My name is Todd Patterson. I had Gulf War Syndrome and was plagued with many symptoms. I had no energy, was pale and swollen, and in terrible pain. I had often considered ending my life because the pain was unbearable. Janet, the owner, and I have been friends for a while. In the Julian and Gregorian calendars, January is the first month of the year. In nature, and by design, January is also a time to slow down: animals hibernate; the ground is frozen and plants are dormant. January days are the shortest and darkest of the year – a perfect time to rest and reflect on where we have been and what may lie ahead. For these reasons, the solitary branch encased in ice was chosen for our January cover. It is a compelling visual representation of winter’s dormant, restful state. The covering of ice forces the branch to rest. And dur-ing this rest period, the branch, and all living things regenerate the strength that ultimately enables new growth. The world around us seems to stand still – and in this stillness, we regain our strength. When we are well rested and strong, we feel lighter and more positive; our lives are easier to bear. Rest is nature’s wonderfully simple way to regain a sense of control over our busy lifestyles. So for now, enjoy the quiet calm of January and embrace the notion that we too are meant to rest and regenerate.

January rings in the New Year, and for many of us that means a sizable list of goals to be accomplished. That in its self can be exciting or daunting. It depends a lot on how you view your life–is it a challenge or an adventure? In this issue of Healthy Beginnings you will find many articles on how to choose the life you want. Whether it is losing weight, eating an inflammation-free diet, or working with a personal coach to keep you on track with your New Year’s resolution, now is a perfect time to make life-improving decisions.

Y ou wake up feeling joyful but at some point the events of your day interfere with that blissful stream. You may find yourself feeling stranded. Where did my joy go?

And more important, how do I get it back?

Joy is a natural state of being. If you let yourself express the true feeling that you find in your heart at any given moment, it is a peaceful state of bliss. It can get blocked, however, by how we are responding to the events in our day.

Here’s what you can do to quickly bring yourself back into alignment when you find yourself at odds and missing your ecstatic state:

1. Center yourself first. Anyone who has practiced meditation for sometime has learned how to tap into the

inner self. That’s the first place you need to get back to. Other ways to reach your center could be listening to self-help tapes – anything that inspires that feeling of joy inside.

2. Eliminate someone else’s negativity. This can be a difficult one as we don’t always have the choice to

immediately get rid of someone negative in our environment. But clean them out you must! Find a way to be surrounded by positive influences only.

3. Use nature to calm your mind. If your thoughts are stilled, your true emotions have a chance to surface,

so take a walk in nature, listen to whale sounds, go surfing, visit a flower garden and take in the smells. Or just plant your feet in the bare ground. Connect to Mother Nature.

4. If you have unfinished business, take care of it. This refers to old habits that continuously arise because

you’ve ignored the problem and refused to deal with it. Healing is a critical step in living daily joy. You have to get rid of the garbage along the road.

5. Calm your body by doing yoga postures as they can relieve a lot of physical stress. Yogis believe that our bod-

ies aren’t getting older so much as we are holding on to stress. Learn to release the stress from your muscles on a daily basis so you can travel in your body more comfortably. It’s hard to experience joy when your muscles are screaming at you.

6. Be in solitude. Quiet times clear out the cobwebs. Listen deeply to the silence and peace and joy will be

your closest companions.

7. Take a vacation from all of your activities. We all have way too much to do these days, so you have to

schedule time for things like a hot bath, get a facial or mas-sage, soak your feet or enjoy some aromatherapy. Just get away from work.

8. Breathe. Take a long deep breath many times a day. As you breathe into your abdomen, center your thoughts

and feelings in your heart area. Feel the love pouring through you. Allow yourself to remember a favorite time in your life when you felt complete and enthusiastic. Imagine your creat-ing asking you, “Do you know how beautiful you are in my eyes?”

9. Deal with the ego. If your habitual thoughts are trying to take over, tell them to take a break. What often

works is to say, “You made your point now go away.” Then move on and don’t fight or struggle with the ego. Keep your thoughts and feelings focused on joy and your inner connec-tion to spirit.

10. Let go. Surrendering your normal thoughts, bad feelings, and habitual routines can feel difficult

and scary sometimes, but it is often the best answer to freeing yourself into the arms of joy. The divine source of energy is always present and available to you upon request. The better you get at letting go of what you don’t want, the easier it will be to have the joy you do want. You just have to ask for it and then open yourself to receiving.

One last tip: Keep a note card with you at all times with your list of the quickest ways to feel joy. When you find yourself stray-ing from your center, take it out and try one. If that one doesn’t work, keep trying another until one does. Here’s to your joy!

T he mind and body work together. When one is out of sync, the other is not far

behind. Keeping both in shape will help with daily tasks. Movement helps to

develop the brain’s neural pathways, sup-porting better learning and performance in everyday activities. Here are several exercises that allow you to use simple physical motions to activate specific parts of your brain.

1. Neck Rolls. Breathe deeply, re-lax your shoulders and drop your head forward. Allow the head to roll slowly from side to side as you breathe out any tightness. Complete rotations to the back are not recommended.

Activates the brain for:

• Binocular vision and the ability to read and write • Centering• Grounding• Relaxation of the central nervous system

2. The Rocker. Lean back on your hands and rock in circles, back and

forth, until the tension melts. Always do this on a comfortable surface.

This technique releases the lower back and sacrum by massaging

the hamstring and gluteus muscle groups stimulating

nerves in the hips dulled by excessive sitting.

Activates the brain for:

• Centering and the ability to work • Study skills• Left-to-right visual skills• Attention and com-prehension skills

3. Cross-Crawl Sit-Ups. Pretend that

you are riding a bicycle and touch your elbow to the opposite

knee. Always do this on a comfort-able surface. This will strengthen the abdominals and relax the

lower back. They aid in developing co-ordination of the core, postural muscles and a sense of organization around the body’s midline.

• Left-right integration• Centering and grounding• Awareness of core, postural muscles

4. Think of an X. Simply think of an X. The right side of the brain controls the left side of the body, and the left side of the brain controls movement of the right side of the body. By envisioning an X, you allow the whole brain to work cooperatively.

Activates the brain for:

• Binocular vision• Binaural hearing• Whole-body coordination• Centralized vision

5. Belly Breathing. Rest your hands on your abdomen and blow out all the old air in short, soft little puffs. Take a slow, deep breath. Notice your hands rising as you inhale and falling as you exhale. If you arch your back after inhaling, you will allow the air to go even deeper.

Activates the brain for:

• The ability to cross the midline• Centering and grounding• Relaxation of the central nervous system• Cranial rhythms

W ith more than 600,000 hyster-ectomies performed each year in the United States, it’s no

surprise that hysterectomy, or removal of the uterus, is the second most common surgery among women. A majority of these are performed via abdominal inci-sion or through the vagina.

Dr. Martin Dennis, MD, FACOG is a local physician of Obstetrics and Gyne-cology who specializes in alternatives to hysterectomy for the treatment of condi-tions such as persistent vaginal bleeding, chronic pelvic pain, fibroids, and endo-metriosis. These alternative treatments include laparoscopy, hysteroscopy, and endometrial ablation.

Dr. Dennis built his OB-GYN practice around using the most health-conscious methods possible to treat and care for his patients. This philosophy steered him to practice laparoscopy, the most common alternative to the traditional hysterectomy. Laparoscopy is a minimally invasive pro-cedure done under general anesthetic; an incision made near the belly button. The abdominal cavity is filled with carbon dioxide. This causes the abdomen to swell and lifts the abdominal wall away from the internal organs, coincidentally

giving the doctor more room to work. A small tool, referred to as a laparoscope, is then inserted, giving the doctor a clear view of the uterus. Laparoscopy is not only healthier for the body but means fewer incisions, an easier recovery, and decreases the occurrence of post-operative wounds.

A hysterectomy has been the traditional solution to uterus-related symptoms, both moderate and severe. However, a hysterectomy is not always necessary nor the best choice. Dr. Den-nis personally does extensive research on each patient’s symptoms before determin-ing whether surgery is the best choice. His interests also focus on endometrial ablation, for patients with heavy or pro-longed bleeding during their period, as an alternative to hysterectomy. An endo-metrial ablation is typically performed in an operating room while the patient is under general anesthesia. The doctor uses a procedure called hysteroscopy where a thin telescope is inserted through the cervix into the uterus. The inside lining of the uterus, or the endometrium is then cauterized to stop uterine bleeding. Dr. Dennis began performing endometrial ablation as an office visit, using local an-esthetic, and with a 90% success rate, no bleeding or dramatically reduced bleed-ing. He plans to increase the number of in-office procedures that do not remove the uterus and therefore do not require hospitalization.

Dr. Dennis was the first practitioner in Reno to perform the Essure procedure, an alternative to the traditional laparo-

scopic tubal ligation, informally known as getting one’s “tubes tied.” During the Essure procedure the doctor inserts spring-like coils through one of the body’s natural pathways, (vagina, cervix, and uterus) to block the fallopian tubes. The procedure has been performed for several years in Australia and throughout Western Europe and is becoming more common in the United States.

The obstetric care of women before, during and after pregnancy also gives Dr. Dennis great satisfaction. From pre-natal to post partum services, Dr. Dennis sees his patients from 10-20 times during the course of their pregnancy. He also provides pre-conception diet counsel-ing to assure the health of the child and the mother. His objective is to deliver every one of his patients’ babies, as well as continual checkups after the baby is born. Dr. Dennis also volunteers as an on-call doctor in the Emergency Room at South Meadows Hospital and enjoys his encounters with different types of condi-tions and people.

Dr. Dennis has been practicing Ob-stetrics and Gynecology since 1998. He received his Medical Degree from the University of Nevada School of Medicine in 1994 and completed his residency in Los Angeles, California. He has practiced in Reno since 2002 and states that his work and his wife and three children define his life. He has always been inter-ested in obstetric labor and delivery and could not imagine himself in any other profession.

Okay, you’ve decided to lose weight and take charge of your health. But how do you deal with those late night

snack attacks and mid-afternoon cravings for candy, cookies, soda, and chips?

