Ambergris Caye has been described

as one of the quintessential places thatinspire romance. Whether it is a day

picnic up north or a night out aroundtown, you can be certain that romance

is in the air. However, one of the most romanticthings to do while on Ambergris Caye,

whether you are here on vacation orlive here and are celebrating a special

night, is taking a short boat ride up northto enjoy one of the many restaurants.

Imagine: starlit skies and the mooncasting its luminescent glow on the Car-

ibbean waters while also enjoying theglow of the many lights emanating from

land. Your boat docks at a charmingcolonial style two-story house. Tiki

torches greet you and guide your wayto one of the most acclaimed restau-

rants – Rendezvous. Rendezvous Restaurant features

only the best in Thai Cuisine. Glennand Colleen Schwendinger have

worked hard to encompass every ame-nity required for you to have not only a

romantic time but enjoy every dish toits fullest. Thai Cuisine is designed to

marry the five taste senses: sweet, sour, hot, salty and bitter while French

cuisine is renowned for its rich saucesand decadent desserts – Rendezvoushas married both tastes in perfect har-

mony. Once inside, a sense of home im-

mediately hits you. The aromas and co-ziness immediately give you a sense

that grandma just might come out ofthe kitchen at any moment. Rendez-

vous has seating for 24, an open stylekitchen and the one on one relationship

with both Colleen and Rose, chefs, makes the Rendezvous experience

even more worthwhile and a definite“should try.”

A three course meal is easily avail-able and far beyond superb. Excellent

appetizer choices give you a taste ofwhat’s to come. Kick off with delicious

home-made pork and shrimp dumplings

For the third year in a row, Am-bergris Caye will be a major desti-nation for the sky diving rally,

“Boogie in Belize,” announced Rich-ard Grimm, the event organizer.

“This event is really taking off,” saidGrimm. He said that many people

who have participated before are re-turning, and they have told so many

people what a great place this is,“we’re just growing like crazy.”

This year’s event will be held Feb-ruary 10th - 19th with an estimated 150

skydivers and their significant othersattending. The sky divers come from

around the world including US,Canada, Italy, Belize, Brazil, and

Switzerland. In 2004 and 2005 jump-ers from Poland, Japan, England and

Australia participated. The first 92participated and last year 132.

One of the greatest thrills duringthe event is for the “non-skydiver”

to jump in tandem with a professionalsky diver. After a brief orientation,

anyone who meets the basic physicalrequirements can experience thethrill of jumping from a plane while

flying 13 thousand feet over the smallisland. Harnessed securely to the in-

structor, in tandem they leap from theplane and free-fall for over a minute

above the turquoise and blue water.

Once again, some participants in the Boogie in Belize skydive rally will be jumping into and then diving the “Blue Hole.”“This is the only civilian adventure of its kind, to skydive, make a water landing and then SCUBA dive!” said organizerRich Grimm.

Delighted at what you are having for

lunch or dinner at Rendezvous? Wellto compliment it perfectly, be sure to

try one of the four wines produced byEstates Wine. Home made right at

Rendezvous, this is another tasty ven-ture of owners Glen and Colleen

Schwendinger. While at home in Canada, the

couple produced their wines and afteropening their restaurant on Ambergris

Caye, they saw the need for a locallyproduced house wine. On a return trip

to Canada they purchased the neces-sary equipment and supplies to start

their new enterprise. Today, Rendezvous’ wine manufac-

turing process includes fermenting con-centrated grape juice in glass casks for

a total of 30 days before bottling. Oncebottled, the wine is stood upright for

ten days and then laid on its side foranother ten days to wet the cork.

When at Rendezvous Restaurant, you may try a nice Pinot Chardonnay, which hints of pears, from the Ren-

dezvous Estates Wine list ,as a niceaddition to any of the delicious seafood

appetizers or dishes. The Chardonnayhas a green apple taste, and is simply

exquisite and delicious. The CabernetSauvignon tastes of blackberry while

the Merlot savors of smoky plum andare wonderful additions to the wine list.

Described by many as “very drink-

able,” and soft to the palate, thesewines are a perfect addition to any meal

or to simply have alone. RendezvousEstates Wines has no chemicals and the

sulphites are controlled, thus makingthe wines that much better.

