How can anyone without that beautiful Italian “o” at the end of his name possibly win the Gelato World Tour Champi-onship, to be held next month in the country that gave birth to one of the world’s favourite desserts?
“Well, I don’t know,” laughed James Coleridge at the imper-tinence. “But I’m going there to win.”
Anglo name or not, Coleridge — the owner of the Bella Gelate-ria Coal Harbour — has already shown the Italians a thing or two about making gelato. In 2012 he was the first North American to win the Florence Gelato Festival in Italy, defeat-ing 29 gelato grandmasters.
Coleridge has been chosen to represent North America in the competition to be held in Rim-ini Sept. 5 to 7.
Coleridge is a former White Rock councillor who has worked as a professional high-altitude photographer and videogra-pher. But his passion for gelato led him to Italy and the Ital-ian Culinary Institute, then to Carpigiani’s Gelato University where he learned to make it.
Asked where his interest in gelato came from, he says he “grew up eating cheap ice cream” in his hometown, Ottawa, and in various other countries where his father was posted by the military. Once he found the real thing, he loved it. Coleridge opened Bella Gela-teria at 1001 West Cordova in
2010 using the traditional equipment found in Italian gelato shops, and it has become one of the busiest gelato stores in Vancouver.
On Aug. 28 he will open the Bella Gelateria Yaletown, which will serve handcrafted gelato, gelato-based cocktails and pizza.
Plans are being made to take the business to West Vancouver
next year, and to locations in Kitsilano and on Main Street.
For those who think gelato is just Italian for ice cream, Coleridge says there are major differences.
“Ice cream is 28 per cent fat, gelato is 7 per cent. Ice cream is injected with air so it’s 80-per-cent air, gelato is 20-per-cent air. And ice cream is served cold at -18 degrees, while gelato
is served warmer at minus -12. When he leaves for Italy, he
will be taking 300 kilograms of ingredients with him.
So what will he be making for the judges in Rimini?
“Moroccan salted lemon with caramel. I usually only make it once a year. It’s something I’ve created and perfected.”
