When was the last time you stoppedand savored something? Not a fleetingmoment of self-indulgent happiness norshort-term satisfaction, but a powerfulmoment frozen in time when you tookpause to notice that all was right withthe world?

The zen-like act of savoring demands theperfect company, the perfect environmentand the perfect relaxation; it requiresnothing less than the perfect storm ofsensory delight.

If you’re overdue for the perfectly savoredexperience, or if you’re a junkie for life’slittle zests, consider the combination ofHilton Head’s spectacular beaches, won-derful food and award-winning localwines. Just as sea breezes temper HiltonHead’s balmy summer air to create themagnificent setting for a savory experi-ence, so too do the synergetic marriageof Petite Syrah and Filet Mignon create a

sensory experience that is nothing short of mind-blowing.

On its own, Petite Syrah tends to be an overbearing, jammy wine with heavy notes of black pepper andnew wood. Left to its own devices, Filet Mignon is afickle, mild flavored cut of beef easily dried out andtoo often drowned in copious sauce. Filet Mignonand Petite Syrah need each other the way a sunsetneeds a clear horizon to sink behind.

Combine the steak with the wine and magic happens.Sip a Petite Syrah after taking a bite of the beef. Thegentle marbling in the filet melds with Petite Syrah’ssubtle chocolate notes to create a savory flavor com-bination that perfectly accompanies a summer night.Raise your glass and toast yourself.

All of the stress of the week (or the year), the trafficon I-95 and the overflowing e-mail box were worthit just for this one moment when you can enjoy thesimple beauties of life. For you, this is a highlight ofyour island vacation. For the locals, it is just anotherreminder that there’s truly no place like home.

Petite Syrah demands such a special occasion becauseit requires such a precise pairing of food and climateto be fully appreciated. It’s not nearly as versatile asits more famous Sirah cousin, Shiraz, nor as robust asMerlot. With intense bursts of dark fruit notes ratherthan a lingering aftertaste, Petite Syrah goes great withlean, tender meats because it accentuates rather thanobscures a filet’s distinct mouth feel.

Hilton Head Island is a heavenly place that kisses theocean at just the right angle so that every waterfrontview is spectacular. On an island with such memorableviews, Petite Syrah and Filet Mignon demand a warmsummer night. An ocean breeze helps as, of course, does the company of one (or more) of your favoritepeople in the world. Visit us at Island Winery for ataste of our Petite Syrah!

The perfect bottle of wine awaits at IslandWinery on Cardinal Road. Store and tasting hoursare Monday-Saturday from 12:30 p.m. to 5:30 p.m.Wine Flights and Cheese are available from12:30 p.m. to 2:30 p.m. A Wine & Cheese HappyHour is offered Monday-Thursday starting at 4 p.m.(843) 842-3141 or islandwinery.com.

32 ISLAND EVENTS JUNE 2012 hiltonhead.com

The real estate market is heating up on HiltonHead Island and the surrounding Lowcountry. If you’ve ever thought about owning property onthe Island, now may be the perfect opportunity.

Whether you’re looking for a primary residence, second home or investment property, our mar-ket is primed for buyers to succeed. This month,we will explore the role of a property manage-ment company and how it can benefit both thevacationer as well as the property owner.

Why Hilton Head Island?Well, for one thing, just take a look around you.Our 12 miles of sandy beaches, moderate cli-mate, abundant wildlife and in-keeping-with-nature architecture truly make Hilton HeadIsland a special place. We are also part of anatural migration of Baby Boomers looking toretire to warmer climates. Hilton Head Islandis nearing a point of being built-out, which willhelp to drive prices up in the future. In addition,as other areas become increasingly commer-cialized, Hilton Head Island will always retainits natural charm due to regulations put in placemany years ago.

The VacationerFeeling a little cramped in that hotel room? While the daily turndowns are nice, maybe youneed the comfort only a villa or a home can bring.A growing number of vacationers are turningto property management companies to find theperfect vacation retreat. Island rental companiesoffer a variety of properties for you to peruse ontheir websites, indicating availability, how manypeople each will sleep, what interior and exte-rior amenities are available, distance from thebeach or other attractions, minimum length ofstay, whether it is pet-friendly or not and of course, the price. Ever thought of having a weddingon the beach? Property management compa-nies can help you find the perfect venue forthe wedding as well as accommodations foryour guests.

