Petite Sirah rarely gets the love from wine connoisseurs that it deserves, despite the fact that it’s a truly great wine at an affordable price. High-quality Petite Sirah (P.S) can be found in the $10 to $18 price range and pairs very well with a wide variety of foods. So why is this wine not more popular?

Although this grape has been around for cen-turies, it was not until 2002 when a group of California Petite Sirah growers started a cam-paign called “P.S. I Love You” to try to change the perception of this underappreciated red wine. I think their strategy is working.

Petite Sirah was first developed in the1870s in the Rhone region of France. A cross between the famous Syrah grape and the relatively unknown Peloursin grape, this new hybrid was originally called Durif. The goal was to create a Syrah grape that was more resistant to mildew. However, the Durif grape never caught on in France and some vines were later brought to California where they thrived. At that time, it was also decided that a name change was in order. Thus, the name Petite Sirah was derived to give this grape a French and, thus, more prestigious-sounding name.

The “Petite” in the moniker refers to the size of the grapes. Importantly, because the grapes are so small, there is a high skin-to-juice ratio and, since the tannins and color pigments are all in the skins, Petite Sirah is known for high tannins and deep dark color.

The vines were initially brought to California to use as a blending wine for poor Zinfandel vintages. If a particular year of Zinfandel is light and flabby, Petite Sirah is blended to provide the necessary tannic backbone and dark purple color. As it turns out, the best expression of this grape is the plantings in California. So it is quite understandable why California growers decided to bottle Petite Sirah on its own.

Although it has taken a while for this deep dark, tannic wine to take off in California, many producers have embraced it. For fun, one California winemaker prints a warning on the label saying, “Don’t Spill it on Your Shirt.” While this tooth-staining, tannic wine might not be for everyone, it’s easy to appreciate the deep, rich flavors and the appealing aromas of blueberry, spice and chocolate.

As a winemaker, Petite Sirah is an absolute staple in our barrel room. We use it to bolster lighter wines, and we also bottle it on its own. It is one of the most food-friendly wines around, as you will see if you check out the varied and numerous food recommendations on the P.S. I Love You website.

A woman once asked me why her diamond had lost its brilliance. One look and I knew instantly. It had a layer of “gunk” stuck underneath it. Upon closer inspection, I discovered an apple seed stuck in the undercarriage of the setting. Even more amazing… the apple seed was beginning to sprout! I asked if she liked to bake and she said yes, especially apple pies.

By cleaning your jewelry often, you will sparkle like a rock star and protect it from harmful wear. It only takes a couple sprays of a grease-cutting cleanser, a once-over with an electric toothbrush and a quick rinse.

To clean gold and platinum, my favorite grease cutting cleansers are Mr. Clean, Formula 409 or Fantastik. Ammonia is effective too, but it’s so stinky! And please, no toothpaste. It’s simply too abrasive for most precious metals. When traveling, make due with a squirt of shampoo or liquid soap.

Chlorine (a.k.a. bleach) is the enemy of precious metals and can actually dissolve your jewelry. That means it’s prudent to remove jewelry before splashing in hot tubs, super-chlorinated swimming pools

and jacuzzis.

Salt is the enemy of sterling silver. Leave your silver jewelry home before going to the beach. Even perspiration can dull or discol-or sterling. You’ll keep it looking like new if you rub it with a soft cloth before and after wearing it, and treat it with respect.

tain your jewelry is to take it to a profes-

sional jeweler. We pros have specialized equipment to re-

move scratches from precious met-

als, dissolve dirt and remove oxidation. We finish

Believe it or not, at one time it was rare to see an alligator.

They were an endan gered species, hunted almost to the point of extinction. Many were killed for their leather to make shoes and purses, or for their meat, or just because people were afraid of them.

Today we can see alli gators pretty easily since they are now protec t ed by the Endangered Species Act.

If you ever see an alligator, leave it alone.

Don’t try to make it move or “do some thing” by throw ing sticks or other things at it.

Alligators can move really fast. In fact, they can outrun any human over a short distance. There is a myth that if an alligator chases you, run in zig-zags. This isn’t true. They can turn in different direc tions just fine, so you won’t lose them.

Another VERY important rule to remember about alligators is don’t feed them. This is so impor tant that it’s against the law to feed alligators.

Normally alligators don’t want to be around people. But, when someone feeds them, the ‘gators learn that where there are people, there is food.

So, when you see alli gators around the Low country, admire them from a distance.

Located some 30 to 40 miles offshore of Hilton Head Island are a series of ledges and live bottoms known as the Tybee Trough. The water is bluish-green and much clearer than our inshore waters on the Island.

Averaging 90 to 120 feet deep, this area is a haven for many bottom-dwelling and pelagic (top water) species. In days of old, many boats could be found plying this area for grouper, snapper, triggerfish and porgies.

However, these days are different. High gas prices and catch restrictions have diminished the number of anglers willing to make the long, expensive trip for too few fish. American red snapper, the prize of all bottom fish, has an open season of just a few days and is limited to one fish per angler. Grouper has a larger window of opportunity, but is limited to three fish and only one gag in the bag limit.

