Oregano is well known as the “pizzaherb”, and is widely used in Mexicanand Italian dishes. For centuries, Mexi-can and Italian cookery has been syn-onymous with family and good homecooking; that is exactly the experienceand delight you receive when you visitOregano, located on the beach next toCentral Park and Big Daddy’s. Recently opened, Oregano is alreadycausing quite a buzz around the islandas a good eatery and a place to feel rightat home. Owned by Carolyn Castillo, the quaint dining spot is sure to makeyou return time and time again. A great fusion of Italian and Belizeancookery, Oregano has something for ev-eryone to enjoy, whether it is pasta orBelizean conch soup. The glorious smellswhich emanate from Chef Carolyn’skitchen certainly do not help in the deci-sion making process, every dish emerg-ing from her kitchen seem as deliciousas the last. Carolyn first began acquiring her pa-nache for Italian cookery in 1992 whenshe worked at what was once Little Italy. From there she moved on to the famousSweet Basil where she worked for threeyears. It should come as no surprise to mostall us that the ancient Maya were big timedrug users, not unlike most cultures onthe planet. While it is true that the Mayaincorporated drugs into their religiousbeliefs, there is good evidence that theingestion of certain chemicals was prob-ably similar to the so-called “recre-ational” drug use practiced by a numberof our citizens today. It is a well documented fact that theMaya, at least at the time of the Spanishconquest, were not only doing a varietyof drugs but were consuming alcoholic

beverages, as well. Drunkenness wasconnected with the wide-spread practiceof divination, a ritual act designed to al-low direct communication with certainsupernatural forces such that an indi-vidual could foretell the future or under-stand due causes for events not otherwiseunderstood. A drunken state was sup-posed to give one the insight to interpretthe reasons for illness, misfortune, ad-verse weather, and so forth. Does thatnot sound familiar? I have a couple of

Dr. Herman Smith was the only PhD archeologist to reside in Belize. Hewas noted in his field as a foremost researcher and expert in the coastal trad-ing of the Maya and headed the archaeological development of Lamanai inBelize. Herman discovered and contributed much to the body of knowledge ofthe Maya once living on Ambergris Caye. If asked about this subject, he wouldgladly inform his listeners of the Maya past with detailed length and expansivearm waving. His humor accompanied these mini-lectures, eliminating any aca-demic dryness and endearing him to the students and groups that he workedwith on sites around the island. He lived in Belize for over 12 years and eventually obtained Belizean citizen-ship. Dr. Herman Smith - U.S. Marine Corps pilot, decorated Vietnam veteran, archeologist, friend, and husband died on March 10th, 2000. Above all his manyaccomplishments from fighter piloting to practicing archeology – is that Hermanwas a friend to all in San Pedro. He contributed countless articles to The SanPedro Sun, articles that we are pleased to share with you once more.

The Black Margate It is also known as zapatero, or shoemaker, in Spanish. April is when theBlack Margate form in huge shoals in

depths ranging from 30 to 90 east of the reef. During April, BlackMargate can be seen in massive schools when diving in places suchas the Hol Chan Marine Reserve. Black Margate can weigh overten pounds, but usually average between three and eight pounds. Lo-cally, Black Margate caught in abundance while drifting or at anchorin 30 to 90 feet of water. During February to April, Black Margatespawn in huge shoals. Black Margate feed on small lobster, shrimpand other crustaceans. I usually fish these schools by chumming thewater with conch bits for a few minutes before dropping a ½ ounceweight baited with a number one hook with the organ part of theconch. As long as you are over the spawn, you will continue to pull inthese fish. Old timers who used to commercially fish this speciestalk of filling their boats with Black Margate. Since the fishing fleetsof days gone by on San Pedro these techniques have largely beenlost, however a new breed of fisherman, sport fisherman armedwith sophisticated echo locators and local lore are now hunting thisspecies in waters offshore of Ambergris Caye. Fishing spawningBlack Margate is like wielding a double edged machete against a pileof coconuts because under the schools of Black Margate lay largefeeding grouper, shark and barracuda. Usually, after I have caughtenough Black Margate to feed my guest, I’ll drop on a heavier weightand fish mullet and sardines below the deepest depth that the Margatewere caught, in hopes of snagging one of these lurking behemoths. Black Margate is a fun fish to hunt and catch, and a great fish toeat. With luck you will soon get a bite of this tasty species on yournext spring time fishing expedition in Ambergris Caye.

