Preheat your oven to 400°F (200°C) and grease 12 standard size muffin-pan cups.

Beat together the butter and granulated sugar until light and fluffy.

One at a time, add the eggs, beating thoroughly after each is added.

Beat in the bananas until the mixture is smooth.

Mix together the flour, salt, baking powder and baking soda.

Alternately stir the flour mixture and the buttermilk into egg mixture until the dry ingredients are just moistened.

Instructions for Blueberry Oat Muffins:

Combine the oats and the buttermilk; allow to stand.

In a mixing bowl, combine the flour, baking powder, baking soda, salt and sugar. Stir well to blend.

Add the beaten egg and melted margarine to the oat mixture. Mix thoroughly.

Add to the dry ingredients, stirring just until moistened.

Gently fold in the blueberries.

Fill 10-12 muffin cups sprayed with nonstick Spray.

Bake at 375°F (190°C) for 20-25 minutes, or until the top springs back when lightly touched.

Carrot and Raisin Muffins recipe

3 medium eggs.1 ½ cups of all-purpose flour.1 ½ cups of shredded carrots.1 cup of powdered sugar.¾ cup of granulated sugar.½ cup of raisins.½ cup of milk, plus 2 tablespoons of milk.½ cup of melted butter, plus 1 tablespoon of melted butter.¼ cup of cream cheese, softened.2 teaspoons of cinnamon.1 ½ teaspoons of baking powder.½ teaspoon of baking soda.½ teaspoon of salt.½ teaspoon of vanilla.

Instructions for Carrot and Raisin Muffins:

Preheat your oven to 400°F (200°C).

Combine the all-purpose flour, cinnamon, baking powder, baking soda and salt.

Beat together the eggs and the granulated sugar.

Add the shredded carrots, raisins, ½ cup of milk, and ½ cup of melted butter; mix thoroughly.

Cherry and Almond Low Fat Muffins

← 1 cup rice flour ← 1 cup of almond meal (ground almonds) ← 4 tsp baking powder ← 1/4 cup caster sugar ← 1 cup chopped and pitted cherries ← 2 egg whites, lightly beaten ← 1/2 cup soy milk ← 1/4 cup canola oil ← 1/2 cup apple sauce

Method

1. Heat the oven on 200°C . Brush oil on only the base of 14 muffin tins (normal size) or 8 large ones or line with paper cases.

2. Mix the flour, almond meal and baking powder in a bowl. 3. Add the cherries and sugar, mix well and make a well in the centre. 4. In another bowl mix the apple sauce, milk, eggs and oil. 5. Add the liquid ingredients to the dry ones all at once. Using a fork, stir and fold the

ingredients together only until it is all wet, it doesn't even matter if there are small areas of flour about. Do not over mix it.

6. Spoon the mixture into muffin tins, and bake for approximately 20 -25 minutes for normal size. They are ready when turning golden brown and a skewer comes out clean.

7. Place muffins on a wire rack to cool.

Chocolate Chip Muffins recipe

Instructions for Chocolate Muffin:

Preheat your oven to 400°F.

Coat muffin tins with non-stick cooking spray.

In a large bowl, combine the cocoa, flour, sugar, baking soda, salt and vanilla.

Stir in half a cup of chocolate chips.

In a separate bowl, combine the eggs and milk.

Add the egg/milk mixtute to the other ingredients until moistened.

Scoop the batter evenly into the prepared pan.

Sprinkle with the remaining chocolate chips.

Bake for about twenty minutes or until a toothpick inserted in the middle comes out clean.

Cool on a wire rack before removing from the pan.

Christmas Muffins

← 1 3/4 cups Plain flour ← 1/2 cup brown sugar ← 1/2 cup brandy or sherry ← 1 cup of dried mixed fruit ← 1/2 cup of walnuts, chopped ← 1/2 cup of glace cherries (if large chop in half) ← 2 tsp cinnamon ← 4 tsp baking powder ← 1/2 tsp salt ← 2 eggs, lightly beaten ← 1 cup milk ← 125g of butter, melted

Method

1. Soak the mixed fruit in brandy or sherry for at least 2 hours or overnight if you are so inclined (like Mum).

2. Preheat the oven to 200°C . Prepare 12 muffin tins by brushing the bases with oil or lining with paper cases.

3. Sift the flour, baking powder, cinnamon and salt into a bowl and stir in the sugar, nuts and cherries.

4. Mix the egg, butter and milk in another bowl. Stir in the fruit and brandy. 5. Pour the egg mixture into the flour mix and fold in with a fork. Do not over mix.. it has to

be JUST mixed. 6. Spoon the mixture into the tins. Bake for approximately 15-20 minutes. They are ready

when a skewer comes out clean. 7. Place muffins on a wire rack to cool.

