Ingredients:

1 pound Macaroni

4 tablespoons butter, plus 1 tablespoon for

greasing dish

Kosher salt

2 small shallots, finely

chopped

2 cloves garlic, chopped

Freshly ground black pepper

5 tablespoons all-purpose flour

1/4 cup white wine

4 cups heavy cream

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper

1 bay leaf

4 cups shredded sharp Cheddar

8 oz chopped lobster meat, cooked

8 oz chopped shrimp, cooked

1/4 cup panko bread crumbs

1/4 cup freshly chopped parsley leaves

1/2 cup parmesan cheese

Directions:

In a large pot of boiling salted water overmedium heat, add the pasta and cookuntil al dente. Drain the pasta andreserve.

Add 4 tablespoons butter to a large pot overmedium heat. Once the butter shimmers,add the shallots and garlic and saute untiltranslucent. Season with salt and pepper,to taste. Add the white wine and reduce,by half, about 2 minutes. Slowly add theflour and cream, whisking well to removeany lumps. Add the paprika, cayenne, andbay leaf. Bring the cream up to a simmerand turn the heat to low. Let reduce untilthe cream is thick and can coat a spoon,about 5 to 10 minutes. When thickened,remove the bay leaf.

Stir in the grated cheese, a handful at atime, combining well after each addition.Add the chopped lobster & shrimp to thesauce and stir well. Add the pasta and stir.Add to the greased baking dish andsprinkle with the panko crumbs andparsley.

Bake for 25 minutes. Remove from theoven and let rest for 10 minutes beforeserving. Sprinkle individual servings withparsley & parmesan cheese.

Fruit wines are ideal for summertimeon Hilton Head Island.

Did you know thatdelicious, high qualitywines can be made from almost any typeof fruit?

A good bottle of fruit wine is truly a memo-rable experience when the essence of the fruitserves as the dominant feature. Peach wineshould smell and taste like fresh summerpeaches; aromas from a blackberry wineshould remind you of a walk in a berry patch.

A fruit wine is, by definition, worlds away from awine cooler. Typically, a wine cooler is a grapewine with a touch of fruit flavoring added. Areal fruit wine is made directly from a partic-ular type of fruit, which infuses every glasswith a sweet, natural flavor.

Just as any good cook knows, starting outwith fresh seasonal ingredients is essential tosuccess. This also holds true when makingfruit wines. However, unique challenges arisewhen making wine from fruits other than grapes.This is because wine grapes, grown correctly,naturally contain all of the nutrients neededto produce a well-balanced wine. This is thevery reason why grapes have become thedominant wine fruit around the world.

Unlike grapes, most other fruits lack the perfectbalance of moisture, sugar, tannin and acidnecessary to ensure the fermentation andaging processes that leads to a well balancedwine. It takes a certain amount of skill to addthese components, in the correct ratios, toachieve this goal.

Since the keyto an excellentfruit winerequiresmaintainingthe true flavorsof the fruit, it’simportant toprevent the

formation of secondary and tertiary tastes andaromas. These tastes and aromas – whichdevelop during fermentation and, over time,during oak aging and bottle aging – areabsolutely essential in a high-quality grape wine.

These flavors and aromas are responsible forthe strange but desirable descriptions usedfor wine such as “cigar box,” “leather,”“mushrooms” or “grapefruit.” Strict temper-ature regulation, proper yeast strains andshort fermentation times are some of thecontrols used to prevent these compoundsfrom developing in fruit wines. Also, fruitwines should be drunk relatively young andwithin a few months after their purchase.

At Island Winery we make several differentfruit wines from fresh Carolina fruits. A localfavorite is our Peach Chardonnay. We start bymaking peach wine with fresh Carolina peachesand blend it with un-oaked Chardonnay tobalance out the fullness of the peaches. – Don’t enter the water if you can’tswim.

– Swim near a lifeguard. United States Lifessaving Association statistics show that substantially more drownings occur in areas where there are no lifeguards.

– Ask the lifeguard about any dangers in the water or on the beach, especially if he or she is flying a yellow caution flag.

– Be aware of direction and strength of longshore currents.

These currents can take you up and down the beach quickly and cause you or your kids to get lost.

– Don’t let your kids swim unsuper-vised, even in guarded areas.

– Don’t swim alone. Use the buddysystem so that someone always knows where you are so they canget help if needed.

– Don’t overestimate your swim-ming ability. Stay in chest deep or less water to insure you don’t

get stuck in water over your head.

– Don’t rely on flotation devices. – Swim parallel to shore if you

want to swim long distances.– Don’t swim against the current.

Swim across the current to escape the pull.

– Always swim sober.– Don’t dive into unknown water

or shallow breaking waves. Always go feet first. This will helpyou avoid spinal injuries.