The Black Margate are found in large shoals andcan be fished in April with much success.

friends that get positively brilliant after afew rum and cokes. The Maya, like most of the otherMesoamerican cultures, produced fer-mented alcoholic beverages from cornor agave cactus, the precursor to mo-dem tequila. Another drink, specially fla-vored for ritual purposes, was a rathernasty brew called balche made from fer-mented honey and the bark of the balchetree. I have tried this delightful cocktailand rate it right up there with really badcough medicine. While knocking back a few shootersof balche the Maya had the opportunityto smoke a cigar made from rolled upleaves of the wild tobacco plant (Nicoti-ana rustica) that was much more potentthan today’s domestic variety. Wild to-bacco and other species of plants weresmoked to induce a trance-like state. So

between the balche and mighty cigars, the ancient Maya had happy hour undercontrol. The Maya also used substances thataltered one’s state of consciousness. TheMaya area of Central America includesthe habitats for several varieties of mush-rooms that contain hallucinogens. TheSpanish recorded the Maya names ofseveral mushroom types shortly after theEuropean intrusion. Some names clearlyindicate their use, such as one type called“k’aizalah okox,” the “lost judgmentmushroom.” There is evidence the Maya usedpeyote as well as the seeds of the morn-ing glory to achieve a trance-like stateconnected with divination. Easily themost entertaining device for altering themind was due large tropical Wad frog,Bufo marinus. It seems dune hogs haveglands under the skin (in their backs thatwill on demand secrete a very powerfulalkaloid compound that is not only poi-

sonous, but extremely bitter. Used to de-ter would-be predators, the compoundwas extracted by the Maya and taken inmeasured doses to transport themselvesto another level of thinking. The Spanishreported the Maya added tobacco or toadskins to their alcoholic beverages to giveit an added kick. Now there’s a party inthe making!! Besides the smoking and drinking ofassorted chemicals, the Maya eventuallyfound a way to ingest substances that has-tened the effects of the drugs. By the Clas-sic period, the Maya were using an en-

ema apparatus to introduce the alcoholicor hallucinogenic substances into the co-lon which resulted in immediate absorp-tion by the body. Not unlike today’s co-caine users who introduce the drug intothe nasal membrane for a quicker“rush.” It is, I think, kind of nice to know thatthe ancient Maya were not just die cold, impersonal figures we see on the carvedstone monuments they left behind, butwere real human beings, with be sameflaws and fears we share as inhabitantsof space-ship earth.

Coral reefs are exposed to numerousnatural and anthropogenic (human based)threats. A few anthropogenic activitiesthat are harmful to corals include coastaldevelopment, over fishing, oil discharge, dumping of garbage, as well as, sedi-mentation and pollution from agriculturalrunoff. Some natural occurrences thatcan also negatively affect coral reefs areglobal climate change, coral bleaching, hurricanes, and disease. Anthropogenicactivities have the potential to amplify the

negative effects of natural occurrenceson coral reefs systems. One example ofthis synergistic relationship is the in-crease in greenhouse gases (GHG’s)from industrial byproducts, their contri-bution to global climate change, and coralbleaching. The rapid accumulation of GHG’s inthe atmosphere has already altered theglobal climate. The average temperatureof the earth has increased 0.6°C to 0.8°Cin the past 100 years. By 2070, global

climate models expect atmospheric tem-peratures in the Caribbean region willrise 2°C and 4°C. Since present sea sur-face temperatures (SST) are close to thehigher temperature levels for coral sur-vival, bleaching is predicted to become ayearly event by 2020. Bleaching happens when corals expeltheir symbiotic algae called zooanthellae. This causes coral to lose its natural colorand turn white. Bleaching can be a reac-tion to a variety of stressors, such aschanges in salinity, excessive light, tox-ins, and microbial infection. However, Continued on Page 15

While traversing to the south endof the island (Ambergris Caye) Ipassed Tropic Air and the Island Su-per Market, I began to hear somerhythms from up ahead. As I neared,I recognized a positive energy ema-nating from the Iguana Junction. I Stopped! Looked Around!

