1 Tblsp. Crab BaseHot Sauce to Taste

1/2-1 lb. Crab Claw Meat

Directions:Melt butter. Saute vegetables and addflour. Cook for 2 minutes. Add creamand clam juice. Bring to boil. Lowerheat and add remaining ingredients.Adjust seasoning to taste

A wine flight offers theopportunity to learn more about the fruit of the vine.

When you want a little more from your winetasting, consider trying a flight of wine.During a typical wine tasting you “go downthe tasting list” and receive about an ouncepour of the wines you select. This gives yourpalate everything it needs to know about awine, but it comes up short when you’relooking to immerse yourself in a new wineexperience.

By contrast, a flight of wine typically featuresthree to five small glasses of wine arrangedthematically as a point of comparison. Theamount of wine in each serving is usuallydetermined by the size of the flight: the moreglasses of wine being served in a flight meansless wine in the glass. For the encyclopedicwine taster who wants an in-depth tastingor the indecisive wine lover who can’t makeup his mind, wine flights are the perfectcure for the common tasting.

The Tasting FlightDoes everything on the wine list appeal toyou? Try a simple tasting flight that enablesyou to sample several similar wines and makeyour own comparisons. Let your curiosity bethe perfect excuse to hold a glass in eachhand and refresh yourself accordingly. Startwith the lightest bodied wine and work yourway up to the boldest, heaviest vintage.

When dining out, flights of wine best accom-pany chef’s tasting menus or tapas plates.Check to see if they are being offered.Rather than ordering wine by the glass orcommitting to a bottle, the food and winewill be perfectly paired and portioned whenflights are offered.

The Horizontal FlightHorizontal flights allow for a fully immersiveexperience in a region or varietal. Ideally,

all wines in a horizontal flight are of the samevintage year.

Or, if you love Chardonnay, the horizontal flightallows your taste buds to compare the buttery notesof a Pouilly-Fuissé to the robust tropical flavorscharacteristic of its South African cousin. You cancompare several Chardonnays hailing from theNapa Valley. Decide for yourself how climate, cul-ture and technique influence the flavors.

The Vertical FlightIn this variation of the wine flight, the wines are ofthe same vintage and from the same winery. For awinemaker, the vertical flight is the secret to his craftas it enables him to ensure his latest masterpiecemeets (or exceeds) the standards he set for him-self in previous years.

If you want to fully immerse yourself in the wine-maker’s art, consider the vertical flight. Compare thebarrel reserve vintages with their newly releasedcounterparts. Fully appreciate how a winemakermust adapt each batch of wine based on thequality of the grape harvest.

Here at Island Winery, we offer a unique twist on thevertical flight, called a Barrel Tasting. We comparewines of the same varietal as it is going through theaging process. You can compare two of the samewines in the various stages of aging against awine that has already aged and is ready to drinkwhile learning about the aging process. The Hilton Head Islandreal estate market offersplenty of opportunities for buyers this season.

Spring Forecast

Even with 16 million foreclosures since thedownturn of 2008, the American dream of homeownership still lives on. The housing market hasgiven many sellers cause for concern in recentyears, but as the spring selling season approaches,let’s take a look at the national real estate land-scape and see how it may be affecting us righthere in the Lowcountry.

National ForecastU.S. home values finished 2012 up 5.9% overthe end of 2011, which marked four consecutivequarters of national home value appreciation. The5.9% annual appreciation rate far exceeded annualrates of appreciation typically associated with strongmarkets and represents the largest annual gainsince August 2006. Expert predictions show homevalues increasing by a more standard 3.3% in2013.

“We expected 2012 to be a good year for housing,and it delivered in spades,” says Zillow ChiefEconomist Dr. Stan Humphries. “Strong demandpaired with limited inventory in many marketshelped fuel a robust and often rapid recovery inoverall home values, good news for homeownersafter years of poor performance. We expect thisrecovery to continue into 2013, but at a moresustainable pace.”