Although most companies offer online booking, property managers are also just a phone call

away. They are there to assist you in choosingbetween properties, providing directions, secur-ing travel insurance and offering advice onactivities and local favorites. Once you arrive, property managers typically provide a welcomepacket filled with maps, restaurant guides anddiscount coupons. If you are inconveniencedby anything during your stay, they are here tomake it right, day or night.

The Property OwnerIf you’re thinking of purchasing a second homeor villa and are interested in renting it out tooffset taxes and mortgage payments, choos-ing a qualified property management companyis key. Property managers can offer peace ofmind that your property is being well cared forduring your absence. This includes marketingyour property for maximum rentals, securingpayments, greeting guests, coordinating clean-ings and repairs, inspecting the property fordamages, resolving complaints, providingmonthly statements and offering advice abouthow a renovation or cosmetic update couldincrease your rental income.

Property management companies usually chargeanywhere from 15 to 25 percent of the grossrental income, plus cleaning and repair charges. In choosing between companies, you may firstwant to visit websites online. With so manypeople using the Internet to search for rentalproperties, if you’re not impressed by a web-site, chances are people looking to book yourproperty won't be either. Next, you’ll want to con-tact a number of companies to compare rentalprojections, fees and marketing programs. Onceyou decide on a company, use their experiencedealing with customer requests and preferencesto help get your property “rental ready.”

Property management companies offer ben-efits to both the vacationer and the propertyowner. Contact Carey North at PalmettoSands Realty & Rentals at 843-384-6402or visit CareyNorth.com to find the prop-erty that best suits your individual needs.

Horoscope June 2012

ARIES Now is the time to consider takinga rest from your labors. Like many of your

sign, you may have burned yourself out withoutonce getting away for a few days of real rest. Ifyou can manage to do so now, your health – andfuture productivity – would benefit immensely. There is a chance for romantic adventure in theoffing, but you should be rested before you play.

TAURUS The knowledge you have inspecial areas has long been virtually

wasted. Consider seriously taking advantage ofyour knowledge and your skills to make moneyfor yourself for a change, instead of adding tothe coffers of others. An old romance could bereplaced by a torrid new one, but not at a cheapprice. This should be taken into serious consid-eration. Expect a phone call.

GEMINI Academic pursuits or special-ized learning activities go well for you now.

This could be a good time to take up the studyof that musical instrument you have been threat-ening to learn for many years. You could also runinto some financial problems now, resulting frompoor planning or unwise investments, but thiscould be forestalled if you act quickly.

CANCER Catch up with the world andtry to stay out of dreamland. Your biggest

fault is talking about grandiose plans and nevergetting off the dime to do something concreteabout them. Your talents are virtually endless, butyour love of ease and sloth can be your undoing.Expect an important message from an old loveconcerning a situation dear to your heart.

LEO Upward and onward should beyour cry now. Your abilities have never

been tested so much as they are likely to be in ashort time – but if you react with one-tenth ofyour capability, you could rise to the top of thepack with scarcely a feather ruffled. Speakseriously with an employer or colleague aboutyour situation and don’t mince words when itcomes to placing a value on your services.

VIRGO An interesting new romantic sit-uation could open up for you at this point

– and it may well be with someone you alreadyknow and least suspect. Correct behavior isimportant to you now, however, as many eyesare on you. If you are already in a mate situation– or if your new friend has commitments – it mightbe best to cool things for a time.

LIBRA Playing things safe might seemthe wiser course, but it won’t bring that

sweet knowledge of having stayed in the gameto the end. Losing isn’t the worst thing that couldhappen. It could seem far worse at a later date notto have tried at all. And the chances might just beabout 50-50 that you could win. Don’t expect mir-acles or depend on others to bail you out, however.

SCORPIO Use every effort to get intouch with a close friend whom you have

let slide into oblivion. There could be somethingtruly amazing and exciting in it for you if you do.Social activities should be soft-pedaled for awhileuntil you find out more about a certain situation.Keep your ears open for word of an importantbusiness transaction that could benefit you inmore ways than one.

