Welcome To HighlightsAt this time of year, the days grow longer and nights get warmer, perfect for an al fresco cocktail at our new City Club venue, Bourke Street Green. If you haven't had the chance to visit yet, put it on your spring to-do list. The improvements at City Club have been well received by members and, of course, there's more to come, which you can read about on page 5.

There's so much happening in and around the Club in coming weeks. We're set for racing season and will make sure you are too (page 19). Good luck at the track. Featuring a variety of multipurpose areas, the fresh, modern centre is due to be ready this summer. BOURKE STREET GREEN: With the much-anticipated opening of our new bar, we hope members are taking full advantage of this vibrant new venue. Early feedback on the delectable food and drinks menu has been highly positive—we'll continue to evolve the offering to serve up more of what you want.

Did you know it takes 355 litres of water to wash a load of gym towels? When you consider that the City Club Fitness Centre washing machine is put through its paces 15 cycles every single day, it really adds up—to the tune of around two million litres of water each year.

That’s why, from 1 November, members are asked to provide their own sweat towel to train at the City Club Fitness Centre. Don't have a sweat towel? You can buy one from the Fitness Centre. If you’re caught out, towels are available from reception. Full size shower towels remain available for hire.

WEDDINGS SPECIAL

The love story of Radhika and Utkarsh Sahu began at a mutual friend’s engagement party. Later paired together at that same couple’s wedding, they thought nothing of it. But over the next three years, Radhika and Utkarsh kept

running into each other at social gatherings... and there was no denying their fate. At their favourite boutique winery in the Yarra Valley, the question was popped: a wedding was on the cards.

ALL IN THE PLANNING

"Indian weddings can be big, loud and chaotic,“ says Radhika. But when the time came to choose a venue, it was precisely the opposite that appealed to her. “There was a calm and serenity that engulfed us,” Radhika says of visiting the Healesville Country Club. "At that moment, we knew we wanted to permeate that feeling on our special day. We also fell in love with the idea of an outdoor wedding with the beautiful backdrop of the Yarra Ranges.”

The couple envisaged a contemporary take on a traditional Hindu ceremony. That meant lashings of colour with touches of soft pink and splashes of cream, inspired by the natural backdrop, to bring a sense of simplicity. The bridesmaids wore glittering peach-hued saris and the groomsmen wore floral peach turbans and cream suits by Amaare in New Delhi. The modern touch extended to pastel flower arrangements and simple whites for chairs, carpet and drapery.

THE BIG DAY

As she spent the morning getting ready, Radhika has fond memories of seeing the wooden gazebo on the eastern side of the Club transform into a modern mandap—a pillared structure with canopy under which Hindu ceremonies traditionally take place. The gazebo framed the mountains perfectly on that sunny Sunday.

Guests arrived to the sublime sounds of a sitar with the tablas adding their exotic beat. A riot of sound erupted as Utkarsh and his groomsmen made their entrance at the head of the traditional baraat, a procession of family and close friends, winding their way along the cobbled path towards the mandap. >>

Radhika, resplendent in red-and-gold embroidery (custom-made by Heritage in New Delhi) entered adorned in jewels glittering from her hair, ears and neck. Stacked bangles ran down to her hands, covered with intricate henna tattoos.

Celebrant Pandit Akash Deep set a reverential tone for the ceremony and as they gazed out from under the canopy of flowers as husband and wife, Utkarsh and Radhika were overwhelmed with the sense of joy and love emanating from their dear friends and family. All that was left was to celebrate the union with more colour and music, all accompanied by food lovingly crafted by the RACV Club chefs (see opposite).

LIFELONG MEMORIES

The natural beauty and sense of peacefulness may have initially attracted the pair to Healesville, but the vibrancy and movement of their celebration made the experience uniquely their own. Beyond the idyllic setting, the service and attention to detail from the Club team helped Radhika and Utkarsh create the wedding of their dreams.

It was, they say, the perfect place to seal their union and create memories that will stay with them forever. The couple never tire of watching their wedding video, relishing every opportunity to re-live the day over and over again.

