Wine critics call turf terroir, which refers to thesense of distinctive place that gives each vintagea particular character. In my opinion, some of the best AmericanRiesling grapes grow far inland and to thenorth, in the Lake Ontario region. Climate,soil and ancient geology on the land work inharmony to produce a grape with distinct fruitflavors unique to the land from where it came.

Yet for all of the talk of terroir, the real measureof a Riesling wine is its ability to be perfectly

paired with seafood. It’s thewine’s “turf” to the sea’s neverending supply of “surf.” FiletMignon, buttery lobster and agentle Riesling offer a savoryexperience on Hilton HeadIsland that is hard to match.

At Island Winery, we endeavor to craft the“turf” that will go with any “surf.” Our Rieslingis robust enough to stand up to the savoryflavors of a filet, but it tastes best washingdown lobster or local shrimp cooking in agarlic-herb butter sauce. The dark, sinister form appeared 20 yards fromthe boat, swimming lazily but with a sense ofraw power.

His impressive 12 feet in length confirmed thatpower as he nosed up to the stern of the boat,following the scent of the barracuda we hadhanging from our vessel. The distinctive stripeson the creature’s sides, along with his massivesize, confirmed that this was a tiger shark. Thesemonster sharks are not uncommon on localoffshore reefs and offer anglers a battle thatcan last for hours. Of all the sharks inhabitinglocal waters, this one is king and is truly amajestic sight to behold.

Closer inshore and on a much smaller scale,we have numerous kinds of sharks that offerexciting sport for young and old alike. My per-sonal favorite is the blacktip, a beautiful, highlyspirited species that often takes to the air mul-tiple times during the fight. Dark brown alongthe back, eventually fading to a golden hue,the tips of the fins have a trademark black hue,hence the name blacktip.

Most of the area’s inshore blacktips are betweenthree and five feet long and weigh between fiveand 20 pounds. Larger blacktips can usuallybe found behind shrimp boats a few miles offthe beach, weighing in at up to 100 pounds.

Stout tackle is required for thesemonster sharks. You have to appre-ciate the sheer power of these fishwhen they erupt behind the boat,like a cruise missile launched froma submarine, launching 10 feetinto the air.

Probably the most common speciesof sharks in local waters are thebonnet head (also known as

“bonnies” or scalloped hammerheads) andthe Atlantic sharp nose. Both are made of lean,pure muscle and can lead you to believe thefish on the end of your line must be at leasttwice its actual size. It’s not hard to catchdouble digit numbers of these sharks in thedog days of August.

Often times, these sharks can be found in localcreeks and sounds, making them available toreel in on smaller boats. These shark speciesoffer a lot of sport for the more economicalthree-hour charters offered by most of thelocal charter boats.

The list of sharks in area waters goes on andon… lemons, bulls, fine tooth, duskies, etc.There is a “monster” to fit any budget or ageduring the dog days of summer. Every year, hundreds of thousands ofjellyfish pass through our waters.

Most jellyfish along the South Carolina coastare harmless, but in the months of Augustand September we get some warm watervisitors than can ruin a perfect beach day.Sea Nettles are the most common sting-ing jellies found in our late summer waters.

Jellyfish are brainless and generally free-floating creatures. They have a rudimentarynervous system with receptors that detectsunlight, odors and other stimuli. Jellyfish haveradial symmetry, which is to say that all of theirbody parts radiate from a single axis. This gen-etic design allows them to respond to stimulifrom any direction.

These animals rely on ocean currents, tides andwinds as their main transportation, but they areable to swim in a vertical motion. Jellyfish contracttheir bell-shaped heads to move up and down inthe water column as they search for food or movetowards sunlight. Although many people may thinkthat jellyfish attack on purpose, these animalsreact reflexively to contact and do not intend tocause humans any harm.

The outer layer of a jellyfish bell is called theepidermis. The inner layer of the bell that lines theirgut is referred to as the gastrodermi. The interiorof a jellyfish houses its digestive cavity and simplenervous system. This inner area, called the coe-lenterons, contains the jellyfish’s gullet, stomachand intestines. These animals have one openingthat is used for both the input of nutrients as wellas their excretions.

They typically have four to eight tentacles thatdangle below the bell and transport food from thetentacles to the mouth. These tentacles are coatedwith cnidocytes, venom-filled capsules with tiny barbsthat inject toxins into prey, immobilizing them. Jelly-fish are carnivores eating zooplankton, otherjellyfish, small fish and even crustaceans.

Sea nettle stings are not pleasant. Theirtentacles contain both a trigger and a stingingstructure. While floating through our waters, theirtentacles will come into contact with something

solid, which stimulatesthe trigger releasing tinybarbs full of toxin. Theseverity of a sting willdepend on a number offactors: the thickness ofthe skin in contact, thepenetrating power of thebarbs and the sensitivityof the victim to the toxins.Jellyfish stings canusually be treated athome; however facial or

genital stings should be treated by a doctor.

If stung by a jellyfish, the first thing to do is removethe barbs. Barbs that are not removed will con-tinue to release toxins into the body. Sand, towels,clothing or any available rough material will helpin removing these barbs. Beach Patrol memberson duty are equipped with spray bottles full ofwhite vinegar, which helps neutralize the toxins.Baking soda may also be used. The notion thaturine will help aid a jellyfish sting is a myth; infact, urine may stimulate the barbs to fire moretoxins. Once the toxins have been neutralized,using topical Benadryl or calamine lotion willease the itch that follows a sting.

