She’s a sultry Patagonianmistress, the perfect eveningcompanion as winter givesway to spring.

Full-bodied and sturdy, Malbec is a red winethat invigorates the palate. Refined throughcenturies of French cultivation, Malbec reallythrives in the sun-drenched Andean foothillsof Chile and Argentina.

To use the usual wine parlance and describeit as a “fruit forward” wine is to do a disser-vice to the Malbec experience. Sip it and loseyourself in the rhythms of black currants, redplums, raisins and blackberries as they tangoacross your palate. Even if the flavors over-power your wine vocabulary, you will neverforget Malbec’s plush, velvety texture.

Although Malbec is the perfect companion forany meal, she’s at her best when combinedwith savory grilled meats. She is the toast ofthe Asado, the great South American open pitcooking style. Like the American “barbecue,”Asado is both a method of cooking and asocial gathering. A three course mixed grillfeaturing ribs, flank steaks and Patagonianlamb, Asado is arguably the pinnacle of themeat experience. Malbec is as integral to themeal as the quebracho blanco firewood usedto impart the perfect smoky finish to the meatmelting over the flame.

For centuries, French winemakers unceremo-niously slipped Malbec into Bordeaux blends,letting Merlot and Cabernet steal all the fame

and glory. Althoughviticulturists intro-duced the grape toSouth America inthe late 19th cen-

tury, the world would have to wait 100 yearsbefore wine growers in the Andean foothillsshifted production to premium wine for theglobal trade. In the last decade, Argentineand Chilean Malbec’s have captured theattention of many wine aficionados in boththe Old World and the New World.

Even in the United States, winemakers appre-ciate working with the high-altitude Malbecs.The ancient soils, low atmospheric pressure,sun-drenched days and misty nights of theAndean foothills combine to form a uniqueterroir. Because Chilean farmers harvest theirgrapes in April, North Americans are able tocrush and press midyear, thus producing greatwines beyond the traditional harvest season.

Although most companies offer online book-ing, property managers are just a phone callaway. They are there to assist you in choosinga property, providing directions, securing travelinsurance and offering advice on activities andlocal favorites.

Although mucky and smelly, the saltmarsh is an important part of theLowcountry.

In actuality, the salt marsh producesmore food for the environment thanrain forests. The green grass thatdominates the marsh is called saltmarsh cord grass or Spartina. Whenthis cord grass dies each winter anddecomposes, its nutrients are releasedinto the marsh mud, creeks, streamsand even into the ocean. Thesenutrients begin the food chain for theentire Southeastern coastal area.

How do you know when spring is right aroundthe corner? When the sweet scent of CarolinaJessamine fills the air.

Cold weather, say hello to the beautiful yellowblooms of Carolina Jessamine, which is knownby many names: Yellow Jessamine, CarolinaJasmine and even Woodbine. Jessamine andjasmine are interchangeable names, so it isproper to call the flower by either title.

This gorgeous blossom is found throughoutthe Southeastern United States, from Virginiato Florida and as far west as Texas. A warmweather plant, Carolina Jessamine thrives asfar south as Guatemala. This twining vine lovestemperate tropical environments. It grows wellin both partial shade and full sun, but definite-ly needs a moist environment to flourish.

Found commonly in the tops of pine trees,this vine can grow to be 10 to 20 feet tall. Itwill climb up almost anything, but is known togravitate towards trees, lattices and fences. Itcan also develop on roadside shrubs and serveas a beautiful ground cover. This highly adapt-able, persistent grower does not have anyrecorded diseases or pest problems.

An evergreen that can be identified all yearround, Yellow Jessamine is known to flower inlate winter and early spring with yellow trumpet-like flowers. The flowers will form in small

clusters and, at times, may have an orangecenter.

The vines themselves are twisted and red-dish in color. The leaves are waxy, longand pointed – usually a dark green thatwill eventually blend into a deep purple

hue. The flower has a very strong sweet smellthat signals the onset of spring. It also producesnectar that attracts bumble bees, Eastern TigerSwallowtails, Cloudless Sulfur butterflies, andEuropean honey bees.

While these species are able to easily accessthe nectar, all parts of the plant can be con-sidered highly toxic. The flower, leaves andstem are poisonous to livestock and are thoughtto cause an allergic reaction in people iftouched. However, Carolina Jessamine wasused by Native Americans to alleviate pain,and is used today to treat measles, tonsillitisand headaches. The toxicity of the YellowJessamine was a genetic development createdin order to stop herbivores from eating theflower before it was able to produce a seed.

