Welcome to Hilton Head Island! In October, you’re sure to enjoy plenty oftreats on this boot-shaped barrier island.

Hilton Head can be deeply relaxing or incredibly exciting, dependingupon your interests. By day, the beach beckons, with its sandy beachesand gentle surf. October is full of exciting activities to thrill visitors from near and far. TheHilton Head Island Motoring Festival & Concours d’Elegance, one of thenation’s signature automobile events, will kick into gear October 26through November 4, delighting auto enthusiasts from across the country.

The 19th Annual Polo for Charity event will be held at historic Rose HillPlantation on October 14, offering one of the Southeast’s leading poloevents. On October 28, Halloween on the Harbour will feature pumpkindecorating, crafts, activities, trick-or-treating, a costume contest, cookiesand cider at Harbour Town. A true port wine is a Portuguese fortified wineproduced exclusively in the Douro Valley ofnorthern Portugal. However, many port-stylewines are produced all over the world.

A traditionalist would argue that a port wineproduced outside of the Douro Valley just isnot a port, and they may be right. We here atIsland Winery appreciate that the terroir ofthe Douro Valley gives these wines a uniquedistinction, but we also know that, if madewell, grapes from other regions can produceexcellent ports as well.

A port is typically a sweet red wine that is forti-fied with brandy to bring the alcohol content upto around 20 percent (unfortified wines typicallyhave an alcohol content between 11 and 14percent). Port wines can either be barrel-agedor bottle-aged. Here’s a quick overview of themost popular styles of port:

Ruby Port – The least expensive and mostwidely produced style of port, this variety ismade in large stainless steel tanks and doesnot need to age for long periods of time.Known for its distinctive color, Ruby Port pairswell with chocolate and berry-based desserts.

Tawny Port – This variety is aged in oldwooden barrels, which allow the wine to beexposed to oxygen through the tiny pores ofthe wood without contributing much flavor.Newer oak barrels can overpower the mellownutty flavor typical of Tawny Ports. Aging also

allows the wine to develop its char-acteristic golden brown color. TawnyPorts pair well with cheeses and patesas well as with crème brulee anddark chocolate.

Vintage Port – Priced on the higher end,this type is made entirely of grapes grownduring one growing season. Especially in theDouro region of Portugal, producers will tastethe port after it has aged in the barrel forabout two years and decide if the grapesfrom that year have produced port wineworthy of standing on its own or if it needs to be blended with Ports of other vintages tocreate a strong flavor profile. Vintage Port isdelicious sipped on its own or while nibblingchocolate truffles.

In case you haven’t noticed, most port winespair well with chocolate! So here at IslandWinery we decided to blend the chocolateflavor right into the port. We started with abarrel-aged tawny-style port and added choco-late flavor. We also added a hint of orangeflavor to cut through the sweetness, creatingthe perfect dessert wine.

The fluorescent orange cork landed with a splashon the edge of the green spartina grass andpromptly disappeared.

With a few turns on the Penn Battle spinningreel, Bo had the slack out of the line and theLegion rod bent against the surge of the fish.The reel’s drag purred as the fish took about20 yards of line upstream and then came tothe surface, boiling the water in protest beforetaking off for another run, this time headingfor deep water.

“It’s a man,” I remarked to Bo.

In reality, it was a large speckled trout, aroundfour pounds. As it typically goes with fish, thebigger ones are usually female. This one wasfull of roe, which some consider to be evenbetter eating than the fish itself.

Speckled trout are one of the most prizedgamefish here in the Lowcountry. Defined bytheir silver iridescence with signature spots, theirstreamlined beauty is reminiscent of the fresh-water trout family.

Armed with a pair of fangs at the top of theirmouth and the aggressiveness of a barracuda,

there is, in fact, nothing delicateabout the bone jarring strike ofthe trout or the determined battlethat occurs after hook up. Theone thing that is delicate about thisfish – other than the tasty meat –is the mouth, so a light drag ismandatory.