SAGITTARIUS Set up some intricatesafeguards to protect yourself and your

property, especially if you are dealing with a finan-cial project. Risking personal debt on an unprovenproject could bind you up for some time – but if itseems right, there is no reason why you shouldn’ttake a solid position with savings or personalleverage. Say no to an unsavory proposition.

CAPRICORN Try turning yourself aroundby making an honest effort to look at both

sides of a situation before sounding off. Thereis an excellent chance for you to improve yourfinancial or career position, but you may have totake the bull by the horns and move as quickly asan Olympic sprinter to do so. Your love life couldbe dampened by the actions of a third party.

AQUARIUS Stealing a kiss may seemlike enormous fun at the time, but such

simple pleasures could develop into big problemsif the proper safeguards are not taken into con-sideration. Steer clear of fast-money schemes. In all likelihood, those who would recommendsuch action stand to make a great deal morethan you – and you could easily be left holdingan embarrassingly empty bag.

PISCES Strongly consider rewardingyour co-workers for the successful com-

pletion of a project for which you have receivedthe lion’s share of credit. This could insure futureloyalty and it might take no more than a simplepat on the back, although something more con-crete might not be amiss. Check out a romanticsituation very carefully before you commit yourself.

The large chunk of fresh cut bait had scarcelytouched bottom when the fish inhaled it and tookoff. As quickly as I moved the drag to the strikesetting, the hefty rod bent double as the fish wentunder the boat.

“BIG BROWN, BIG BROWN!,” my brother Donhollered, as the fish took to the air behind me onthe other side of the boat. I could hear the loudsplash, but was too busy bent over the side with therod in the water, trying to keep old big brown fromrubbing the line against the hull and breaking off.

Don tilted the engine as I worked the fish back tomy side of the boat and, after a few tense minutesof seesaw action between the line and the trans-ducer, she was free and on my side again. As Ihanded the rod to my 10-year-old son Caleb, the fish broke water again, now on the properside. The fish surged, taking line freely.

I held on to Caleb, since this fish weighed at least ashalf as much as his 80 lbs. Caleb groaned underthe strong pull of the fish. Slowly, we worked thecobia back to the boat. After 10 minutes of backand forth, the fish saw the boat and the line peeledoff the reel again, much to Caleb’s protests.

I assured Caleb the fish had plenty of fight left. Andhe did. The battle raged on for another 20 min-utes. Each time Caleb worked him close to Don’swaiting gaff, the fish would take off on anotherspirited run. Finally, much to Caleb’s relief, Donplanted the gaff securely in the cobia’s chin andthe fish was in the boat. The cobia weighed over40 pounds, a nice first cobia for Caleb.

Cobia are large battlers that move into our soundsto spawn in May and June. Averaging between15 and 85 pounds, these fish offer the inshoreangler reel sport. Although the cobia action wanesby mid-June, there are many other exciting speciesto be caught at this time of year.

Near offshore – on the reefs and in the creeks –the sheepshead are biting. These black-and-whitestriped brawlers sport a nice set of molars similar tosheep, hence the name. They use these denturesto crush their favorite bait, fiddler crabs, suckingthe essence out of them, only to leave you withan empty shell! The challenge lies in detectingthe delicate “tap tap” of a bite. Once hooked, there is nothing delicate about these fish, exceptthe filet when you put it in the pan.

Also biting are Spanish mackerel and bluefish offthe sandbars close to the beach. School fish, theaction is usually fast and furious when you encounterthese guys. In the same areas, large jack crevallecan be found, along with an occasional bull red-fish. Patrolling the bait and Spanish Mackerelschools, you never know when the big brother ofthe Spanish, the king mackerel, may be lurking.Weighing between 15 and 60 pounds, this royaltyputs up an exciting battle.

Last but hardly least, the real June crowd pleaser isthe shark. We have many different species of sharkshere in the Lowcountry including bulls, blacktips, duskies, scalloped or bonnet heads, sand, reef, sharp nose and many more.

Most will be in the four to five foot range, but forthose with an appetite for adventure, there arelarger ones to be had. Offshore charters reel inmassive tiger sharks measuring 12 feet or larger! The smaller ones can be caught on short trips andoffer lots of regular action, a priority for youngeranglers. Sharks make for great vacation memo-ries and, best of all, the kids love them!

