On December 14, the Hilton Head Choral Society presents “The Soundsof Christmas: Joyeux Noel” at First Presbyterian Church. Join the ChoralSociety, orchestra and guest artists for an unforgettable evening of hol-iday favorites. Jazz lovers won’t want to miss “Home for the Holidays,”a special live performance featuring the classic songs of Johnny Mercer,Irving Berlin and Cole Porter at the Jazz Corner on December 21 and 22.

Ingredients:2 Quarts of Water1 Shrimp Boil Spice Pack1 Pound Large, Headless Shrimp (26-30 Size),

With Shells On1/4 Cup Roasted Corn Kernels (about 1/2 Ear),

Cut From The Cob2 Tablespoons Chopped,

Fresh, Flat-Leaf Parsley2 Tablespoons

Chopped Scallions1 Teaspoon Lemon Zest1 Cup Bread Crumbs

1/4 Cup MayonnaiseKosher or Sea Salt and Freshly, Ground Pepper To Taste

1 Egg, Beaten1 1/2 Tablespoons Canola Oil

Directions:In a 3 quart saucepan, bring the water and shrimp

boil spice pack to a boil over high heat. Turn the heat

off. Place the shrimp in the heated water and let stand

for about two minutes or until shrimp are pink. Drain

and run under cold water to stop the cooking process.

Peel and de-vein the shrimp. Chop the shrimp into

chunks or coarse pieces, yielding

1 3/4 cups chopped shrimp.

Combine the shrimp, roasted

corn, parsley, scallions and lemon

zest in a large bowl. Mix in the bread

crumbs and

mayonnaise.

Sprinkle with

salt and black

pepper to

season.

Gently fold in the egg with a wooden spoon

or rubber spatula. Distribute evenly.

Shape the shrimp mixture into 4 patties,

3 1/2 inches in diameter each. Wrap the

patties in plastic wrap and let sit in the

refrigerator for a half hour.

Remove the patties from the refrigerator and

unwrap. Heat the canola oil in a 12-inch

skillet over high heat until it gleams, add the

patties and sauté for about 3 minutes per

side or until both sides are lightly browned.

Place the patties on a paper towel-lined

plate to soak up excess oil.

Serve on toasted roll

with lettuce, tomato

and tarter sauce.

Serves four.

Cook time: 20 minutes

Stand time: 30 minutes

Prep time: 15-20 minutes

‘Tis the season. In the month of December, Ican’t help but think of all the many gifts to begrateful for. Over the course of my life, I’vereceived many incredible gifts. However, onegift stands out in my memory and has affectedthe course of my life in profound ways.

Forty five years ago a man entered my life, aman I have since called Dad. Now, any guycan be a father, but not all fathers are realDads. This man’s name was Kent Willard, andfrom the day he stepped into my life, he treatedme like his own, if not better.

Kent loved fishing and frequently took mealong. I remember one of our first trips on theColumbia River in Oregon, fishing for trout. Ihad never used a spinning reel before, and hewalked me through the procedure carefully. IfI remember correctly, it was a Mitchell Garcia300 and we fished with salmon eggs.

My first solo attempt at casting produced anasty snarl, which Kent patiently straightenedout for me. We went through the steps againand again.

After a few more snarls, followed by moretutoring, he proclaimed, “The next time you dothat, just go sit in the car!”

Needless to say, it was only minutes before I wassitting in the car. To this day, Kent and I laughabout this incident.

I love the part when he says, “I looked aroundand Miles was nowhere to be found. Then I

saw him in the car!” He apparently wasnot as serious as he sounded to myyoung ears, for he came and got me out

of the car as soon as he saw me. We resumedfishing and had a great day, the first of manymore to come.

Being a Navy man, Kent took me fishing allover the country and instilled a love of anglingand the outdoors that has lasted a lifetime. It’sbeen one of my deepest joys in life to sharemy love of fishing with younger generationsand kids of all ages. Fishing truly is a gift thatkeeps on giving.

These days, I try to give that same gift to my ownson, Caleb, but these are different times by anymeasure. Technology has been a major game-changer. When I was growing up, we didn’thave Wii, Game Boys, PSPs and computers.Often, I have to literally drag my son away fromthese distractions to take him fishing with me.

In hindsight, I think that maybe I’ve done toomuch of the work for Caleb. Often, I hook thefish and let him reel it in, not giving him thechance to “go to the car.” However, there’sreason to be optimistic. On our last trip, Calebcasted, hooked and reeled in two nice slot red-fish. The look of pride and the smile on his facegave me hope that maybe, just maybe, he isgetting the gift after all!

The wood duck stands apart as one of NorthAmerica’s most beautiful waterfowl. Today, thesebirds are one of the most common nesting water-fowl in the United States. Although they can bespotted in South Carolina year round, wood duckscome to winter on Hilton Head Island during thecolder months. Once on the decline, these water-fowl are now thriving in large numbers.

Aix Sponsa, the scientific name of the woodduck, literally translates to mean “birds in bridaldress.” The male wood duck has multicolored,iridescent plumage, which is quite distinct. Thefemales tend to be much more mottled in color,with a defined white ring around their eyes. As inmost bird species, the male birds are more bright-ly colored in order to attract females. The femalesremain earth-toned in order to camouflage themas they sit on the nest and brood their ducklings.

