Riptidesraw bar and grill

n exciting new restaurant has just opened in Ormond Beach, ‘Riptides Raw Bar and Grill’. This promises to be a local’s hotspot and a draw for

tourists with its true Florida beach feel. With its Surfing decor and a Florida style menu, everything about Riptides shouts the Florida’s beach life. You can’t miss the 12 foot Hammerhead Shark as you enter the restaurant. A friendly staff greets you at the door, and brings you to either the fantastic bar or one of the expansive dining rooms. Around the walls are pictures of surfing, surf boards, Florida beach scenes, and projectors showing surfing videos on huge wall screens. During sporting events, you can watch them on the huge screens. They also have outside deck seating and music playing all the time. There is a game room with it’s own bar and pool table. The restaurant is located within steps of the beach, right along A1A in Ormond Beach. So, you can feel as comfortable in your swimsuit as well as any other attire. A casual atmosphere, to say the least. The massive, full service bar sits right in the middle of the main dining room with plenty of seating. Riptides bar features all of your favorite libations as well as the latest and greatest drinks. The service is professional and polite, with smiling staff everywhere you look. The menu is very diverse. It features everything from hamburgers to select steaks. The fresh seafood is delivered daily and ranges from fresh shucked oysters from their raw bar to the freshest grouper. Everything is prepared fresh to order and to your liking. They have gone to great lengths to assure that everything on the menu is prepared from the freshest, highest quality foods available. Owners Mary and Brad Hoffman are no strangers to the business, as they also own another successful restaurant in Orlando. They have employed Chef and General Manager, Shawn

hef Leland Sanders of The Black Sheep Pub and Eating House has a very interesting story about his culinary background. Having been born in

Germany, as his Father was in the military, Leland was exposed to European dining and food preparation as young child. He grew up in Europe, but visited his family in Kentucky on vacations, as that is where his father was from. During these vacations, the families would get together and have huge Bar B Q ‘s, where everyone would try out their latest recipes. This sparked a natural interest in young Leland. Cooking was in his gene pool, so it was natural to him to take an interest in it. He took up food preparation in restaurants and at home in Germany, a country where he could work at a young age. His exposure to the European style of cooking taught him how to bring many different flavors and culinary talents together. He was always experimenting with sauces, cooking styles and meats. His talent at the family Bar B Q ‘s grew to become quite competitive. His Aunts and Uncles all competed in Bar B Q contests and were very good. At age 13, his parents and he moved back to the United States. They were still an active Military family and lived in Kentucky, Oklahoma and New Jersey. This again was a benefit to Leland, as all of these places differ greatly in culinary

flavors and styles of food preparation. At his young age and passion for becoming a chef, his knowledge of food was growing at a fast pace. He was learning how to create flavors using different spices, meat preparation, brining, seasoning and styles of cooking. Soon, nobody could compete with his abilities. He overtook everyone with his skills, even wining awards for his Wing Sauce and Bar B Q sauces. He was living his dream. Soon he started working at restaurants in the towns they ware living, always selecting restaurants that had notable Chefs. He was mentored by three very accomplished chefs and had earned the title of Sous Chef and later became Chef Leland. With his diverse cooking skills, knowledge and his background in European cooking, Chef Leland has many skills including food pairing with fine wines and food. He is currently planing a Beer Dinner, May 10th for his patrons at The Black Sheep. There will be a special menu and many different beers for your pleasure. He is also going to have a Murder Mystery Dinner soon, so watch for the details in their ad. Leland admits he has all kinds of talent when it comes to food preparation, but his speciality would be comfort food, meat, potatoes, desserts and of course Bar B Q. He is always adding new items to the menu at The Black Sheep. In fact, he is creating a whole new menu to be released soon, with new items as well as old favorites like their famous Fish and Chips. He promises, the new menu will be exciting. Outside of work, Leland loves to Disc Golf, Surf, play Beach Volley Ball and you guessed it, cooking. Catering his also one of his attributes, he has successfully served over 3,500 people at one service, that is an accomplishment. He can also cater your party or functions, just ask him. He is very personable, and you will often find him walking around the restaurant talking to patrons and getting feedback from his efforts. ook’s Buffet, Cafe, Bakery in DeLand is steeped with family heritage and tradition. In 1959, Bob and Willa Cook founded the original Holiday House

