Barrel of FlavorBy Georgene Mortimer, Island Winery

Oak barrels are where the art andscience of winemakingcome together to create magic.

Hilton Head’s pristine beaches and magnifi-cent golf courses are among the best in theworld, but chances are you’re the type ofperson who’s looking to get the most out ofyour vacation, especially if you’re thumbingthrough Island Events. You’ve packed morethan just sunscreen and a pitching wedge. Now you’re ready to explore.

And Hilton Head is ideal for explorers of allages. Are you ready to get face-to-face withdolphins? Visit old forts and hidden Civil Wargraves? Walk where the Union Army began theend of slavery years before the EmancipationProclamation?

How about getting there by bike? Can you tasteshrimp fresh from the sound and clams carriedin by the morning tide? There are so manyways to get lost and find your way to hiddenLowcountry hotspots. Best of all, you can getthere by car, by bike, by boat – or even bybarrel.

At Island Winery, we’re proud to offer a uniqueway to explore Hilton Head Island through ourweekly barrel tastings. Like the island itself, the winemaker’s craft relies on the carefulpartnership between man and nature tocreate something truly spectacular.

Oak wine barrels are where the precise scienceof winemaking gives way to the supple art form

that characterizes our handmadeapproach to boutique wines. Askour winemaker about the barrelsand he’ll tell you they’re the “spice

rack of the winery,” where Mother Natureinfuses the wine with supple flavor notes andfragrant aromas.

All of our red wines begin with grapes crushedon-site and are allowed to age in our Frenchand American oak barrels. Barrel tastings areyour chance to sample the upcoming vintagedirectly from the barrels before they’re bottled.Get a sneak peak at the winemaker’s craft bytasting a variety of wines at various stages ofthe aging process and allow your taste budsto experience nature’s work in progress.

Of course, if your action-packed schedule (orchill-out sessions) doesn’t permit you to stop byin time for one of our weekly barrel tastings, you are always welcome to taste any of ourfinished products in our barrel room or TastingGallery which features original artwork com-missioned for each of our handcrafted wines.

AtlanticBottle Nosed Dolphins

One of Hilton HeadIsland’s most popularresidents, AtlanticBottlenose Dolphinsare abundant in localwaters.

In fact, these incrediblemarine mammals share somany characteristics withhumans it can be arguedthey are our underwatercounterparts.

One example is the waythey give birth.

Female dolphins give livebirth and nurse their youngfor up to three years. Calvesoften stay with the mother forup to five years, if male, andpotentially the rest of theirlives, if female.

In the wintertime, theBottlenose populationaverages from 200 to 400animals. Early spring throughlate fall, we are inundated withdolphins as females from allover the Southeastern coastmake an annual trek to thearea to give birth. Otherfemales act as midwives andnannies, often taking turnswatching over the young asthe mother feeds.

Males tag along, followingthe females wherever they go– yet another human trait!

From a boat, you will oftensee the young calvesswimming and playing with theother dolphins in the pod.Providing abundant food forthe mothers, Lowcountry

waters also give the youngdolphins a fairly safeenvironment to practiceswimming and hunting beforemoving on to other parts ofthe coast.

Although they lack thegracefulness of an adultdolphin, the calves’ play-fulness and energy tends toremind one of their own youth.

By Shawn Hern, Naturalist/Captain of DolphinDiscoveries, a division ofKayak Hilton Head.

Fall is a special time here in the Lowcountryfor many reasons: the weather is better, the crowds are thinner… and, of course, the bull redfish swarm inshore waters.

The bulls, weighing 20 pounds upwards tothe 50-pound mark, are here offshore all year. However, at this time of year, they come closeto shore in big numbers, with catches of 20 ormore fish in a trip not at all uncommon. Byany measure, fall is redfish season on HiltonHead Island.

The strength of these fish is incredible, rivalingany other fish of its size, short of an amberjackor a tuna. I usually fish heavy spinning reelswith 50-pound braid. Even with a heavy drag, they will strip line off at an alarming pace –and do it several times in a battle.

I have fished lighter tackle, but the lengthybattle takes a toll on these big fish, and theymust be released. After all, the law requiresthat any redfish over 23 inches must bereturned to the water.

The smaller redfish invade the creeks this timeof year, offering the best light tackle sportavailable. Live or dead shrimp, cut mullet andmenhaden all are favorite bait when fishinginshore. The “slot” or keeper size is 15 to 23inches. According to South Carolina law, you

may keep three fish per person.

Not only are redfish a blast to catch, butthey’re also delicious to eat. In fact, beforeChef Paul Prudhomme introduced a Cajundelicacy known as “blackened redfish,” thesefish were locally known as spot tail bass orpuppy drum. Officially their proper name isred drum.