I have always preferred the offshore waters. Losing sight of land disagrees with a lot of folks, but I love it. Having just added a Pathfinder 2600 to our fishing lineup and noticing a weather forecast of variable winds of five knots, there was nothing to do but head for the Tybee Trough! The Yamaha F300 pushed us at 40 miles an hour effortlessly, and we arrived to our destination in 50 minutes.

Dropping squid and cigar minnows 100 feet down to the bottom, it wasn’t long before rods bent. We soon pulled black sea bass and vermillion snapper on board. A large triggerfish

tore the line off the reel, and an amberjack tested the tackle

to the limit. Jason put a chunk of bonito on the bottom and immediately bowed up on a big fish. Ten to fifteen minutes of back and forth and color showed: a 30-pound American red snapper! We snapped a quick picture, and the prize was vented and released.

I put a cigar minnow down and was soon bent up. I could tell the fish was large and trying, somewhat successfully, to return to the bottom and into a crevice. Back and forth we went, me gaining only by a foot or so the whole time. Soon color showed and I reeled in a nice gag grouper! This one weighed about 15 pounds and was legal, providing a little solace for having to throw the snapper back.

All in all, we ended up with a nice box of assorted bottom species, the vermillion snapper being the best catch of all. While the Tybee Trough isn’t a trip to make on a regular basis, when the variable winds come round, I think a few more visits to this impressive fishing ground may be just what the doctor ordered.

The Lovely Loon

Learn more about this fascinating bird that winters on Hilton Head Island.

Here in the Lowcountry, we get a lot of visitors escaping the cold winters of the North. Common loons flock down to our warm waters in large numbers and stay from fall to late spring. While here, they are almost unrecognizable, lounging quietly on our local waters, wearing their winter plumage.

The common loon, Gavial immer, is more com-monly associated with northern lakes, which serve as their prime breeding locations, espe-cially in the summer months. They are known for their beautiful black and white speckled backs, black head and bill and, most notably, their beautiful nocturnal singing.

While wintering in South Carolina, their colors become more muted. They have a gray upper back and white lower body, and their bill turns a gray-blue color. Loons tend to sit quietly on our salt and fresh waters as they dive for fish or just rest on the surface.

In South Carolina, we can catch glimpses of loons through our saltwater estuary systems as well as our freshwater lakes and reservoirs. They are usually found in larger bodies of water, due to the fact that they need a long runway to take off. A minimum of 30 yards is required for loons to run atop the water and beat their wings until they get enough speed to lift off. Once airborne, loons fly with precision in an unwavering bee-line flight path. They can be identified in the air due to their long, flat bodies, short tail and shal-low wing beats.

Loons are extremely powerful and agile divers. They can swim like Olympic athletes, using their powerful feet to propel them through the water. In pursuit of food, they can turn on a dime to fol-low darting fish. Loons will use their dagger bill to catch prey beneath the surface and swallow the majority of their prey while underwater. They have sharp forward-pointing projections on the roof of their mouth and their tongue, allowing

them to securely hold fish in their beak.

Loons are primarily after fish, but have been known to eat crustaceans, snails, leeches and even aquatic insects. These birds have solid bones as opposed to hollow bones of most bird species. This density affects their buoyancy with-in the water, allowing them to dive for the food they need to survive. They are quickly able to blow air out of their lungs and flatten their wings to make quick, deep dives. Once underwater, loons are able to slow down their heart rate in order to preserve their oxygen.

Interestingly, loons are an excellent indicator of water quality. They prefer areas with clear water, giving them easier access to their meals, but will go wherever food is abundant. Loons are monogamous creatures, usually staying in a bonded pair for about five years. Each year, the couples meet back up in their Northern territo-ries during the months of May and June.

The male will choose the nest spot, usually close to the water, but in a secure protected site. The pair will build the nest together, creating a mound out of organic debris. Females will lay one brood a year that may consist of up to two eggs. The eggs will incubate for about 30 days. After about 12 weeks, the parents will leave their young and fly south for the winter. The young will follow shortly after. A pair and their young have been known to consume up to a half ton of fish during their nesting period.

Keep an eye out this season for the lovely loon, which can be spotted in waters across Hilton Head Island in January and February.

As a kayak guide and instructor for almost 10 years, I often reflect on my first kayaking experience: a full-moon tour with Outside Hilton Head.

The evening began at dusk, when we loaded into kayaks and headed out into Broad Creek. The glassy water reflected the beautiful sunset to the west as the full moon rose to the east. Once the sun had totally set, I was astounded at the brightness of moon. It was so bright that I could see my shadow on the water! Needless to say, this experience sparked my love of kayaking and my interest in the moon.

The full moon occurs every 29.5 days, and the completion of each lunar cycle serves as the basis of the months in our modern calen-dar. The full moon occurs when the sun, earth and moon are all aligned so that we, on earth, see the moon fully illuminated by the sun. As the moon continues its orbit of the earth, less of it is illuminated, and the moon is waning. When the moon aligns itself between the earth and sun, it is in total darkness, known as a new moon. As it begins its trajectory back to the full moon state, the illuminated area grows, and it is waxing.

