Terrific TerroirBy Georgene Mortimer, Island Winery

New scientific findings helpde-mystify this ineffable qualitydistinguishing one variety of wine from another.

March is the month Hilton Head Islandcelebrates wine.

This month, wine experts, connoisseurs andwine lovers arrive here to attend the AnnualHilton Head Food and Wine Festival, ourweeklong celebration of wine. As a result, this seems like the perfect time to bring upthe latest scientific study re-igniting the long-standing debate around terroir.

Terroir is the term used to describe the combi-nation of soil, geology, climate and local grape-growing practices that make each region’s wineunique. Upon a blind taste test, an expert winetaster can easily identify the region of which awine comes due to terroir. But how do you “taste”a region? This is what lies at the heart of thedebate.

Europeans and most Old World wine enthusi-asts want to keep a shroud of mysticism aroundterroir, while American grape growers tend to bemore skeptical. They believe that European wine-makers perpetuate terroir as an esoteric, obscureconcept to retain supremacy of certain winesand regions. So, when American researchersfrom the University of California Davis present-ed the findings of a recent scientific study, theinternational debate lit up once again.

Before we explore the latest findings, the ques-tion has to be asked: Do we really want tobreak down all of the elements of terroir intomeasurable scientific data? After all, terroir iswhat makes wine so intriguing for connoisseurs.Knowing all of the scientific details just mighttake all the fun out of wine, especially in lightof the latest scientific discovery. Maybe wedidn’t want to know.

The new research reveals the fungi and bac-teria growing on the surface of the wine grapegets incorporated into the must (the mashed

grapes that are the starting material of wine-making) and that each region has its owndistinct group of microbes. They further explainthat each group of microbes produces a dis-tinct regional “taste.”

For instance, they found that one set ofmicrobes is associated with Chardonnaymusts from the Napa Valley, another set withthose of a Central Valley music and a thirdgrouping with musts from Sonoma. Theynoticed a similar pattern of distinctive microbesin cabernet sauvignon musts from the northSan Joaquin Valley, the Central Coast,Sonoma and Napa.

The discovery of stable but differing patternsof microbial communities from one region’svineyards to another means that microbescould explain, at least in part, why one region’szinfandel or pinot noir tastes different fromanother’s. The links between microbes andwine-growing regions “provide compellingsupport for the role of grape-surface microbialcommunities in regional wine characteristics,”the researchers conclude.

While this is a major finding, one mustremember the other aspects of terroir – suchas climate, soil, natural yeasts and the talentsof the wine makers – which contribute to eachvintage’s uniqueness. As the debate rages on,let’s hope terroir is destined to maintain itsmystical qualities for some time to come.

These currents can take you up and down the beach quickly and cause you or your kids to get lost.

– Don’t let your kids swim unsuper-vised, even in guarded areas.

– Don’t swim alone. Use the buddysystem so that someone always knows where you are so they canget help if needed.

Horoscope March 2014

ARIES A disappointment early in the month will make you realize

that you don’t have control over everything.Instead of letting it get you down, focus onwhat you can control. It’s a much better way to deal with let downs. Change is on the way.

TAURUS You will be called on foradvice by a younger work associate.

Be fair and truthful and you will help this per-son a great deal. In matters of the heart, alook to the past helps you make a decisionfor today. A Cancer friend does something tosurprise you. Travel plans need some attention.

GEMINI A change in a friend’sbehavior could provide clues into his/

her past. Be diplomatic when giving advice –especially if you’re giving it to someone in asituation much different from your own. Atwork, all eyes will be on you and you may beapproached with a new opportunity. Be open.

CANCER Be supportive of a lovedone who is going through changes.

Being a good listener is key. An unexpectedwindfall will make an upcoming trip moreenjoyable. You’ll have something special tolook forward to. Keep business and pleasurevery separate this month.

LEO If it has seemed lately that theworld has been caving in on you,

you’ll be happy to find that you can makeyour way through the rubble. Things willcome a little easier now and you’ll be ableto reap the rewards of hard work. Now youcan relax. A Libra brings extra fun to aweekend outing.

