going on that are sure to grab your attention. The Oyster Fest will take over Shelter Cove Community Park November 13-15, while Salty Dog’s Thanksgiving Homecoming will take over South Beach on November 25. All kinds of other exciting happenings can be found on our Calendar of Events, including the Turkey Trot, which Katie Hatfield talks about in her piece, “Hot on the RUNway.”

Also in this issue, Jessie Renew lets us know which of these fun events make it a point to give back to the community and shares how we can make November “A Giving Month,” while Miles Altman and Kathleen McMenamin take us to the waters and teach us about flounder and Atlantic ribbed mussels. Golf Instructor and former PGA Pro Doug Weaver brings us back to land and takes us out on Hilton Head’s world-class golf courses to share why he is thankful for the sport and Georgene Mortimer takes us to her winery to explain what wines we should pair with pizza.

We hope all of our listings are helpful in guiding you to some of the very best that the island has to offer. As always, the best of the Lowcountry and the Coastal Empire is just a click away at hiltonhead.com, hiltonheadisland.com, bluffton.com, savannah.com, stsimonsisland.com and beaufort.com. It’s there you’ll find digital copies of all of our publications and a wealth of information about what to do while you’re here. All of our websites are accessible via smartphone, so you can find the best shops, restaurants and activities no matter where you are.

We hope you enjoy your time on Hilton Head Island and come back to see us again soon!

When it comes to pizza, I am a tradi-tionalist. It is all about the tangy dough, bright sauce and warm gooeyness of the cheese. Toppings are great as long as they don’t fight with the perfect trinity of dough, sauce and cheese. Your wine should not fight these things either.

The first question is red or white? Regardless of the toppings, pizza is a pretty substantial food, so it requires a substantial wine. In general you are looking at a red wine. A fuller-bodied white wine can work too depending on the pizza.

Of course, the thing that makes pizza so deli-cious is the fat in the cheese. The tomato sauce, with its high acid, cuts through that fat to create the perfect compliment. Your wine should do the same. It should be high in acid and full of juicy fruity flavors. Avoid high tannin wines such as Cabernet Sauvignon or Syrah. Tannins fight with the tomato flavors and can create a metallic aftertaste.

So what are the best wines? Obvious but true, Italy makes the best pizza wines. However not all Italian wines work well and wines from other coun-tries are just as good. Here are some favorites:

Sangiovese – The Sangiovese grape is used to make the famous Italian Chianti, which is the natural pizza partner. Choose one that is light, young and minimally oaked. If you are going for Chianti, select a simple Chianti over the Chianti Classico, which is heavier and more tannic. Sangiovese from the West Coast is delicious too; choose one from a cooler climate such

as Washington State or the Pacific Coast.

Barbera – Originating from the Piedmont region of Italy, Barbera is noted for its high acidity and low tannin. Barbera wines are very juicy and packed

with berry flavors. If you are going for a California Barbera, choose one from the

Sierra Foothills region.

Lambrusco – Some sommeliers would argue that bubbly wines make the best

pizza wines because bubbles create a contrast to the heaviness of the cheese and meat toppings. So what would be

better than a red, sparkling wine from Italy? Please don’t think of the candied, fizzy wines that were popular in the ‘70s and ‘80s. Select one that is secco (dry). The fruity, simple, pleas-antly bitter taste will nicely wash down the pizza.

Zinfandel – California Zinfandels can range from light and fruity to gigantic, high alcohol blockbusters. The best pizza zins will be the lighter fruity ones with a touch of oak. Zinfandels have a unique wild berry flavor and spiciness that will pair well with plain tomato, meat or veggie pies. Luckily the lighter Zinfandels are the ones that are reasonably priced, making them the perfect companion for pizza night.

The perfect bottle of wine awaits at Island Winery on Cardinal Road. Store and tast ing hours are Monday through Saturday from 12:30 p.m. to 5:30 p.m. Purchase three bottles of wine and receive a complimentary cheese platter. (843) 842-3141 or islandwinery.com.

Believe it or not, at one time it was rare to see an alligator.

They were an endan gered species, hunted almost to the

point of extinction. Many were killed for their leather to make shoes and purses, or for their meat, or just because people were afraid of them.

Today we can see alli gators pretty easily since they are now protec t ed by the Endangered Species Act.

If you ever see an alligator, leave it alone.

Don’t try to make it move or “do some thing” by throw ing sticks or other things at it.

Alligators can move really fast. In fact, they can outrun any human over a short distance. There is a myth that if an alligator chases you, run in zig-zags. This isn’t true. They can turn in different direc tions just fine.

