Big Batch Zucchini Muffins Preheat oven to 350 degrees Makes about 4 dozen muffins/ 4 loaves of bread
Dry Ingredients: Wet Ingredients:
6 1/2 cups all-purpose flour 1 1/2 cups vegetable oil
1 tablespoon salt 7 eggs
2 teaspoons nutmeg 2/3 cup water
2 teaspoons cinnamon 4 cups grated zucchini
5 cups sugar 2 teaspoons lemon juice
1 teaspoon lemon extract
1 teaspoon vanilla extract
Mix dry and wet ingredients separately and then combine until well mixed. If desired, add 1-2 cups of nuts, coconut, chocolate chips, and/or dried fruit.
Bake in muffins cups (line or spray with non-stick cooking spray) and bake for 20-25 minutes or until a toothpick comes out clean. Enjoy!
