Along with the wineAdam serves us two different types ofgourmet olives from Pinguino Belize.One is a green olive stuffed with delicatemozzarella cheese and the other is agreen olive marinated with garlic. Bothoffer a zingy taste sensation that bringsout a new complexity in flavor when sip-ping the wine. Very good! For our next taste sample we move onto a red wine. Adam pours us generousglasses of Lindeman’s Bin 50 Shiraz.Again we practice the “tasting” ritual anddiscover that the fine Australian wine has

a soft nose of berrieswith a hint of chocolateand is incrediblysmooth. According tothe Lindeman’swebsite, all of theirwines contain the spiritand passion of itsfounder, Dr Henry JLindeman, whosesingle minded philoso-phy was that “the onepurpose of wine is tobring happiness...” Wehave to agree, theyhave most certainly ac-complished that! Alongwith the Shiraz we areserved two appetizersfrom the Costa MayaReef Grill menu. The Antiguan Lobsterwith Okra and Spinach is a delicious,lightly sautéed lobster fillet served on abed of fresh baby spinach and okra. Wealso enjoyed the Caribbean Seafood Med-ley which consisted of fresh fish, shrimpand lobster lightly sautéed in a rich fishstock served on a nest of lettuce and for aspecial treated we share an order of BeefWellington. The succulent beef tender-loin is wrapped in a delicate Filo pastrywith a Demiglace and served on top offried mashed potato puffs. Each plate isa taste sensation and Adam explains that

Belizean Kitchen Even though he was born in England,Adam Thompson, better known as ChefAdam, fell in love with Belize from themoment he set foot on this land. Hav-ing a Cordon Blue Chef as father, hehad an early fascination for the art ofcooking, even though he would live alife full of other activities before he hada chance to explore what he loves most:giving everyone something of good taste.With great success on the Belizean television series Chef Adam TV, he has sharedhis recipe with Belizeans and now through this medium he will continue to imparthis delicious dishes to the world.

is setting out to answer with the Ma-rine Megafauna Acoustic Network(Marinemeganet). Spearheaded bythe Wildlife Conservation Society,this collaborative five-year quest willassess whale shark behaviour in re-lation to four predictable feeding siteslocated in the Western Caribbean(Honduras, Belize, Mexico and Cuba)and one seasonal visitation site in theGulf of Mexico (the Flower Garden

Banks National Marine Sanctuary). The tracking tool used is the ro-bust, highly cost-effective and provenacoustic technology. Submergedacoustic receivers deployed at feed-ing sites and along known migratoryroutes “listen” for the distinctivecoded signals transmitted by finger-sized acoustic tags placed on whalesharks. When an animal swims intorange, the receiver records the time

and date of its passage and if the taghas a depth sensor, the swimmingdepth of the moving animal. In fact,these receivers will record the pres-ence versus absence of many speciesof marine megafauna including mantarays, large grouper and other sharkspecies – all of which can highlighthow a range of species use the samefeeding areas over time. The tag’slifespan is five years, which will en-able researchers to gather substan-tial long term data on feeding sitepreferences. In July and August 2007, theMarinemeganet team tagged 21 sharksin Holbox, Mexico and deployed re-ceivers in four countries. Over thenext year, we aim to expand the re-gional net of acoustic “ears”, tag atleast 200 whale sharks in the regionand track their site use and movementsfor five years. The study complements

and supports other ongoing efforts tobetter understand the shared whaleshark population that includes satel-lite tagging, photo identification, char-acterization of prey species and tour-ism studies. We look forward to learn-ing about whale shark feeding prefer-ences and movement behavior on aregional scale and will keep readersabreast of our discoveries as theyarise!
