Why Should I Juice?
Raw food and Juices are nature’s fast food, and without question the key to
optimal health, a slim body, clear skin, tons of energy and a strong immune
system, enabling us to stay disease free. Mother earth provides all we need to
live in health and harmony!
Basically, juice is the liquid and a whopping 90% of the nutrients from fruits &
vegetables. When we make fresh juices from raw ingredients, all of the
nutrients stay intact and are delivered immediately to every living cell in our
body.
Fresh fruits and veggies are full of essential enzymes which we need in order
to digest our food properly, and deliver the nutrients effectively. When we
cook food we kill these enzymes, but most of us do not wish to eat raw
veggies, so what better way to get these amazing life giving nutrients than to
juice them? And by adding some sweeter tasting ingredients, we can hide
the earthy taste of greens.
When we make fresh juices we extract only the liquid nutrition from the
vegetable or fruit and eliminate the fibre. Fibre or pulp is indigestible for us, so
without that getting in the way, the vitamins and minerals go straight to feed
our cells – magic!
Drinking raw juice is the most easily absorbable form of nourishment we can
get and the fastest route to optimal health and healing.
Enzymes are living nutrients and present in all raw organic fruits and
vegetables. Drinking juice is a great way to take advantage of viable
enzymes. Enzymes are enabling our digestion and all other metabolic
processes to work effectively; they are living proteins that direct the life force
into our basic biochemical and metabolic processes. They even help to
repair our DNA and RNA. Any form of life would not exist without enzymes!

DNA is defined as a nucleic acid that contains the genetic instructions used
in the development and functioning of all known living organisms. RNA
molecules are involved in protein synthesis and sometimes in the transmission
of genetic information. Vital to all living beings!
Juicing For Weight Loss
Most of us could probably do with losing a few pound right? Well the good
news is -Juicing is great for weight loss, forget the diets!
Obesity is a growing and very worrying issue these days, I am sure you are
aware that it leads to debilitating health problems and rapid aging, it can
definitely be stopped right in its tracks when we begin to include fresh raw
juices in our diets.
Giving the liver a break
Juicing is beneficial for weight loss because our liver gets a break from
working so hard, we start to detoxify and burn fat naturally, great news!
So to start the day - well its lots of lemon water and I like it almost hot, my
body is grateful for the flushing.
Our liver is our prime detoxification organ, and fat burning organ too.
When we detoxify the body, we free up the liver's resources allowing it to
burn fat. While we continue to eat heavy toxic food our liver is way too busy
protecting our vital organs from poisons, it has no time to waste in burning fat!
You don't even have to do anything major here, just to include fresh juices
and good quality water in the morning is enough to get your system working
the way it should!

How To Make Great Tasting Juices
If you are just starting out and unsure how you are going to like fresh Juices,
the best way to start is with just one ingredient and let your palette adjust
slowly.
Do you like apples? Start with just apple juice, or try carrot juice, you may be
surprised how you like it. Pure Grape Juice is gorgeous.
Next start adding things like celery, cucumber or lettuce, the benefits are
huge and you can add a little more each time, your body will love you for it!
Carrot & apple is an awesome way to start and most people can cope with
that.
Carrot and apple is a good base for your green drinks.
Carrots are full of beta-carotene – the cancer fighter, and apples apart from
being full of nutrients, they help to sweep away toxins, they are known as the
intestinal broom!
When you are used to this, take it a little further, how about beets? Fantastic
for our blood, cleansing and building. Ginger -anti-bacteria, aids digestion
and builds the immune system.
Just like anything else you learn, you can follow a few recipes to start with
and then you will find your own way to adjust flavours to suit you.
Never give up if you don’t like the first one you try, if it is new it may feel
strange, but keep trying different ingredients.

Get Juicing!
The recipes in this book make around 16 ounces, you kind of get to know how
much to put in each time to roughly get the same amount of Juice.
These are only guides and you can leave out what you don’t like, or adjust
the amount to suit your taste, but do try to add the greens if only a little to
start with. The greens are the big health boosters and the greener the drink
the better.
I have been juicing for 20 years now and I love them all, it’s hard to
remember never liking the green side now, but I do remember being a little
horrified at the idea of putting vegetables in a drink.
I did however get used to it pretty quickly and you will too, you just have to
hide that earthy taste for a while until you get used to it.
Not all fruits go with vegetables so don’t go too mad changing those.
Pineapple is an awesome base and does a good job of hiding the greens.