Come over and stop by for a freewine tasting every day from 12:00 noon

to 4:00 p.m.

For those on the ground, watching skydivers land is just as exhilarating as the

jump itself!

Then, at about five thousand feet abovethe ground, the chute is pulled and the

tandem gently drifts down to the landing

site which will once again be just northof the “cut” in the Tres Cocos area.

Grimm says the cost of the tandem jumpis $225 US and video and stills are avail-

able for $110 US. Grimm decided Ambergris Caye

would be a great place to hold this eventafter first visiting here six years ago. He

said his group continues to return, “be-cause the visuals from high above Am-bergris Caye are amazing! And the gentle

breeze and sunny weather make it oneof the greatest skydive locations on

earth!” He adds that San Pedro is also a great

place for the non- jumpers that come withthe group because of all of the things to

do, “it’s a wonderful vacation spot.”While in San Pedro the jumpers also

SCUBA dive, snorkel, shop, and enjoyall of the wonderful restaurants and night

life! “During the 10 days my group spendsan estimated $400,000 to $500,000USD

in Belize,” said Grimm. Many of them

have been back for additional vacations.

“Every year the biggest comment given

cooked to perfection swimming in a

delightful ginger chicken broth. Tastebuds are sent on a delightful frenzy once

the broth hits your mouth. Spider crabsare the most requested appetizer

choice – fresh, and served hot with aspicy Singapore sauce – the aroma is

enough to send you over the edge.Armed with crackers, one by one the

crabs are broken up, and the tendermeat combined with the sauce makes

for an exquisite dish. Not too spicy butjust enough “heat” makes you yearn

for more. The appetizers are simplywonderful and enticing.

The main dishes are beautiful, no not

just taste wise but the presentation iscolorful, bright and your senses are

kicked into gear. Filleted red snapperis sautéed ever so tenderly and lies on

a bed of scrumptious Sum Tum (famoussalad sold on Thailand streets – made

of shredded green papayas, peeled andshredded peanuts, chili and garlic,

lusciously combined for a sinful taste).Moist and full of flavor, the fish is per-

fect and a wonderful choice. The Thai Chicken Curry, like all of

the Rendezvous dishes, is exceptional.Tender chicken breast strips are served

in a coconut, red curry sauce.Complimented with the Pad Thai, this

dish screams wonderful. Pad Thai isfettuccini sized noodles sautéed with

People are talking...Hear what the buzz is all about…

We would love to tell you all about Sueño del Mar,

Ambergris Caye’s private residential resort community.

We could go on and on about the luxuriously furnished villas, beautifully landscaped

grounds, oceanfront setting, Concierge service, and our outstanding staff.

We could also tell you how Membership combines all the amenities and services of a

luxurious Caribbean resort, with the best features of two-month fractional ownership,

for the perfect vacation home.

But rather than tell you ourselves, we thought it would mean more

coming from our owners. Here is what they have to say:

Experience the Difference!

Paradise has a new address...

you owe it to yourself to visit Sueño del Mar

Prices increasing soon...don’t delay!

Phase III now open!

We spent our first two weeks at Sueño del Mar this

past November. Besides the “spending time in

paradise”, the thing you enjoy almost immediately

is the “Culture” created by the associates that

work for the resort. Debbie and Ray are not “just”

the managers, Dwayne isn’t just the chef, Omar

isn’t just the bartender, and Checo isn’t just the

security guard: These people become true friends.

The success of all organizations really depends on

one thing, and that is the “culture”. The manage-

ment of the organization has successfully devel-

oped a great staff. Even in paradise the people do

make the difference.

Rusty Hamilton, Banker –

Butler (St. Louis), Missouri

“From a pure

enjoyment

standpoint, the

best investment

I’ve ever made

was our member-

ship in Sueño del

Mar. The villas,

landscaping, and

facilities are

unmatched with

respect to quality

and luxury.

From a service

perspective, my

family is pampered from the moment of arrival

... even before our feet hit the dock! The staff

and team and Sueño are fantastic ... they have

literally become our extended family.”

- Dr. Ed Paul, Honorary Consul of Belize -

Wilmington, North Carolina

The word investment takes on many meanings and offers many

benefits when you connect it with Sueño del Mar. The unique

approach to membership, the truly complete commitment to

member satisfaction, and the level of service and support encom-

pass any resident with the secure feeling of “a very good deal”.