No matter how hard you try to avoid calorie-laden carbs, let’s face it—after a lifetime of bad eating habits, it’s tough. And even if you’ve switched over to eat-ing fruits and air-popped popcorn, the carbohydrates quickly add up, which can contribute to a rapid increase in blood sugar levels—which the body responds to by raising levels of insulin. Eventu-ally, if this pattern continues, your body becomes overwhelmed by the amount of insulin and is sluggish in response to it. In the first test, the monkeys were given cholecystokinin intra-venously, after having been deprived of food overnight. Sure enough, the monkey’s appetites were suppressed. Gravity & GraceWelcome to another calendar year and opportunity to save your life

from the small mindedness and mundane demands of our busy world. I’d like to reveal the best present of the just expired holiday season: your mind. Sounds silly or almost anticlimactic but really it’s the only gift that is truly recreational. It can recreate you if you allow it to change it’s wiring and focused applications. From two wise philosophers: When we change the way we look at things, the things we look at change. Life isn’t about finding yourself; it’s about creating yourself.

My office sits a stone’s throw away from Virginia Street as it nears downtown Reno. It’s an area of contrasts: of adult-theme stores, tattoo shops, antique shops, ethnic food restaurants and myriad other one-of-a-kind stores. It’s an interesting place to practice yoga, chiropractic, and the healing arts. I appreciate the juxtaposition and the tension that it provides: the ever-present reminder that we are never far from heaven or hell. It’s really this simple. We work incessantly to build our lives around security but wisdom tells us that the only consistent phenomenon is that of change. These bodies, these minds, these possessions, all will be folded back into the mix in a matter of time. We live in an uncertain world, a broken realm of sorts, where all kinds of self-fulfilling agendas are colliding all at once, each with its own predetermined outcome. The sacred and the profane, gravity and grace, life and death, these are the internal polarities that our lives are hamstrung between. There’s either grace, a pull up toward the heavens, or gravity, a push down to the ground. Where are you headed?

We know that gravity will lead us to the ground and these days it’s cold, so I recommend grace. Finding grace is not that challenging; just look at the blessings and good fortune in your life. If these words have discovered you, then chances are that you are blessed. One of my favorite patients was an old veteran who had a very simple life along with a challenging medical condition. Every time I’d ask him how he was doing he’d respond, “Blessed and highly favored.” It made both of us smile every time. A positive

attitude naturally gives birth to a graceful way of being in the world.

Now for those of you playing on the mountains these days, gravity and grace can most immediately be felt in the physical plane. What goes up must come down and the flow is always the path of least resistance. Find your flow within the gravitational pulls of your life and feel the pull of grace along the ground you cur-rently stand upon.

As you walk into your favorite health food market, the newest and most desired products greet you. You

are surrounded by foods that are high in Omega-3 fatty acids, an abundance of antioxidants and gluten free products. You have been seeing these gluten free products everywhere, but what is gluten? And should you avoid it?

Gluten refers to the combined proteins gliadin and glutenin found in some grass-related grains. The most prevalent of these grains in the American diet are wheat, rye and barley. Gliadin and glutenin contain eighty percent of the protein in the wheat seed. For this reason gluten is often ex-tracted from the seed and added to vari-ous products that would otherwise lack protein. Bread and other baked goods are one of the most common sources of gluten. The “chewiness” in bread is also determined by its amount of gluten.

level of gluten it will have. This is why bagels (which require a lot of kneading in the dough making process) have distinct “chewiness” to them and a basic piece of white bread (which required very little kneading) has very little “chewiness”.

Besides making many of the vegetar-ian items on the shelves conveniently high in protein and giving character to an endless amount of baked goods, what does gluten do? What effect does gluten have on the human body?

For most people gluten is not harmful. But for a small percentage (a little less than one percent) of the population who suffer from celiac disease or gluten intol-erance, gluten causes a variety of painful and disturbing gastrointestinal disorders. By completely avoiding gluten, sufferers of this disease can live healthy lives.

As nutritional science advances, com-panies are creating more and more tasty gluten free products. Thus, people with celiac disease can enjoy once forbidden pleasures such as bread, cookies, crackers and even pasta! As for a person who is not intolerant to gluten, there is no harm in trying these products, although it may not be necessary.

Dr. Leo Treyzon, who specializes in gastrointestinal disorders at the UCLA says, “It’s rather interesting that the whole celiac disease problem has created a celiac fad diet.”

Many people are diagnosing them-selves with gluten intolerance. These individuals claim to experience less bloating and cramping on a wheat-free

diet. Treyzon suggests, “If they feel better when they don’t ingest gluten, there’s no harm from doing that.”

However, it may not be that gluten is the problem. Processed foods often con-tain high levels of sodium, preservatives, sugar and other additives that may affect the way a person feels. By adopting a glu-ten free diet one is in many cases forced to stop eating many processed foods. So it is possible that it is not the gluten that is affecting a person, but rather the many other unhealthy products that happen to contain gluten.

Each person is unique in his/her reac-tions to certain foods. The most important thing to remember when considering avoiding foods or ingredients is to listen to your body. If you sense an association between eating a particular food and feeling ill, take note of it and keep your eyes open for a pattern. If you see a trend, avoid the food for at least two weeks to see if it is indeed the ingredient that is af-fecting you. If the symptoms that you are experiencing are severe it is important to see your doctor.

W hile some of us have mild in-tentions of joke about what we want our resolutions to be for

the New Year, a few take hold and create positive change.

Why Green Resolutions?The Earth is currently experiencing

the sixth great mass extinction. While our five previous mass extinctions have been triggered from natural occurrences - i.e. geologic/meteorological events - this is the first mass extinction in history to be caused by a single species: humans.

It’s not just that we’re losing anywhere from 50,000 to 100,000 or so plant and animal species each year; it’s that we’re disrupting entire ecosystems needed to sustain all life.

What Benefits The Planet Benefits Ourselves

If you are asking yourself if we can stop extinction, the answer is yes.

In fact, the problem does not lie in the question, “Is there anything we can do to help stop this extinction?” because change of consumptive habit would nul-lify the problem, but rather, “Will we do

anything to stop environmental degradation and mass extinc-tion?”

These questions can be an-swered and acted upon with our personal resolutions. Every deci-sion we make - from the cereal we eat for breakfast, to how long we sit idle in our car, talking on the cell phone with the engine running, has an effect on the planet.

The greatest change will occur if we are active in our resolutions.

Start today. Decide what is truly important and modify consumptive habits to ensure the best outcome.

For example, pay attention to what you eat.

When we go to the store and purchase industrialized foods from Post, Frito-Lay, etc., we are getting products that are made primarily (unless it is an organic line) from genetically modified ingredi-ents (corn, soya, canola, potatoes, rice, oats, etc.) or even eating animals who have only been fed GM feed.

These foods are produced, processed and packaged in a manner which is made to deliver the highest yield at the lowest cost, regardless of quality. Genetically modified foods are designed by biotech-nology companies whose prime concern is financial gain, not human or environ-mental health. GM foods have a median nutritional value, they degrade the soil, and they are physiologically damaging to insects and animals that feed on them. (Sows, fed a diet of 100 percent GM corn, have progressively produced smaller lit-ters and their milk production has dried up earlier, and rats fed a heavy diet of GM corn developed smaller kidneys and

While sows and rats are certainly not human beings, there is not much difference between one mammal eating 100 percent GM foods and an-other, mainstream Americans, eating 70 percent. While the UK and New Zealand have extensive GM labeling mandates, our government has declined labeling for GM foods.

Why Go Green?It is important for us to understand that

products that we purchase and businesses we support have a direct effect on the en-vironment, the economy and ourselves. We are the last generation which has the opportunity to save thousands of species from being wiped clean, unnaturally, from the face of the Earth. We need to make a stand.

As snow dumps in the Lake Tahoe region, are you preparing to tear it up? Or are you gripping your

sore back, tired knees, and aching neck, wondering if you’ll take up snowshoeing instead?

Good equipment, good technique, and good training are essential compo-nents of ski performance and comfort.

If you’ve covered these fundamentals with your bootfitter, ski instructor, and ex-ercise program, your ticket back onto the ski hill may be the Feldenkrais Method®, a system to retrain how your body moves, through hands-on sessions and group movement classes.

Just as skiing involves a dynamic bal-ance of the skeleton in movement, all your movements involve your brain’s capacity to dynamically balance your muscles and bones. After all, babies fall over. We learned to walk. The Feldenkrais Method® makes your basic movement patterns more easy and efficient, so that while skiing you can better sense and respond to subtle changes in gravity and terrain, and perform better.

Try this simple exercise (best results if you read it through once, before start-ing):

1) Lie down on the floor, legs long, arms by your side. First, notice that as you lie on the floor that some parts touch and some don’t. Get a good sense for where you lift off the floor, and how much. Feel asymmetries left and right. Notice how high your lower back lifts and whether your shoulders lift too.

2) Next: Bend your knees so your feet stand on the floor a comfortable distance apart, and very slowly drop only your LEFT knee IN towards the center and bring it back to neutral. Do this smoothly, never pushing your leg into pain or a stretch. Notice the “kinetic chain” or how the movement follows through your whole body. How does it change the weight of your hips, ribs, lower back? Does your head move? After several times you will improve.

One hallmark of the Feldenkrais ap-proach is to never force your body, and in-stead use intelligent awareness to change your movement habits. As a skier, you know that subtle differences can make a big difference, so take the time to move slowly and patiently.

3) OK. You’ve let your knee go inwards several times. Lie flat and compare how you feel now, to how you felt before. Can you feel a change?With this one movement you’ve already learned to connect your legs to your back better by using your attention.

4) Now, let’s add another variation. This time, let your LEFT knee fall OUT with the same quality several times. Sense how the movement draws through your hip and spine, and then rest. Is it different?

5) Now, take your right knee in and out and compare it to your left. Feel the dif-ference?