Restaurant, serving prime steaks, tossed salads and gigantic Idaho baked potatoes. Early on, Bob developed a special buffet style serving hand carved aged beef, fresh turkey, lamb and ham.To accompany the meat choices, were freshly prepared vegetables, salads and homemade desserts. Soon there were fourteen Holiday House Restaurants throughout central Florida. They probably never dreamed of how this simple restaurant in an old house, where the the family called home, living upstairs during the 1960’s would grow into a family tradition and a local chain of restaurants. In 1986, a kitchen fire closed the restaurant for several months allowing Bob to fulfill his dream to completely remodel the old house, including a state of the art kitchen. In 1990, Bob sold the business to his former wife, but retained ownership of the building and property.In the meantime, his son Michael, who grew up and worked in the family business, set out on his own to open the popular Cook’s Cafe in downtown DeLand in 1983. After his fathers passing in 2002, Michael inherited the property and building which housed the Original Holiday House. In March of 2010, Willa and Larry Cook informed Michael that they would not be renewing their lease and would be vacating the building at the end of that August. This left Michael a major decision of what to do with a 100 year old building. After much thought, prayers and family discussions, it was decided to completely remodel the historic building and reopen it as a restaurant. After seven months of remodeling, the task at hand was simple. Good, hardy comfort food prepared well with the best and freshest ingredients available. With what he learned from his father and his success in running his business of almost 30 years, Michael was ready to embrace history once again.Michael and and his wife Star have continued with the family tradition and have groomed their oldest son Michael Cook Jr. to become a part of the management team at Cooks Buffet. Michael Jr. has the same passion and enthusiasm for food as his father does and grandfather did. Star, Michael Sr.’s wife, in conjunction with her full time job of 26 years at

Florida Hospital DeLand, is also active in the day to day operation of the business. Channing Gerber, their youngest daughter also supports the family business, while teaching 3rd grade in Stuart, Florida. For over fifty years, there has been a member of the Cook family, cooking in the kitchen, and the tradition lives on.The restaurant still retains it’s original flavor, but has been brought into the 21st. century with the same great taste, but with a modern twist. Michael has brought many of his successful, award winning menu items from Cook’s Cafe DeLand, like his sandwiches, soups and bakery offerings along with one of the largest salad bars around. The buffet’s offerings stay with traditional and new favorites, and makes for a new experience with every visit. Every item that is used in their restaurant is of the highest quality. They use all fresh vegetables that are in season. The choicest meats and seafood are hand selected and are prepared fresh daily. High standards in food quality are a top priority with the Cook family. You can even take a behind the scenes tour of the kitchen if you like, business permitting of course. Cooks has become a favorite place for celebrations and parties of all kinds. The former living quarters upstairs where the family lived during the sixties are now the corporate offices and banquet area.Future plans include the reopening of the Banquet Room upstairs, however, they can accommodate up to sixty people downstairs now. The Banquet Room also houses part of Michael and Star’s ever growing cookbook collection that consists of over twelve hundred volumes. The Carriage House at the rear of the restaurant will be remodeled with a new community room for groups and clubs and a new display kitchen will be set up for culinary schools and local celebrity chefs for demonstration cooking. Michael is also planing to bring back those choice, prime aged steaks and gigantic Idaho baked potatoes to the menu in the near future.Cook’s customer base has grown to include all of central Florida, just like it did in the beginning. History repeats itself, and it seems once again, the popularity is blossoming. Michael and his family invite you to join them for a delightful southern tradition, comfort food prepared well. This months Bartender we love is Brett Hood of Oyster Bay Crab House in Port Orange. Brett is originally from West Palm Beach, but was raised in Charlotte, N.C and WPB. Brett moved to our area just three months ago to be closer to his family. That is also when he started tending bar at Oyster Bay. Brett is a self taught bartender. He got his start at The Safari Club and the Water Way Cafe in West Palm Beach. He has been tending bar now for 15 years. Like many, his favorite part of his job is the interaction with his customers. He claims. “You never know who will be walking through that door next”. He loves people and his job, and already has a strong following. Outside of work, Brett enjoys anything to do with the outdoors, especially the beach. Fishing, cycling, the beach and of course, Happy Hour are his favorite things.