Another VERY important rule to remember about alligators is don’t feed them. This is so impor tant that it’s against the law to feed alligators.

Normally alligators don’t want to be around people. But, when someone feeds them, the ‘gators learn that where there are people, there is food.

So, when you see alli gators around the Low country, admire them from a distance.

HOT off the

RUNway

Before gorging yourself on pounds of turkey, mashed potatoes, casserole and every

other delicious food sure to be found on your Thanksgiving table, work up an appetite at Hilton Head’s annual 5k and 10k TurkeyTrot! This family friendly walk and run is the perfect beginning to your holiday. Starting in the Chart House parking lot and ending at Hilton Head Plantation, the Turkey Trot runs from 8 a.m. to 2 p.m., with a family festival in the Hilton Head Plantation parking lot following the races.

Jogging BeautyThis look is suitable for everyone’s taste, and is usually a great fall back for the more picky among us. But no Thanksgiving, or Thanksgiving run, is complete without at least one crowd pleaser. Black leggings and a sweat wicking, long-sleeved athletic, thermal shirt provide the basic ingredients for a classic running outfit suitable for everyone’s palate, even kids.

Cantering QueenFor those who prefer a little more spice in their lives, sprinkle on a few of these pieces for some fun holiday, running

style. Instead of basic black, white and grey, go bold and pick out a brightly colored running jacket to pair with a reflective pant to keep safe while you run. And for some holiday spirit, add in some fun accessories like turkey socks, or even a turkey gobble hat! Whatever you add, make it fun and festive to help celebrate America’s favorite holiday.

Sprinting Spirit This last look is for the braver among us, the ones who have tried to deep-fry their turkey, and anything else they could get their hands on, at one point or another. For those with holiday spirit, wearing costumes, no matter the time of the year, is the best way to go. Since Thanksgiving is all about the turkey, finding a turkey costume or mismatched turkey accessories isn’t difficult. Just throw on your costume, and if you are feeling as brave as a child eating green bean casserole, then go for a full turkey look, makeup and all.

Harbour Town Lighthouse

Rising 93 feet above the Calibogue Sound and framing the 18th hole of the Harbour Town Golf Links...

The Harbour Town Lighthouse, which was com-pleted in 1970, was the first privately-financed lighthouse built since the early 1800s.

Nicknamed “Fraser’s Folly,“ Charles Fraser, the visionary developer of The Sea Pines Resort, believed a distinctive landmark, along with a pro fessional golf tournament, would arouse interest in the fledgling seaside community.

As usual, Fraser was right, and today the candy-striped, hexagonal structure has become synonymous with Hilton Head Island.

Rising 93 feet above the Calibogue Sound and framing the 18th hole of the Harbour Town Golf Links, the red-and-white striped lighthouse guides golfers off the tee. The back drop for one of golf’s most picturesque fin ish ing holes, #18 was once part of the $1 million Kodak Challenge, a cele bra tion of “the beautiful holes and mem orable moments in golf.”

Panoramic views of the Harbour Town Yacht Basin and Golf Links, the Liberty Oak, the Calibogue Sound and Daufuskie Island, are just one reason to climb the 114 stairs to the top of the lighthouse. Along the way, the Harbour Town Lighthouse Museum offers a

self-guided “climb through time” with displays and artifacts showcas ing vari-ous stages of Hilton Head history.

Offering a unique, “elevated” shopping experience, The Top of the Lighthouse Shop fea tures over 2,000 items, including Crystal World light house figurines, Harbour Lights collectibles, Christmas orna ments, Annaleece high quality fashion jewelry, Trollbeads and local art and photography.

While enjoying the view, wave to family and friends via the webcam or visit harbourtownlighthouse.com to zoom in on the yacht basin, the 18th hole of the Harbour Town Golf Links or the Liberty Oak, where family favorite Gregg Russell has entertained generations of visitors for more than three decades during the summer.

The Island’s best-known land mark is also avail-able for special events, including mem o rable weddings, intimate parties and corporate functions. Call for details and reservations.

The Harbour Town Lighthouse is open 7 days a week from 10 a.m.-Sundown. Admission is $4 per person, free for ages 5 and under. Accommo dat ing up to 40 people, the lighthouse may also be re served for private parties and func tions. (843) 671-2810, (866) 305-9814 or harbourtownlighthouse.com.