Let us start with some easy one fruit juices….
Just Melon
Melons are relatives of cucumbers and give us the same benefits for our skin,
hair and nails, they are obviously high in water content, so they flush our
kidneys and purify the skin, this makes them perfect for anyone who leans
toward skin problems like psoriasis or eczema, these conditions usually mean
that we are a bit more than toxic, and the cleansing properties of our friend
the melon, is the perfect natural raw food medicine!
Simple, Just add as much melon as you want to your juicer and blitz away.
Get as close to the skin as possible – this is where all the best nutrients lie.

Creamy Juicy Cantaloupe
The same health benefits apply to all melons, but research say’s that water
melon and cantaloupe come out the best as two of the top fruits for nutrition!
This raw food juice is just so creamy it is beautiful, not unlike peach juice, just
less expensive! You have to try it – it is simply wonderful.
Same Instructions, as much as you like, just juice it!
I like to mash and freeze raspberries in ice cube trays – add them to your
cantaloupe juice and you get even more antioxidants and a beautiful juice
that ends up looking like a sunrise.

Gorgeous Grapefruit Juice
Simple but amazing -grapefruit is very low in calories, consists of just 42
calories per 100 g. It is rich in dietary insoluble fibre pectin, which by acting as
a bulk laxative helps to protect the colon mucous membrane by decreasing
exposure time to toxic substances in the colon as well as binding to and
flushing cancer-causing chemicals in the colon.

Cooling Cucumber
There are no rules for quantity of ingredients in this juice, just your preference
of taste; it is different every time I make it, sometimes more lemon, sometimes
more celery an amazing cleanser, it is just wonderful for our hair, skin and
nails. My morning Raw Green juice always contains cucumber! A highly
alkalizing Green Juice.

Ingredients;
a whole cucumber
half a lemon - more cleansing
1-2 sticks of celery – more water and minerals
A couple of mint leaves.
Oh and of course a little sprig of mint to make it look pretty and feel even
more - Amazingly refreshing!
Pack your mint leaves between the celery and cucumber to get the most
from them.
Regular juicing of cucumber over a period of time will produce outstanding
results; you will be amazed by the condition of your hair, skin and nails all a

Taste of Italy
Ingredients;
Organic tomatoes (I used cherry toms)
Large handful of spinach
I used 1 large parsnip
2 – 4 celery sticks (love celery)
Good spoonful of fresh organic basil leaves (great antioxidants)
Wash your veggies (keep the skin on the parsnips) and pack spinach and
basil between celery and parsnips so as to get the most juice from them.

Good Morning Green Juice
This is one of my old favourite’s, so gorgeous; I always want more of this
morning green juice!
Ingredients;
I apple (add another if you want it sweeter)
3 slices of pineapple
handful of spinach
parsley
few romaine lettuce leaves
2 sticks of celery
juice of 1/2 lime
If you have a good juicer and your pineapple is organic, then leave the skin
on if you wish – lots of goodies in and close to the skin, otherwise peel as close
to the skin as possible. Pack the soft leafy greens between the fruits and juice
away.

Velvet Green Juice
Oh, I love this Super Creamy Green Juice! It is loaded with good greens but
you would never know, even my other half gave me frown saying he could
taste no greens.
You can add whatever greens you like or what you have in the fridge for this
Green Juice – spinach, kale and parsley are what I use daily along with
usually – cucumber and garden greens like dandelion and rocket – whatever
is growing.

The amount of kale depends on the size of your leaves and your taste. If you
don't have kale, try any other dark leaf. I love kale!
Go easy on the parsley - it has a strong taste - so add a little and taste before
adding more - never drink parsley juice on its own - it is a very powerful
cleanser.
Ingredients;
1 Ripe mango (yep that is what makes it creamy velvet & hides the
greens)
handful of spinach
handful of kale
small handful of parsley (strong flavour)
1 apple

