A local survey in Hong Kong showed that 9 out of 100 elderly people over 70 years old suffer from Mild Cognitive Impairment (MCI). The rate of turning from MCI to dementia is 10-15%. Early interventions with suitable treatments and assistance are necessary. The Hong Kong Sheng Kung Hui Welfare Council (Welfare Council) and The Hong Kong and China Gas Company Limited (Towngas) launched a collaborative cooking programme, “Chef Anchor,” designed by occupational therapists to use task-analysed recipe in functional training for persons with mild cognitive impairment. All Chinese are born gourmets. Eating is their favourite pastime. Chinese regard “eating is heaven.”, Thus cooking well is important among Chinese culture, particularly among older adults. Flame cooking is regarded as an important part of daily cooking. However, for those older adults with MCI, their family members worry about the dangers of not switching off the gas cooker. Older adults may be prohibited from cooking, or alternatively cooking is replaced with induction devices. The former action creates a strong sense of impotent, whereas the later requires an immense change in cooking habit. “Chef Anchor” is a multidisciplinary programme launched through collaboration of social welfare and business sector. The objective of this programme is to improve the self-confidence and cognitive ability of MCI persons through regular practice of their daily habits such as cooking. “Chef Anchor” is a systematic programme with 4 steps to alleviate the impact of MCI, including: 1. Occupational therapist and social worker designed the programme and conducted

assessments of potential participants. Cognitive screening test for 350 older adults were conducted. 20 participants who showed the tendency of MCI and difficulties in daily cooking were recruited.

2. Occupational therapist, social workers, and Towngas cooking instructors worked together to tailor-make the task-analyzed recipe. This recipe featured all necessary ingredients for the dish with cooking procedures written in simple, concise, and clear wordings. Safety instruction, colours, and word and image explanations were also used for easy understanding.

3. Corporate volunteers from Towngas were recruited to provide one-on-one assistance to participants during training sessions.

4. A “safety in cooking” song was composed, using the melody of Towngas commercial

theme song with new lyrics. Participants were then required to sing the song in every session. The objective of this practice was to provide cognitive training and rebuild participants’ self-confidence.

Upon completion of the five sessions of “Chef Anchor” programme, 19 elderly with MCI were surveyed. Survey revealed that 90% of MCI participants showed improvements on self-confidence, cooking skills and cognitive ability. 1. Participants’ ability to follow cooking procedures

improved.

2. 90% of participants had higher scores in cognitive assessment.

3. Participants shared that the programme developed their self-confidence. Errors such as

messing up cooking procedures were reduced.