PUBLIC BEACH ACCESS:All of the beach is public, fromthe ocean to the high watermark. Access to the beach, how-ever, is often private. The Town ofHilton Head Island provides ninebeach accesses: Alder LaneBeach Access, off South ForestBeach Drive; Coligny BeachPark, off Coligny Circle;Driessen Beach Park, at theend of Bradley Beach Road;Chaplin Community Park, offWm. Hilton Pkwy.; Fish HaulPark & Mitchelville BeachPark, at the end of Beach CityRoad; Burkes Beach Access, atthe end of Burkes Beach Road;Folly Field Beach Park andIslanders Beach Park, both offFolly Field Road.

PARKING & FACILITIES:There are 23 metered spacesat Alder Lane; 54 meteredspaces at Folly Field and 13metered spaces at BurkesBeach Road. The parking fee isa Q UARTER for each 15minutes.

Additionally, there are 207spaces at Driessen Beach Parkfor long-term parking. The feeis a Q UARTER for each 30minutes during the week.

Parking spaces at IslandersBeach Park are ALWAY Sreserved for annual beachpasses. Parking at DriessenBeach Park for annual beachpasses is reserved from 8 a.m.to 3 p.m. Parking is FREE atFish Haul Park, MitchelvilleBeach Park and Coligny BeachPark. Handicap parking isavailable at no fee at all beachparks.

Restrooms, changing areas,sand showers and vendingmachines are available at thebeach parks.

DESIGNATED SWIMMING AREAS:Official swimming areas havebeen designated for the AlderLane, Coligny, Driessen, FollyField and Islanders Beach

Parks. The boundaries will beclearly marked on the beachand in the water.

During the beach season,lifeguards are stationed ineach of the designatedswimming areas for assistanceand beach information. Pleaseask a lifeguard before enteringthe water if the yellow cautionflag is flying.

BEACH MARKER SIGNS:Hilton Head’s beaches aremarked with signs to letemergency responders knowwhere anyone who needs helpis on the beach. They are alsouseful to help you find yourplace if you are lost on thebeach. It is helpful foreveryone in your group toknow the marker where youare staying, so that you canreturn on your own or tellbeach patrol personnel, sothey can get you back to theright place. The markers sitnear the dune line.

ANIMALS are NOT permitted between 10 a.m. and 5 p.m. from the Friday before Memorial Day throughLabor Day. Animals MUST be on a leash between 10 a.m. and 5 p.m., April 1 through the Thursday beforeMemorial Day and the Tuesday after Labor Day through September 30. Animals must be on leash or underpositive voice control at all other times. Persons in control of animals on the beach are required to remove andproperly dispose of the animal’s excrement. Ordinance signs are posted at most beach access points.

– Apply plenty of sunscreen and reapply it throughout the day. Remember trouble spots, such asthe ears, feet, and nose. Even cloudy days allow the sun’s harmful rays to cause sunburn.

– Wear sunglasses. The sun’s rays can cause serious eye damage.

– Drink plenty of water. The hot summer days can dehydrate you very quickly.

– Be aware of the rules and regulations of the beach. Signs are posted near most beach accesses.

– Don’t leave your kids unsuper-vised, even in guarded areas. They may wander and become lost.

– Find the nearest lifeguard if you or someone in your group becomes lost.

– Report any hazardous beach conditions to the nearest lifeguard.

– Know the name of the beach or hotel/condo and the beach marker number where you are staying, so the lifeguard can better assist if you are lost.

– There are often jellyfish and stingrays, as well as other sea life in the water, which may sting or cut a person. Other problemsmay occur on the beach or in the water which may require first aid. In any situation where first aid is needed, find a lifeguard or seek further medicalattention.

– Report any hazardous water conditions to the nearest lifeguard.

– Call or wave for help if you are in trouble.

May is definitely one of the most antici-pated months of the year for local anglers.

The “first Saturday in May” is exciting for loversof thoroughbred racehorses as they run for theroses, and the advent of the cobia run getslocal anglers into a similar state of nervousexcitement. Aside from tarpon, this big brownbattler is the ultimate inshore gamefish that smallboat fisherman can tackle in local waters.

Commonly, boats anchor over hard live bot-tom or near rips and fish with small live baitsuch as menhaden, mullet, greenies or whiting.Cobia are voracious predators and will oftenscoop up dead bait as well. Chumming isproductive.

Less static and more fun, cruising on a calmday and sight casting is exciting. Looking fora small “v” wake or the dark brown silhouetteand presenting a bait can make for a day toremember. Cobia are quite curious and donot spook easily, often coming right up to ananchored boat. Conversely, they can be justas stubborn as they are curious, refusing everyoffering presented.