Jane and I chose to own August/Sept to fit our particular business

“seasons” with my involvement in the Las Vegas travel industry.

Sueño del Mar is the vacation home of our dreams, and we can’t

wait for next summer to come.

Paul Davis & Jane Unger - Las Vegas, Nevada

Sueño del Mar #2A – Aug/Sept

What Sueño del

Mar means to me

is an escape from

reality where I

can spend quality

time with my

family and forget

about the every-

day grind. The

resort feels like

my home but with

5-star services

from handling all

air reservations,

pre-arrival

grocery shop-

ping, and airport

pick-up to a nice

bottle of wine

waiting for us when we arrive. Not to be forgotten

is Chef “Mr. Flower’s” world class cooking.

When I hear the song “no shirts, no shoes, no

problem” I think of Sueño del Mar and long for our

next visit to a place we call “paradise” and home.

The Hertz Family –

Sueño del Mar #2C & #8C - June/July

Alan Hertz, President, Allied Fire Protection –

San Antonio, Texas

“My husband and I were not sure we

could find enough to do to keep

ourselves busy and fully enjoy two

months in our villa at Sueño del Mar

last winter. To make a long story

short, we found that two months just

wasn’t enough time for us. We

made lots of new friends and thor-

oughly enjoyed our stay at Sueño for

all of January and February. When

the time came, it was hard to leave

to go back to Colorado. We can’t

wait to get back home to Sueño in

January 2007.”

Nancy & Gaines Berry –

South Fork, Colorado

Sueño del Mar #3A – Jan/Feb

“After looking at

beachfront

property all over

mainland Belize

and on Amber-

gris Caye, it did

not take us long

after visiting

your beautiful

resort to make

up our minds to

purchase. We

made our

selection of Oct/

Nov based on the

times of the year

we thought we

could best travel

and get away

from work.

Buying a membership into this beautiful paradise

was our choice based on the fact that there is

nothing for us to concern ourselves with — the good

people at Sueño del Mar take care of

everything...all we have to do is pack a bag each

Thanksgiving, and we know we have a wonderful

group of people waiting to take care of all of our

needs. It just felt like “home” from the first moment

we stepped on to the dock. We look forward to

many fun and happy times at our vacation home at

the resort.”

Wanda & Jack Scruggs, Chattanooga, TN

Sueño del Mar #2C – Oct/Nov

We have been

dealing with

Land Properties

for years in their

other projects.

Sueño del Mar is

by far our very

favorite. We

have been

traveling to

Belize and

Ambergris Caye for 10 years now, and we love it up on

the north end of the island. We just spent all of October

and November living in our vacation villa at the resort,

and wish we didn’t have to get back to our home in

Colorado so soon. The setting is gorgeous, the water is

great, and the diving and fishing are world-class.

Best of all, the wonderful staff at Sueño del Mar

makes the experience extraordinary.

“Honk! Honk!”“Hey, leave my bike alone,” Pirate yelled at the kids who were fooling around with

his bicycle horn.I had just arrived at Crazy Canuck’s to set up the musical equipment for the Satur-

day night gig with Drummer Dan and Derek.“Pirate, those squeeze bulb horns are just too inviting for a kid to pass up,” Drum-

mer Dan said.“I know,” Pirate said. “I wish I had never . . .”

“Honk! Honk!”Pirate dislodged himself from the barstool and lurched toward the bike. He stepped

on a piece of ice that I had dropped from my glass, slipped and smacked his head onthe cement floor. People gathered around quickly to offer suggestions as Pirate laid

there, out like a light.“Give him a shot of rum,” the Cookie Lady suggested.“Don’t move him,” Dave said. “His back might be injured.”

“Give him a shot of rum,” the Cookie Lady said, again.“Give him some air,” Ali said.

“Put a wet cloth on his forehead,” Drummer Dan said.“All he needs is a shot of rum,” Pam said again.

“Cover him with a blanket so he doesn’t go into shock,” a tourist said.“I guess we should get him to a doctor,” I said. “Somebody help me load him in my

golf cart.”Pirate sat up and said, “Dammit, would ya’ll shut up and listen to the Cookie Lady?”
