The busy season is over, but the beaches are still warm, the breeze is still blowing, and all kinds of activities, from kayaking to zip lining, are just waiting to be enjoyed. Now you can discover our little gem of the Lowcountry with-out the traffic and lines.

Since the extreme heat of the summer is gone, there’s no better time to go out on a dolphin tour or fishing charter, explore the waters by boat or stand up paddleboard and the land by bike. With over 50 miles of public pathways, it’s no wonder the League of American Bicyclists named Hilton Head as one of the top 25 bicycle-friendly communities in the United States. So be sure to jump on a bicycle, go on an adventure and discover all the great restaurants and shops along our coast!

Whether you’re looking to dine out and savor fresh seafood at one of the many waterfront restaurants along Broad Creek, grab an ice cream and relax on the beach or eat out with your entire family at an outdoor café, Hilton Head Island is sure to please with its array of eateries offering everything from Mexican to Mediterranean food.

Many think that all bubbly wines are Champagne, but they are not. All bubbly wines are sparkling wines, but not all spar-kling wines are Champagne. Champagne is delicious but it can be very pricy and there are other tasty bubbly alternatives that are not quite so pricy. Let’s explore!

F irst, it is important to learn where the bubbles come from: sparkling wine is made by taking the simple formula for fermentation (sugar plus yeast converts to alcohol and carbon dioxide), and not allowing the resulting gas to escape. This secondary fermentation occurs in a closed or sealed environment, so the carbon dioxide returns into the wine, only to be released in the form of tiny bubbles after opening. However, some less expensive sparkling wines are just regular wines that do not undergo a secondary fermentation process; they are just directly injected with carbon dioxide.

There are several reasons why genuine Champagne is so pricy. For one, laws require that it can only originate from the relatively small and world famous Champagne region of France, creating high demand. Champagne can only be made with chardonnay, pinot noir and the pinot meunier grapes and must go through a process called the Champenoise Tradition Method. This process has strict regu-lations that require the wine undergo secondary fermentation in the bottle for at least 15 months. This means that the Champagne is kept in the bottle with the sediment that is formed, while the bottles are gradually turned and inverted to remove the sediments. This process is extreme-ly tedious but it allows the wine to ferment under high pressure creating the fine, persistent and sharp bubbles that make Champagne famous.

Allowing the wine to stay in contact with the yeast sediments also creates its distinct toasty, biscuity flavor. Since most Champagne is intensely dry with high acidity, it pairs wonderful-

ly with shellfish, raw bar, pickled vegetables and crispy fried appetizers.

But onto some more affordable alternatives:

Prosecco is an Italian sparkling wine from the Veneto region in the northeastern part of Italy, produced from the prosecco or glera grape. It also undergoes a secondary fermentation to capture the carbon dioxide and produce bubbles, but with Prosecco it takes place in large stainless steel tanks with less pressure. Therefore Prosecco bubbles are lighter, frothy and spritzy with less persistence. It tends to have more fruit and flower aromas, which are a product of the grape, and is a very forgiving and food-friendly wine that pairs well with stuffed mushrooms, creamy sauces, almonds, seafood, fried fare and spicy Asian entrees.

Cava is another delicious less pricey sparkling alternative from Spain. Like Champagne, it is produced using the Champenoise Traditional Method, making it the most Champagne-like sparkling wine outside of France. But unlike Champagne there is more leeway regarding the types of grapes that can be used and the regions from which it can be produced. Cava bubbles are similar to Champagne, but the flavor is fruitier and more aromatic.

Most people assume sparkling wines are only for special occasions, but as you just learned they can be affordable and pair very well with foods. So next time you dine out, don’t be afraid to add some bubbles to your meal.

T he last 60 years have seen, to put it mildly, incredible change on Hil-ton Head Island. And Coligny has

been there through all of it. Starting as a single corner market, Forest Beach Market, Coligny’s story begins on an island with just a single-lane dirt road and no bridge. Just six short decades later and that little market has grown along with the island to serve as downtown to a bustling resort paradise, and we call it our Coligny.