Coloration is usually a deep burnt orange orcopper across the back with a single spot atthe base of the tail. Some fish have multiplespots from the tail to the middle of the body.A strong broad tail and thick shoulders give itall the horsepower it needs to make your day.

Good conservation and our local mariculturecenter have provided some of the best stocks ofredfish I have seen in 40+ years of fishing thisarea. Al Stokes and his crew at the MaricultureCenter have been boosting the local populationwith their work for years. After all, the proof isin the pudding.

Whether you want to light tackle redfish in thecreeks or chase the big bulls, now is definitelythe time. Happy fishing!

Capt. Miles Altman of Bayrunner FishingCharters has more than 41 years experi-ence fishing the waters surrounding HiltonHead Island. Don’t miss the new “Finatic”boat, which can accommodate up to 12passengers and features a special three-hour shark/dolphin eco-tour trip. These tall, graceful, wheatlike plantsparade up and down the twelve miles ofHilton Head’s Atlantic Ocean beachways, changing in color as the season advancesfrom a deep green to a burnished gold. They may appear so beautiful as to invitepicking for a dry arrangement – but don’t.They are protected by law because theyprotect our fragile dunes from erosion, andwithout their soil-holding ability, our duneswould all too soon disappear.

The Nine-banded Armadillo is a fairly new res-ident of South Carolina. In a short time, theyhave spread across the entire state and becomea common sight along roadsides. These hard-shelled mammals have made themselves rightat home and continue to spread throughout theUnited States.

Nine-banded Armadillos, known as dasypusnovemcinctus, have been around for over 60million years. They are distant cousins to slothsand anteaters. Originally from Central America, armadillos began migrating into the United Statesin the 19th century. They began showing up inSouth Carolina in the 1990s. Since then, theyhave expanded their territory throughout thePalmetto State and continue to move further north.

The name Armadillo translates to “Little ArmoredOne.” They are covered in a thick shell of scalyplates called scoots. The center of this creature’body has nine flexible plated joints. The only softspots on an armadillo are the ears and stomach. They have very little hair on their bodies, whichdoes not allow them to last long in cold climates.

Armadillos prefer to live in shady, covered wood-land areas and thrive in areas with soft soil. Ifthe ground is too hard, they will not be able todig for their food, or dig the burrows they live in.An armadillo may have up to 15 burrows in anarea it uses for shelter. The burrows later becomevaluable habitat for all kinds of other animals.

Armadillos are mainly nocturnal animals, forag-ing for food at night. Using their keen sense ofsmell, they search for insects and invertebratesin the ground. They have very bad eyesight andhearing. There are not many animals that predatearmadillos, but coyotes, wild dogs and people doso. If startled, an armadillo may jump up to fourfeet in the air. Due to the weight of their shell,

they have the ability to walk the bottoms of smallstreams and ponds. They are able to hold theirbreath for up to six minutes and can inflate theirlungs, which allows them to swim in larger bodiesof water.

Armadillos have a unique reproduction process. They breed in July and August. The embryo willstay dormant within the female until Novemberand sometimes longer if the circumstances arenot right. The single fertilized egg will split andcreate quadruplets. The four young share thesame placenta until they are born four monthslater. The young will nurse off of their mother forthree months, staying with her for up to a year.Armadillos reach maturity at the age of one yearand may live for up to 15 years.

The spread of Nine-banded Armadillos has beenattributed to many factors. With higher wintertemperatures across the U.S., armadillos are ableto move into new territories. Their high rate ofreproduction and lack of predators are signifi-cant factors in their population increase. Thespread of armadillos has not been a significantproblem ecologically. Many people find armadillosa nuisance due to the holes they dig in gardensand farmlands. Historically, people have huntedand eaten armadillos and still do today. Armadillosare also valuable in aiding medical research forHansen’s Disease. To catch a glimpse of thisfascinating animal in the wild, take a walk throughthe Pinckney Wildlife Preserve.

Discover beautiful shellsand amazing wildlife onarea sandbars.

SandbarTreasuresBy Jessie Renew, Outside Hilton Head

One of the best ways to get outside in theLowcountry is to search for shells and otherwildlife on the sandbars, banks and beachesin the area. The best time to go is at low tide, especially on a full or new moon. The varietyof species you can find is particularly goodafter a storm brings in new ocean currents. OurAtlantic beaches offer excellent opportunitiesfor collecting shells, however, the best placeto see shells in all stages of their life cycle ison tidal sandbars accessible only by boat.