Tentacles can sting whether they are attached tothe jellyfish’s body or not. Tentacles and pieces oftentacles can wash up with sea grasses and otherocean debris onto the beaches, so take cautionduring the heavy jellyfish season.

The best way to avoid Sea Nettle stings wouldbe to avoid entering the water during migratingseason. However, for those of us who can’t stayout of the ocean, wearing wetsuits or rash guardsor even panty hose in the water will help to preventjellyfish stings.

Summer Saltmarsh Sightings

The saltmarsh provides food and protectionto a myriad variety of animals. The murkywater – filled with an estimated five millionliving organisms per teaspoon – providesnutrients for everything from the smallest plank-ton to apex feeders like dolphin.

While you may become accustomed to seeingthe same selection of birds and mammals inand around the saltmarsh, keep your eyes openfor surprises. After all, nature rarely disappoints.

In fact, the patient observer is rewarded withopportunities to see amazing animals that ven-ture into our little neck of the woods in searchof food and protection. The summertime isno exception.

For as long as I’ve lived on Hilton Head Island,nearly 40 years, I’ve known about the annualsummer visit of a manatee or two. Back in theday, sightings were most frequent on Skull Creek,the body of water we all cross over coming ontothe island. Within the last decade or so, thenumber of manatee sightings has increased.Perhaps we are all being a bit more observant.For the last several years, I’ve spotted this gentleaquatic mammal – a relative of the elephant –on Broad Creek, all the way into the confinesof Shelter Cove Marina. Often drawn to outletsof fresh water, including water hoses at localmarinas, it requires some diligence andpatience to spot the slow moving manatee.

I feel fortunate to have seen manateeson several occasions, though my mostmemorable encounter left three distinctimpressions indelibly marked in my mind:

Manatees are really big. Adults aver-age about 10 feet in length and canweigh 1,000 pounds. They have reallybad breath! While the bulk of a mana-tee’s diet consists of aquatic plant life, italso includes small fish and crustaceans.The manatee’s large, disk-shaped,paddle tail is unlike any other animaltail I’ve ever seen. It provides a criticalform of locomotion for one of nature’smost gentle mammals.

I’m also thrilled about seeing Roseate Spoonbillson Broad Creek. A member of the same familyof birds as the White Ibis, the Roseate Spoonbillgenerally inhabits areas farther south along thecoast of Florida, Texas and Central America.Named for its specialized spoon-shaped bill tip,these birds usually travel in flocks and feed alongmuddy embankments where small pools isolatethe fish and shrimp that comprise their diet.

The first time I saw a Roseate Spoonbill, I wasfascinated by its color. Initially, I thought it wasan Ibis and attributed the pinkish cast due tothe light of the rising sun – until I saw thatdistinctive bill.

Lately, three of these amazing birds have foundsafe haven (at least temporarily) along BroadCreek. My fellow guides and I are thoroughlycaptivated by the trio of Spoonbills, especiallytheir feeding behavior. Join us and perhapsyou will see them too.

I enjoy helping golfers improve their golf game,lower their scores and widen their smiles bysharing the tips I’ve learned over the yearsthat lead to success on the green.

I grew up in a small town in West Virginia andlearned to play golf, for the most part, withouttaking instruction. I was a good athlete, but Ideveloped swing problems from being an under-educated golfer. I went on to be a successfulgolfer at Furman University and eventuallyended up on the PGA TOUR, but I learned alot of hard-earned lessons along the way.

I learned early on that when you do somethingwrong in your swing, you often compensateby doing other things wrong. In addition, pres-sure only enhances the problems with your golfgame. For every problem in a golf swing, there’sa solution. I love helping golfers eliminatemistakes, have fun and enjoy the game evenmore. I’m not afraid to share my failures andto help golfers learn from my own mistakes.

August is the perfect month to perfect your golfswing on Hilton Head Island. One of the mostimportant tips to keep in mind is to use yourbig muscles when you’re in a tight spot on thegreen. In high-stress situations, it’s natural tobecome nervous, anxious and tight. That’s whyit’s important to use the big muscles in yourtrunk, torso and legs to power your swing.

Don’t let the little muscles in your hands, wristand forearms provide the power for the swing,or you will be extremely disappointed. Whenyou use those small muscles, your club and

your swing get out of rhythm.

Remember that the body’s larger, slow-twitchmuscle fibers are more dependable under pres-sure. They provide the consistency you needto hit more shots with greater accuracy on thegreen and the fairway. It’s important to relax,organize your thoughts and prepare for success.

In addition, to improve your loft on the green,particularly when you’re in a forced carry situ-ation involving water, focus on clipping the teerather than lifting the ball up in the air. Don’tstruggle with indecisiveness. Instead, rememberthat golf is a game of opposites. When youswing down, the ball automatically goes up.

Don’t lift the ball with your wrist, as manygolfers tend to do. Instead, trust the loft andlet the club do the work. You’ll be much morepleased with the results.

As the mercury rises in August on Hilton HeadIsland, make sure you keep your cool on thegolf course. Stay hydrated, apply sunscreenand consider wearing a hat to shield your headfrom South Carolina’s hot summer sun.

Above all, focus on improving your swing,relax and have fun on the green. Play a fewrounds on Hilton Head Island, one of theworld’s ultimate places to play golf. You’ll jointhe ranks of some of the world’s top golferswho have teed off on the island’s award-win-ning championship courses. Hilton Head trulyis heaven on earth for golfers.