Congratulations! In 5 minutes you’ve improved the flexibility of one of your hip joints and your rotary movements, and there’s more to come. What’s after that? Maybe…the hill?

Improving Comfort for Skiers with the Feldenkrais Method®

Contrary to popular opinion, your Vestibular System can become injured or inflamed and Vestibular Reha-bilitation Therapy (VRT) may be all that is needed. The

vestibular system, or balance system, is the sensory system which provides information about your movement and sense of position. The system consists of the inner ear (small circular canals called the labyrinth), specific nerves, and a portion of the brain called the cerebellum.

A symptom associated with vestibular system dysfunction is the sense of spinning or vertigo; either you have the sense that you or your environment is spinning and you feel dizzy. Signs of injury or vestibular system inflammation may be abnormal eye movements (nystagmus), blurred vision during head move-ments, and a loss of balance. In addition, movement of your head will often time make the spinning or sense of dizziness worse.

Vestibular Neuritis or Neuronitis (VN) and Benign Parox-ysmal Positional Vertigo (BPPM) are the two most common conditions in need of VRT. BPPV occurs when small pieces of calcium break off within the inner ear and begin to move around the circular canals of the labyrinth. These pieces move when the position of the head changes. Often times, this condition can be easily corrected by a trained professional who uses a very specific sequence of head and body positional changes to move the calcium to a place where it no longer causes dizziness. VN is usually viral and causes inflammation which produces nystagmus, nausea, and sometimes vomiting.

Following the effective use of medication, VRT involves balance and movement-coordination training, postural re-education, hands-on soft tissue mobilization, and overall body conditioning. For BPPV, a trained professional can perform the hands-on Epley(2) Maneuver to re-position the small pieces of calcium. Exercise-wise, and early on in therapy for BPPV and VN, the simple Cawthorne-Cooksey Exercises (3,4) are most often performed; these are a progressive series of exercises which combine eye, head, and body movements in a sequence in order to re-train your balance system. When appropriate, more complex exercises involving the eyes while the head and body are moving are used to re-tune the vestibular system. These are necessary in order for you to return to such recre-ational activities like golf, bowling, tennis, ping-pong, driving, and bike riding.

In order to avoid vestibular system dysfunction or to fully rehabilitate your system after injury or inflammation, you may

need to incorporate specific activities and even change your lifestyle. Dance, Tai Chi, Yoga, and the Martial Arts are great ways to keep your vestibular system operating well. VRT is an effective non-surgical intervention which can help you re-gain your sense of balance, restore coordination, and resolve diz-ziness.

Soy. You cannot get away from this supposedly protein rich “health” food. It can be found in almost every aspect of a typical North American’s diet of fast, pro-cessed and packaged products including crackers, cookies, breads, baked goods, canned foods, soymilk,

soy burgers, soy energy bars, soy ice cream, soy cereal, etc. And, because soy is FDA approved, it really doesn’t have to be listed on the label.

If you were to eat soy in an Asian country you would prob-ably reap the popularly touted ben-efits. However, the United States, in its infinite wisdom of “we know what is best for you,” decided to improve on Mother Nature by genetically modifying, pasteurizing etc. until the soy you are encouraged to eat in the U.S. is NOT the soy the rest of the world gets to enjoy.

Americans do not eat “whole soy foods” as do the Asians. Instead, they eat factory foods containing industrially processed soy substances made from “Roundup Ready” soybeans (soybeans that have been geneti-cally engineered...sometimes called recombinant DNA engi-neering) created by Monsanto. Western food processors then separate these altered soybeans into protein and oil, which is no longer considered a “whole food.” “A “whole food” behaves differently in the body when you remove or alter one of its components.”

In addition, today’s high-tech processing methods fail to remove the anti-nutrients and toxins that are naturally present in soybeans. The anti-nutrients and toxins are then changed into toxic and carcinogenic residues by the high temperatures, high pressure, alkali and acid baths, and petroleum solvents of the processing methods.

A clever public relations campaign by the American soy industry has convinced Americans that Asians are healthier because they eat soy, soy and more soy. On closer observations

of Asian eating habits it has been found that “Asians eat small amounts of soy, as condiments in the diet, not as a food staple.” The current health trend is that if some soy is good for your health then the more soy you eat the better your health will be. Current studies show that this has not proven to be the case.

When Dr. Daniel was asked, “In terms of their effects on people’s health, which of the soy food products on the market would you say were the worst?” She replied, “The worst by far is soy formula because it’s usually the only food nourishing the developing baby. Soy formula contains phytoestrogens that can disrupt the baby’s thyroid, reproductive development and toxic levels of manganese that can cause neurological and brain damage associated with ADD/ADHD and violent tendencies. Babies on soy formula are also at higher risk for gastrointestinal damage, allergies, asthma, poor mineral absorption and lower intelligence. Contrary to popular belief, soy formula was never used traditionally in Asia.” Furthermore, studies have shown that the above mentioned “possible” conditions are worsened in male babies. “The average daily dose of soy estrogens in soy formula (38mg) is higher than the amounts that cause thyroid problems and endocrine disruption in adults.”

Dr. Daniel adds that in adults she often sees thyroid dam-age, infertility, menstruation problems, loss of sex drive, hair loss and digestive problems which she attributes to the ingestion of altered soy products.

Are there any soy foods in America you can safely eat? Yes! But, they should be the old-fashioned fermented soy products such as miso, tempeh, natto, shoyu, tamari and edamame (the green immature soybeans). Tofu is a precipitated product and is considered to be less healthy. Soy sprouts are not healthy and should not be eaten. Traditionally they are used for phar-maceuticals, not as a food.

Experts agree that the genetically altered soy products avail-able in North America are creating or contributing to lowered immunity and health problems. It is not just the fact that we are eating genetically altered soy, it is also that we eat so much of it. The challenge is to find a manufactured food product that doesn’t contain soy. And, in addition to the soy products we intentionally eat, there is the hidden soy in our foods. Soy is hidden behind words like “boullion,” “natural flavor” and “textured plant protein” in food labels.

To Soy or Not to Soy? This is a question that requires edu-cated thought and research by each individual. The soy products available to us have potential for good. But, there is equal, if not more potential for harm.

Bisphenol ABisphenol A is a chemical compound

widely produced and sold in consumer products. When introduced to the body, Bisphenol A acts as an estrogen receptor agonist, meaning that it activates estrogen receptors, causing similar physiologi-cal affects as the body’s own estrogen. Bisphenol A may also be an endocrine disrupter, causing problems in the repro-ductive systems of mammals, including humans.

Studies testing for the presence of Bisphenol A in humans have shown that 95% of subjects tested, showed signs of the chemical, and in concentrations higher than the amount in tested labora-tory animals. People are exposed to and run the risk of ingesting Bisphenol A often. It is used to line the inside of many canned foods, hard plastic water and baby bottles and even some dental fillings. It can leach out of its container, allowing it to be ingested.

Studies in laboratory rats showed an increase risk of developing breast cancer, aberrations in the chromosomes of grandchildren of rats exposed during pregnancy, and increase the susceptibility of male rats to prostate cancer, among other effects.

Despite a widespread belief that Bisphenol A poses human health risks, government regulatory agencies insist that normal use of products containing the chemical is harmless. The City and County of San Francisco did, however, ban the production of baby bottles con-taining Bisphenol A in June 2006, but the ban was never enforced and was repealed in May 2007.

As more attention is focused on Bi-sphenol A, additional studies are being requested to verify its affects on people. Meanwhile, prudent people might wish to avoid using products that contain the

compound, and many retailers are offering alternatives.

CarrageenanCarrageenan is extracted from sea-

weed to produce a gelatinous substance used in many consumer products. The sea weed is harvested from abundant forests in the Atlantic Ocean near Britain, Con-tinental Europe and North America.

Carrageenans are made of very flex-ible molecules that allow it to form a variety of different, useful gels at room temperature. Because of this, it is used as a food additive, as a thickening and stabilizing agent. There are three com-mercial classes of carrageenan:• Kappa — strong, rigid gels

• Iota — soft gels

• Lambda — form gels when mixed with proteins rather than water, used to thicken dairy products.

Carrageenans can be found in ice cream, sauces, beer, toothpaste, sham-poo, marbling, diet soda, and pharma-ceuticals to name a few.

Health risks involved in the consump-tion of carrageenan have been studied. Several studies have suggested that it may contribute to intestinal inflammation and gastrointestinal lesions, including possible malignancies. In 1972 the FDA determined there was sufficient evidence from animal experiments to propose lim-iting the type of carrageenan that could be

used in food products.In 1982, the International

Agency for Research on Cancer found enough evidence in animal mod-els linking degraded carrageenan with gastrointestinal cancers to state that it posed a carcinogenic risk to humans. Other research groups also have listed it as a known carcinogen based on animal studies.

Tricalcium PhosphateTricalcium Phosphate is a mineral

found naturally in many foods. Other names for the mineral are calcium ortho-phosphate, tertiary calcium phosphate, tribasic calcium phosphate, or “bone ash”. It is commonly used in powdered spices as an anti-caking agent, a raising agent, in some cheese products, and in dental powders.

Tricalcium Phosphate is also used as a nutritional supplement. It is sometimes used to prevent and treat calcium defi-ciencies. Tricalcium phosphate can be a very healthy addition to your diet but may interfere with other medications and should not be taken if you are pregnant. You should consult with your healthcare provide before beginning a tricalcium phosphate supplement.

The New Year is a time defined by resolutions. Before you decide on what yours is this year, take time to declutter your life; physically and mentally.

Past regrets and resentments muddle your mind and can be even more of an obstacle then old paperwork and clothes. The mental clutter is what drags you down and can hold you back. 1. Get Started. Throw out the physical stuff. Make a list of everything you throw out and look at it often, you will be sur-prised at the result.

3. Add up. Add up both lists and keep going until they total 50.

4. Review your Mental Throwaways. Every morning for at least two weeks, recommit to eliminating them from your everyday thinking. Congratulate yourself on your progress, however slight, at the end of each day.