Enjoying the beat with “Mango Ridums”submitted by Ernie Salac

There they were “MangoRidums,” jamming at a roadside bar.I’d heard them play in Caye Caulkerat Cocoplum Gardens, an upliftinggarden/jungle experience close to theairstrip on Caye Caulker, in previ-ous months but obviously they havemoved on to San Pedro Town. The two talented musicians,

Lennard and Neville Bonardy, hailfrom Trinidad and Tobago were theybegan formal training in both disci-plines of Art and Music. Lennard, aguitarist, was a resident musician atthe Hilton in Trinidad and worked atvarious hotels in Venezuela. Neville, his brother, plays key board, and stud-ied and performed extensively inVenezuela. Neville has also per-formed at the West Indies and St.Lucia’s Jazz Festival. Now, thismaster of the keyboard, with hisunique and innovative style, plays twokeyboards at right angles and when “in to it” plays with his eyes closed ashe feels the music while leading theband into the next piece with a dif-ferent style. The men play a varietyof unique island music which include:Reggae, Salsa, Samba, and Jazz.Recently, they starred at the MarubaResort in Belize. These talented art-ists provide a concert like feel at theroadside bar, Iguana Junction, in the

early evening from Wednesday toSaturday. A surprising paradox about thesebrothers is their profound hearingloss. They both wear “amplifiers” toaid in communication. Both believetheir loss of hearing has sharpenedtheir other senses to increase theirperception of the world around them. Their talents also lie in their artis-tic abilities. They paint murals focus-ing on nature and seascapes, as wellas signs and individual art work. Uti-lizing the beauty and positive pointsthey work with their clients to utilizea trained eye to create inspirationalwork where proper introspectiveform is standard. Together, they are celebratingtheir shared CARICOM heritage, drawing upon their upbringing andexperience in Trinidad and Tobago, bringing to Belize spiritual and posi-tive vibes in paradise for the travel-ing world to experience.

The plethora of bird books onBubba’s shelves, in which he burieshis head most of the time, use objec-tive words to describe birds. It’s thenature of scientific description. Forinstance a particular Parrot describedin the popular ‘Guide book to Birdsof Central America’ by Howell andWebb, is said to have pale flesh zy-godactyl feet, short wings, a bluerump, gray orbital eye ring andhooked bill. The romance is just notthere. Oddly, every bird book in Bubba’slibrary described the Agami Heronas ‘Beautiful’, and even beholdersknow this to be a subjective descrip-tion. These books are written by or-nithologists and they must have a lovefor particular birds. Something aboutthis bird swept them off their feet. InCarolyn Millers book, ‘100 Birds ofBelize’, she said, “The Agami issurely one of the most beautiful Her-ons in the world”. In Belize, The Looters Trench Barat the Chan Chich Lodge near GallonJug is a famous gathering place forBirders from around the world.

Bubba and I prefer it, not as muchbecause we wish to hobnob (associ-ate) with the birding elite but morebecause the bartender bends a fewrules and serves Bubba Belikin beerin a bowl. My first exposure to theAgami was oddly there on a stroll tothe men’s room. I was first struckby this beauty in a lithograph hangingon the wall. My impression wasthat’s a Japanese brush artist’s ren-dition of some exotic Asian bird. Onreturning to the bar I quizzedNorman about it and discovered itwas an Agami of the Chan ChichLaguna Seca. I spoke with CarolMiller in the Looters Trench thatevening, she said the Lake was abreeding ground for the Agami andthey could almost always be found onits east shore. Smitten by its beautyand excited by the chance of a sight-ing Bubba and I planned a horse backride to the lake in the morning.. In the World of Aves, with in theorder of Ciconiiformes there is a 58member family called the Ardeidae(Herons), and 16 of those Heronfamilies can be found in Belize. The

San Pedro Street Treats One of the features of life in tropical destinations like San Pedro and other parts of the Caribbean is the saleof in-season tropical fruits, vegetables, candy treats and home made pastries by road-side or street vendors.

Usually, they occupy a very small plot of place. In the corner of a street or in any strategic spot along the street where they usually offer special warm dishes, freshfruits/vegetables, candy treats and much more. During the year, it is a common occurrence to see or spot these vendors making a living by providing us with the verybest selection of their produce. Walking the streets of San Pedro, one can take a look at a variety of yummy treats that are on sale, but do we know most of what they areselling? The Sun, took it to the streets to visit the many local street vendors and find out about the yummy treats they offer. Here is what we found out!