There are numerous sandbars in the waterwayssurrounding Hilton Head, both off the beachand in tidal rivers and inlets. Hire a guide andkayak out to Joiner Banks off the beach on thenorth end of the island. If kayaking isn’t yourthing, take a powerboat cruise to a sandbaroff of Daufuskie Island with great sightseeingand dolphin watching along the way. Onceon the sandbar, there is a lot to explore andlearn about in the water, on the sand andbelow the surface of the sand. Your captainor guide will point out different wildlife andits role in the unique sandbar ecosystem.

Each shell variety is created by a unique speciesof animal. In the case of clams and snails, theanimal has specialized organs that secrete achemical substance that creates the shell. Theshell grows along with the animal inside it.Depending on which sandbar you visit and thecurrent conditions, you may see live shells withtheir juicy inhabitants as well as dead and emptyshells you can collect. If you’re lucky, you’ll evendiscover empty shells which are now home tohermit crabs.

Animals on the bottom of the food chain livebeneath the surface of the sand. These crea-tures include worms, clams and other bivalvesthat feed by sticking their proboscis (anappendage with a mouth at the end) abovethe surface of the sand, filtering plankton outof the water. The spawning season for thesespecies is mid-summer, when the gender-shift-

ing adults spew millions of eggs and sperminto the water. Once fertilized, the tiny animalsbegin to grow as suspended plankton beforesettling into their subterranean adult life. Thedense population of these animals supportsmany of the other shelled species.

Wade out in the shallow waters surroundingthe sandbar and look for live keyhole urchins, also known as sand dollars, as well as starfishand sea cucumbers. These animals have tinylegs they use to move across the ocean floor. In the case of starfish, the creature’s vascularsystem pushes water through the legs to move. The starfish also uses its legs to trap clams andworms and ingest them through a mouth inthe bottom center of their bodies.

Cruising the beach closest to the water, you willsee many sea snails sliming along. These speciesare unique in that they are adapted to preda-tion of other soft-bodied mollusks. They use theirslimy, muscular foot to pry open clam shells andthen slurp away the body of the inhabitant withspecially adapted teeth on their proboscis. Onecommon variety of sea snail is the LetteredOlive, the state shell of South Carolina, whichhas an elongated shell with a distinctive patternof beiges and browns. Another common sandbardweller is the Whelk species, four varieties ofwhich are common in this area. Other sightson the sandbar include numerous fish, rays, small sharks, sea turtles, sponges, corals, sharkteeth and much more.

How to increase your results onshort shots and maximize longshots.

Short Siding & Long SidingBy Doug Weaver, Palmetto Dunes Oceanfront Resort

What a tangled web we weave on thegolf course! Even the most accomplishedgolfers put themselves in sticky situationson or near the green.

One of the stickiest situations golfers get ininvolves short siding, which typically occurswhen the pin is located close to the edge ofthe green where the golf shot is to be playedfrom, but there’s not much green the ball canland upon before rolling to the hole. Shortsiding means you’ve put yourself in a situa-tion where you have limited shot options, increased pressure and an elevated risk ofmaking a bad shot.

By any measure, short siding yourself is bad.It requires making tricky shots that involve ahigh degree of touch and feel. If you’re 10yards from the hole, with the ball stuck in somefringe rough, you have to use strategy to makethe shot. We all know the feeling – you’re closeto the hole and yet you feel so very far away.

In a short siding situation, remember to hit tothe long side and keep your emotions undercontrol. Work on your short game with strate-gic putting and chipping and remember that, when the pressure is on, you’ll need to beextremely precise so you can chip the ball toland on the green.

If you choose to putt in a short siding situation, you may have your work cut out for you, asyou’ll have to make the ball traverse over roughgrass. Over time, you’ll learn to judge howthe ball rolls across the fringe and on to the

short grass of the green.

By definition, long siding refers to a situationwhen the pin is located further away from theedge of the green where the shot is to be playedfrom. In a long siding situation, there’s usuallya fair amount of green for the ball to land androll to the hole.

In other words, the ball is further from the hole, but you have more of a clear, smooth shot. Youcan usually just relax, putt or chip and let theball roll into the hole.

Whether you’re facing a short siding or longsiding situation, remember that a bad putt isusually better than a good chip. That’s becausechips tend to be more erratic and approximate.A good putt is smooth, controlled and precise. And, after all, when the ball rolls right into thehole, that’s when golf gets really fun.

Your short game is where you have a greatopportunity to reduce your overall score byperfecting your shots on the green. I invite youto take my Shortgame 1 Class at the PalmettoDunes Golf Academy, which will help you refineyour skills. Practice really does make perfect!

Enjoy your time on the golf course thismonth. Hilton Head Island is truly beautiful inSeptember, when the temperatures start to cooldown and the conditions on the green areideal. We have some of the finest champion-ship golf courses in the world. Take the timeto test your mettle and develop your skill. I’llsee you out on the course!