However, Dr. Humphries advises caution whenlooking ahead. "It's important to be cautious mov-ing forward and be careful that consumers don’tgrow to expect such high appreciation as thenorm,” he explains. “Buying a home should bea long-term decision, and these swings betweena deep housing recession and higher-than-normalappreciation rates can give consumers whiplashand cause some to lose sight of that.”

One key aspect of the housing recovery has beenthe lack of building going on throughout most of

the country. Economist Calvin Schnure saysconstruction of new homes and apartmentsneeds to range between 1.25 and 1.5 million ayear just to keep up with population growth.However, since the housing recession, newconstruction has been hovering at 500,000units or less for six years running, which hascreated a shortfall in available homes.

A National Association of Realtors (NAR) reportlast October showed a 5.4 month inventory ofhomes for sale at the current pace, 22% belowwhere it was a year ago and the lowest inventorysince February 2006. A six-month inventory isgenerally considered the sign of a healthy market.

“I think we’re going to look back three years fromnow and say that 2012 was the year the housingmarket turned the corner in America,” says MarkDotzour, chief economist at Texas A&M’s RealEstate Center.

Local ForecastThings are looking up in the Lowcountry realestate market, especially for realistic sellers. Ifyou’re a buyer, now really is the best time to buya home or villa with interest rates and real estateprices remaining low.

Too many slick days had passed by and I felt restless,especially as I crossed the bridge over Skull Creek.

Gazing down Calibogue Sound over the mirrorcalm water, my mind would finish the journeyaround South Beach into the Atlantic Oceanwhere a few short miles offshore lays a sunkenbarge. Sitting in 35 feet of water, it’s home for avariety of fish, but foremost on my mind was thesheepshead. Sheepies are here year-round andare often sought around bridges and pilings. Latewinter through spring, the larger ones congregatearound structures off the beach. For me, the sea-son traditionally kicks off with some offshoresheepshead fishing.

The forecast called for the wind to howl for a fewdays then lighten from the NNE and swing aroundto the SE. Translation: calm seas. I made the callto my brothers, Don and Scott. We rounded thecorner of South Beach on a brisk morning to alight chop and soon found the structure on thedepth sounder. On the chart, the barge rose sevenor eight feet from the bottom, and the markspromised live action.

My nephew Nick was the first to drop a fiddlerand scored first fish with a frisky sea bass. Asusual, we had to catch quite a few of the blacksea bass before the sheepshead had a chance atour fiddler crabs. The seas continued to calm andScott scored the first sheepie – not a huge onebut a sheepie nonetheless.

Sheepshead are the master thieves of the salt-water world. Armed with rows of teeth similar tosheep, hence the name, they lightly take the crabin their mouths and crush, sucking the crab downand leaving you with an empty hook. By the timeyou feel the bite – if you feel it – it’s often too late.Nick followed his Dad and bowed up on a nicesheepshead around four or five pounds. Now wehad two nice fish in the box.

I had picked up a new Penn Spinfisher V SSV 3500and loaded it with Spiderwire 20 lb. braid the nightbefore. The newest version of a proven reel comeswith all kinds of upgrades. It was watertight, includ-ing the Slammer drag system, and I was anxiousto try it out. Not having time to rig up the nightbefore, the boys had a 15-minute head start onme and I was tied with Don for last place. Igrabbed a fiddler and sent it to the bottom. After afew minutes, I felt a slight tug and bowed the rodup.

Halfway to the surface the sheepshead put it intooverdrive and pulled my rod tip into the water.The smooth drag sang as he battled his way backto the bottom. Several repeats of this scenarioand Nick slipped the net underneath the six orseven pound sheepie. The bite may be light, butthe fight is intense with these brawlers.