A journey like that deserves a celebration. And Hilton Head Island’s downtown, where the island’s best dining, shopping and enter-tainment calls home, has put together a 60th birthday blowout of historic proportions.

“It’s not just a celebration of Coligny, it’s a celebration of how far we’ve come,” explained JR Richardson, whose family has run Coligny since the beginning. “Really, it’s a celebration of Hilton Head Island. Since we’re Hilton Head Island’s downtown, this is everyone’s party.”

The festivities kick off September 12 in a daylong extravaganza that they’ll be talking about until it’s time to start planning the 70th birthday.

Monty Jett, an icon in his own right, will serve as emcee from 4 to 7 p.m. at Coli-gny’s center stage, keeping the fun rolling, leading the crowd through shag lessons and handing out prizes from Coligny’s staggering array of shops and vendors.

“The beach is a huge part of Coligny’s past, present and future,” explained Richardson. “So we’re excited to get the crowd dancing to the best beach music. And we’re even more excited to see how all of our shops have come through in providing some amaz-ing prizes.”

Some of those amazing prizes will be doled out through an exciting raffle (you need not be present to claim your prize, but really there’s no reason to be anywhere else during the biggest party of the year). And a grand

Not that folks need much of a reminder of how special Coligny is. The thing about having a 60th birthday party is you have to have been around a while, and as far as Hilton Head Island goes, Coligny’s been there from the start.

“There was just a single lane of dirt road on

the island when my father, Norris Richardson, arrived with an eye to build the island’s first grocery store,” said JR Richardson, whose father brought him to the island in 1955. “We shipped all the materials to build Forest Beach Market by barge.”

JR added with a chuckle, “One of our first customers was Charles Fraser, a young man who was at that time building this place he called Sea Pines.”

Forest Beach Market would eventually ex-pand, forming the nucleus of a downtown for the tiny island that featured a barbershop, ice cream parlor, the island’s first pharmacy and the South End’s first post office. It eventually became Coligny, birthing a mission to serve as Hilton Head Island’s downtown that JR and Leslie carry on to this day.

“It’s humbling to have been a part of this special place that has called the island home for 60 years,” said Lois, Norris’ wife and JR’s mother. “And I’m tremendously excited about the birthday party we have planned. This is going to be something truly special. And JR, Leslie and I will be there to cut the cake!”

Scarves are the perfect transition from summer to fall fashion. They’re light and airy and can be worn a million different ways – around your neck, your waist and even head. Plus, they’re the perfect accessories to pair with the summer clothes you’re still wearing while shifting into your fall wardrobe, and look adorable doing it. Here are some new ways to wear your scarf this season:

4. The Side Knot

Scarves make perfect headpieces – they can keep you cool or warm depending on the fabric – and they look adorable. Take the scarf and place it on your head with the longer ends falling over your shoulders. You want to level off where the scarf will hit your forehead. Then twist each side of the scarf outward until it looks like you have two pigtails. Once you’ve done that, twist those ends together and tuck in the ends of the scarf to hold it in place, creating a cute site knot.

1. The Poncho

Since it’s not cold enough to break out all your cute coats and cardigans, the perfect solution is to use a scarf as a cardigan! Untwist and unwrap your scarf and drape it over your shoulders, like a shawl. Adjust and finish this look off with a cute belt.

2. The Bow

A cute, yet loose way, to wear a scarf during the early fall, is to make a bow. Place the scarf around your neck even-ly so both ends are in front. Then, all you need to do is tie the scarf like you would a shoe to create a bow. Length is up to you and your style.

3. The Braid

If you’re looking for a fun, easy twist on the typical double loop style, then consider braiding your scarf. First, fold your scarf in half and loop in around your neck. Instead of pulling the two ends through the loop, you’re going to weave them. Take one end of the scarf and weave it over and through the loop and then take the other and weave it under and through the loop.