ON THE MENUTalented young chef Lalit Kumar has fond memories of watching his mother cook, something that instilled in him an inate love of traditional Indian cuisine. Having trained in India and Australia, Lalit's influences draw on various regions of the sub-continent. He has such devotion to the authenticity of the cuisine that he makes his own gram masala raw spices on site so that he can create exceptional curries from scratch.

“I love to create a menu to the requirements of the couple and their family. We can always alter the offering or create something custom,” he says. "While the wedding is being organised, I like to meet with the couple here at the Club and discuss what we can create for their special day, to come up with something to wow the guests.”

Invariably, the winning combination of the spectacular Yarra Valley setting and Lalit's culinary skills is guaranteed to impress at every step through the day. Radhika and Utkarsh's parents admit they were wary at first, wondering how well equipped the Healesville kitchen would be to create an authentic menu for the wedding. Any doubts were dispelled at the pre-wedding tasting—guests were bound to be impressed.

FASHION ”Navy and grey are go-tos, but the trend is high blues—lighter blue with a tinge of grey. There’s an influx of jade in socks and linen ties. Texture is big, with nailhead fabrics that give the perception of variegation in the thread colour. We’re also seeing a modern take on the classic glen plaid, updated with contrast colours through the check. Think reds and deep purples running through grey.”

HEADWEAR The classics always have a place, but we’re seeing shifts in trim colours. Instead of brown or grey, try burgundy with green or navy trim. A fedora is a classic, but this season the brims are worn up all the way around, as opposed to the traditional down at the front, up at the back. Flat brims are also popular. You can get away with wearing a cap, depending on your outfit—think Peaky Blinders.

In truth, Jelena Grujovic never set out to become a chef. “I wanted to be a translator and learn many languages,”

she says. “That was my first love.”

But after being accepted into culinary school and taking up a job with Hyatt Hotels at 17, Jelena ended up speaking the language of food and it soon became her main love.

Fast forward 13 years and the talented chef has cooked in kitchens in her home town in Serbia, across Europe, the UAE and, now, Australia. As the Members' Dining Room Chef de Cuisine, Jelena looks forward to sharing the flavours of her childhood with diners.

“I want to bring something really new to our members,” says the 30-year-old. First, Jelena introduced quick and easy lunch options for time poor diners. Next, she hosts her first gala dinner inspired by her upbringing. An overseas visit back home in early spring will help to shape the menu.

“Every day I wonder what I am going to cook,” she says with a laugh.

FROM THE VINE Wine And Fashion

While the recent explosion of wine bars and an acceptance of different wine styles has spawned a more sophisticated wine culture, wine itself has always been at the mercy of fashion. Not so distant in my

memory is the fad of over-oaked chardonnays, the rise of rich and oily viognier, and the surge of sauvignon blanc from across the ditch—the tsunami blanc.

Against these whims of fashion, as fleeting as last season’s hemline, we have to wonder what drives these changes of mood. Wine shouldn’t have to ride the ups and downs of fashion. In fact, it moves outside of fashion when it redeems a unique taste from a particular area, articulating a sense of place and style above the driving factor of grape variety or clever marketers.

Australian winemakers are starting to follow an old-world pattern of distinctive regionality, focusing on styles and varietals that best suit the area and climate where they're produced. With chardonnay, for example, we can redeem a cooler, crisp and lightly wooded example from the higher reaches of the Yarra Valley for its freshness and minerality, or a complex, rich and savoury example from the Margaret River, or look to the Hunter Valley for its own distinct characters. All chardonnays, but showing the uniqueness of their regions.

Born and raised in the Yarra Valley, Scott Coleman knew it was

only a matter of time before he got a job at a local winery—it’s just what you do. From there, his appreciation for wine continued to grow, leading him to Healesville to train as a professional sommelier. Now,

as the Club’s new assistant sommelier, Scott works with head sommelier Christian Maier to curate wine lists for the restaurants and help customers choose their drop.

“There’s a lot to learn,” says Scott, “from the technical side of working in the restaurant, to understanding a varietal’s history and how weather influences flavour.”