Cinnamon Muffins recipe

2 medium eggs.3 cups of flour.1 cup of milk.1 cup of sugar.5 tablespoons of butter.5 tablespoons of shortening.3 teaspoons of baking powder.1 teaspoon of salt.1/2 teaspoon of nutmeg.

Topping:1 cup of melted butter.1 cup of sugar blended with 1 tablespoon of cinnamon.

Grease 12 three-inch muffin pan cups.

Cream together the butter, the shortening and the sugar. Beat in the eggs, salt, nutmeg and baking powder. Stir in the flour and milk alternately until mixture is just combined.

Fill muffin cups to the top.

Bake at 350F oven for about twenty minutes.

Allow to cool for a few minutes.

With each muffin, dip in the melted butter.

Roll each muffin in the cinnamon sugar blend.

Date and Orange Low Fat Muffins

These muffins are quite sweet, from the dates, and yet they are low in saturated fat, and very low in cholesterol. The use of butter, as in many muffin recipes, is replaced by canola oil. Egg whites are used instead of whole eggs and orange juice gives a nice flavour. They have approximately 8 grams of total fat each (1 gram saturated)

← 2 cups plain flour ← 5 tsp baking powder ← 1/4 cup brown sugar ← 1 cup chopped dates ← 2 tbls orange zest finely grated ← 2 egg whites, lightly beaten ← 1/2 cup skim milk ← 1/2 cup canola oil ← 1/2 cup orange juice

Method

ingredients together only until it is all wet, it doesn't even matter if there are small areas of flour about. Do not over mix it.

6. Spoon the mixture into muffin tins, and bake for approximately 20 -25 minutes for normal size and around 10 mins longer for texas size. They are ready when turning golden brown and a skewer comes out clean.

7. Place muffins on a wire rack to cool.

4 eggs, beaten.4 cups of flour.1 ½ cups of crushed pineapple, drained.1 ½ cups of skim milk.½ cup of sugar.½ cup of melted butter.2 tablespoons of baking powder.1 teaspoon of salt.

Instructions for Hawaiian Muffins:

Sift together the dry ingredients.

Add the beaten eggs, milk and melted butter; then stir until smooth.

Add the crushed pineapple and mix thoroughly.

Spoon into greased three inch muffin pans, filling three quarters full.

Bake at 425°F (220°C) for 20 minutes or until done.

Healthy Muffins recipe

¾ cup of low-fat milk.1 cup of low-fat yoghurt.3 x egg whites.¾ cup of apple sauce.2 cups of wholemeal flour.½ cup of folled oats.½ cup of oat bran.3 teaspoons of baking powder.2 teaspoons of cinnamon.½ cup of raisins.½ cup of chopped apricots.

Instructions for Healthy Muffins:

1. Beat the egg whites lightly then add the milk, yoghurt & apple sauce. 2. Combine the flour, oats, bran, baking powder, cinnamon, raisins & apricots in a seperate bowl. 3. Add the dry mix to the wet mix until combined.4. Spoon into muffin tins & bake at 350 F for about 20 mins or until cooked.

Mango and White Chocolate Low Fat Muffins

Bahan-bahan ( 18 biji muffin kecik )

Bahan A 3/4 cup tepung gandum 3/4 cup tepung naik sendiri 1/4 cup tepung jagung 1 tsp baking powder 1 tsp garam (kalau guna minyak) Bahan B 3/4 hingga 1 cup pisang dilecek (agak-agak 3 biji pisang sederhana besar) 3/4 cup minyak/ mentega dicairkan Bahan C 1/2 cup gula perang 1/2 cup gula pasir 3 biji telur 1 tsp esen vanila 1 cup cip coklat

1. Ayak bersama semua bahan A. Gaul rata. 2. Lecek pisang (bahan B). Ketepikan. 3. Pukul semua bahan C menggunakan mixer hingga berbuih. 4. Masukkan bahan A yang telah diayak sedikit demi sedikit. Pukul hingga sebati. 5. Campurkan bahan B satu persatu. Pukul lagi. 6. Sekarang masuk pulak semua cip coklat. Jangan pukul dah. Gaul je. 7. Isikan dalam muffin cups 3/4 penuh. Bakar pada suhu 170 celcius, selama 1/2 jam. Kalau

nak lebih garing, bolehlah bakar lagi lama. 8. **Boleh jugak buat sebagai kek pisang. Bakar dalam loyang instead of muffin cups.**

Bahan-bahan ( 30~35 biji )