Don was having one of those cursed days.Numerous stolen baits, pulled hooks, brokenhooks, you name it. He just couldn’t hit the score-board. Between the rest of us we had 10 sheepiesin the box. About that time, I threw a 23-inchblack drum in the boat, a cousin to the red drum.This guy tested the new reel to the max, makingseveral searing runs. The clock was running out onthis trip when Don suddenly had a solid hook-up.

After a spirited skirmish, Nick slid the net under anice six pound sheepshead, and Don had redeemedhimself with second biggest fish in our perpetualbrothers' tournament. Aside from the great sportthese fish offer, the best part is how they haveearned the nickname “river snapper.”

The sweet white flaky flesh is beyond compare inmy book. Shortly before I started telling this story,I enjoyed another tradition: eggs over easy withgrits and lightly breaded “river snapper” fried inbacon grease.

I’m getting restless again just thinking about it.

The warm weather of South Carolina brings backthe nostalgic song of the Red-winged Blackbird.These birds are a common sight throughout allof the United States, but they flock back into ourcoastal area each year to begin their breedingseason.

Agelaius phoeniceus winters in pastures andfields in the central United States, congregatingin flocks totaling in the millions. In mid-February,they migrate in large groups to Southern fresh andsaltwater marshes, where they roost in large flocksas a form of safety.

Red-winged Blackbirds have sturdy legs designedto do “splits” as they stand on two separate cat-tails at a time. Their smooth feathers allow themto move easily through rough and raspy grasses.They have excellent eyesight and are able torecognize a wider color spectrum than thehuman eye.

The males are particularly noticeable with glossyblack bodies and bright red and yellow patches ontheir wings. These birds use their colored patchesto attract females and to defend their territory.The females tend to be a mottled brown colorand spend their breeding time in the lower areasof tall grasses, singing a clear, beautiful song.

Male Red-winged Blackbirds typically arrive intotheir breeding areas prior to females. Standing ontall perches, males use their song as a way toestablish their territory, which they fiercely protect.A male can have up to 15 mates in a season.The female will choose a nesting site with the helpof the male, building a nest using stringy plantswoven into a bundle of upright stems such ascattails, bullrush or sedges.

The nest is usually placed close to water level orjust above the ground within the grasses. Once

the female has created a solid platform, she will usewet leaves and mud to create a cup. She then linesthe cup with dry grasses. A female lays betweentwo and four eggs at a time. The eggs take upto 13 days to incubate. The young birds begin tofly within 10 days. Young Red-winged Blackbirdsare good climbers and are mobile in the grassesduring their fledging stage. Males will defend theirnesting territory by chasing away other males andpredators lurking around the nests.

During the winter months they tend to eat seeds,corn and wheat. Farmers commonly see thesebirds as a pest since their large groups can destroysubstantial portions of crops. Pesticides deliberatelyplaced by farmers are a large cause of death forthis species.

Red-winged Blackbirds commonly eat insects duringthe summer. They use their beak to probe the mudat the base of grasses looking for prey. Crows,raptors, snakes and small mammals are all preda-tors to Red-winged Blackbirds. Despite their largenumber of predators, this bird’s population hassteadily increased over the years.

Red-winged Blackbirds are a regular sight through-out the entire United States no matter what timeof year. It is easy to bring these beauties into youryard by spreading mixed grains and seeds. Theyprefer to eat on the ground, but on occasion willvisit a bird feeder as well.

Dolphin Magic

During the early morning hoursof a late winter day, I’m greetedby a heavy fog as I make my wayonto the Broad Creek in my kayak.

The water seems undisturbed bywind or current. It’s like glass. Theonly interruption to the stillnessis the slice of my paddle blade inthe cool, clear water. Just off mybow, I see lazy ripples spreadingtoward my kayak. Perhaps it’s the result of adistant pelican diving for its breakfast.