This book was written by a physicist who suffered from dozens of environmental allergies, blood and immune system abnormalities plus additional seem-ingly unrelated ailments until he began doing his own research on what could possibly be wrong with him.

Medical doctors had suggested he had literally everything, from dyslexia to MS to cancer, but couldn’t tell him how to feel better or get well.

This is the fourth edition of the book, as it is regularly updated with new information and continues to be in print nineteen years after the first edition was published. Dr. Rochlitz is a firm believer in the Science of Kinesiology or Muscle Biofeedback Testing and Energy Balancing. He feels that this approach to determining what substances your body is allergic to is crucial. These procedures are based on ancient (and proven) Chinese acupuncture theory, with significant modern innovations.

This is a system whereby one can “ask the body questions” through muscle testing, and/or balance the body’s energies for a specific problem. The brain records everything that has hap-pened to the body, and the muscle testing is just a biofeedback system to get at this knowledge.

Dr. Rochlitz gives explanations of how to do these proce-dures, and includes photographs showing how the kinesiology techniques are to be done and what they actually accomplish. Some of the photographs are a bit fuzzy, but were quite familiar to this reviewer, as I have taught many of these techniques to

teachers and school children as brain integration exercises. The Teacher’s Edition of Brain Gym, by Paul and Gail Den-nison, shows many exercises which can assist children with brain integration (using both sides of their brain) during school activities. The drawings and explanations in the brain gym publication are larger and much more detailed than in Aller-gies and Candida.

Of course, the focus of Dr. Rochlitz’ book is to use kinesiol-ogy to detect allergies as well as to release them. The focus of Brain Gym is to present these easy quick techniques to teachers or parents in order to prepare students for the rigors of testing, to increase the attention span, to learn to relax, etc. The result of both books is to teach people how to use the knowledge stored in their own bodies to become and remain healthy, both mentally and physically.

In his forward to Allergies and Candida Dr. John Wright says, “In these techniques of balancing the body the system is readjusted so that it can start to function normally again. No two balances are the same because no two bodies are the same. This is a very personalized form of therapy. After a balance is achieved, and if a good diet is maintained and medication is kept to an absolute minimum (or in many cases stopped), the results are quite stunning.”

The first six chapters of Dr. Rochlitz’ book focus on ex-plaining allergies of all kinds, and making clear the allergic connection to other imbalances, such as hypoglycemia and even diabetes. Chapters seven and eight explain Candida and its human interactions and chapters nine through twelve focus on how you can use kinesiology (muscle biofeedback testing) and energy balancing to identify and release allergies and their symptoms. Chapters thirteen through seventeen focus on nutri-tion, how to balance your emotions using these procedures, and a multitude of other helpful ideas. Dr. Rochlitz believes that with this knowledge of how your own body reacts you can actually have “wellness at your fingertips,” a highly empowering and desirable place to be with one’s lifelong health.

The benefits of sweating have been known through out history. There have been many forms of sweat bathing as in the Finnish

sauna, the Turkish sweat bath, the Native American sweat lodge, and the Russian bania. It was not until the mid 1960’s that the benefits of far infrared were discov-ered when NASA started experimenting with producing heat to keep astronauts warm in outer space. Further research by Japanese and Chinese researchers led to discovery of the amazing health benefits from the use of far infrared energy.

What makes the far infrared sauna better than the traditional saunas?

Sweating in and of itself is a healthy thing because the body releases toxins through our sweat. A sauna by defini-tion is a bath that uses heat to induce perspiration. Therefore, all saunas have some health benefit to them because they all make you sweat. However, as will be explained below, not all sweat is created equally. What makes the far infrared sauna vastly superior to the other types of saunas is far infrared en-

ergy penetrates the body’s tissues 1.5 to 3 inches and far infrared energy closely matches the body’s radiant energy. As a result the ionic bond between toxins and tissue is broken, which enables more toxins to be eliminated through sweat. It has been estimated that a person sweats eight times more toxins through the use of a far infrared sauna than through the use of a traditional dry sauna or a steam bath. You will even sweat out more toxins from using a far infrared sauna than from sweating through exercise!

Another advantage to the far infrared saunas it the temperature is much lower than a traditional saunas. The temperature range that the traditional saunas operate at is from 180 degrees to 230 degrees while the far infrared sauna operates in the range of 110 degrees to 130 degrees. Despite the lower temperature, you will sweat more in a far infrared sauna because you are sweating from within. The cooler temperature means you can spend more time in your sauna sweating out toxins. The intense heat from a tra-ditional sauna not only hinders the amount of time you can spend in a sauna it also is not good for people with heart conditions and high blood pressure. Forcing the body to bear a very high tem-perature of 160 degrees and higher can actually cause toxins to be pulled from tissue and placed back into the blood-stream causing symptoms to reappear. A lot of people cannot tolerate the intense heat from a traditional sauna for even a minute. On the other hand, far infrared heat is so gentle that it is used in hospitals to keep newborn infants warm.

The far infrared sauna requires very little upkeep because water is not used. Other saunas use water, which can cause problems with mold and mildew.

Mold and mildew contain toxins and the cleaning agents used to keep the wet sauna clean can contain toxins too. A far infrared sauna is as easy to clean as periodically wiping it out with a wash cloth dampened with water. You sit on a towel and place a towel under your feet while you sauna, afterwards you wash the towels and it’s as easy as that!

The amount of energy used by an in-frared sauna is very low when compared to other types of saunas. The typical far infrared sauna uses the same amount of electricity as the average home hair dryer. You only need to have the sauna on during a brief warm up period of 10-20 minutes and while you are using it. An average two-person sauna uses less than 1800 watts. Therefore, a typical half hour sauna session should cost less than eighteen cents at current electrical prices, which also takes into account running the sauna for twenty minutes to

warm it up.

Since the far infra-red saunas has been clinically proven to treat so many ailments, the purchase of a far infra-red sauna can qualify

as a medical deduction on your personal income tax return as a durable medical device with your doctor’s prescription. Also, many health insurance companies will cover the purchase of a far infrared sauna.

Whether or not you believe in intuition or have had an experi-ence of intuitive insight, many

people, in nearly all walks of life, attest to its existence and use it in their lives.

In massage, the intuitive massage practitioner has an inherent ability to sense more than the qualities felt by fin-gers and hands.

Tension and pain in muscles and tendons are easy to palpate. The cause

of tension, however, is not necessarily clear. It may come from over-exertion, accident or strain or from emotional causes such as fighting with a mate or coworker; worry about a family member or close friend can also produce tension, as can problems with a business partner, boss or employee.

When emotional problems are pres-ent, the client receiving a massage may or may not decide to tell the practitioner

about them. Most often emotional issues are sublimated, as the client desires to simply let go and enjoy the relaxation and separation from problems.

During the massage, however, an intuitive therapist can sometimes feel and identify such issues – and even the person(s) involved. When this happens, a door is opened for exchange in which the issue can be discussed in a safe and comfortable environment, without judg-ment or rancor. Resolution may result or the issue may be seen from a different point of view, and shed light on possible solutions.

When touching a part of the client’s body, e.g., the shoulder, the intuitive practitioner may “see” an image or feel an emotion or a pain, or even “hear” words that are connected with the prob-lem causing distress to the client. Such an experience is usually repeated once or more during the massage, making it less likely to be overlooked or ignored. Usually a client is very interested to hear what the therapist shares and wants to know more, even if the subject matter is uncomfortable or difficult for the client to think or talk about. The fact that the experience was felt by someone else validates the client’s feelings and makes the issue safer to talk about and work through during the session.

An intuitive session may go something like this:

can heal his pain, realize his strength and move forward in his life. All of this happens as a result of bringing the fear to the surface and giving voice to it. The client may go on to obtain professional counseling.

Another scenario may be: Therapist is working on client’s back

and feels some tightness that leads to the idea that there is conflict at client’s work. He mentions this to client, who concurs that things are not going well at work – too much pressure, assigned work is not getting done, etc. Therapist feels that the pressure is not external but originates internally. Is there something client might be doing to create this kind of pressure? Client agrees that she has “had” to take control of the office because the office manager isn’t doing her job. There is an air of resentment and lack of cooperation in the office. Therapist may ask more questions which help client to see that she may be micromanaging and her staff is actually capable of handling the work, just not the way she would do it. Client has an epiphany and decides to step out of that arena and just focus on the other aspect of her work.

This type of work is remarkable. Not only does a client receive the body work needed to decrease the pain in tense and overworked muscles, but they also gain insight into patterns of behavior in their lives that are not serving them. Such insight makes it possible to change and open new doors to future possibilities.

People who do well with intuitive massage work are those who are willing to go to the dark and hard places inside, and take a look around. Pain usually plays a part in this looking, but once these feel-ings are walked through, they are very soon replaced by freedom and a sense of lightness that comes from unburden-ing one’s psyche. Nothing compares with this feeling…

A pplied Kinesiology (AK) is a system that evaluates structural, chemical and mental aspects of health using manual muscle

Have you ever wondered why swimming pools, hot tubs, tap water, and bleach all smell and/or taste a bit alike? The answer is that they all contain chlorine. If you’ve ever read the warning label on a bottle of Clo-

rox, you know that chlorine—even when diluted—is hazardous: it may damage eyes and skin, and in high concentrations its’ vapors may aggravate heart and respiratory conditions. The EPA admits that chlorine causes eye, nose, and stomach problems. What you may not know is that chlorine has actually been used as a weapon of war: in WWI both sides employed chlorine gas to destroy soldiers’ respiratory organs and immobilize them with fits of coughing. More recently Iraqi insurgents have detonated chlorine tankers and used chlorine in car bombs.

Despite its warning labels and many risks, chlorine contin-ues to play an enormous role in our daily life. While we decide whether or not to purchase bleach or frequent public pools, it’s our cities that choose what goes into our tap water. Most cities consider chlorine an indispensible disinfectant that protects our water supply from E.coli, Giardia, cryptosporidium, and typhoid. Unfortunately chlorine does more than sanitize our wa-ter: it also reacts with naturally-occurring organic compounds to create hundreds of toxic disinfection byproducts (DBPs). Of

the few DBPs that are regulated, cancer-causing trihalmethanes (THMs) and haloacetic acids are the most common.