Capt. Miles Altman of Bayrunner FishingCharters has more than 40 years experiencefishing the waters surrounding Hilton HeadIsland. Contact him at 843-290-6955 to bookan unforgettable inshore or offshore charterfishing trip, departing from Shelter Cove Marina.

98 ISLAND EVENTS JUNE 2012 hiltonhead.com

By Capt. Patte Ranney, S.C. Master Naturalist,Outside Hilton Head

Meet the Atlantic Bottlenose Dolphin

Of all the animals frequenting the saltmarshand tidal waters surrounding Hilton HeadIsland, no species attracts so much attentionas the Atlantic Bottlenose Dolphin.

We are fortunate, in our area, to enjoy dolphinyear-round. The resident dolphin are known fortheir unique strand feeding behavior, witnessedonly along a 100-mile stretch of the Easternseaboard. In the summer, the resident dolphinpopulation is joined by migrants who have spentthe cooler winter months roaming near shorealong the coast of South Carolina. Combined, the population of dolphin in the waters surround-ing Hilton Head Island swells to several hundreddolphin – and possibly more – during the sum-mer months.

At this time of year, it is highly likely you will wit-ness the feeding, frolicking and playful behaviorof dolphin along our sandy shores and withinthe grassy confines of our salt marshes. Whatmakes our waterways so inviting? The answeris simple - food! The abundance of food drivesdolphin into the rich marine habitat of theLowcountry.

Biologists estimate that the saltmarsh producesseveral times the bio-mass produced by themost fertile agricultural soil. The amount ofplant and animal life supported in the saltmarshenvironment is truly astonishing. Adrift as thetide ebbs and flows, countless micro-organismsnourish larger and larger organisms in the foodweb that ultimately serve as breakfast, lunchand dinner (and lots of snacks in-between) fordolphin. An average adult Atlantic BottlenoseDolphin, which measures about eight feet longweighs several hundred pounds, consumesapproximately 50 pounds of fish each andevery day!

Highly intelligent, dolphin use both ocularawareness and echolocation to masterfullylocate food in their aquatic environment, mostoften working cooperatively to isolate, school, consolidate and devour their prey. And, it issaid, their echolocation skills are so acute theycan identify favored fish from all the rest!

It is important to note that dolphin are quitedistinct from porpoises. While dolphin andporpoises are related, as both are membersof the order Cetacea, dolphin and porpoiseshave important differences.

Dolphin have cone-shaped teeth, while porpoisehave flattened spade-shaped teeth. Dolphintypically have a distinct thick beak, whileporpoise tend to have a blunt nose. The Amazing Ghost Crab

Have you ever tried to sneak up on a ghost crabwithout success? It’s because these awesomecreatures can see 360 degrees around their ownbody. Nothing can surprise them! This is one ofmany adaptations ghost crabs have developedin order to live successfully in the harsh environ-ments of our sea shore.

Ghost crabs are survivors. Living in the harshenvironment of our dune systems can be trying, but these little guys manage to pull through.Fighting against intense heat during our summerdays, water invasion from high spring tides andthe effects of harsh storms is an ongoing struggle. In an area with little shelter, they are able to hidefrom predators and protect themselves in burrowsthey dig in the sand. Food can be scarce in thesandy dunes, but ghost crabs have developedincredible techniques to find meals.

Atlantic ghost crabs, known as ocypode quadra-ta, are about two inches long and a sandy whitecolor, which enables them to camouflage into theirsurroundings. The scientific name of the ghostcrab means “swift footed,” which directly reflectstheir fast speed. Ghost crabs can switch directionsin an instant and quickly scurry out of harm’s way.Ghost crab predators include raccoons, birds andeven fish. Although ghost crabs are not a protectedspecies, the development of beach fronts hasimpacted their numbers by encroaching upontheir habitat. Pollution and beach erosion are otherfactors that may impact ghost crab numbers.

These unusual creatures have both lungs andgills, enabling them to live in an ever-changingcoastal environment. Their gills need to stay moistfor survival. Ghost crabs can gather moisture fortheir gills by absorbing water from their dampburrows. They can also be seen heading to thewater for a quick splash. Young crabs build theirburrows close to the water line, in order to lessenthe distance for gill moistening.