In the summer, dozens of female loggerhead sea turtles drag them­selves onto local beaches, crawl above the high tide line and dig a nest. After laying more than a 100 eggs, these 300­pound rep tiles make their way slowly back to the ocean.

Following a 60­day incu ba tion period, the hatch lings wait for night fall and then race towards the water, using the moon and stars as a guide.

Extremely sensitive to light and move ment,

the females will turn around without nesting if disturbed while on the beach. On the other hand, baby turtles are attracted to light and will head towards the source rather than the ocean.

To protect this threatened species, both Hilton Head Island and Beaufort County have “Lights Out For Turtles” ordinances.

From May 1 through October 31, no light stronger than 60 watts may be visible on the beach from 10 p.m. to 6 a.m. It is a federal offense to harass sea turtles or disturb their nests.

Visit the King Neptune Statue at Shelter Cove Harbour

The towering 12-foot bronze statue of Neptune, which doubles as a larger-than-life sundial, serves as an iconic symbol of Shelter Cove Harbour at Palmetto Dunes, welcoming visitors to the entrance of the popular waterfront dining and shopping location.

Designed and installed by sculptor Wayne Edwards, this much-loved statue serves as a tribute to Neptune, the Roman god of the sea. The King Neptune statue, which depicts a bearded Neptune holding his signature trident, serves as a popular centerpiece at Shelter Cove Harbour. The statue is strategically mounted on a circular base with numbers around the edge.

When the trident’s shadow falls across the 26-foot wide base, the numbers indicate the pre cise time. Hailed as the world’s largest figurative sundi al, the statue was origi nally cast at a foundry in Princeton, New Jersey and shipped by truck to Hilton Head Island in 1983. Engineers made meticulous measure-ments before the one-ton statue was installed,

ensuring that it would be located at the ideal angle to indicate the time.

They oriented the sculpture towards true south by aligning the constellation Ursa Major with the North Star.

An official dedication for the statue was held at Shelter Cove Harbour on August 11, 1983, attracting residents and visitors alike. Today, the King Neptune statue delights gen-erations of visitors to Shelter Cove Harbour, impressing adults and children of all ages. Stop by to see King Neptune in person and to expe rience a true Hilton Head Island icon.

This much-loved statue serves as a tribute to Neptune, the Roman god of the sea.

Fall is a special time here in the Lowcountry for many reasons: the weather is better, the crowds thin, and the bull redfish swarm inshore waters. The bulls, 20 to 50 pounds, are here or off-shore all year. But this time of year they come close in big numbers, with catches of 20 or more fish in a trip not at all uncommon.

The strength of these fish is incredible, rivaling any other fish its size, short of an amberjack or tuna. I usually fish heavy spinning reels with 50-pound braid and even a heavy drag, and the bulls will strip line off at an alarming pace, and do it several times in a battle. I have fished lighter tackle but the lengthy battle takes a toll on these big fish, which must be released, as the law states that everything over 23 inches must be returned to the water.

The smaller redfish also invade the creeks this time of year offering the best light tackle sport available. Shrimp, live or dead, cut mullet and menhaden are all favorite baits when fishing inshore. The “slot” or keeper size is 15-23 inches and by South Carolina law you may keep three per person. Not only a blast to catch, but they also eat very well. Before Chef Paul Prudhomme introduced “blackened redfish,” these fish were locally known as spot tail bass or

puppy drum, but their proper name is red drum.

Coloration is usually a deep burnt orange or copper across the back with a single spot at the base of the tail. Some fish have multiple spots from the tail to the middle of the fish. A strong broad tail and thick shoulders give it all the horsepower it needs to make your day.

Good conservation and our local mariculture center have provided some of the best stocks of redfish I have seen in 40 plus years of fishing this area. Al Stokes and his crew at the mari-culture center have been boosting the local population with their work for years. The proof is in the pudding and whether you want to light tackle redfish in the creeks or chase the big bulls, now is the time.

