Founded in the province of Reggio Emilia, Italy in 1967, PreGel has become an international powerhouse in the foodservice sector of manufacturing and distributing dessert ingredients and semi-finished products for artisanal gelato, sorbetto, premium ice cream, soft frozen desserts, and pastry.

BRC GLOBAL STANDARD FOR FOOD SAFETY - IFS FOOD (INTERNATIONAL FEATURED STANDARD)BRC and IFS Food certifications guarantee an efficient system is in place as well as high standards of hygiene. These standards focus on quality and food safety, and a complete application of HACCP as an integral part of the system.

The achievement of these certifications demonstrates the Company’s commitment to producing high-quality and healthy food in compliance with local regulations.

SQFPreGel America is a SQF certified supplier ; the Safe Quality Food (SQF) is an internationally recognized food safety and quality certification program administered by the Food Marketing Institute (FMI). It certifies that all suppliers in the food chain effectively implement robust food safety control systems, requiring that both a rigorous and credible food safety management system and continuous monitoring procedures are applied.

ORGANIC CERTIFICATIONIn 2012, PreGel obtained an organic certification in line with the Company’s policy of sustainability. The organic production method not only responds to consumers’ demand and caters to a specific market, but also contributes to environmental protection, animal welfare, and rural development. PreGel’s organic products are manufactured in compliance with the EC Reg. 834/2007.

KOSHERProducts that carry a Kosher certification satisfy the requirements of Jewish law in regards to the ingredients and process involved in the production of food or food products.

HALALIn 2011, PreGel obtained Halal certification. Halal-certified products have been certified to follow Islamic food preparation and ingredient standards.

HAZELNUT PIEDMONT I.G.P.In 2013, PreGel obtained the I.G.P. certification for the Traditional Paste “Piedmont Hazelnuts I.G.P.” This certification contributes to the development of a sustainable model, enhancing the quality of the resources from local communities in Italy. The product “Piedmont Hazelnuts I.G.P.” meets the requirements of EC Reg. 1107/96 and 1151/12 on the protection of geographical indications and designations of origin for agricultural products and food.

BASES

PreGel base products are quintessential ingredients in powder form for the creation of customized artisanal frozen desserts. Our premium bases provide the necessary foundation to promote optimal consistency, creaminess, scoopability, and texture in gelato, ice cream, sorbetto, sherbet, and soft serve frozen desserts.

Offering options for both Cold and Hot Process machines, our bases were specifically designed to achieve the necessary balance of sugars, fats, and solids to meet the needs of all gelato makers. The overall goal of our bases is to streamline production while maintaining the highest standards in all areas of consumer needs including those with dietary restrictions such as dairy-free, wellness, diabetic-friendly, vegan, and additive-free bases.

Plain Gelato made with Base Diamant 50

Hot Process Bases PreGel’s Hot Process milk bases are powdered blends of stabilizers and/or emulsifiers developed with the most advanced formula that is activated by heat. These are artisan bases because they still give each gelato maker the option to balance and personalize their recipe to taste.

All Hot Process bases must be heated before the mixture goes into the batch freezer. The overall process is quite simple. First, heat the milk in the pasteurizer to 35°C–40°C/95°F–104°F. Next, add the solids, and mix well to complete the heating phase. Once the temperature reaches 85°C/185°F, cool the mixture down to 4°C/39.2°F and let it rest for at least 1.5 hours. Remove the appropriate amount of mixture from the pasteurizer and add in the PreGel Fortefrutto® or Traditional Paste of your choosing, blending well before pouring into the batch freezer.

Cold Process Bases PreGel’s Cold Process milk bases are the answer to gelato makers’ need for a quick method of achieving a greater amount of gelato without compromising taste. The formula for these bases was designed to eliminate the need to heat the mixture, saving time and money. These are artisan bases because they still give each gelato maker the option to balance and personalize their recipe to taste. Cold Process production consists of thoroughly mixing all ingredients together, then letting it rest for at least 30 minutes in a refrigerator before processing it in the batch freezer.

Please note that all PreGel Cold Process bases can be pasteurized if desired.

Made with raw materials sourced from around the world, PreGel’s flavorings offer consistency and high quality with every bite. The flavorings are divided in three categories: Traditional Pastes, Fortefrutto® (Fruit Pastes), and Powder Flavors.

Our Traditional Pastes are intense flavorings for cream- and milk-based desserts. They are generally thicker in presentation and contain particulates. Our Fortefrutto®, “Forte” meaning strong, and “Frutto” meaning fruit, are intense flavorings for fruit-based desserts. Our Powder Flavors provide both optimal shelf life and intense flavor, while they easily dissolve without leaving

a grainy aftertaste. All of our flavors can be used in both frozen and bake environments.