VIRGO Someone who looks to youas a mentor will ask for advice. Be

sure to present both sides of the story. If youhave a lot on your mind, you’d be better offtaking some time to yourself rather than tryingto tackle big projects. Good news for Virgossaving towards a big purchase.

LIBRA Avoid taking sides in a familyfight unless you like playing with fire.

Even the most diplomatic Libran could getburned. An old friend may resurface whenyou least expect it. An Aries will come to youfor advice. Use common sense when makingfinancial decisions.

SCORPIO A getaway may not beall that you hoped for. Several

unexpected delays could put a damper onyour spirits. Try to make the best of it. Thismonth, you’ll see a different side of someoneyou thought you knew. Unforeseen expensesmake finances an issue later in the month.

SAGITTARIUS An opportunity forcareer advancement comes

midmonth. Think twice before jumping atsomething you know nothing about. News ofa breakup will come out of nowhere. Even ifyou’re disappointed, you won’t be surprised.Be honest in a love relationship.

CAPRICORN What seemed like ahopeless situation last month, now

takes a positive turn. You’ll have somethingmore to look forward to. If a new romance iswhat you’re looking for, this could be a promis-ing month. Keep an eye out for a charmingLeo. Health concerns prove unwarranted.

AQUARIUS Learn how to say“no,” Aquarius. There’s nothing

wrong with being nice, but being too nice isas good as inviting others to take advantageof you. Take charge and you’ll gain respect.Anticipation of an upcoming event may giveyou some anxiety. Seek meditation as a wayto relax.

PISCES Don’t let self doubt get thebetter of you. Success is near. You

just have to hold on to your confidence inorder to get it. Understanding is the key tohappiness in a love relationship. Being agood listener is more important than yourealize. Virgo plays a big role this month.

March is a great time tocatch this elusive baitthief in Lowcountrywaters.

With eager anticipation, my brother Donand I anchored at a nearshore reef andgot ready to reel in a few sheepshead.

We had the bucket full of fiddlers and quicklysent a pair of them down to the bottom. Easingthe egg sinkers back off the bottom six inchesor so, we waited for the subtle bite. The depthfinder drew a beautiful picture of structure andfish, so catching a sheepshead was just a mat-ter of time. Or so we thought.

After checking the bait several times andfinding whole fiddlers intact, we lamented thepossibility of a slow current or tide as the prob-lem. Sheepshead, as a rule, prefer a good tideor a swift current movement. After debating amove, Don pulled out his new toy, a handy“fish cam.” Equipped with 100 feet of cord, the camera easily reached the bottom. At first, the image on the 9-inch screen was fuzzy, butas it sharpened we could see the barnacle andcoral encrusted structure.

Seconds later, a big sheepshead eyeballedthe camera. No need to move after all, wedecided. Heralds of the spring fishing season, sheepshead are one my favorite species. Armedwith a set of human-like molars made forcrushing barnacles and crabs, sheepshead

are undoubtedly one of the mostdifficult fish to catch. Their bait-thieving technique usually involvescrushing your fiddler, sucking thepieces down and spitting the

hook out, all in the blink of an eye – oftenwithout even a telltale tap of the rod.

Sheepshead can be caught around structuressuch as docks and pilings inshore. They alsopopulate offshore reefs as well. Defined bydistinctive black and white vertical stripes anda deep body that is indicative of the snapperfamily to which it belongs, these fish put up abrutish battle. Fortunately, they provide someof the best table fare available, making it wellworth the fight to reel in a sheepshead.

Thanks to the “fish cam,” we waited on the tideto move faster and ended up with a box full ofnice sheepies averaging three to eight pounds.

Not a bad day of Lowcountry fishing in earlyMarch. Now if I can just get some fiddlers…

The brown pelican is a common sight alongSouth Carolina’s shore. These large, stockybirds glide majestically over ocean wavesand often hang out at local marinas. Theirdramatic high dives astonish locals andvisitors alike.