This beautiful flowering vine can be found inevery “nook and cranny” of South Carolina,which is just one of the reasons why theGenerally Assembly declared it to be the Stateflower of South Carolina on March 14, 1924.Yellow Jessamine serves as a symbol of con-stancy, loyalty and patriotism in the PalmettoState. Take the time this season to appreciateSouth Carolina’s beloved state flower and toenjoy one of the first signs of spring.

Understanding the Saltmarsh

The saltmarsh – the vast, low-lying grassyfields that frame the winding channels andcreeks on the leeward side of Hilton HeadIsland – teases all the senses. Depending onyour perspective, you can see it, smell it, hearit, taste it and feel it.

I often write about what you can see: thebirds, the dolphins, the often-overlooked tinycreatures scampering through the marsh. Inthis article, I encourage you to become awareof the aromas that permeate our special placein the Lowcountry.

The first sense to be stimulated while crossingthe bridge onto Hilton Head is often olfacto-ry, especially when the tide is low and theoyster beds and mudflats are exposed. Whatis that smell? Do you think it is pleasant? Orrather pungent? Whatever you think, it is mostcertainly distinctive!

The special aroma of the saltmarsh is notpollution, but rather a natural by-product ofa healthy and thriving eco-system. While saltbreezes add zest, the most significant contrib-utor is the pluff mud.

So, what is pluff mud? It’s the glisteningribbon of brown that lies between the base ofthe grasses and the water’s edge. It is oftencovered at high tide. As the story goes, pluffmud derives its name from the sound it makesas you extract your hand or foot from its grip.It is soft and warm and smooth. At the baseof the grass, the mud is firm and more claylike;

at the water’s edge it is loose and slippery.

Pluff mud acts as a sponge, absorbing therush of the incoming tide and draining as thetide ebbs. This unique combination of water,topsoil sediment, clay and decaying organicmatter is stirred and settled by the ever-changing tide, enriching and fertilizing thesaltmarsh while supporting the grasses andoyster beds. Pluff mud is oxygen-poor, contin-uously forming gases within the mud. Whendisturbed or exposed, anaerobic bacteriarelease hydrogen sulfide, which is the sourceof the smell that many describe as that of“rotten eggs.”

Please note that it is highly inadvisable toattempt to step into or walk through pluff mud.It is often quite deep and can be extremelydifficult to extricate yourself from.

The next time you visit the waterways thatsurround our island, take a moment or two toclose your eyes and breathe. I may not haveshifted your olfactory opinion, but I do hope Ihave increased your understanding of thepungent fragrance that wafts through the air.It always smells like home to me!

Take one more club than usual from thatdistance and avoid allowing your weightto shift to your toes. Your swing plane willalready be steeper than normal, making iteasy to lose your balance and fall forwardif your weight is on your toes. Right-han-ders should aim to the left of the target toprepare for the ball to go right.

3. Forward Foot Higher Than The Back FootIn this scenario, your backswing feels easybecause your club and body are movingdownhill. However, your downswing andfollow-through must be exaggerated tohelp you transfer your weight to the forwardfoot. Practice getting to your finish withyour normal tempo and rhythm. This shotwill fly higher and shorter than usual, sotake one club more to compensate.

4. Forward Foot Lower Than The Back FootThis shot can go farther than you wouldimagine. The key is to practice your back-swing so that you get the normal weighttransfer to your back foot. After impactyour weight will transfer forward downthe hill and you may lose your balance,but this is OK. Allow your swing to finishand take a step forward down the hill.

Walter Hagen, the five-time PGA Championship winner,mentioned that even in the tournaments he won, hewould embarrass himself by hitting terrible shots thatmade him angry enough to kick his bag and shout.However, he got over it and was thinking clearly beforehe executed his next shot – which was often brilliant.

While Hagen expected the best, he was prepared for theworst. Sidehill lies are a worst-case scenario for manygolfers because they are rarely practiced. Here are sometips on preparing for those shots, so you can perform a Hagen-like recovery when you find yourself in anawkward lie.

For all shots hit from uneven, sidehill lies, the samebasics apply. First, find your balance by leaning on yourtoes, then shifting your weight to your heels. Find a pointin between where your balance feels like it is under yourshoestrings. Once you find your balance, make multiplepractice swings to allow your body to adjust to the feel-ing of that particular shot. When you're ready to hit, askone of your playing partners to watch where your ballgoes so you can focus on making solid impact andswinging under control.

In addition to these general tips, keep the followingspecifics in mind for these different types of trouble shots:

1. Ball Above Your FeetGrip down on the club in order to maintain your basicposture. You may lose distance, so consider taking moreclub. Remember that the ball flight tends to go in thedirection of your body, so for a right-hander you’ll prob-ably hit the ball left. Your swing will feel flatter, but trustit and make a confident, controlled swing.