Scott says a good wine isn't about the type of grape, but but how it communicates

its place of origin.

“Wines I enjoy have a sense of ‘terroir’," he

explains, "a clear expression of where they come from, the earth, soil and climate in which they are produced.”

Many chefs are quick to proclaim devotion to locally-sourced ingredients—'hyper-local' is one

of the latest trends in dining. To Rupert Rose, head chef of Blue Tree Grill, the term is more than just a buzzword, it's the embodiment of his thinking. Just by stepping into the grounds of the Club, in the heart of the verdant Yarra Valley, Rupert finds inspiration in the form of new, unexpected ingredients.

“My food philosophy is to create general awareness about how we approach ingredients,” says Rupert. “Nature’s had millions of years to figure itself out, it's got it all sorted. You don’t need to play around with things too much, just use good-quality ingredients.”

On a morning foraging trip around the grounds, Rupert approaches a stand of trees. Walking with purpose, he knows exactly what he’s after—mountain ash bark, collected from the ground so as not to stress the tree.

“There are heaps of really good ingredients growing wild,” says Rupert. “Once you know what they look like, your whole world opens up.”

The bark is an important element for smoking local biodynamic beef for Rupert's Aussie take on steak tartare, the mountain ash evoking the aroma and flavours of a campfire.

“When I first started foraging, it was about discovery. Now, I get excited each season, knowing what ingredients

are coming. Generally, as a chef, you first learn to cook, move and work in a professional kitchen. The next step is to start questioning things.”

Rupert’s curiosity was fuelled by the abundance of local produce he discovered after moving to Healesville with his family six years ago. After honing his skills in Berlin and in Melbourne, alongside Gary Mehigan at the ground-breaking Fenix, the tree change has opened him to new possibilities.

“Healesville is very fertile, so you don’t have to go far to find [wild] ingredients,” he says. “I often walk to work and use that time to contemplate my day. Getting outside makes me happier, and I think you can taste that happiness in the food.”

Next on Rupert's al fresco shopping list is wild onion, also known as three-cornered

leek. At first glance it looks like little more than a weed, but it has a mild, onion-garlic flavour. Wood sorrel is also growing here, with its distinctively tart, citrus taste. Both will be used to add lively notes to his smoky tartare.

How do diners feel about these unfamiliar ingredients? Customers are open to trying new things and are intrigued by hyper-local produce. Perceptions are changing so much that many of these kinds of ingredients were once considered invasive weeds. Now they're wild-growing herbs.

Rupert is always trying to convince his fellow chefs to join him on foraging forays of exploration and experimentation.

“It’s a constant learning experience,” he says, “but it’s always easy to be inspired by nature.”

Spring is a time of renewal, and with events spanning from the racing carnival through to New Year celebrations, the time is ripe for a style update. Just don't expect to fly under the radar—this season, your hair and make-up should be out

to make a statement. The key colour for the season is coral, with the shade coming through strongly in lips, nails and even hair.

“We’re talking a subtle kind of muted orange that looks really amazing," says Tina Gooroochurn, hairdresser at One Spa City Club. Blondes, however, are also out in force. “We’re seeing people steer away from the previous grey and blue undertones, instead going for warmer washes.”

The most important factor to consider when planning a race-day look is headwear. Be it a wide-brimmed hat or a small fascinator, "your hairstyle tends to be determined by your headpiece,” Tina says. Hairclips remain a key accessory trend—and don't hold

back—make an impact and wear four or five clips at once.

If the thought of coral hair seems a little out there, that’s the point.

“With spring racing, you can go a bit bolder with your style,” says Kuli Cleary, One Spa City Club manager. “It’s all about being noticed, even if it's just your nails. Try coral, blue or yellow. Step out of your normal style, but without being made to feel uncomfortable."

For make-up, it’s important to consider the dress code of each race day. “Derby Day is more classic, with monochrome outfits that really do the talking. I’d pair that with a more natural make-up look, and maybe a bold lip," Kuli says. "For Oaks Day, or Ladies’ Day, you can go all-out and get a bright headpiece to match.”