Wintering in the Gulf of Mexico, cobia makethe journey north up the Atlantic coast as faras Maryland. Research by our local mariculturecenter has found that they are a family fish withspecific homes. Our fish on Hilton Head Islandare a different group than, say, cobia found

near Charleston. DNA testing of fish caughtlocally has shown a large number of our localfish are now descendants of released maricul-ture-raised fish, an alarming statistic.

Averaging 30 pounds, these bruisers oftenreach 70 to 80 pounds. The larger fish areusually females that return to our sounds eachspring to spawn. Current regulations allow onefish per person per trip, which is way too laxaccording to the research. One average-sizedcobia will feed a crowd, and a call has beenissued for anglers to release more fish volun-tarily to protect the local stock, especially thelarge females.

This excellent game fish deserves a chance todelight future generations, as anyone who hascaught one will attest. If you have never caughta cobia, call me and we’ll try to change that.However, I promise you now, I will encouragethe release of this superb, tackle-busting gamefish so we can all catch plenty more in the future.

Hummingbirds are truly majes-tic creatures, captivating us withtheir grace and beauty. Thesefast, agile creatures may be easyto spot, but they can be gone inan instant. Spring and summerare great times to see these mag-nificent birds humming aroundgardens and woodland edges.

The ruby-throated hummingbird,Archilochus colubris, is the onlybreeding hummingbird in theUnited States and can be foundfrom Central America to Canadaand all across the Eastern UnitedStates. They tend to spend theirsummers breeding in the U.S. andthen head to Central America toenjoy a tropical winter. South Carolinais lucky to be one of their breedingstates, with hummingbirds arrivingin late March and staying throughthe summer. They can be found inopen woodlands, forest edges,meadows, grasslands and gardensas flashes of green and red.

Hummingbirds are very small birdsthat can grow to be about threeinches long with a three-inch wing-span. They are easy to spot becauseof their beautiful emerald or goldengreen iridescent coloring. Theirbellies are light white to gray, withmales sporting a brilliant red throat.Hummingbirds have short legs whichstop them from walking or hoppingabout. They are mostly observedflying or perched, but they can flystraight and fast, changing direc-tion in a millisecond. Their wingscan beat up to 53 times per

second, creating a signature humming sound. They have aslightly down curved bill, which has evolved to offer betteraccess to their favorite food, nectar.

Hummingbirds definitely have a sweet tooth. They are mostattracted to red and orange tubular flowers. The color pref-erence is due to their ability to see the ultraviolet spectrum.In South Carolina, some of their favorite flowers are honey-suckles, trumpet vine, cross vine and red buckeye. Althoughnectar is their favorite food, ruby-throated hummingbirds areomnivores.

They can catch insects in midair, and are also known to pluckinsects out of spider webs. They eat small insects includingmosquitoes, gnats and fruit flies. Hummingbirds also enjoyfeeders of sugar water as well. Feeders can be placed any-where in the garden (hopefully out of the reach of a cat orother predators) and filled with a quarter cup sugar per cupof water to attract hummingbirds.

Male ruby-throated hummingbirds court their females withdramatic flying displays. Like other birds, color plays a keyrole for the hummingbirds. The male will fluff out his beautifulred throat in order to attract a female.

The female hummingbird will make the nest, which is not muchbigger than a thimble, measuring about two inches acrossand an inch deep. Lichen and moss are typically used on theoutside of the nest for camouflage, while spider silk and pineresin make up the nest base. The female will then line thenest with thistle, dandelion or cattail fluff. She will place thenest up to 40 feet off the ground at the end of a deciduoustree branch. She will lay up to three eggs, which will incubateup to 14 days. The babies will fledge after 22 days. Thefemale may have another brood before the summer is over.

Hilton Head Island residents and visitors enjoythe beach. However, the sand, surf and sunthat people love make for a harsh living envi-ronment for the shrimp, clams, crabs and seaoats that inhabit the beach. So, most plantsand animals living in our area prefer to growunder the protection of Spartina grass, in thesprawling creeks and inlets of the saltmarsh.

Spartina grass, or smooth cordgrass, is anative species of the South Carolina Lowcountry.It grows in the inter-tidal zone of the marsh,so it’s mostly covered in water at high tide, andmostly exposed to air at low tide. It has adaptedto grow in a variety of conditions; here onHilton Head it dominates the saltwater creeks,where few other plants can grow. The grasscan thrive in saltwater because of its uniquevascular system. The cells of the plants filterthe water, taking in only fresh water, allowingsalt to accumulate on its stalks and leaves.

Spartina grass grows in the protected inletson the backside of islands and has theunique quality of helping to create land. Oneof the best places to see the plant is on theprotected banks of the Pinckney IslandNational Wildlife Refuge. The extensive rootsystem of Spartina is like a crochet blanket ofnooks and crannies that trap sediment.Eventually, this sediment creates new land, onwhich oysters and other mollusks grow. Theplant grows to different heights, dependingon its location, with those stalks closest to thefrontier of open water reaching heights up tofive feet. Behind these grasses, on moremature land, the grass grows shorter.