2 cwn pisang berangan / emas( potong kecil-kecil ) 3 cwn Tepung gandum 1/3 cwn minyak 3/4 cwn susu segar ( sy bancuh susu tepung je...tu pu sodap ) 1 sdk soda bikarbornat 1 sdk baking powder 1 cwn gula ( boleh kurang kl. xsuka manis ) 2 bj telur 2 sdk esen vanila ( utk hilangkan bau telur tu... )

Cara-cara

1. Blendkan gula, telur sampai putih sikit, dah sebatila tu... 2. masukkan minyak, blend sikit, masukkan susu plak..ha kan senang tu.. 3. Masukkan esen vanila dan pisang...kena last masuk spy nanti nampakla urat-urat pisang

yang comel.. 4. Masukkan bahan-bahan di atas kedalam tepung yang diayak bersama soda dan baking... 5. Gaul sehingga sebati jer, xpayah dok lama-lama, lenguh tangan lak... 6. Kukusla selama 15 minit jer...kl nak bakar pun ok gak, 15 minit 180°C...

Bahan-bahan ( 18 biji )

1 1/2 cawan tepung 1 sudu kecil baking soda 1 sudu kecil baking powder 1/2 sudu kecil garam 3 biji pisang-saiz besar,lenyekkan 3/4 cawan gula 1 biji telur 1/3 cawan mentega ** Toping** 1/3 cawan gula perang 1 sudu besar tepung 1/8 sudu kecil cinnamon 1 sudu besar cold butter 1/4 cawan chopped nuts(optional)

1. Campur semua bahan-bahan kering dan ayak 2. Pukul mentega dan gula sehingga putih 3. Masukkan telur, pukul lagi. Kemudian masukkan pisang

EASY MUFFIN

Bahan-bahan ( 12 biji )

Bahan Disatukan Dan Diayak:- 250 g tepung gandum 2 camca teh baking powder 1/2 camca teh soda bicarbonate 2 camca besar serbuk koko Bahan Disatukan Dan Kacau Rata:- 250 ml susu 90 ml minyak sayur/jagung (minyak masak pun boleh) 1 camca teh esen vanilla 1 biji telur gred A Bahan Lain:- 175 g gula halus 150 g chocolate chips 50 g chocolate chips, utk hiasan

Cara-cara

1. Dalam satu bekas, satukan bahan2 diayak bersama gula halus dan 150 g chocolate chips, gaul rata. Tuang bahan2 yang dikacau rata dan gaul hingg semua sebati dan mesra.

2. Sudukan bancuhan muffin tadi ke dalam muffin cup 3/4 penuh dan hias dgn taburan coklat chips, buat hingga siap

3. Bakar dalam oven pada suhu 180Cm selama 18 - 20 minit. Sejukkan sebelum dihidangkan. Sesuai untuk minum petang bersama keluarga...

4. muffin ni juga boleh ditukar kepada perisa pandan, blueberry, strawberry dll. masukkan perisa tersebut dalam bahan yang disatukan dan kacau rata

1. Panaskan oven pada suhu 175'c (340'f) 2. Pukul gula, susu tepung, mentega bersama madu sehingga kembang.. 3. masukkan telur satu persatu dan pukul sehingga kembang.. 4. masukkan tepung di selang seli dengan air sehingga habis... dan akhir sekali masukkan

sedikit buah Blueberry tadi 5. masukkan adunan tadi kedalam paper cup muffins dan bakar selama 20-25 minit

1. campur kan aje semua bahan2 dn kacau hingga sebati. guna spatula boleh guna mesin pn boleh

2. isi dlm mgkuk kertas 3/4 penuh n bakar selama 15m ke 25m.. bgantung size cup yg digunakan. gunakan api bawah saje dgn suhu 180c

3. jgn lupa panaskn oven dulu dlm 10m.. selamat mcuba

Kemudian masukkan mentega. Kacau sehingga mentega cair. Selepas tu bolehlah panaskan oven sehingga suhu 170C.

Dalam mangkuk lain, masukkan telur dan gula. Kacau sampai sebati. Tak perlu penaik(kembang).

5. Masukkan telur ke dalam mangkuk coklat. Kacau biar campuran sebati.

Ayakkan tepung dan baking powder ke dalam mangkuk coklat. Gaul sehingga sebati.

Isikan adunan ke dalam bekas muffin sehingga 1/2 penuh atau 60% penuh. Bakar selama 20 minit.

8. Selepas masak tu, mungkin muffin ni lembik sikit( sebab hanya sedikit tepung yg digunakan) tapi bila dah sejuk dia akan keras dengan sendiri. Jadi kalau lepas 20 minit tu, masih lembik tak payah bakar semula.