Most important? Choose what works for you. "We always look at age, complexion and colouring to find a look that suits," says Kuli.

The odds of nailing a winning look, however, depend on how quick you are out of the gates.

“Next to Christmas, this is the most fun time of the year. On race days we open at 7am and the salon is always quite busy," Kuli says. “Some customers book 12 months ahead, so don’t leave it to the last minute.”

As the saying goes, it's better late than never. A few years back when a friend told Brian Curren (pictured, standing) that his philosophy was “do what you like to do and get paid for it", it was something of a lightbulb moment.

A bricklayer for 35 years, Brian was more interested in movement and the human body. A martial arts instructor for 22 of those years, he also competed in triathlons on the side. Suddenly, a new career opened up right in front of him.

So Brian began coaching triathletes and completed his Certificate III and IV in Fitness. When he hit 60, seven years ago, his attention turned to helping older people. He added a Rehab Essentials Masterclass at the Australian Fitness Academy—under the tutelage of Wayne Rogers, one of Australia’s top sports physiotherapists—to

his resumé. He followed this up with courses in Kinetic Link Training, designed around full body movement.

"It just made sense in a way other stuff in fitness training didn’t,” says Brian. “Your muscles never work in isolation. If you’re pushing something, your core, legs and arms are working, not just your biceps.”

Brian works with all manner of clients, ranging from older members to those recovering from injury and athletes. After assessing each client’s capabilities, he creates customised fitness programs to help each person optimise their strength and mobility. Getting people moving again is essentially about retraining muscles that have become tight or kinked through lack of use or injury.

Surprisingly, Brian says there’s little difference between working with athletes and older clients.

“You have the same body. You just approach it with a different intensity," he says. "Some people have put up with injuries for years, thinking ‘it’s just part of getting old’. But it’s not.”

Typically focusing on injuries caused by tight muscles, Brian often workswith patients referred to him by physiotherapists or chiropractors.

“I’ve had clients who stopped playing with their grandchildren because they thought they couldn't," Brian say. "Then one day they’re chasing them down the hall and have this moment of ‘oh, I’m running’. It’s just fantastic.”

Social Pool Night

Lovers of pool are invited to come and join in all the fun and flair of the RACV Club’s end-of-year 8-Ball night. Supervised by world champion Robby Foldvari, the evening is packed full of activity and excitement.

There will be a series of quick games within the RACV format, giving everyone the chance to win a prize. Members are more than welcome to bring guests to this event.

CyclingWestern Adventure

The Cycling Group is in preparation for their thrilling annual multi-day riding tour in November. The group's signature event, the tour is in addition to their monthly social rides, a tradition dating back to 2007. Anyone looking to explore Melbourne and the region on two wheels should become a member—the monthly rides on bike paths and roads are as varied as they are interesting. One month it may be a pleasant ride to a café for brunch and back to the city, the next a cruisy trip along the banks of a river or a full-length mystery circuit. No need to be a lycra-fuelled rider, but reasonable fitness levels are needed. This very social group is welcoming to new members. You could be taking the tour next year.

Ladies SnookerEstablished in 1999, the RACV Ladies Snooker Group, meets on the second Thursday of each month. The women in the group catch up over lunch at the City Club before heading down to the professional Billiards Room to enjoy a social game of snooker. Member Diana Trewenack (pictured) has been with the group for more than 15 years and encourages any woman with an interest in the sport to get involved and develop their skills.

“It‘s a good social day, with the ladies coming from all parts of Melbourne,” she says. And you don’t need to be a pro—training sessions help improve your play.

Tanglin Club, SingaporeThe Tanglin Club, established as a pillar of social life for select Britishers in 1865, has stood the test of time and remains an oasis of grace and charm. It has stood in the same location since its purchase in 1866. Before the fall of Singapore in 1942, the Club was prepared for use as a convalescent depot for the Malayan army and also an evacuee centre. It became a Japanese officers’ club during the occupation. Having survived the vicissitudes of war, age and apathy, and even a transformation, Tanglin retains an aura of exclusivity as one of Singapore’s premier social clubs.