Though I can’t see through the dense cloudthat envelops me, I can tell the tide is low.The rich aroma of the pluff mud is unmistak-able. Some dislike it, but to me it’s the smellof a vibrant and healthy salt marsh. I can onlyimagine a fling of Sandpipers scurrying acrossthe soft, unctuous surface searching for smallworms and bugs.

As I paddle, I hear the “phooow, phooow” ofa passing dolphin. Dolphin can be quite activewhen lower tides occur in the early morning. Istill my paddle to listen. I hear the sound againand then I notice several ripples approach thebeam of my boat. The air still opaque, I suspectthere are a few dolphin nearby and I sense theyare moving with intent. My naturalist’s intuitiontells me the dolphin may be preparing to feed.

Soon, I hear the clatter of sandpipers takingflight. I hear the deep, disgruntled call of theGreat Blue Heron. And then a tremendousswoosh of water and the sounds of somethingslapping furiously on the mud. I must be closeto the action, as small waves radiate towardme and gently rock my boat.

Suddenly, I realize I know exactly what this is.I’ve seen it dozens of times in the full light of

day. I’m hearing thedolphin strand-feeding. Howamazing to experience itthrough sound!

Soon, the warmth of therising sun begins to burn offthe fog. I can now see theSandpipers, the Great BlueHeron and half a dozen orso Egrets foraging on the

remains of small fish abandoned on the mudbank. Three dolphin cruise the edge,attempting to encircle another school of fish.

Experience has taught me that dolphin willstrand over and over again in the same area.My patience is rewarded as I watch the barelysubmerged dolphin move rapidly along theedge. Dozens of fish fly wildly into the air andthe dolphin burst onto the bank. They have,again, succeeded in strand-feeding.

Within minutes, the banks are covered by therising tide. Most of the birds have flown andthe dolphin have moved on. The fog has lifted,revealing another crisp, clear, and beautifulday on Hilton Head Island. I think I’ll paddlea while longer.

Proper Putting AlignmentBy Doug Weaver, Palmetto Dunes Oceanfront Resort

March is a great month to work on your fun-damentals on the golf course. With plenty ofsunshine and warming temperatures, Marchis a particularly pleasant time of year to per-fect your putt.

Putting stands apart as a skill that vexes play-ers of all skill levels. Understanding the keys toproper putting alignment can help you reduceyour score on the green, making putting simple,easy and effective.

Start by standing up tall, bending forwardslightly and keeping your elbows close to yourbody as you grip the putter. Remember that younever use your wrists or your hands to guidethe ball towards the hole when you’re putting.

In fact, the key to putting successfully is lettingyour shoulders do all the work. That’s becausefast-twitch muscles in your hands and wrist tendto twitch faster under pressure when adrenalineis flowing, making those parts of your bodyless reliable. The slow twitch muscles in theshoulders work better under pressure.

In addition, it’s important to keep your wristsand elbows under control during a putt. Besure to keep your wrists and elbows at a

consistent angle – they shouldn’t bend and flexwhile you’re putting. Instead, your body shouldform a natural triangle from your shoulders toyour hands, with your arms remaining in thesame triangular position as you move the put-ter through space.

Every putt should be a straight shot that usesthe natural mechanics of the putter to movealong the club’s swing path. The invisible linefrom the ball to the hole is called the targetline. Your goal should be to swing the clubeasily and effortlessly along the target line,sinking the ball into the hole with just theright momentum.

Common putting errors involve using the wrist,turning from the hips, standing too tall andpositioning your body too far away from theball. Golf is a mental game, but it also hasan important physical element as well. Gettingyour body in proper alignment on the greenis critical to developing a reliable, effectiveputting technique.

As the temperatures heat up in March, the golfcourses on Hilton Head Island are the perfectplace to be. While many courses up north arestill covered with snow, we’re teeing off on someof the world’s most acclaimed championshipcourses.

Make the most of your time on the golf coursethis spring and be sure to wear a hat for sunprotection. Good luck with your putting skillsthis month. I'll see you out on the green!