Method

1. Heat the oven on 200°C . Line 12 muffin tins with paper cases or brush oil on the bottoms.

2. Sift the flour, salt and baking powder into a bowl. Mix in the sugar, mixed fruit, choc chips and cherries.

3. Melt the cooking chocolate and the butter together over boiling water or in the microwave.

4. In another bowl mix the milk and eggs. 5. Add the liquid ingredients and butter mix to the dry ingredients all at once. Using a fork

fold the ingredients together only until it is all wet. 6. Spoon the mixture into muffin tins. 7. Bake for approximately 15 to 20 minutes. They are ready when a skewer or toothpick

comes out clean. 8. Place muffins on a wire rack to cool. Then dust lightly with icing sugar to decorate.

Strawberry Muffins

← 1 3/4 cups plain flour ← 2 tblsn caster sugar ← 4 1/2 tsp baking powder ← 1 cup of chopped strawberries ← 1 egg, lightly beaten ← 3/4 cup milk ← 1 tsp vanilla ← 1/3 cup of butter, melted

Method

1. Preheat the oven to 200°C . Prepare 12 regular muffin tins by brushing the bases with oil. 2. Mix the dry ingredients with the strawberries in one bowl. 3. In another mix the egg, milk, vanilla and butter. 4. Add the liquid ingredients to the dry ones and fold lightly with a fork. Do not over mix..

it just has to be wet mostly through, it doesn't even matter if there are small areas of flour about. This is the main secret to good muffins.

5. Spoon into muffin tins, filling each one about two-thirds. 6. Bake for approximately 15-20 minutes or until just starting to brown and a skewer or

toothpick comes out clean. 7. Place muffins on a wire rack to cool.

Strawberry Muffins recipe

Simple English Muffins recipe

Instructions for Simple English Muffins:

In a suitably sized bowl, mix the warm water, vegetable oil, yeast and salt.

Beat in the white flour, followed by the whole wheat flour; mix thoroughly.

Instructions for Raspberry Cheesecake Muffins:

Preheat oven to 400°F.

Grease muffin tin or alternatively line each with paper cases.

In a bowl, beat together the cream cheese with ¼ cup of sugar, 1 egg and ½ teaspoon of vanilla until completely smooth.

Put to one side for later.

In a saucepan, combine the butter, milk and remaining vanilla stir continually over a medium heat until the butter has melted.

Cool the mixture until until warm to touch, then beat in the remaining 2 eggs, 1 at a time.

In a large bowl, combine the baking powder, flour, salt, and remaining ¾ cup of sugar.

Add butter and milk mixture to the flour and baing powder mixture and stir until blended.

Add the raspberries and gently fold into the mixture.

Divide the mixture equally amoung each muffin tin/paper case.

Spoon approximately 2 teaspoons of cream cheese mixture on top of each of the muffins.

Bake about for about 20 minutes or until the muffins are springy but firm.

Peanut Butter Muffins recipe

2 medium eggs, beaten.2 cups of sifted flour.1 cup of milk.½ cup of peanut butter.¼ cup of sugar.2 tablespoons of butter, melted.3 teaspoons of baking powder.1 teaspoon of salt.

Instructions for Orange Muffins:

Preheat your oven to 350°F (175°C).

Sift the flour with all of the other dry ingredients.

Add the butter.

Mix together the beaten egg and the milk, then add to dry ingredients and mix until just oistened.

Fold in the mandarin orange pieces.

Fill greased muffin tins about three-quarters full.

Bake for 25 minutes.

Form a well in the center.

In another bowl, cream the butter, add the eggs, mincemeat and apple juice and beat thoroughly; add this to dry mixture, stirring just enough to moisten.

Serbuk koko (masukkan ke dalam tepung yang telah diayak)Chocolate chips Cara membuatnya:-

1.            Panaskan oven pada suhu 175C. Putar mentega dengan gula hingga putih, masukkan telur satu persatu sambil terus memutar hingga kembang dan gebu.

2.           Masukkan esen vanilla dan putar. Perlahankan speed dan masukkan tepung berselang seli dengan susu segar tadi hingga habis. Gaul rata.

3.           Jika suka letak banyak choc. chips: sudukan adunan ke dalam mangkuk muffin hingga 1/2 penuh. Masukkan choc chips, sudukan adunan untuk menutup choc chips tersebut sehingga 3/4 penuh. kemudian taburkan choc chips lagi di atasnya. Bakar selama 15-20 minit (ikut keadaan oven masing2) hingga  masak. (atau cuma tabur choc chips/ choc rice) Keluarkan dari oven dan sejukkan atas jaringan hingga betul-betul sejuk