Eastern Brown Pelicans, known as Pelecanus occi-dentalis, are found throughout the coastal areasof the southern United States, the Caribbean,Central America and northern South America. These large birds are most commonly gray andbrown in color, developing a yellow head as theymature. They have thin necks and a long bill witha distinctive throat pouch, which can hold up tothree gallons of water.

Their large webbed feet aid in their mobility onthe water. They may weigh up to 10 pounds andhave a wing span reaching almost seven feet.Their large, broad wings help in easily identifyingthese birds by their bowed shape. This wing shapeallows brown pelicans to surf easily along updraftsfrom waves or natural weather patterns.

Brown pelicans are carnivores by nature. They eatsmall fish found near the surface of the water.Menhaden, mullet, anchovies and herring areall common fare for pelicans. Pelicans can spotfish from up to 65 feet in the air and will divedownwards face first and stun the fish. They thenscoop the fish up with their large beak and throatpouch, draining the water out of the pouch toswallow their catch. It’s not uncommon for othersea birds – such as terns and gulls – to steal fishfrom pelicans as they drain the water from theirthroat pouch.

Air sacs under the pelican’s skin help to cushionthe blow of their lofty dives. When diving, theytypically tuck their head in and rotate their bodyleft to protect their trachea and esophagus.

Breeding season for pelicans begins in March.

Pelicans nest in large colonies onsecluded islands. A male will arrive firstto establish his territory and defend itfiercely. Pelicans are monogamousthroughout the breeding season, whichmay last until the end of the summer.

Nests created on the ground or in trees are gen-erally made of sticks lined with grass or seaweed. The female will build the nest in about 10 days, while the male helps in gathering nest material. The female will lay one brood per season withup to four eggs and incubate them for about 35days. She uses her feet to cover, protect and warmthe eggs during incubation. Young will stay withtheir parents for up to 84 days, at first eatingregurgitated fish and then moving on to whole fish.

In the 1960s and 1970s, brown pelican popula-tions declined due to DDT and other pesticides. The DDT affected the thickness of the pelicanegg shells, making them very thin. Many eggswere crushed due to the common foot incubationmethod of pelicans. Brown pelicans were on theendangered species list until 1985. Today, theirpopulation continues to increase due to ongoingpreservation efforts.

Man-made nesting grounds and designated nest-ing areas are a huge factor in the populationrise. Tomkins Island, a man-made bird nestingground and sanctuary located between DaufuskieIsland, South Carolina and Tybee Island, Georgia, serves as an active area attracting pelicans in thearea. The island was created by the SavannahDistrict Corps of Engineers out of local dredgedmaterial to support local shore birds. Due toislands like this one, which complements existingnatural habitats, the Lowcountry may always begraced with the magnificent brown pelican.

The H2O Nature Center focuses on the wildlifeand habitats of the South Carolina Lowcountry.Offering eco adventure tours, live animalexhibits, educational programs and hands-ondisplays, the H2O Nature Center is a greatplace to spark curiosity and inspire learning inall ages. Learn more about thismajestic migratory bird.

The Lovely LoonBy Jessie Renew, Outside Hilton Head

March finds Lowcountry plants and animalsready for summer, much like their humaninhabitants. In the salt marsh, the spartinagrass pushes out new bright green shoots. The warming water renews the food stock, plus longer days are great for fishing. As ourspring visitors prepare for their arrival, a dis-tinguished winter visitor, the common loon, prepares for its departure.

The common loon spends its summer in thenorthern part of North America, roosting onsecluded inland lakes and building nests onthe ground. In the winter, they migrate, takingthe well-travelled route from their nesting spotto the ocean. Some loons travel only a shortdistance, while others fly across the wholeUnited States. Many loons choose to winterin the warm waters surrounding Hilton HeadIsland. Their northward migration typicallybegins in mid-March and continues for sometime. These majestic birds have been spottedon Hilton Head Island as late as mid-June.

The Common Loon is characterized by a darkhead with a long, elegant, straight beak anddark orange-ish eyes. Their backs are lightlyspotted in different tones of grays and blacks.Area residents and visitors are likely to see oneon any trip out on the water at this time of year,as they are usually found fishing in, or floatingon, saltwater creeks and rivers.