The extensive root system that creates new landis also fundamental to its reproduction. Althoughthe grass flowers and seeds fall, very few ofthe wind-dispersed seeds reach germination.Rather, the thick root system extends its twistingarms farther and, when appropriate, pushesup a new grass shoot. Spartina is a perennial

plant. In winter it appears to die, with milesof marsh turning brown and gold. Secretly,it’s alive and spreading its domain beneaththe surface of mud.

Spartina grass serves an important role in ourecosystem as a protector. The stalks of densegrassy plains create many hiding spots foraquatic species at high tide. As much as 90percent of fish and shellfish that are commer-cially caught, sold and eaten in South Carolinabegin their lives hiding in the grass. Manyspecies lay their eggs under the protection ofthe Spartina, hidden from predators, wheretheir young can grow to a suitable size beforeswimming out to the open ocean. As the tiderecedes from an area of marsh grass, theselittle animals get flushed out of their hidingspaces and must struggle not to get eatenbefore the next high tide.

Few animals make their homes in the grass, butmany use it to create nests on nearby shoresand trees. The Carolina Wren manages to makeits home in the grass by creating nests thatfloat up and down with rising and falling tidalwaters. While green and alive, few animals eatthe grass. However, once the grass dies anddecomposes, it forms the foundation of theaquatic food chain in our area. Little bits ofgrass are eaten by oysters, crabs and plankton,many of whom are eaten by larger predators.

Ironically, one of the best ways to improveyour putt is to close your eyes.

Putting with your eyes wide shut might sound crazy,but this is a savvy trick many professional golfersuse to get in tune with their stroke on the green.

Australian golfer Peter O’Malley has said, “I’mputting with my eyes closed. Everyone laughswhen I say it, but it' s true. It takes away the visualanxiety. When you get over those short putts andyou can' t see what the putt' s doing, it takes awaythe anxiety. With the eyes shut, I hit it more firmlythan I probably would with my eyes open.”

PGA Tour golfers Colin Montgomerie and JohnnyMiller have each drawn attention from the mediaand from spectators alike for putting with theireyes closed in major tournaments. However, thistechnique can work wonders for recreationalgolfers as well.

The eyes-closed strategy teaches you to feel thestroke and trust the mechanics of the putt. Onceyou develop the proper putting mechanics, youcan get the ball in position, stand up tall andpractice putting with your eyes closed at variousdistances from the hole.

Remember, one of the biggest obstacles to put-ting is the human mind. If you overthink the putt,you’ll over involve your body. The putter should

serve as a pendulum, swinging back andforth and delivering the ball to the cup,plain and simple.

By closing your eyes, you’ll feel the strokewith your body and take your mind out ofthe equation. Y ou’ll also relax and focusmore fully on the task at hand. And, asPeter O’Malley said, you’ll reduce the anxietyassociated with trying to make the perfect putt.

Y ou can try this drill over and over on thegolf course, moving the ball back a bit fur-ther each time. Remember that the putterknows what to do. Y ou just need to encour-age it to do it.

Another great putting drill involves keeping youreye on the back of the cup, rather than on theball itself, during a short putt. Gently putt theball into the hole while keeping your eyes gluedon the back of the cup. Like putting with youreyes closed, this exercise also encourages youto relax, think less and have faith in the simplephysics of the putt.

If you incorporate this putting drill into your prac-tice routine, you should begin to develop a betterfeel on the green. By eliminating visual distraction,you can focus on the feel of the putt, which is whatreally matters.

Above all, don’t let your mind hold you back onthe golf course. Use these two simple drills toincrease your accuracy and refine your putt. Y oujust may see a major improvement in your per-formance on the green.

RULES FOR THE ROAD

Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws.

Travel the pathways at speeds that allow for the safety of pedestrians and other users.

Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles.

Please do not ride on roads where a pathway is available.

Please ride single file and keep a safe distance from other bicyclists.

WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you.

Please yield to pedestrians. When resting or stopped, please move off the pathway.

Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flashlight. Bicycles must have a

red rear reflector and a headlight when biking at night.

When approaching slower pathway users from behind, please sound yourwarning device, or call out, “Passing on your left.” Always pass on the left.

Bicyclists should always wear a helmet, especially children 12 and under.

Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend

to do and will ensure everyone’s safe enjoyment of the pathways.

Be courteous, alert and predictable.

The Town of Hilton Head Island provides over 50 milesof public pathways and nature trails for the enj oyment ofpedestrians and cyclists.

At low tide, the Island’ s 12 miles of beaches are idealfor biking. Public beaches are indicated on the IslandEvents’ Island Map.

Our map also shows the existing public pathways.Many kiosks are located along the pathways with anIsland-wide map on one side, and a localized map of thearea on the other.