A master of camouflage and ambush, the flounder is one of the oddest-looking fish that swims our local waters. Flat with both eyes on one side of its body, it has the capability of altering its coloration to match the bottom of the ocean floor where it lies in wait for its prey. Jaws full of sharp teeth expand to facilitate the lightning-quick strike, which is usually followed by its return to the bottom to savor its catch. This behavior can puzzle an angler who is fortunate enough to hook a flounder.

When drifting bait on a cork, the cork will often stop as if it were snagged on the bottom. When casting an artificial, the flounder bite feels like a snag. As you reel the flounder in, it may feel like dead weight initially until the fish starts to battle; then hold on! Using its flatness and muscle, the flounder can put up a great fight.

They are not born with both eyes on one side of their body. Flounder go through a process, meta-morphosis, which occurs when they go from the larval state to the juvenile state. The top side, where the eyes are, is dark while the bottom side is white. I have seen some flounder that were partially dark on the bottom, but it’s rare. One thing is for sure – few people do not know how delicious the floun-

der is; it is widely sought commercially and highly valuable.

Locally, it is often a surprise to anglers chasing the more available speckled trout and redfish. To our north, from Myrtle Beach to New York, anglers are blessed with better flounder fishing as a target species, as they tend to school up more so than here. Occasionally large num-bers can be caught at the offshore reefs, but inshore gigging is a more efficient method of procuring better numbers of flounder.

The weather has cooled and so has the water, offering better clarity. November through January is a great season for artificial baits such as the soft plastic Gulp variety and the screwtail and paddle tail plastic jigs. There should be an abun-dance of speckled trout and redfish around and if you are lucky, that snag may be a bonus flounder!

58 ISLAND EVENTS NOVEMBER 2015 hiltonhead.com

Fall brings about a wonderful time in the Lowcountry that allows us to truly appreciate the bounties of our environment. Shellfish harvesting is a large part of our sea island lifestyle. It brings the community together over meals, to bond and appreciate our natural resources. Oysters, clams and ribbed mussels are the major players when it comes to our non-summer harvests.

The Atlantic ribbed mussel, Geukensia demissa, is the most common mussel species in our area. They are also known as the horse-mussel. They live within the inter-tidal zone, the space between the high and low tide lines. They can be found partially buried in our pluff mud, found among oyster reefs or attached to pilings and other hard substrates. Their natural habitat is found along the Atlantic and Gulf Coasts. They have been identified from Maine to Florida.

They are oval shaped bivalves, named for the prominent ribs running the length of their shell. They have a narrow blunt head that tapers to their connective joint. They are glossy, ranging from olive-brown to olive-black. At times you may be able to find patches of white or yellow on the outside of their shells. The interior of their shell ranges in highly glossy purple hues. During breed-ing season you can identify males from females by taking a look at the interior soft tissue that encloses the body. Females will be a medium brown tone, while males will be a yellow or cream color.

Adult ribbed mussels have been known to live up to 15 years. On average they will reach lengths of up to 10 inches. You can identify the age of a mussel by counting the ribs on the outside of the shell. They will reach their maturity at 12 millimeters.

Spawning occurs once a year, usually between June and September. Eggs and sperm are released into the water column, where fertilization takes place. It is thought that only 55 percent of larvae will make it through their first year. This is due to severe cold water temperature and freezing in shallow estuaries.

They are highly adaptive organisms. They can withstand both significantly high and low salinity levels. They are susceptible to freezing if such weather conditions occur and they can live in tem-peratures up to 133 degrees Fahrenheit. Mussels are able to move slowly through the estu-ary, using a muscular foot. They are also able to anchor to hard substrates, using byssus threads (a cluster of fibers), which produce a cement-like sub-stance to ensure their grip.

Ribbed mussels are filter feeders. When the tide is high, they will suck water into their shells, where their gills will then remove plankton and algae for the mussel to consume. A single mussel can filter 6.8 liters of water each hour when submerged. If a mussel is covered by water for 12 hours a day, that means they are filtering almost 22 gal-lons of water each day, per mussel. Because of their consumption of bacteria, South Carolinian's do not harvest mussels in the summer months. Warmer water creates more bacteria and thus could be a danger for human consumption. Harvesting season usually occurs in any month with an “R” in it. It is also important to harvest ribbed mussels at a high tide, when their valves continuously open and close. During a low tide, the mussel closes its valve and retains water in its body for the duration of the low tide. By keeping water inside of itself, it is also keeping waste products that can be toxic to human consumption.