Wood ducks can be found throughout the coastalareas of the United States. They live in freshwaterwetlands, wooded swamps, lakes, rivers and oldgrowth forests. They tend to be most prolific inthe Mississippi Alluvial Valley. Wood ducks areefficient fliers in wooded forests and have clawsthat allow them to grip bark and perch in trees.

These waterfowl generally feed in shallow waterareas as well as on the forest floor. They areomnivores who consume fruit, nuts, insects,invertebrates and aquatic plants. Hatchlingsmost commonly feed on high-protein diets,adding in plant materials once they reach sixweeks in age.

Cavities in trees serve as preferred nesting areasfor wood ducks. They may even nest in abandonedwoodpecker cavities. A pair of wood ducks willchoose a cavity in a deciduous forest in close

proximity to freshwater. They prefer the cavity tobe 30 feet or more off of the ground in order toprovide safety for their nest. The nest consists ofwood chips lined with soft down.

A wood duck female will lay up to 12 eggs once ayear, incubating the eggs for approximately 30 days.The ducklings will leave the nest approximately70 days after hatching. They drop out of the nest,either into the water or onto the ground, withoutknowing how to fly. They will begin to fledge 10weeks after dropping out of the nest. The motherwill protect them, until they have fledged.

Wood ducks were on a serious decline in the late1800’s and early 1900’s due to over-hunting. TheFederal Migratory Bird Treaty Act created stricterhunting laws and habitat protection. This Act ledto a subsequent rise in the wood duck population.

In the 1930’s the first wood duck box was created.Today, wood duck boxes can be found through-out the U.S., placed in specific freshwater habitats.

Bald Eagles

By any measure, Lowcountry tidal salt marshesare dynamic environments throughout theyear. Populations of dolphin shift, migratingbirds return, fishing strategies change andgrasslands alternate between verdant greenand rich gold.

In December, one particularly welcome sight isthe majestic Bald Eagle. Soaring with intention,wings spread flat and wide, this raptor’s iden-tity remains uncertain until I see the flash ofwhite on head and tail.

Bald Eagles begin their return to the coastalLowcountry in late August, having spent thesummer months in and around the ChesapeakeBay. They are our earliest nesters, re-establish-ing their pair bonds, engaging in courtingbehaviors and cooperatively refurbishing theirnest in late fall and early winter.

Typically, two eggs are laid in huge nests mostoften built in crags of dead (or minimally foli-ated) trees high above the ground. Both maleand female care for the eggs, carefully foldingtheir talons under their feet to prevent piercingthe precious eggs.

Incubation generally continues for a month.Bald Eagle chicks are nurtured by both parentsand remain in the nest for another two moremonths or so. Fledglings prepare to leave thenest in March and April. What a sight to see,in early spring, the stretching and flapping ofthe fledglings as they prepare to fly off ontheir own.

Fledges, by the way, are adult-sized when they leave the nest.

And, with the additional down and somewhatlonger tail (all the better for the first flyinglessons!) they appear to be even bigger thanthe adults. The distinctive white head andwhite tail are adult plumage. Generallyspeaking, it will be several years before thejuveniles acquire this signature plumage.

My first sightings of the Bald Eagle this yearoccurred in late August. I was delighted towatch, on one occasion, a single bird circling50 feet above the surface of the water. Then,with clear intent, the eagle focused on a singulardisturbance on the calm water. Extending bothlegs then talons forward, it swooped down andcaptured a fairly large redfish from the river.

While it’s not unusual for me to see eagles onHilton Head Island, I rarely see this behavior inour area. To the best of my knowledge, eaglesprefer carrion, or dead stuff. Researching this,I learned that eagles prefer live quarry duringmating season and in the off-season becomerather lazy and shift their diet to carrion.

When the U.S. Open was played at PebbleBeach’s course on the side of a hill goinginto the Pacific Ocean, Graeme McDowellmade several key adjustments on his uphilldownhill shots to set up his victory.

Hilton Head Island’s topography tends to belevel, in keeping with the flat coastal plainthat defines the shoreline, but our local golfcourses have plenty of challenging hills,slopes and bunkers to vex players of all skilllevels. Here are a few quick and easy tips tokeep in mind when you find yourself playingon a hill or testing your mettle on a less-than-level playing surface.

For all side hill shots, follow these threeimportant steps:

1. Match your shoulder tilt to the slope. 2. Make several complete practice swings to

allow your body to adjust to the feeling of that particular shot.

3. Swing within yourself and the frame of your body.

Playing uphill is a very different experiencethan playing downhill, although each situa-tion presents its own unique challenges. Whenthe forward foot is higher than the back foot,your back swing feels easy because your cluband body are moving downhill. However, yourdownswing and follow through must be exag-gerated to help you transfer your weight andswing to the forward foot.

In your practice swings, make sure you get toyour finish with your normal tempo and rhythm.Remember to finish with your back foot on the

tippy toe. This shot will fly higher and shorterthan usual, so consider taking one club moreto make up the distance.

When the forward foot is lower than the backfoot, the back swing feels difficult and limited.The key is to exaggerate your back swing sothat you get your normal weight transfer to yourback foot. The transition to your downswingshould be more natural as you are now movingdown the hill.

After impact, your weight will still be movingdownhill and you may lose your balance.Remember that this is o.k. Allow your swing tofinish and, if necessary, take a step forwarddown the hill.