Green Haphazard!
This is called the ‘haphazard’ because it came about by mistake! My head
was so busy elsewhere I got carried away! Even the pic is haphazard!
Ingredients;
Made about 20 ounces (serves 2)
2 green apples
2 large carrots
chunk of cucumber
about 1 inch of broccoli stem and a flower
1 stick of celery with leaves (if you have them still on the celery)
handful of spinach
few lettuce leaves (romaine is best)

handful of herbs or wild greens (mine was rocket, parsley, if you don’t
like tasting the greens just choose one and try adding a little more
each time)
small slice of fennel
chunk of beet root (mine was half of a small beet)
1/2 a small ripe avocado
thick slice of pineapple
good squeeze of lemon and lime
Well I didn’t mean to put the pineapple and the avocado in, I would
normally just pick one of those, but I am so glad I did!
Juice all but the avocado (and chia if using) Put the avocado and ground
chia in your blender, add some of the juice and blend until smooth. Sprinkle
with ground chia or cinnamon.
Well there are so many benefits with this green drink recipe; firstly there are so
many flavours here that it is easy to hide the taste of ‘green’!
If you are OK with the taste of greens, then whack them in, they undoubtedly
are the #1 for health, if you don't like them I promise you will in time, and you
really can hardly taste them! Just add what you can, and increase slowly.

Melon & Kiwi Sunrise
This is Yummy!
Ingredients;
1honeydew melon
4 kiwi
Handful of raspberries
Juice the melon and kiwi, pour into your glass, puree or mash the raspberries
and pour down the side of the glass, dress with slices of kiwi and a couple of
raspberries.
I keep pureed raspberries in ice cube trays in the freezer – great for summer!

The Green Mineral Juice
The daily green essential Juice! My everyday green Juice.
Ingredients;
Kale
broccoli stem, leaf, & floret

Cleansing Super Juice

Super Green Shot
My super food greens are in my usual shot as I don't like them to spoil the
flavour of my Juices, they will be boosting my immune system and making
sure I have all I need nutritionally.
Just pour a little of your juice into a smaller glass and add your favourite super
food powders. Mix well with a mini whisk or you can mix in a small blender.
Just throw that back as a shot, that’s your medicine, good medicine!

Ingrédients ;

Sparkling water/Kombucha *optional

Carrot Surprise
Ingredients;
Makes around 16 ounces
3 large carrots
2 green apples
1 stick celery
few kale leaves
handful spinach
handful of wild greens ( I use rocket & dandelion)
Start with just one green if you’re not used to the taste, taste as you go, add
more greens if you don’t detect their flavour.
Apple in first, roll and pack leaves between the harder ingredients.

Beet Clean
Ingredients;
• 1 apple
• ½ beetroot (start with just a chunk)
• large handful of Spinach
• handful parsley
• Juice of ½ lemon
This is a very cleansing juice, try just a little of the greens and beet to one
large apple to see how you like it, if you don’t like it add another apple.
Great for cleansing and building the blood.

• ¼ red cabbage
Again try a little and adjust as you go.

Smoothies
Mango & Coconut Smoothie Delicious!
Ingredients;
I ripe mango
water from one coconut (you could use plain if you prefer)
about 1 cup of frozen coconut
sprinkle of cacao
fresh water (about 1/2 a cup depending how thick you like your
smoothie)
If you have a sweet tooth you could add agave or honey, I think this
Smoothie is sweet enough but I don't have a sweet tooth.
So in your blender, mango first with water, whiz up until smooth, add more
water if it is too thick for you, and then if you have a blender that can handle
it - add frozen coconut, whiz for a few seconds & Voilà - Pour into your glass
and sprinkle with cacao or cinnamon. Raspberries are a delicious addition to
the Mango & Coconut Smoothie Delicious.

Lime Green Smoothie
Ingredients;
1 apple
a good slice of pineapple (2 inches or more)
handful of dark green leaves ( I used spinach, rocket, parsley and
dandelion greens)
a couple of broccoli spears
1/4 avocado
Juice of 1 lime
Super Food Greens *optional
Juice the apple, pineapple, broccoli and greens. Put the Avocado and lime
with a little water in the blender, whiz up and add a little of the juice and your
super greens if using for the last few seconds to get a good mix.

Berry & Pineapple Sorbet Smoothie
Ingredients;
A good 2 inch slice of Pineapple
handful of mixed berries black berries, blue berries & raspberries
cup of pure water
Doesn't come easier than that does it?
Pineapple first in the blender with enough water to blend smooth, add more
water if you like it less thick, then add berries, mine were frozen so no need for
ice in this smoothie.
Dress up a little if you like with a couple of berries and maybe a sprinkling of
cacao, carob or cinnamon, I struggle to choose between cacao and
cinnamon - too many health benefits to choose from.