Thanks to a blessing resultingfrom a mild winter, this year the trout have been plentiful in

Lowcountry waters. The cooler temperaturesof October hold promise of a great seasoncatching speckled trout. While some preferto fish live bait under corks, trout are oftencaught on many types of artificial lures. Onethat I have added to my arsenal is the “TroutTrick,” a soft plastic bait invented by the sea-soned Capt. Bob Sanders, who fishes out ofEdisto.

Bo and his party caught many more trout thatday, four of which had “gator” status beingfour pounds or better. By now, the numerous“peanuts” caught earlier this summer will havebeen stuffing themselves on the plentiful shrimpand have gained significant weight. Clear,cooler water and the great fall weather addup for some great October fishing forspeckled trout.

Shrimp are one of SouthCarolina’s most valuable andpopular harvested seafoods. Infact, shrimping is an industry thatbrings the Palmetto State morethan $30 million a year.

The summer and fall offer primeopportunities to enjoy two majorspecies for harvest: the whiteshrimp and the brown shrimp,both of which are found in ourwaters. Brown shrimp, farfantepe-naeus aztecus, and white shrimp,litopenaeus setiferus, are easilydistinguishable by the coloration,which inspired their names.

Although they are similar organ-isms, white shrimp and brownshrimp have differences inspawning and growth methods.Shrimping season officially beginsin May in South Carolina withthe harvesting of brown shrimpand white shrimp roe. The seasoncontinues through December, aswhite shrimp are more commonlyharvested in the colder months.

A shrimp’s life begins duringspawning near area beachesand up to four miles off shore.A female shrimp may producebetween 500,000 to 1,000,000eggs and may spawn severaltimes in a season. Less than 2%of these eggs will survive toadulthood due to predation.

Carolina Shrimp

Learn more about the fascinating whiteshrimp and brown shrimp that mature in the waters around Hilton Head Island.

Brown shrimp spawn in the fall, in October to Novemberjust after molting, while white shrimp spawn in the spring.Both shrimp will go through 11 different larval stages over aperiod of two weeks. Generally, brown shrimp will stay inthe ocean bottoms through the winter and then catch tidalcurrents into brackish estuary systems late February and March.White shrimp will move into the estuaries two weeks afterspawning in May and June. Shrimp will stay in the tidal creeksfor up to three months as they mature.

Young shrimp move with the high tide into the marshgrasses to forage for food and evade predators. Shrimpare generally omnivorous bottom feeders, eating anythingthey can scavenge. Shrimp become more predatory as theyincrease in size, feeding on small aquatic animals. Theygrow quickly in their marsh nursery and molt their skin asthey become larger. Most shrimp spend their early life inbrackish water, moving into open saltwater once they havereached about four inches long. The oldest shrimp reportedin South Carolina was 14 months old. However, most shrimpwill not live past nine months old.

Shrimp have three major modes of transportation. When at rest orfeeding they will use their walking legs to move short distances.When migrating long distances the shrimp have swimminglegs called pleopods. These legs can help them to swim upto five miles a day. As a defense mechanism shrimp areable to contract their strong abdominal muscles in a tail flex.This motion propels them backwards to evade predators.

The migration of shrimp from their marsh nurseries to theopen water is affected my many circumstances. The temper-ature of the water and whether a season has been dry orrainy are major factors. The number of other young shrimpin the area will also affect their migration patterns.

Shrimping has been a large part of South Carolina historysince the early 1900s. Today, farmed, imported shrimp costless than our local product. These changes lowered the rev-enue of one our state’s largest incomes. In a sense, theseactions saved our shrimp, since they prevented overfishing.As a result, locals and visitors alike are able to enjoy ourown land’s rich bounty.

Beyond Jaws

With some hesitation, I’ve chosen sharks as atopic for this month’s article. In my experience,many folks are leery to hear that sharks do,in fact, swim in our local waters. No worries,sharks are amazing and, if you know a bit aboutthem, that knowledge may allay your fears.

In Broad Creek, as well as the small creeksthat wind through our little neck of the woods,it’s not unusual to see immature sharks forag-ing for small fish and crustaceans along thewaters’ edge. Like all other salt marsh animals,sharks are here for food and protection. Mostoften about a foot or two in length, baby sharks(or pups) tend to be beige or brown in color.