In the known universe, our moon is the largest in relation to the size of the planet it orbits, coming in at approximately one fourth the size of earth. The size of the moon and its proximi-ty to earth create a gravitational relationship that produces our planet’s tides. The moon attracts all the waters of the earth towards it, creating a slight bulge. At the same time, the moon attracts the earth itself which, in turn, cre-ates another bulge on the opposite side of the earth from the moon. Our planet rotates through these bulges and the depressions between them. Each bulge is a high tide, and each depres-

sion is a low tide.

The first evidence of human understanding of the lunar cycle can be found at the caves of Lascaux, France, where cave drawings more than 15,000 years old show the waxing and waning of the moon with dots drawn in ash. In almost every early human culture, there is evidence of a deep understanding of the moon cycle and its effect on the earth. Many times, these early cultures constructed complex myths and legends to explain the recurring activities of the moon.

Early Native Americans used the moon as the basis of their calendar, naming each full moon and using that name for the lunar cycle follow-ing it. This essentially created a year of named months. The names that Native Americans gave to each moon were based on the harvest cycle, weather and animal behavior at that time of year.

January was called the Wolf Moon, because while most animals were in hibernation, wolves were still active, and their howls dominated the soundscape. September is the Harvest Moon, because it is the ideal time for harvesting corn. November is the Beaver Moon, because it indicated the best time to put out beaver traps.

15 Golf Tips for 2015By Doug Weaver, Palmetto Dunes Oceanfront Resort

What’s your New Year’s resolution? If you’re determined to perfect your putt or refine your swing in 2015, there are many ways to maximize your game. Here are a few timely tips to help you improve your golf score in 2015:

1. Let others watch the ball. If you look up, you will not like what you see.

2. Listen for the putt to drop. When you turn to watch the ball go in, that action changes your alignment. Looking up usually happens before impact, therefore causing stroke misdirection and missing the sweet spot.

3. Tell one joke per round. The benefits of laugh-ing will lower your score. Laughing produces a sense of well-being, lowers the heart rate and stress hormone levels. It also releases endorphins that are natural pain relievers. Also, you will more than likely to be invited back to play, regardless of your score.

4. When it’s breezy, swing easy. When you swing at pace of 70 percent, you are more likely to strike the sweet spot. The sweet spot produces more distance and imparts a spin on the ball that aids in overcoming the influence of the wind.

5. Remember that golf is a game of opposites. The harder you try the worse you do. This always gets giggles, and all golfers say it is true.

6. Visit mentalgolfworkshop.com (password pal-metto). Yogi Berra said, "golf is 90 percent mental and the other 10 percent requires a lot of thinking.”

7. Watch the movie Seven Days in Utopia. Robert Duvall is the star, along with a number of PGA Tour players. Put yourself in the character of Lucas Black.

8. Attend the Free Golf Class at the Robert Trent Jones Golf Course on Mondays from 4 to 5 p.m. It’s hands-on, interactive and you may even win a prize

9. Take a golf lesson from a pro who keeps it simple. The fewer the words the better. After all, actions speak louder than words.

10. Understand that putting correctly will help your driver go farther. Golf is actually much simpler than most think. The fundamentals of excellent putting can be applied to improve your driver as well.

11. Transfer your present skills into golf. What hobbies or skills do you have? We can take the fundamentals of that skill and transfer the princi-pals in to golf. I will use typing as an example. When your posture and hand placement is done correctly, it leads to unconscious finger movement and minimal errors.

12. Read fewer golf books. An ancient Chinese proverb says, “experiencing is the best way to learn.” An effective coach will have you experi-encing successful golf with a hands-on method in much less time.

13. Trust a proven coach for all areas of your game. Jordan Speith expresses significant grati-tude to his entourage.

14. Perspire 15 minutes before you practice and play. The perspiration tells you your body has blood flowing to all your joints, ligaments and tendons and to every brain cell. You are ready to swing fluidly, creating effortless power not powerless effort.

15. Attend the Palmetto Dunes Golf Forum on February 24. This will be an evening of golf entertainment, education and enjoyment.

January and February are great months to play golf on Hilton Head Island. See you on the course!

RULES FOR THE ROAD:

Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws.

Travel the pathways at speeds that allow for the safety of pedes trians and other users.

Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles.

Please do not ride on roads where a pathway is available.

Please ride single file and keep a safe distance from other bicyclists.

WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you.

Please yield to pedestrians. When resting or stopped, please move off the pathway. Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flash light. Bicycles must have a red rear reflector and a headlight when biking at night.

When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left.

Bicyclists should always wear a helmet, especially children 12 and under.

Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the pathways.

Be courteous, alert and predictable.

RECREATIONAL PATHWAYS GUIDEThe Town of Hilton Head Island pro vides nearly 60 miles of

public path ways and nature trails for the enjoy ment of pedes-trians and cyclists.

At low tide, the Island’s 12 miles of beaches are ideal for biking. Public beaches are indicated on the Island Events’ Island Map.

Our map also shows the existing public pathways. Many kiosks are located along the pathways with an Island-wide map on one side, and a localized map of the area on the other.