Pink Coconut Smoothie
Oh yum!
Ingredients;
About 20 ounces
Serves 2 (unless you want to keep it all to yourself)
Small handful of coconut meat
the coconut water or just purified water
1 medium pineapple
1 cup of raspberries
VERY PINK Raw Food Smoothie! All goes into the blender whiz till smooth.

Luscious Berry Smoothie
Ingredients;
• 6 ounces almond milk
• 1 cup mixed raspberries and blackberries (fresh or frozen)
• small handful of blueberries
• 1 banana, peeled
All ingredients into your blender, whiz up on high for around 30 seconds, If you
want this more like a mousse type dessert, use frozen berries and lesson the
milk - it’s gorgeous either way.
You can also use frozen banana. When your bananas look like they are
about to turn, skin them, chop and freeze to use in your smoothies.

Smooth Avocado
Ingredients;
3-4 cups water
1 avocado
About 6 large kale leaves /collard greens or spinach
handful parsley
juice of 1 lime
1/2 tsp. turmeric (anti-inflammatory)
1 tsp. cinnamon
2 tsp. hemp oil
few drops of stevia to sweeten if desired

Banana Smoothie
Ingredients;
• 2 frozen bananas
• 2 organic madjool dates
• 1 tbsp. ground flax or hemp seeds
• 1 cup raw nut milk or water (I used hazel nut milk)
• 1 tbsp. maca *optional
All in the blender and away you go!
You can add more or less milk or water depending on how thick you like your
raw banana smoothie, and you can choose any nut milk you like or just water
if you prefer, or maybe even coconut milk.

Easy Raw Almond Milk
All you need -
• 1 cup of raw Almonds (soaked overnight)
• 2 -3 madjool dates
• 3 cups of filtered water
• Vanilla (optional)
• A nut milk bag for straining
Be sure your Almonds are Raw and not roasted, roasted almonds do not
produce - Raw Almond milk!
Many smoothie recipes use cow’s milk – not a healthy option. If you love
smoothies with milk, try nut milks instead – so much better for you.
All nuts are nutritionally dense and give us healthy fats too.
It is essential to soak nuts before we use them; they contain enzyme inhibitors
which make them difficult for us to digest.

Soaking our nuts and seeds can take a little extra time or thought before we
make something, but it’s well worth it for the health benefits, and when we
get more accustomed to high raw, it becomes habit to think ahead.
Soaking nuts provides;
• Release of Enzyme inhibitors
• Double the amount of protein
• Double the amount of nutrition
• Break down allows easier digestion
• Break down allows more absorption of nutrition in the body
• Unlock Mother Nature’s Gifts!
How To Make Raw Almond Milk
If you want to add salt to your Almond milk according to your taste (some
people do some don’t) please make it Himalayan or Malvern rock salt.
You will be using about 3 cups of water for every 1 cup of Raw Almonds. Soak
overnight in enough water to cover with a little more to provide room for
swelling.
Rinse Raw Almonds with clean pure water and you’re ready to go.
In your blender or food processor, use 3 parts water to 1 part Almonds and
dates if using - blend until nuts are pureed as much as possible.
If you are using dates process a little first to allow for easier blending with the
nuts.
If you want creamier or thicker liquid, simply experiment with less water, &for
thinner, a little more water.
Strain through a nut milk bag, reserve the pulp, you can dry or freeze this and
save for making biscuits/cookies.
Some people prefer not to strain at all, they like the texture as it is - not for me!
You can add pure raw vanilla powder (or vanilla extract) or other flavouring
of your choice but try to stay Raw, don’t take away the pure good value of
this milk by adding processed junk!

And of course your Almond Milk can be used where ever you would normally
use dairy milk.
Experiment with other nuts too, I make a lot of almond milk but I love hazel
nuts and they make a great tasting warm drink with Maca to replace coffee.
My Favourite Raw Milk Shake
My favourite raw milk shake - after straining the nut milk, I whizzed up for a
few seconds with a handful of raspberries ----------- Whaw Yum!
