McK’s Tavern218 S. Beach Str. • Downtown Daytona Beach • (386) 238.3321 This months bartender we love is not one, not two, but three bartenders. Yes the whole bartending staff at McK’s Tavern. First we have Dena Edwards. She is originally from our area, a Port Orange native. She has been tending bar for one year and in the service industry for nine years. She loves her job and likens it to just hanging out with all her friends. One of her favorite things about McK’s, is getting to sample all the new beers that come out. Next we have Pieter Goetzelman, originally from the Ft. Myers area, he moved here four and a half years ago. McK’s was his first and only job since he moved here. His favorite part of working at McK’s is his interaction with his customers, he loves people. Outside of work, he is a family man. He loves spending time with his wife and two children. Pieter also will tell you, he is a music lover and to keep him away from the “Juke Box “ as his music tends to be way too heavy for most people. Last but not least, we have Gary Mayberry. Originally from Clinton, Md, Gary moved here about two and a half years ago and has been at McK’s for six months. He has been tending bar for two and a half years and loves it. His favorite part of working at McK’s is the great family atmosphere and all the varieties of craft and speciality beers. Outside of work, he is at the beach playing “Kan Jam” or just hanging with friends. There you have it, the bartending staff at McK’s. ur featured restaurant this month is about a little known gem of a restaurant in Downtown Daytona, Ronin Sushi & Sake Bar. Owner

Kirt Roberts, coined the perfect phrase to describe Ronin, “Emotions and tastes that resonate.” Our area has experienced a rapid increase in the number of Japanese, Thai and Asian style Sushi and Steakhouses of late. With the numbers growing, it is getting more difficult to find the great ones. Like cream, Ronin Sushi & Sake Bar has risen to the top. When entering Ronin, you immediately feel like you have walked off a boulevard in downtown Manhattan into one of the Sushi houses that the city is famous for. You get the warm cosmopolitan ambience, a real big city feel, even though they are located in the historical Beach Street area. Only three years have passed since the opening of Ronin, but the dining experience feels legendary. Their menu and sushi bar consists of small plate entrees and a fabulous Sushi, Sashimi list. Ronin is known for their high quality, freshest seafood in the area. They are touting a new menu, expanding into some of the more traditional entrees including Kobe Beef. The new menu includes items like their new Mango Sushi Roll. Fresh Salmon or Tempura Shrimp, cream cheese, topped with mango, avocado, and a passion fruit drizzle. You can also order the new Kobe Roll, Crunch, Krab, Spicy Mayo topped with seared Kobi Beef, avocado, truffle oil and eel sauce. Simple delicious! This past months special was, Asian Noodles with Shrimp and Scallops in a spicy bean sauce with your choice of Ginger Salad or Soup, a real value! All of the ingredients are from the best Japanese importers available and hand selected by their Head Sushi Chef and partner, Tung Nguyen. Along with the new menu, Ronin has enhanced their staff with the addition of a new management team, Brittany Kinney and Heather Elliot. Both are Floor Managers and share the day to day operations of Ronin. They have proven to be a huge asset to Ronin. The dinner menu and staff addition are not the only items that are new, Ronin has just announced a new wine and sake list. Fantastic wines for the most discriminating taste can now be enjoyed. The Sake selections are just as impressive, featuring speciality premium and super premium sake. If you love Sake, you have to try their new “ Sake Flight,” this is a sampling of all their Premium Sake. The perfect way to start your evening. They also feature Japanese and Domestic beers for your enjoyment. The list is everything you might expect it to be in such an exquisite establishment as this. he Local Legend is how Chef Pete Marzo is often referred to. He has been providing culinary delights for 30 years in our area

and the northeast. Originally from Long Island New York, Pete started his pathway to becoming Chef at the young age of 11 working at the family restaurant. His mother was his mentor, showing him how to prep and prepare old family recipes that were handed down from generation to generation, most all from Italy. Pete continued to work at the restaurant while attending high school and culinary school at the same time. After graduating both schools, he continued to Chef at the family restaurant until he turned twenty. Members of his family had started moving to Florida, soon all of his relatives lived there. After some coaxing from his family, he to decided to move also. Orlando was his new home and Alfredo’s of Rome at Disney’s Epcot Village was his new employer. He started as Sous Chef for Alfredo’s, but he was not satisfied with that position. He became Chef at Antonio’s La Fiamma Italian Restaurant of Maitland but Pete longed for his own restaurant, much like the family restaurant in New York. A short time later he opened Italian Delight. He was a success at running his own

restaurant, but tired of the rat race in Orlando. He just wanted to be a Chef in a smaller, quieter environment. That is just what New Smyrna Beach offered. Chases on the Beach became his new employer where he started as Head Chef. Pete was the longest running Chef Chases had ever had, his tenure was seven years. During that time, he trained many young people to become successful Chefs, even restaurant owners like Chef Eric of Flip Flops in New Smyrna Beach. Eric was mentored by Pete at Chases and later became Executive Chef and Owner of Flip Flops. Pete and Eric are best friends to this day. Chef Pete was fortunate to work beside some of the finest Chefs in New York and Orlando. This experience taught him well, as he has attained over 40 awards for his excellence. Chef Pete is the only Chef to win all three categories of chowders in the same event at the Pub 44 Chowder Cook-off. A separation from his wife and ultimate divorce forced him to leave Chases to care for his two young Daughters. The court had awarded him custody and he needed a slower paced restaurant, something less than the 70 hours a week that he was spending at Chases. His daughters Deanna and Crystal had to come first.A friend had opened a small Italian restaurant called Dolce Vita. That is where he met Vittorio Tiano, another aspiring Chef wanting to start his own restaurant. Soon Vittorio did that very thing. He left Dolce Vita to start Tiano’s Italian Restaurant. Six months later, Chef Pete became part of Tiano’s. The two Chefs are fantastic together, the restaurant is doing a wonderful business. It seems the family tradition is going to live on, as Chef Pete tells us that his daughter Crystal is studying to become Chef, and of course being mentored by her Dad.