Another less popular means to disinfect water involves replacing or supplementing chlorine with chloramine. Some municipalities favor chloramine over chlorine because it creates lesser amounts of the regulated DBPs and because after water exits the treatment plant, residual chloramine remains active in city pipes longer than chlorine. But chloraminated water has many drawbacks: it irritates eyes in swimming pools, it ruins microbrews and hinders distilleries; it’s much harder to filter out than chlorine, and it kills fish in aquariums! In the SF Bay Area affected residents actually have founded Citizens Concerned About Chloramine to stop its use.

Just like the warning label on a bottle of bleach, many wa-ter providers include a disclaimer on their website or quality report suggesting to those with compromised immune systems that they may want to consider a water filter. Chlorine, chlora-mines, and DBPs must be removed from water used in kidney dialysis, for instance. But whether or not you’re ill, allowing these contaminants into your home makes for a toxic lifestyle. Toxic water is unhealthy to drink, cook with, and it’s especially hazardous in showers where concentrated vapors are many times more toxic than dilute liquids. When you consider the thousands of gallons of toxic water you use every year, own-ing a good water filter becomes a priority regardless of your health—indeed, because of it.

Excess body weight, even just a little, increases your risk of cancer, according to a study released this week by the American Institute for Cancer Research. But staying

active and following six rules for good eating can turn the odds back in your favor, researchers say.

Researchers analyzed more than 7,000 large-scale stud-ies over five years and are now convinced, said Philip James, a member of the report’s panel of experts, that excess body fat increases risks for cancer of the colon, kidney, pancreas, esophagus and uterus, as well as breast cancer in post-menopausal women.

But the report also found that “there are changes you can make in the way you live that will reduce your risk of getting cancer,” said Jeffrey Prince, AICR’s vice president for education.

Among the eight steps the 517-page report recommends are six that relate directly to diet. Top of that list: two-thirds of every meal should be made up of plant-based foods, such as whole grains, fruits, vegetables and beans.

Other dietary recommendations include limiting intake of “energy-dense foods,” foods that contain high amounts of fat, sugar or calories, such as fried foods, hamburgers and soft drinks.

Consumption of alcohol, red meat and processed meats were also linked to elevated cancer risk. The report advocates eating no more than 11 ounces of red meat per week, and no more than one alcoholic drink per day for women, and two per day for men.

The panel specifically advocated abstinence from all processed meats, such as bacon, ham and other lunchmeats. They were unable to find a level of consumption that could be considered safe.

In addition to dietary restrictions, the report also recom-mended being physically active at least 30 minutes every day. Tobacco should be avoided altogether.

“Eat less and exercise more,” Frank said. “Everything else is a variant of just that -- you cannot violate the laws of thermodynamics.”

Horehound is an herb whose name is derived from the Egyptian god of sky and light, “Horus”.

Originally native to Europe, it is now naturalized throughout North and South America. The plant has woolly, white foliage and tiny white clustered flowers. Horehound is a hardy perennial of the mint family, and as most members of this family, it has the potential to become invasive if not controlled.

The flavor of horehound may best be described as a strong berry-ish, root beer-like flavor. Some people like it very much, while many consider it to be an acquired taste. It has been used as a cu-linary flavoring and in candy.

Horehound has a long medicinal history. Ancient herba l i s t s p re -scribed the herb for a variety of conditions includ-ing fevers, malaria, snakebites, and dog bites. Hore-hound was once even considered an anti-magical herb. More recently, horehound has been used medicinally for asthma, whooping cough, bronchitis, indigestion, flatulence, and painful menstruation.

Today, horehound is used most com-monly for its medicinal benefits to the respiratory system. It is used widely as a cough suppressant in Europe and is found in many European-made products, such as the well-known Ricola line. In the US, however, the Food and Drug Administra-tion (FDA) banned cough drops contain-ing horehound in 1989 due to insufficient evidence supporting its efficacy.

Horehound is a very easy herb to grow, flourishing best in poor, dry soil. The plant can be propagated from seeds sown in spring, or from cuttings, or by root division (the most usual method). If raised from seed, the seedlings should be planted outside in the spring, in rows with 9 inches or more between each plant. No further culture will be needed other than weeding. However you propogate the plant, horehound does not blossom until it is two years old.

Have you ever wondered about body wraps? What are you actually wrapped in and how it is done? Here are some basic fundamentals about wraps: the dif-ferent kinds, what works and what doesn’t, and what

to look for so that you get maximum benefits.

One of the most important things to determine is how oils are used in wraps. Many facilities use oils on the skin prior to the wrap to “make the skin moist and hydrated”. The problem with this approach is that the oil acts as a barrier, so the skin cannot absorb any of the mineral or herbal properties of the wrap itself. Any benefit from the medicinal properties of the herbs and minerals is basically negated.

Therefore, when looking for a good body wrap, the first thing to notice is if they tell you not to use lotion or oils before your wrap, because they want your body to absorb the minerals. Ad-ditionally, your body needs to be hydrated in order to remove the toxins via the kidneys. Some spas may offer alkalizing mineral rich water for you to drink during the process to keep you hydrated throughout.

Mud is often a primary ingredient in body wraps. It has been used as a body cleansing agent for literally thousands of years by many cultures. Certain aboriginal cultures “bury” people in mud and dirt to cleanse them and remove body odor. Many wraps today use exotic muds such as Dead Sea mud or special mineral muds, to pull toxins from the body -- but the action can also be extremely drying. (Think about your hands after working in your garden with no gloves on!) That is one reason why facilities use oils on the body after the wrap.

Sea weed wraps are another good wrap option, providing they contain no oils. Sea weed provide many ionic minerals that are very beneficial to your skin and body. However, your body will continue to absorb these minerals only as long as the wrap is on you.

An herbal rub combines aromatherapy and massage. The herbs adhere to the skin by using coconut or other oil. There-fore, because of the oil barrier, aromatherapy is the principal benefit.

The key to radiant good health is keeping the body mineral-ized and alkalized. When a body wrap brings you back to this

state, your body can rid itself of metabolic waste and reach a healthy balance. That is why your skin is soft, supple and hydrated after beneficial wraps. This is not due to oils; it is due to the minerals en-hancing and stimulating the skin’s natural lubricating ability.

In addition, when the body is more mineralized, it releases the waste that makes it feel sluggish. You will feel revitalized after an effective wrap, and sleep well that evening as the body uses this cleansing opportunity to heal itself during sleep.

Body wraps run in the range of $90 to $150; each type will make you feel better and enjoy better looking skin.

There is, however, one wrap to be careful of -- a dehydration or compression wrap, designed to make you “lose inches.” De-hydrating products are placed on the body and you are wrapped in ace bandages and plastic. Then you go into a sauna to sweat. Water is not offered during this wrap, which encourages the body to give up water, thereby shrinking tissues and reducing overall body fluids/hydration. The possibility of heat stroke or kidney failure is very high during such an unhealthy process. Moreover, as soon as you drink fluids, the body returns to its original condition (size). You may wish to avoid dehydration wraps because of the possible harm to your system.

1. Brush regularly and as soon after eating as possible - even after snacking. Brushing keeps small food particles from be-coming giant feasts for unwanted bacteria. Brush at least two full minutes.

2. Select a good dentifrice and stick with it. You don’t need much and when the mouth fills with foam, many people will spit it out and consider themselves finished brushing. There are many, many toothpastes on the market all touting claims from being the best whitener to being the most natural. You might even try a powder with a good mixture of baking soda and flavoring - you’ll never go back to pastes!

3. Brush your tongue or use a tongue scraper. Why do a great job on your teeth only to have them come in immediate contact with the microbes living on the surface of your tongue? As an added benefit, your breath will be MUCH better!

4. Floss at least once a day. Flossing further cleans where your toothbrush cannot reach.

5. Learn how to irrigate the teeth and gums and do it daily. Oral Irrigation serves several purposes; it helps to remove food particles trapped below the gum line, using the right antimicro-bial fluid in your irrigator can help remove the ‘bio-film’ which harbors bacteria dangerous to your oral health and irrigating massages the gums resulting in increased circulation.

6. Irrigate deep pockets with a metal cannula tip and good antimicrobial solution. This measure is one of the best things an individual can do at home to assist in stopping decay where pockets have formed between the tooth and gum. Make sure you select an irrigator which can accommodate the tiny can-nula tips. Not all do. When irrigating a deep pocket, the tip is small enough to deliver the antimicrobial solution deep, where the regular irrigator tip cannot reach. Ask your dentist for help

in this. If you have the right dentist, he’ll be supportive and informative in your personal hygiene efforts.

7. See your dental professionals regularly, but choose them wisely. There are good offices and bad ones and you need to seek a good hygienist as well as a D.D.S. Make sure your hy-gienist gives you a solid 45 minutes to an hour - enough time to properly work on your teeth. Listen to your hygienist when she tells you about a problem area and don’t be afraid to ask questions. If your professional won’t take the time to answer your questions in a way you can understand or gets offended by them, it may be time to move on.

8. White teeth do not necessarily mean healthy teeth. While your biggest concern right now may be your smile, make sure that smile will be there, in good shape, years from now. Tooth whitening is tremendously popular today and many companies are catering to the market. While tooth whiteners remove stain-ing, to some degree, they do not necessarily do the cleaning job required by your other efforts.

9. Nutrition is half the battle. A de-mineralization and re-min-eralization process is taking place constantly as the teeth are being bathed in healthy saliva. The body is equipped to care for itself as long as conditions are right, and as everything else in the body requires good nutrition, the teeth and gums are no exception. Your strong autoimmune system is one of your best defenses against poor oral health and GOOD food is your best source of essential vitamins & minerals.