Both their dorsal fin and tail are oriented per-pendicular to the surface of the water, and theytend to swim in a zig-zag pattern. Notice thecommotion they create in small, prey-fillededdies. Sometimes sharks are confused withdolphins, which are much larger and darkergrey in appearance. Additionally, the dorsalfin of a dolphin appears perpendicular, butthe tail is always horizontal with the water’ssurface. Dolphins characteristically swim in astraighter line than sharks and take intermit-tent dives beneath the surface of the water. And,of course, dolphins are mammals, while sharksare fish.

Fish can be divided into two main categories:bony fish and cartilaginous fish. Sharks belongto the latter category. The cartilage that com-prises a shark’s skeleton is the same stuff found

around our bones, in our inner ear andin our nose. Even the skull of the sharkis made up entirely of cartilage.

Although they’re related to all other fish,sharks have some fascinating and dis-tinctive differences. Did you know thatsharks have eyelids? Bony fish don’t.Some species, like the Great White Shark,can actually roll their eyes back into thesocket for protection!

However, in my opinion, the most amazingaspect of the shark is its skin. I’ve had thepleasure of catching and releasing small blacktips and bonnet heads and love running myhand along their body. From head to tail theskin is smooth and firm. But reverse directionand it feels like sandpaper. A similar sensationoccurs when you do the same with a bonyfish, but the roughness felt with the bony fishis a result of the scales that cover its body.

Instead of scales, shark skin is comprised of“dermal denticles.” This highly specializedskin allows sharks to be amazingly efficientswimmers. To me, a single denticle, whenviewed through a high-powered microscope,looks like the underside of a finely craftedspeedboat. In fact, I’ve learned that boatmanufacturers study the features of shark den-ticles to improve hull design.

Nature is an amazing thing. Now that you knowa few cool things about sharks, look for themin our area waters. Get Outside and discoverfor yourself!

Golf truly is a game of opposites. The harderyou try, the worse you perform on the course.

In order to improve your golf swing, it’simportant to get back to basics and correctfundamental problems. Many golfers usetheir arms to power their swing, which cansabotage their technique. One way to keepyour arms in proper position and to preventyour arms from overperforming is to put arolled-up towel under your underarm duringa training session.

Keep your elbow in just enough to hold thetowel in place. If the towel falls to the ground,you’ve moved your elbow too far away fromyour body. This might feel awkward at first, butit will keep your elbow from popping out andwill help you develop a strong, effective swing.

Golf often boils down to basic physics involv-ing force, mass and motion. However, onething is certain: by controlling the distancethe ball travels, you’ll be able to lower youroverall score and improve your golf game.

For smaller shots, grip the club down low, putyour weight on your left foot and use a modestbackswing. For bigger shots, be sure to gripthe club up high, widen your stance, use along back swing and transfer your weight intothe shot for more power.

There are plenty of train-ing aids available to helpyou get a better feel forthe weight of the club andto improve your swing.Specialized, heavy-weight-ed practice clubs help youappreciate the weight ofthe club. The extra weightteaches you to get more intouch with the club headand to allow the physics ofthe swing to power the ball,not your arms.

Remember, golf isn’t about building your upperarm strength or developing your muscle mass.It’s about allowing your body to stay relaxedand allowing the club to do its job. Respect theweight of the club, keep your body loose andkeep your elbows close to your body. Whenyou complete your swing, the club should beparallel to your shoulders. If you follow thesebasic guidelines, the end result will be astronger, straighter swing, time after time.

Make October the month to refine your swingand have fun on the green. With cooler tem-peratures and plenty of sunshine, this is anideal month to get out on the course and toexperience the best of Lowcountry golf.

Play a round or two (or more) on Hilton HeadIsland, a true golf mecca for players fromacross the country and around the world.Whether you’re an aspiring junior golfer oran experienced veteran, I hope you enjoyevery moment on the green this month. I’llsee you out on the course!