Throughout most of the year on Hilton Head, butterflies can be seen gathering nectar or flying along roadsides and waters edges. The fall in particular is a great time to spot butterflies along their migrations. These beautiful creatures come in a spectacular range of colors and the gulf fritillary is no exception, with its bright orange wings and iridescent silver spots.

Gulf fritillary butterflies, Agraulis vanillae, get their name from their great migration southward over the Gulf of Mexico. They are also known as the passion butterflies because of their affinity to passion vines. These brush-footed butterflies have small hairs along their legs to smell and taste with and are considered to be a medium- sized butterfly, with a wingspan that can reach up to three and a quarter inches. With long narrow wings that are mostly orange with black and silver markings, the gulf fritillary butterflies are commonly mistaken as monarch butterflies, but they are much smaller and can be mostly distinguished by their iridescent silver spots.

They can be found in a number of natural sunny spaces, from fields, open wooded lands, and pastures to yards, parks and even beaches. They are mostly located in the southern states of the United States, yet they have been found all the way up to San Francisco and even into South America. These butterflies have seasonal distributions, heading north for the summer breeding months and then south for the win-ters. In our area, gulf fritillaries begin one phase of their seasonal migrations in the fall. They head southward, whether over the Gulf of Mexico or into parts of Florida and winter in

areas where it does not frost over. When the spring hits they move back into our areas and northward to form breed-ing colonies.

Female gulf fritillaries can produce multiple generations each year. They will only lay their tiny yellow eggs singular-ly on the leaves, stems and tendrils of the pas-sion vine. The larvae,

once hatched out of the eggs, will reach up to four centimeters long. They are bright orange with black spines. The spines are not poisonous to the touch, but are poisonous if consumed by predators. The larvae will feed on the passion plant host, at times almost com-pletely destroying the plant. After about 30 days, the larvae form into the pupa stage. They hang upside down on the passion plant and create their cocoons. The pupa look very much like the other dead leaves on a passion plant. They are brown and can reach up to three centimeters long. They will stay in this form between 10-20 days, before they emerge as a beautiful butterfly. Once fully grown, the butterflies will eat nectar from flow-ering plants such as lantana, shepherds nee-dle, cordias and composites.

In Hilton Head it is very easy to cultivate and encourage the reproduction of these beautiful butterflies. Planting many different passion vine plants in your garden is a great step to attract them to your yard. Take note on the type of passion vine because a couple of species are poisonous to the gulf fritillaries, such as the red passion vine. Make sure that you plant a few of them, because once the larvae hatch, they are ravenous.

September in the Lowcountry is a great time to get outside, take advantage of cooler temperatures and eat some great seafood. It’s at this time of year that the popular white shrimping season hits its peak, and everyone has a great opportunity to see, catch and eat these delicious little animals.

Classification of “shrimp” is a hot debate in the scientific community, with wide disagreement on the classification of various species. The term “shrimp” is generally used to identify crustaceans whose bodies are designed for swimming rather than walking. Shrimp have powerful swimming tails, but delicate walking legs, unlike their cousins the crab and the lobster. Different species of shrimp are found in waters around the world, in both freezing arctic waters and balmy equatorial regions. Regardless of their locale, shrimp form a crucial link in the aquatic food chain; supplying dense protein source to fish and whales, while cleaning their environments by consuming detritus of decaying plants, animals, sponges and corals.

Here in the Lowcountry, we have two significant shrimp species: brown and white. Both spend the majority of their lives (one to nine years) cruising the ocean floor at depths up to 500 feet. In late winter, once the ocean reaches a warm enough tempera-ture, they begin to spawn. An average female will lay one million eggs each time she spawns, and will spawn at least three times a year. The male fertilizes the eggs as they are laid, and the millions of microscopic shrimp begin to grow.