The H2O Sports is a great place to spark curiosity and inspire learning through adventure in all ages, offering eco adventure tours and live alligator exhibit. As November sets in, we all begin the season of spending time with family, eating and gift giving. For many, the month is characterized by shopping. With all of the cute little stores, outlet malls and chains, Hilton Head has a lot of great local places to shop. Last year in the days between Thanksgiving and “Cyber Monday,” American’s spent over 3.7 billion dollars for consumer goods in store and online. While we all enjoy giving and getting, it’s difficult not to consider those less fortunate. Create new tradi-tions in your family by making your November a “Giving Month.” For locals and visitors, Hilton Head offers several fantastic and fun ways to give back to our community this month.

• It has taught me to relax and handle pressure, which is one of the reasons that golfers are said to live longer than any other athletes. Golfers have a quality of life that includes more calm, peaceful and moderate arousal of emotions and physical effort. The golfer desires challenges and overcomes them through developing habits that lead to lower scores, stress and a healthier life.

• This social game has allowed me to make more friends and develop relation-ships. Although in most competitions you play against each other and the course, you still have two or three play-ing partners who join you for the round and share in the birdies and bogies. Four hours of golf will lead to many opportunities to get to know who you are playing with better and I’ve made some good friends and also business contacts from spending time on the golf course. The average time between shots is four minutes. This is a great time for stories, jokes and getting to know one another.

• Because I can enjoy playing with my beginner friends of all ages that passion-ately say, “let’s play more.” No matter the skill level, if the golfer knows the eti-quette, others can enjoy playing with them. What other game encourages a 7-year-old to be playing and competing with a 70-year-old? Using the handicap system, we all can have a fair game.

• Golf depends on me. I played quite

I have been asked many times if I still enjoy playing golf. I have played it for over 50 years and enjoyed being a professional golf coach for 23 years. Many can’t understand why I want to spend four hours walking around hitting a white ball in a little hole on my time off. I’ve been asked this question so many times I thought I’d put into words why I am in love with and thankful for this great game of golf.

a lot of football, basketball and baseball when growing up. It wasn’t too high a standard, but I took it seriously – trained quite hard for it and expected the best outcome. Nothing would annoy me more than giving my best and a teammate showing no commitment and concern for the team goal of winning.

• I get to see beautiful scenery. The Arthur Hills Golf Course in Palmetto Dunes Resort has the most obvious ancient sand dunes that decorate four holes. These grassed-over dunes run parallel to the beach and have elevation changes of as much as six feet. Most of our local trees stay green 12 months a year even while shedding their leaves. Eagles, osprey and red-tailed hawks create an adventurous feeling as golfers watch them hunt in their natural habitats preserved through golf courses. Charles Fraser, our modern Island’s founding father, was influenced by his mother that developed large extensive gardens representing orderly natural beauty. Mr. Fraser protected and enhanced the Island’s natural beauty by the covenants and standard he established.

• It keeps me healthy. Golf is a great non-impact exercise and is excellent for preventing arthritis and Alzheimer’s. Seven thousands yards equals around four miles, which is a good walk in anybody’s book. When this gentle game is played correctly, and done over four hours, it promotes better napping and nighttime sleeping. It also keeps your brain stimulated – you’re working to make new shots and strategies, solve prob-lems, all the while forming memories, which not only helps to maintain existing brain circuits but may also create new ones.

Golf instruction is a great career because I get to watch people, who’ve listened and applied lessons, have victory on the course and, many times, it carries on to other areas of life.

A former PGA Touring Pro, Doug Weaver is the Director of Instruction at the Palmetto Dunes Golf Academy. He conducts “Where Does the Power Come From?,” a free hands-on interactive clinic and demonstration, every Monday at 4 p.m. (843) 785-1138, (800) 827-3006 or palmettodunes.com.

RULES FOR THE ROAD:Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws.

Travel the pathways at speeds that allow for the safety of pedes trians and other users.

Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles.

Please do not ride on roads where a pathway is available.

Please ride single file and keep a safe distance from other bicyclists.

WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you.

Please yield to pedestrians. When resting or stopped, please move off the pathway.

Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flash light. Bicycles must have a red rear reflector and a headlight when biking at night.

When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left.

Bicyclists should always wear a helmet, especially children 12 and under.

Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the pathways.

Be courteous, alert and predictable.

At low tide, the Island’s 12 miles of beaches are ideal for biking. Public beaches are indicated on the Island

Events’ Island Map.

Our map also shows the existing public pathways. Many kiosks are located

along the pathways with an Island-wide map on one side, and a localized map of

the area on the other.

Recreational PathwaysGuide

The Town of Hilton Head Island provides nearly 60 miles of public path ways and nature trails for

the enjoy ment of pedes trians and cyclists.