Loons are excellent swimmers, their bodiesbeing especially suited to underwater huntingand eating. They have heavier bones than mostbirds, allowing them to sink better. Their legsare set far back on their bodies and they havewebbed feet, propelling the bird through thewater at great speeds.

However, these adaptations have a price for

the loon. The heavier bones mean theytire easily when flying, and require morestops during migration. The leg placementmakes it awkward for them to walk or

run on land. When loons prepare for flight, they must work up enough momentum to lifttheir heavy bodies by “running” on water, using their webbed feet to gain speed. Theyneed anywhere from 30 yards to a quarter ofa mile running start to take flight.

This flight technique is key to their migratorypattern. Every year, they leave Northern lakesin the fall before they freeze over in the harshwinter. Loons head for the coast, where thewarmer water doesn’t freeze, enabling the birdsto lift off in flight.

The lifecycle of the loon is tied to its migratorypattern. In the first 12 weeks of a loon chick’slife, it rides on its mothers back for protection. As summer turns to fall, the chick will be aban-doned when its mother migrates south. Adultloons gather in large numbers on lakes andbegin their migration; a few weeks later thechicks will do the same thing.

After their first migration, juvenile chicks will stayin their coastal habitat for two years beforemigrating north to breed for the first time. Loonmigration usually starts around March 10,with the majority of the birds having left theLowcountry by the end of the month. Seethem while you can!

Lower your golfscore by workingon your strategy.

Learn To Play The AnglesBy Doug Weaver, Palmetto Dunes Golf Academy

Playing the angles means hitting solidshots while placing yourself in positionfor strong subsequent shots.

To help understand this concept, consider topbilliards players who never attempt merely tosink a ball, but rather set up their next shot atthe same time. Great golfers never simply swingand see where the ball lands. They considerthe entire hole strategically and are alwaysthinking a shot ahead.

Much has been made of Tiger Woods’ strate-gy at the 2006 British Open at Royal Liverpool.Tiger demonstrated that, even though thiscourse can play extremely tough, it can betamed if its angles are played shrewdly.Leaving his driver in the bag for the betterpart of four rounds, Tiger hit toward trouble, but never into it.

When he saw bunkers 240 yards away, he hithis ball 220, leaving his competitors to makeconstant attempts to bomb it over or aroundtrouble and, as often as not, landing it ininstead. The man who played the angles, placing himself in good position for one shotafter another, came away with an easy victory, while the rest of the field was left wonderingwhy they’d had so little success.

To test this principle, set yourself up at a dog-leg with 10 balls. If you have a fade, make ita dogleg away from you (a dogleg right for aright-handed player). If you have more of adraw, make it a dogleg coming across you (adogleg left for a right-handed player).

With each of the 10 balls, tryto cut the dogleg, going overthe danger instead of play-

ing the fairway. Count how many times you’resuccessful. Even when your ball manages notto land in the absolute worst spot possible, chances are you’re still in poor position whenit’s time to take your next shot.

Next, find a spot among a cluster of trees 100to 150 yards from the green. Pick a path tothe green that requires you to thread a shotbetween two trees. Try the shot 10 times. Again, count how many times the result is positive andhow many times it ends up just as bad or worse.

Both of these drills are designed to illustratethe same lesson – unless you have a repertoirerivaling Tiger’s, playing a hole as it is laid outwill almost always lead to better for the pin.Get into the habit of trying to hit 18 greens –instead of trying to hole 18 approaches – andyou will see your scores start to drop.

Enjoy every moment teeing off on Hilton HeadIsland this month. You’ll have the opportunityto play some of the world’s most acclaimedchampionship courses.

Make the most of your time on the course, always working on your strategy and playingthe angles. I’ll see you out on the green!

9 to 5: The Musical is a hilarious story of friendship and payback. When pushed to the limit, three female co-workers concoct a plan to get even with the sexist, egotistical hypocrite they call their boss. They conspire to take control of their company and learn there’s nothing they can’t do—even in a man’s world. Set in the late 1970s,9 to 5: The Musical is the outrageous,thought-provoking and slightly romantic story about friends teaming up to “take care of business.”