Once they reach a certain size, the free-floating larval shrimp are pushed by the tide into shallow marshy areas. Here they have plentiful decaying matter to eat, develop their swimming legs and get larger. Now big enough to be seen by various predators, the growing shrimp use the nooks and crannies in the spartina grass as safe hiding places. As fall temperatures move in, the now adult shrimp

begin their journey back to the deep ocean, using wind and currents to move most effectively.

Shrimping season in our area opens in early spring, when scientists determine that the spawn-ing season has ended. The season runs until December, when spawning begins again. But it is in the fall that the large groups of new adult shrimp are waiting to be washed out to the deep ocean, and are the main target for shrimpers.

Shrimp have been a valuable food source in our part of the country for a very long time. In fact, the oldest fossil record indicates human consumption of shrimp dates to 600 AD and was found along the Carolina coast. Native Americans living in and around our local area created sophisticated shrimping methods – using Spanish moss and plant fibers to create nets and traps. Americans’ appetite for shrimp has continued to grow, and in 2002, shrimp became the most consumed seafood per capita in the United States. The growing demand led to overfishing of shrimp worldwide, and the development of shrimp farms, particularly in Asia.

Most consumer available shrimp comes from farms where it is harvested and frozen. Here in the Lowcountry, fresh caught wild shrimp is available most of the year, and often can be purchased within minutes of coming off of the boat. It is a definite perk of this part of the country that all visitors should take advantage of. Despite being incredibly delicious, local wild shrimp are very healthy. They contain the powerful antioxidant astaxanthin along with vitamins B3, B5, B12, A, E, zinc, iodine, omega 3 fatty acids and heart healthy selenium.

1. The ball goes farther because the fairways are firmer, the grass can be cut lower and the rough is not as high. You will have lower scores with less stress because of longer drives and shorter putts.

2. You have more energy for after the round activity. Due to milder temperatures, you will be more energetic for going to the play or out to dinner with friends.

3. The breeze is refreshing and can make a long hole short and a short hole long. It makes you become more creative in your shot making, can influence the distance and direction of your shot and make a simple shot a challenge.

4. Leaves are not falling on our fairways. In the North, many courses are blessed with changing colors and leaves falling to the fairway, hiding your golf ball. But not here! We mainly have live oak trees, which are green year around.

5. Prices go down on Saturday afternoons and the pace of play is fast.

6. You can golf and hit the beach in the same day with less perspiration and no longer have to worry about afternoon showers interrupting your game.

7. New equipment often goes on sale. It’s just like buying a car at the end of the year; manufacturers and pro shops want to move their clubs.

8. There’s a faster pace and more experienced golfers. I call it the “Dance of the Golfer.” The experienced golfer can play without a stressful pushing of the pace of play that cost them strokes. Learn the “Dance of the Golfer” by attending a golf school and you will play faster with less stress, more smiles, fewer golf balls and lower scores.

9. You deserve a reward for a job well done. You’ve worked diligently to meet your 2015 goals and you are on schedule or even ahead. Charles Fraser, the founder of modern day Hilton Head Island, said that he wanted the Hilton Head Island experience to be one that peo-ple would leave rested, refreshed and ready to return home to be a better citizen and employee, therefore contributing to the success of their local community, state and nation.

RULES FOR THE ROAD:Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws.

Travel the pathways at speeds that allow for the safety of pedes trians and other users.

Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles.

Please do not ride on roads where a pathway is available.

Please ride single file and keep a safe distance from other bicyclists.

WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you.

Please yield to pedestrians. When resting or stopped, please move off the pathway.

Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flash light. Bicycles must have a red rear reflector and a headlight when biking at night.

When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left.

Bicyclists should always wear a helmet, especially children 12 and under.

Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the pathways.

Be courteous, alert and predictable.

At low tide, the Island’s 12 miles of beaches are ideal for biking. Public beaches are indicated on the Island

Events’ Island Map.

Our map also shows the existing public pathways. Many kiosks are located

along the pathways with an Island-wide map on one side, and a localized map of

the area on the other.