“Would you like some coffee?” a lady called out of the open window of their Mercedes camper that her husband was driving next to me on my bike. “Oh, yes!” I responded. Actually I don’t drink coffee. It’s my understanding that it is false energy, and over time, exhausts the adrenal gland, causing hormonal imbalance and promoting premature aging.

The woman and her husband pulled over. In a few min-utes their gas burner was lit and I was served green tea and cheese on toast. We talked about eagles. “Did you know that years ago they were shot by the thousands? It was believed then that they killed sheep. Well, they did, but it was the crows that started it. They picked out the eyes of healthy

sheep. Unable to fend for themselves, the eagles took over and finished the slaughter.” These hospitable folks were glad to see the eagles coming back.

I also learned that both lost their previous mates to cancer treatment. No, not to cancer itself, but to the harmful effects of chemotherapy and radiation. Too late now in these cases, but should they know of people afflicted with this dreadful disease, I gave them the website (www.germannewmedicine.ca) of the “Dr. Hamer method” with a healing success rate of +90% even in stage #4 (the most advanced) cancer.

Coober Peddy is the world center for opal mining. I read that opals are formed in the course of hundreds of thousand of years of exposure of silica to water. Lois and I had stopped in this “wild west” town when we came through here previously. Now I missed Lois’ good taste to help me with gift selections.

At “my” motel I learned of a German lady who recently lost her husband to chemotherapy. Barbara and her late husband owned the Opal Cutter, one of the town’s larger jewelry stores, built right into a former underground mine. She was closing her business through fire sales. So, was it my compassion for a “poor” German widow or the 40% discount that directed me there? In either case, we both did well.

In a class I recently attended, data from the AMA had been presented show-ing that the success rate of chemotherapy in the US is only 2.1%, and 2.3% for Australia. The average cost for this aggressive and damaging treatment is ~half a million dollars. This sounds like big business to me. Could that be why safer, more effective and considerably more economical approaches to heal cancer are so vigorously suppressed and why so little is done to prevent cancer in the first place?

On my way out of Coober Peddy I passed a windmill, said to produce 4% of the town’s power needs. The remainder comes from diesel generators. This is truly “wind city”. 24 more windmills could supply the entire town with electric-ity. Not only would that save a lot of diesel, but also the fuel of transporting it here. And that could be repeated world-wide…

In 2007, the most popular New Year’s resolution, according to Greg Helmstetter, CEO of myGoals.com, was Health & Fitness, while Personal

Growth came in second and Personal Finances came in third. In addition there has been a 50% drop in Americans who write New Year’s Resolutions, accord-ing to an Opinion Research Corp. of Princeton, N.J. and Stephen Shapiro, President of Goalfree.com. Out of the 45% of those who actually write a New Years resolution, only 8% of Americans achieve their New Year’s Resolution goal. Why has there been a drop in Americans who set goals?

The Answer is, for most of us, goals simply do not work. Even though well intended, most people don’t know how to set goals and there is an insidious un-derlying obstacle of thinking that sets the stage for failure.

The holiday season, instead of bring-ing cheer, most often brings stress on emotions and finances. The traditional holiday with feast and goodies passed around throughout the season brings with it the over indulgence of every kind of temptation. By the end of December, there is exhaustion physically, financially, and the extra pounds you didn’t need.

Feeling fat, stressed and the strain of finances, the New Year’s goal is thwarted before it gets off the ground. Some noble souls do set and keep their goals. Most of the ones who set goals and then a month later have given up, feel guilt and a fatalistic attitude, saying “what’s the use, It is simply impossible to do this, I don’t have the will power, I’m too tired”. This sets the tone for the entire year. It is no wonder we have what has been coined the Holiday Blues.

The problem with New Year’s reso-lutions is that people set goals in Janu-ary that they have been unable to keep throughout their life. If you have an unhealthy life style, and behaviors and habits that keep that lifestyle in place, you are unlikely to make the changes simply because you have made a New Year’s resolution.

The unconscious eating, drinking, smoking and procrastination habits are deeply imbedded because of years of un-healthy thinking. Remember the thought comes first and then the action. If you really want to change, you must change the way you think.

For example, if you think of yourself as fat and feel fat you will most likely cre-ate a vicious cycle of being over weight, on the other hand, if you appreciate your body and the abundance already existing in your life, you attract more of the same. You attract what you focus upon.

When you look in the mirror, stop telling yourself you are fat. Your mind sees in pictures, so when you tell yourself you

are fat, you picture that fat in your mind. The unconscious mind does not know the difference in what you perceive as reality and what is imagined. See and feel your body as if you have already lost the weight. Keep your focus on your desired body, instead of your perceived body fat. Rome was not built in a day, neither was your body.

The p sycho -logical component of addictions, are likely to cause one to backslide even af-ter the physiological addiction has been healed. For example, if you are a smoker, and think you need a cigarette because you are stressed, it is most likely because you have anchored smoking a cigarette with emotional feelings of stress, thus, when you get stressed, you immediately think of smoking a cigarette. If you did not have the thought, you would not have picked up the cigarette.

Getting conscious is the process of becoming aware of your thoughts. It is estimated that we have some 180,000 thoughts per day, the vast majority of them negative and repetitive. Most people identify with their thoughts, believing they are their thoughts. You are not your thoughts. Thoughts are like a really old movie, playing over and over and over, changing very little over time.

Changing your thoughts is simply a matter of retraining. If you are thinking, “I don’t have time for all of this”, remem-ber, if you took all of the time your mind is focused on old repetitive thoughts of anger, jealously, criticism, fear, doubt, suspicion that create feelings of resistance and irritation and then replaced them with positive thoughts of health, peace, joy and prosperity, you would have plenty of time.

I cannot emphasis enough. Watch your thoughts. Awareness is the first step in healing. You cannot heal what you do not reveal. If you become aware that your thoughts are not on things of love,

health, prosperity, and joy, do not beat yourself up. I repeat, do not beat your-self up; gently bring your focus back to nurturing and positive thoughts. Think of the positive results you desire instead of what you do not want. This process takes consistent practice.

You may feel discouraged at first. R e m e m b e r t h e way you think has been a “habit” cre-ated from birth. Yes, thinking can be an addiction. I am not saying thinking is bad. The conscious and unconscious mind is your tool

without which you would be unable function. For example, your automobile, like your mind, does not operate by itself. Without it you could do nothing. You are in control of where it goes.

If you find it difficult to get motivated and change your thought patterns, contact a qualified Certified Clinical Hypnothera-pist, or other professionals to help you. In addition, there are many wonderful books available on this subject. Changing your mind will indeed change your life.

Another reason New Year’s resolu-tions fail is because of unrealistic goals. Make your goals doable and manageable. Often setting a large goal seems insur-mountable and discouraging if it does not happen as quickly as you anticipated.

The motivation to reach the long-term goal is fueled by the successes along the way. There is no such thing as a small success. If you wish to lose twenty pounds, set that target and then keep your focus on the short-term goal of losing one pound. The one-pound goal is doable and with each one-pound lost, you have gained a victory instead of failure. Even if you backslide one week, keep your focus on the successes.

If you desire to improve your fi-nances, set the ultimate long-term target and then prioritize the short-term goals. Keep a picture in your mind of the results you desire. Feel each success and keep

that picture in mind instead of any minor setbacks. One step leads to another and before you know it you have reach your long-term target.

Can you imagine a life filled with love, peace, joy and abundance? When you change your thoughts, and proclaim your right to be healthy and abundant, it is the Emancipation Proclamation of your freedom from your old unhealthy thought patterns. You are not only creating a bet-ter life for yourself, the cumulative effect will create a critical mass and shift in world consciousness. “One small step for man. One Giant Leap for mankind”. It’s a normal part of human nature to only think about health-care when we’re feeling sick. The rest of the time we tend to focus on anything else. But when we do get sick, whether it is an acute infection or a chronic disease, we want to feel

better as quickly as possible.

Most people in the U.S. think first about seeing an M.D. when they don’t feel well. Others think first of alternative/com-plementary medical approaches such as Chiropractic, Oriental Medicine, Naturopathy, etc. Since every approach to healing has its strong points, this article focus on general aspects of healing. If you’re interested in learning more about your health-care choices, Healthy Beginnings will be publishing a series of articles in upcoming issues taking an in-depth look at various alternative healthcare techniques you might consider.

Following are some of the things to think about when you consider any type of medical treatment. Thinking about your healthcare this way insures that you’ll have the best possible experience no matter what kind of practitioner or healing ap-proach you choose.

What Is Effective Healing?At the risk of stating the obvious, effective healing is that

which eliminates symptoms and restores healthy balance. But what other factors besides the specific healing modality will best support you in reaching your healthcare goals?

1. Your Mindset and BeliefsResearch shows that your expectations – whether you are

optimistic, pessimistic, etc. – have a tremendous affect on your ability to heal. In Western medicine they call this the placebo effect, or more recently, the ‘meaning response.’

Your Social Support SystemDr. David Spiegel of the Stanford School of Medicine has docu-mented the fact that cancer patients who receive positive social support during their normal medical treatment live almost twice as long as those who don’t. This and other studies reinforce the importance of having supportive friends and family members when you want to improve your health.

3. The PractitionerOne of the biggest influences in the quality of your health-

care is the practitioner you choose to work with. There are three areas to think about when making the decision of who to see: Their level of expertise and experience, their reputation, and your experience when interacting with them.

Expertise and Experience:Regardless of what healthcare approach you prefer, it’s im-

portant that the person you work is experienced. In your initial contact ask how long they’ve been practicing. Find out if they specialize in any particular approach and what their success rate is for your particular condition. It’s also important to seek out people licensed in their particular field.

Reputation:Although subjective, it can be an important consideration.

Ask friends and family who they’ve worked with. If a name comes up repeatedly, pay attention and consider working with them.

Of course you never want to make this your only criteria. Some people just naturally get along with a particular practi-

tioner. You might or might not have the same experience. Still, it may help you narrow down your choices.