The food (corn) thatused to be a cause of celebration forpre-Hispanic gods, is still being enjoyedby Latinos through tortillas, empanadas, tamales and many drinkssuch as the Atole, which share corn asthe common and main ingredient. minutes or until the mixture thickens. Then, add condensed milk to the por-ridge and enjoy a hot corn drink. is often spurred by a rise of at least 1.0°Cin SST above normal summertime maxi-mums with duration of at least two orthree days. Evidence suggests that the zooanthellaepresent in corals can recover and regaincolor within several months if the coralbleaching event is not severe. Otherwise, the coral dies. Multiple bleaching eventsin the Caribbean over the last several de-cades have resulted in widespread dam-age to reef-building corals and thus, de-cline in reef condition. According to theStatus of Coral Reefs of the World: 2004Volume One, the reefs of Belize begansuffering from coral bleaching in Juneand August of 1994. Acropora was thespecies most affected. There has been a50% coral reduction in live coral coverin Belize between 1997 and 1999, andcover has stayed relatively stable at that

level with slow recovery. Many scientists agree that corals’ abil-ity to adapt to the environmental effectsresulting from climate change dependson the severity of other human stressessuch as coastal development, over fish-ing, oil discharge, dumping of wastes, and pollution. A potentially effective man-agement tool that Belize utilizes in re-ducing these stresses is marine protectedareas (MPAs’).

brown not white like most other her-ons. They are long legged birds thathave specialized in fishing, but frogs, lizards and snails are also on themenu. That afternoon we took a walkdown the Sac be trail from the lodgeto a quiet stream running through theforest. The book said ‘unmistakable’,so I assumed the Agami would be aneasy ID, but not that it would be therethe first moment I started to look. Inthe stream stood a very beautifulHeron, frozen, postured with neckcocked and ready to spear somethingunseen by me below the still water. Isaid in a whisper to Bubba,’ this isn’ttrue, it can’t be this quick and easy. Iwatched as long as Bubba could standit and then let him toss a rock into thewater to show be how it flew, but itdidn’t fly it merely back-stepped intothe bank and disappeared. We foundanother almost as easy the next dayafter we arrived at the lake. “Seca” is

a word the locals use for dry and thelake had been reduced from lack of rainto only shallow marsh along its eastshoreline. Bubba found an empty AppleSnail shell in the grass as large as atennis ball and immediately hypoth-esized that it had been eaten by anAgami and was probably a major foodsource when the lake failed to producefish. True, the status of this beautiful crea-ture in our world is retiring, but it hasobliviously found a hold out in the sanc-tuary around Chan Chich and GallonJug. The Wild Life ConservationSociety’s conservationists in collabo-ration with The Belize Government andthe Belize Audubon Society have beenprotecting wildlife in Belize since1980.Their mission is a noble one, “savewildlife and wild lands by understand-ing and resolving critical problems thatthreaten key species and large, wildecosystems.” To contribute you cansimply visit www.wcs.org/belize andspecify your donation go to the activi-ties at Gallon Jug. Bubba did!

Global Warming is believed to be thechief cause of Coral Bleaching.

“What in the world is this?” Mike Kuhn asked. “Unless my eyes deceive me, it’s a nun,” Captain Rick said. We were anchoring the bar on the back side of BC’s and the combined weightof me, Mike, Rick, Cal and Casey were holding the bar in place because thewind was really fierce. “In the eighteen years I’ve been living in San Pedro I don’t think I’ve everseen a nun,” I said. “I don’t recall ever seeing one, either,” Cal said. “Maybe I have, but I’venever seen one dressed in the full habit.” “What about you, Casey?” Mike asked. “Huh?” Casey’s head came up off the bar. “There’s no use asking Casey,” Rick said. “He’s been drinking since lastnight. He probably couldn’t see that nun if she stumbled over him.” Casey turned his head toward the beach and spotted the nun. Before any of uscould stop him he ran out to her and punched her in the jaw. She fell like a sackof potatoes just as we reached him and Cal dragged him off. As Cal pulled him up by his shirt collar Casey was yelling, “You ain’t sotough now are you, Batman!”