The burrows are short, slanted tunnels that slopedownwards at about 45 degrees. They can beup to four feet deep. When the temperature is

less than 60 degrees, the ghost crabs becomedormant. They go into their burrows and stayalmost comatose until the temperature increases. This explains why the ghost crab is more common-ly seen in our summer months, even though it livesin the Lowcountry all year-round.

These animals are mostly nocturnal, gatheringtheir food from dusk until dawn. This allows themto avoid any larger predators that may come afterthem during the day. They feed on mole crabsand coquina clams and scavenger hunt fordeceased things that wash up on the beach. Iffood on the beach is scarce, the crabs are ableto “deposit feed,” which means they will passsand through their mouths, separating any tinynutrients from the sand and then re-depositingthe sand onto the beach.

Just like all other crabs – and even other animals– breeding is a form of competition. Male crabsface off in a ritualized battle. They will raise bothclaws into a threatening posture and then continueinto a pushing competition. At times, males alsojump towards one another until, eventually, oneof the crabs submits. Mating will occur on thebeach or inside the dens. Once the eggs areready, the female releases them into the shallowwater, usually at a high tide during the full moon. The eggs then free float for about four to sixweeks. During this time, the eggs and youngcrabs are prey to many different aquatic animals. The young that survive will return to the beachonce they’ve reached the size of an apple seed. After that, the life cycle continues on for thisincredible creature that shares our naturalcoastal environment here in the Lowcountry.

The H2O Nature Center, which features livereptile and amphibian exhibits and hands-ondisplays, focuses on the wildlife and habitatsof the South Carolina Lowcountry. Naturetours, apparel, gifts, books and bicycle/fishinggear rentals are also available. Putting the “Fun” in FundamentalsBy Doug Weaver, Palmetto Dunes Oceanfront Resort

... hold your golf club lightly with yourarms relaxed...

Golf requires mastering the fundamentalsin order to develop a strong swing or aneffective putt. However, it’s equallyimportant to emphasize the “fun” infundamentals.

After all, everyone always says they’re goingto “play” golf. We can refer to the dictionaryfor an official definition of the word “play,”but we all know that this verb refers to havingfun, enjoying yourself and being entertained.

Think of the golf course as your own personalplayground. It’s a place where you can havefun, relax and develop your game. In golf, youwant to feel loose and free like Fred Couplesor Vijay Singh. Being relaxed is so importantat every stage of the game.

Remember that when you play with your kids, your grandchildren or your dog, you instinc-tively use a light touch so that nobody gets hurt. It’s the same way in golf. You want to holdyour golf club lightly with your arms relaxedand your grip pressure relaxed. Being tenseand tight will only hurt your golf swing!

Instead, you want your swing to be fluid, syrupyand free. Your swing should be free of tension, free of thought and free of anxiety. Keep youreye on the target and visualize in your mindthe shot you want to make.

Remember that the human mind is comprised ofconscious and subconscious thoughts. You wantto feed positive, relaxed, affirmative thoughtsto your subconscious mind in order to maxi-mize your swing. If you let those encouragingsubliminal messages guide you and apply

solid fundamentals to your game, you’ll beable to succeed on the green. After all, the keyto improving your golf game lies in combiningstrong mechanics with a positive mentality. You’ll have more fun on the golf course – andplay better on every hole – if you have a goodattitude.

Also, keep in mind these basic principles:See itFeel itTrust it

First, you have to see the shot. That meansexamine the set-up, but also visualize in yourmind’s eye the shot you want to make. Second, feel the shot in your body. On a physical level, engage your swing fully to help make the shotyou see in your mind a reality. And, finally, trustthe shot – and yourself – to free yourself fromthe anxiety that often plagues many recreation-al and professional golfers.

The bottom line is that golf is a game and itshould be fun! Don’t take it too seriously or dwellon the negative. Stay loose and positive andyou’ll accomplish so much more on the green.

June is an ideal month to play golf on HiltonHead Island and the perfect time to fine-tuneyour skills. Have fun out on the course!