Direct Interaction: This may be the most important non-medical consideration

when choosing a healthcare provider. For example, everyone has their own personality style. Some people call this ‘bedside manner’ or a feeling of rapport. Others describe it as the feeling they get about someone. Often you’ll have this sense within the first few minutes of meeting or talking with them. The important thing is whether you are comfortable with how your doctor communicates with you. After all, when you’re communicating about something as important as your health you want to be happy with the quality of the communication.

The Bigger PictureWhy are all these non-medical factors important when seek-

ing healthcare? Extensive research in the field of Psychoneuro-immunology (the study of how our minds and emotions affect our health) shows that our experience of the healing process has a profound affect on how quickly we heal.

An example of this is the well-documented connection between our mental/emotional state and our health. A study published by the Archives of Internal Medicine showed that patients with depression have higher rates of heart disease than those who weren’t depressed. Other research shows that the same mind-body connection is true for everything from wound healing to cancer. How we think and feel about our health af-fects us profoundly.

This is true all the way down to the genetic material in our cells. In his book, “The Psychobiology of Gene Expression,” Ernest Rossi presents research showing that our thoughts and emotions can affect our DNA as fast as two seconds after we experience them!

What this means for you is that your beliefs about healthcare, your level of confidence in your doctor and your overall attitude about the treatment can have a tremendous impact on how quickly you heal. By cultivating a strong positive expectation, associating with others who are positive and supportive, and working with a physician you trust, you are much more likely to have a better outcome from any type of treatment you seek.

Start with the right attitudeThis cute little bundle of joy will soon

become that adolescent dog and it is up to us humans to teach them what is ex-pected in this human environment. Now, the first weeks of your new puppy’s life with you will be busy and demanding. There could be times when you wonder if getting that adorable puppy was such a good idea. However, if you keep your sense of humor and patience, things will go better if you ensure you’re not

giving your puppy too much freedom too early on and start teaching now. Luckily, puppy-hood only happens once, then you enter into adolescent behaviors. Oh the joys! If you take the extra effort now with this new puppy, this effort will pay off in the future.

and have it set up and ready for the puppy’s arrival. Where to keep the crate will depend on what’s most convenient for you, as well as the puppy’s response. Puppies don’t like to be isolated in one part of the house while their family is in another. You might have to experiment with different locations until you learn what works best for you and the puppy. Nighttime sleeping should be near you so you can be aware when it is time to take him out during the night. This is most important when the puppy is young.

Although the puppy has probably been health-checked by the breeder, an exam is additional security against health defects and other problems that weren’t apparent earlier. If your vet of-fers microchip ID implants, this might be an excellent time to get one. Set up the vaccination schedule or other healthcare choices you’ll need to consider with this new puppy. These relate to your puppy’s socialization.

Dealing with your puppy’s cu-riousity

To a puppy, the world is brand new and fascinating! He’s seeing it all for the very first time and absolutely everything must be thoroughly investigated. Puppies do most of their investigating with their mouths -- “Look at this! What is it? Some-thing to eat? Something to play with?” Murphy’s Law says that a puppy will be most attracted to the things he should least have -- electrical cords, the fringe on your expensive oriental rug, your brand new running shoes, or favorite ‘thing.’

Preventing destructive and dangerous chewing is far easier than trying to correct the puppy every second. Look around your home: What objects could be put up, out of the way of a curious puppy? Do not allow your puppy to roam with-out ‘active supervision.’ In other words, know exactly where and what your puppy is doing all the time by ‘watching and supervising the puppy.’ Are there rooms your puppy should be restricted from entering until he’s better trained and more reliable? Install a baby gate or keep the doors to those rooms closed.

Now, take a walk around your yard looking for potential hazards. If your yard is fenced, check the boundaries and gates for openings that could be potential escape routes. Puppies can get through smaller places than an adult dog. If your yard is not fenced, make a resolution

right now that your puppy will never be allowed to run off lead. He won’t ever know enough to look both ways before crossing the street to chase a squirrel. Keep him safe by keeping him on leash. Bring him to puppy class and begin learning the skills together that you and your puppy need to co-exist safely and happily together.

Use a scheduleWork out a schedule for you and the

puppy. Housetraining is much easier when the puppy’s meals, exercise and playtimes are on a regular schedule throughout the day. This makes house-training so much easier. A puppy or dog loves routine.

Get your Housetraining 101 Skills ready

First, have a good product to clean up, because there will be accidents if you don’t watch the puppy consistently. Try FRESH ‘N CLEAN; NATURE’S MIRACLE; ICKY-POOH; URINE OFF or some other guaranteed product. Ian Dunbar’s “Error Free House Training Tips” is a very good approach: the rules are easy to follow and understand. His potty directions in a nutshell are – remain patient, consistent and again, be patient – your puppy will get it if you remain consistent and don’t allow him to have accidents inside.

• For potty routines to be effectively developed, the dog or puppy must be on a consistent feeding schedule - this way you will find how much time there is between the dog eating and when it needs to eliminate -- both urination and defecation.• When you go out, bring a concealed “reinforcer/treat”.• Keep the dog on leash; don’t walk around and talk to him or engage him; just stand still with him and wait quietly while the dog explores the small area you have decided the potty will ‘belong.’ (Re-member walking around will only make the potty exercise ‘longer’– the walk can become the reinforcer when potty train-ing is becoming successful.)

Eating a diet consisting predominantly of these foods in combination with lean protein stimulates fat metabolism rather than fat storage. This type of eating has a low “glyceminc load”.

The Glycemic Load is “the effect a total meal has on your blood sugar… and how quickly or slowly you absorb the sugars in food.” An example of a low Glycemic Load meal is a five bean casserole and fresh steamed veggies with a drizzle of olive oil and vinegar. Although beans are high in carbs, they are also high in fiber, which slows down the rate of absorption, causing minimal effect on your blood sugar and insulin levels. This meal will be slowly burned as fuel rather than stored as fat.

A meal with a high Glycemic load, such as spaghetti, garlic bread, and an iceberg salad has little fiber, quickly turns to sugar, and is likely to be stored as body fat in a metabolically challenged, insulin resistant individual.

Studies have shown that typical low-fat, calorie restrictive diets actually slow metabolism and break down lean muscle tis-sure, while low glycemic load diets increase metabolism, spare muslce and target body fat loss. Since “muscle dictates metabo-lism,” it’s important to increase lean muscle mass through proper exercise and dietary lifestyle, rather than lose it with improper dieting and sedentary living. So if you want to lose the fat and keep it off, start living the “Low Glycemic Lifestyle” and you’ll never need another New Year’s diet resolution.

A ll of us without exception seek a purpose in our lives. A sense of purpose makes our activities feel meaning-ful. This meaning we experience as joy. Purpose brings joy, and joy is what we want.

There is no limit to the places where we can find joy in our lives. We find joy all the time, as a matter of fact. Think of the fol-lowing in your life: family, friends, work, food, physical exercise, music, art, nature—these all can bring us great joy.

So why is it, when we’re surrounded by all these sources of joy, we feel sad and blue, depressed, fearful, worried, or in pain? Where is the joy in our problems?

If the challenges in our lives haven’t brought us joy, it is be-cause we have lost our purpose. To bring back the joy we have to remember our purpose.

This remembering is called mindfulness—literally a “not forgetting.” The chief way to create mindfulness throughout the day is to begin the day with meditation. Meditation creates mindfulness; with mindfulness we do not forget our purpose; with purpose we find joy in our life. Therefore, the chief way to joy is meditation.

People meditate for many different reasons. For some, medita-tion is therapy. For others, it is a pleasant interlude to a demanding day, sort of a mental vacation. For others, meditation becomes spiritual, revealing truths and subtle meanings in a new way. For some, meditation can be religious, reinforcing reverent beliefs.

In short, meditation is what you make of it. In reality, it is not one or another of these things. It is all of them and none of them. The meaning of your meditation will come from you, not from what someone tells you it is.

Bring Joy to Life with Meditation

Meditation is a tool. Any tool can be used for multiple pur-poses. For example, you can use a hammer to build beautiful things, and you can use it to destroy something. Meditation is a tool you can use to make your life better by bringing back purpose and joy to your daily experience.

The easiest way to begin a simple meditation practice is to focus on your breath. As you inhale and exhale, just keep your attention on the breath, temporarily stopping or ignoring the thoughts and feelings that may arise unbidden. Follow the in and out movement of the air, feel the sensation of the air pass-ing through the nostrils, sense the rise and fall of the chest, relax the body throughout. Although you try to avoid thoughts and feelings, don’t fight with them. Let them come and go without commentary or reaction. Let them pass by like clouds skimming overhead, unnoticed.

You can evolve from this fundamental beginning of medita-tion to more refined levels according to your intent. As you are able to focus your concentration on the breath and are not distracted by thoughts and feelings, you can imagine as you inhale that you are breathing in pure white light, a purifying and pleasant white light. As you breathe out you imagine that all your distractions, negativities, and tension are exhaled in the form of black smoke, permanently removing these obstructions from your mental continuum.

Continue this concentration for as long as you wish. If you must stop meditating, pick it up the next time you meditate. At some point you’ll come to feel pure and liberated from distraction, as if your skin is a thin membrane containing a body of pure white light, which you have identified as your true nature. Meditate on this purity without distraction for as long as you can.

pHThe over-acidification of the body is the single underlying cause of all disease. All Disease? How Can That Be?

The pH level (the acid-alkaline mea-surement) of our internal fluids affects every cell in our bodies. Each of the body’s fluids has a specific pH value, and extended acid imbalances of any kind are not tolerated well by the body. The entire metabolic process depends on a balanced internal alkaline environment. A chronically over-acidic pH corrodes body tissue, slowly eating into the veins and arteries like acid eating into marble. If left unchecked, it will interrupt all cel-lular activities and functions.

The body maintains a balanced pH by using certain minerals such as potassium, calcium and magnesium to neutralize ac-ids in the blood. When there is a shortage of these minerals, the body will restore its optimum pH by taking them from other sources, such as organs and bones.

Dr. Otto Warburg, a renowned cell biologist who studied aerobic (higher pH) and anaerobic (lower pH) respira-tion in normal and cancerous cells, won the Nobel Prize in Medicine in 1931. In 1966, he delivered a lecture at an annual meeting of Nobelists at Lindau, Germany, describing the prime cause of cancer as follows:

“The prime cause of cancer is the replacement of the respiration of oxygen in normal body cells by a fermentation of sugar. All normal body cells meet their energy needs by respiration of oxygen, whereas cancer cells meet their energy needs in great part by fermentation. All normal body cells are thus obligate aer-obes whereas all cancer cells are partial anaerobes.”

To understand why some tissues in the body are deficient in oxygen and therefore prone to cancer, it is helpful to understand the nature of acidity and al-kalinity. Cancerous tissues are acidic, low pH, whereas healthy tissues are alkaline, with a normal or high pH.

Aerobes require air (oxygen) to sur-vive, while anaerobes do not. Partial anaerobes by definition are capable of carrying out both types of respiration, either separately or at the same time. The second type of respiration is called fermentation, of which, as you probably know, alcohol is a by-product.

“From the standpoint of the physics and chemistry of life this difference be-tween normal and cancer cells is so great that one can scarcely picture a greater difference. Oxygen gas, the donor of en-ergy in plants and animals, is dethroned in the cancer cells and replaced by an energy yielding reaction of the lowest living forms, namely, the fermentation of glucose.”

Cellulite defined: Cellulite can be loosely defined as the dimpled or bumpy con-tour that the skin assumes because of irregular distri-

bution beneath the skin. The cause for this appearance change is complex and not completely scientifically understood. As fat is stored, fat cells become larger. Com-mon locations are hips, thighs, posterior arms, buttocks and abdomen. Women have an 80-90% chance of developing cellulite due to control by estrogen, there-fore these cells are not easily affected by diet or exercise.

Why does cellulite occur?Fat globules are divided into segments

by cords made up of collagen and blood vessels. It is believed over time these cords shorten causing decrease in blood flow to the area. The increase in fat glob-ules between the cords also contributes to decreased blood flow in addition to de-creased outflow of lymph. The accumu-lation of fluid further increases pressure, affecting blood and lymph flow creating a vicious cycle. Metabolism to the area also decreases adding to the problem.

harmless condition would have it treated if it was simple, painless and inexpensive. Diet and exercise alone rarely help and invasive surgery such as liposuction can actually make it worse. Numerous thigh creams, massagers, botanical wraps have all been tried in the past, all with

virtually no long term ben-efit. Creams or anything topical can not penetrate deep enough to attack the problem. Mesotherapy began in 1952 but was of-ficially recognized by the French National Academy

of Medicine in 1986. This entails using small amounts of naturally occurring sub-stances and minerals and injecting them into the fatty layer to reduce dimpled areas. Here is a question that a reader (Betty R.) sent to me by email: “Everyone seems to be pushing

the flu shot. What do you think of it? Should I get one?” This is such a great question, that I thought all of you would like to see my answer. Dear Betty,

No, I don’t think you should get one. Neither does a new study published in the October 26, 2006 issue of the British Medical Journal. In this study, Dr. Tom Jefferson, coordinator of the Cochrane Vaccines Field (see Editor’s Note below) in Rome, Italy, conducted an extensive review of all of the previous studies on the effectiveness of the flu vaccine.

He looked spe-cifically at whether or not the vaccine decreased hospital admissions, death rates, or time off work. According to Dr. Jefferson, vaccines “have little or no effect.” He said, “We’ve got an exaggerated expectation of what vaccines can actually do. I’m hoping American and European taxpayers will be alerted and start asking questions.”

Dr. Jefferson looked very hard at what the flu vaccine is supposed to do and what it actually does. What he found has really shaken up the vaccine proponents. According to the doctor, “almost none” of the benefits

that the vaccines theoretically offer are actually seen in the real world.

Consumer health a dvo c a t e M i k e Adams, author of “Conquering the Common Cold,” has

gone much further. He has called the flu vaccine “one of the greatest medi-cal cons perpetrated on the populations of the world. Flu shots prevent colds in only about 1% of people who get them, making them 99% useless,” Adams said. “They also inject unhealthy substances

such as mercury preservatives directly into tissues, poisoning the patient with a chemical burden that accumulates with each flu shot.”

I have never advocated flu shots for any of my patients. From what I have seen, the few that have ignored my ad-vice either get sick from the vaccine, or they get the flu anyway. I would much rather have them get the flu, which would immunize them naturally, than have ineffective and potentially dangerous materials injected into their bodies. After

all, it’s not getting the flu that is the problem. It’s getting over it. And with the right natural therapies, such as vitamin C and hydrogen peroxide infusions, treating the flu homeopathically is a slam-dunk.

And the safety issue is another concern. Just three days before Dr. Jefferson had his study published, health officials in the Israeli town of Kiryat Gat immediately stopped the use of the flu vaccine. This was because four people died after receiving the injection. Because the people targeted most aggressively for flu vaccines are the elderly and sickly, we will probably never know the true death rate. When one of these people dies from the vaccine, doctors usually attribute the death to their disease and not to the vaccine.

Dr. Jefferson asks why doctors still use the flu vaccine in spite of the absence of any proof that it works. He says the reasons “are unclear,” but I think he really knows why. The flu vaccine is big business. And thanks to drug company lobbying, we taxpayers are not just paying for flu vaccines. We are also subsidizing the deaths and other malpractice litigation that stem from their use. What a bargain.

But wait for both. When the dog eliminates, reinforce with a “reinforcer/treat”.• During the day, take the dog out every 45-60 minutes and always bring a concealed treat with you.• The dog is then reinforced/rewarded with a SMALL PIECE OF TREAT for each successful elimination outdoors. • When you get some consistency in pottying – begin to stretch out the time from 60 minutes to longer periods.If nothing happens in about 3 - 6 minutes – take the dog back inside and follow the remaining directions:When inside, the dog is in one of three scenarios only, as follows: 1. Dog is crated or in a small enclosure (not on carpeting) - baby gates in doorways, bathrooms, exercise pens. 2. It is January and the air outside is chilly. As tem-peratures drop we bundle

up in warm sweaters, stoke the fire, drink hot tea and do

everything that we can to stay warm – not to mention healthy. Around this time it often seems almost impossible to dodge that flu bug that is attacking everyone from coworkers to classmates. Because that bug seems to be everywhere, the best thing that we can do is to prepare our bodies to fight it off.

Beyond exercise and plenty of rest, nutrition plays an imperative role in strengthening the immune system, hence making us better apt to deal with viruses. This Chicken Veggie Soup is a comforting and a delicious way to fill up on immune strengthening vitamins. Each bowl is loaded with vitamin C, vitamin A, vitamin B12 and protein. The slight spiciness of the soup is also the perfect way to clear a blocked sinus passage. Enjoy a bowl of this exotic and multi-dimensional soup with a warm piece of fresh baked blue corn jalapeño bread.

Chicken Veggie & Roasted Anaheim Soup Ingredients:

2 1/2 quarts chicken broth2 cloves garlic (minced)2 1/2 stalks celery3 carrots (peeled and chopped)1/2 cup diced white onion1 red bell pepper (julienne- thinly sliced)1 red Anaheim chili (Julienne)1 green Anaheim chilies (Julienne)1 zucchini (sliced into 1/2 medallions)3 boneless skinless chicken breast (chopped)1/2 medium head of broccoli

1/4 cup of cilantro 2 1/2 tablespoons parsleyCoarse sea Salt (to taste)Crushed red pepper (to taste)Cayenne pepper (to taste)Fresh ground black pepper (to taste)3 fresh limes1 avocado

Method of Preparation:

Adding each ingredient at the appro-priate time is key to making a soup that is layered with flavor. So, Begin by chopping all of the vegetables and seasoning the chicken so that you are prepared to add each ingredient at the appropriate time. While you are chopping some of the veg-etables use the flame broiler of the oven or a grill to roast the Anaheim chilies until the outside is charred. When the chilies are done, put them in a plastic bag and place in the refrigerator until they are cool enough to peel and chop. It is helpful to keep each ingredient separate from the others, with the exception of the onion, celery carrots and garlic.

The most important step in making this soup is the first: Sweating the mirepoix (the French term for the combination of carrots, onion and celery). Begin by heating a large pot over a very low flame with no more than a teaspoon of olive oil or but-ter, and then add the mirepoix and garlic. Now, keep the mirepoix covered for about 2–3 minutes stirring periodically. The idea is to use as little oil as possible so that the vegetables will cook in their own juices. Do not allow the mirepoix to brown. The goal is simply to release the first layer of flavors into the soup.

Next add the red bell pepper, the Ana-heim chilies and the zucchini and allow all of the vegetables to sweat for about 2– 4

minutes. While sweating these vegetables, sauté the chicken in a separate pan just enough to brown the outside. Now add the chicken to the soup pot and stir it in with the rest of the ingredients. Pour in the broth and cover for about 10 minutes, stir-ring periodically and making sure the soup never comes to a boil. Now it is time to stir in the broccoli. Allow the soup to continue cooking for about another 8 minutes and then add the parsley. Continue to cook the soup for about another 3-4 minutes. You will know that the soup is done when it comes a very low simmer-never a boil. At this point turn the flame off and stir in 1/2 of the cilantro. Next, fill a bowl of soup for yourself, top with a few fresh cilantro leaves, a few slices of avocado and the juice of a fresh lime. Now, relax, enjoy and warm up!

Blue Corn Jalapeño BreadIngredients:

1 Cup blue Corn Bread 1/2 cup all Purpose Flour1 1/2 tsp baking powder3 tablespoons Amber Agave Syrup 1 egg1/2 cup low fat yogurt 1/2 cup milk

Method of Preparation:

Begin by pre-heating the oven to 425F. Mix all Dry ingredients in a medium size bowl. Mix all liquid ingredients in a separate bowl. Now combine the two mixtures and pour it into an oiled pan or muffin cups. Bake the bread for 15- 20 min. or until the top is golden brown.
