Salt VillageThe village of Salt stands on the south bank of the river Trent, between Sandon and Weston. It was listed in the Doomsday book (1086) as “Selte” and recorded as having “land for four ploughs,...a mill, twelve acres of meadow and four of wood”, Selte in Old English means “a salt pit or salt works”. It probably originates from the Saxon period, owing its existence to a sheltered position and proximity to water, Trent meaning “the flooding river” from the Celtic name “the trespasser”.

The Holly BushThe historic Holly Bush Inn is generally recognised as being the second licensed pub in the country. Licensing of public houses began in the reign of Charles II (1660 - 1685) so the Holly Bush must have been well established at that time but the origins are claimed to reach as far back as 1190. To the North of village the road that is now the A51 was the main 18th Century stage coaching route from London to Liverpool. The nearby Trent and Mersey canal was constructed in the 1770s.

It is fascinating to think of all the people that have partaken some refreshment within the Holly Bush walls over the years!

Hopton HeathNot far from the village of Salt on land known as Hopton Heath one of the battles

of the English civil war was fought in March 1643. A Parliamentarian force commanded by Sir William Brereton and joined by forces under the command of Sir John Gell advanced on Stafford. They were met at Hopton Heath by Royalist forces under the command of Spencer Compton, the Second Earl of Northampton and General Henry Hastings. A battle ensued and Brereton’s men were defeated but Northampton was killed at the moment of victory.

Prince Rupert then took command of Royalist forces in the midlands. Cromer Hill “Cromwell Hill” in neighbouring Milwich is so named after Cromwell’s men

encamped there prior to battle.

Lymestone Brewery (Stone, Staffordshire)

Lymestone is a small independent or “Micro brewery”. They are situated a small distance from Stone town centre in what was described to us as “a brick built industrial unit”. Some of their fantastic brews such as ‘Stone Cutter’ & ‘Stone Faced’ often frequent The Holly Bush Inn’s bar.

Birmingham Wholesale Market (Pershore Street, Birmingham, West Midlands)We cut out the middle man by buying all our fruit and vegetables direct from Birmingham market, passing the savings we make on to you. We make very early morning trips to ensure we get first pick of the best produce and return it to our kitchen in its freshest state.

Adlington (Balsall Common, Coventry, West Midlands)

Established in 1956, the company is now run by Rod Adlington, whose grandparents originally started farming turkeys for Christmas. Over the years, the family has developed a year-round trade for their products through their dedication to quality and Rod’s commitment to supplying only the very best products to the very best outlets. Adlington supplies all The Holly Bush Inn’s poultry and has done for quite some time.

Cannock Chase (Cannock, Staffordshire)

Whenever possible we source our venison from Cannock Chase. Due to the completely ‘free range’ and natural environment in which the Deer live the venison from Cannock Chase is second to none.

Slaters Brewery (Common Road, Stafford, Staffordshire)This award winning midland based micro brewery is the producer of the infamous ‘Top Totty’ beer which was banned from the house of commons. Not to worry though, it still gets a turn on our guest ale pump.

Staffordshire Cheese Company (Cheddleton, Leek, Staffordshire)

Their selection of handmade cheeses are created in the heart of Staffordshire Moorlands countryside using local cow’s milk. Traditionally made to an original Staffordshire recipe. The company’s Dovedale blue, Cheddleton, Staffordshire cheese and Cheddleton with beer & garlic make up our cheeseboards.

Titanic Brewery (Burslem, Stoke-on-Trent, Staffordshire)

From humble beginnings Titanic Brewery has grown beyond all expectations to produce in excess of 2.3 million pints of fine ale every year. This local brewery’s beers often occupies the guest all pump on our bar.

Red Lion Farm Ice Cream (Haughton, Stafford, Staffordshire)Having been making ice cream on the farm since the late 80’s for the customers of their farm shop, the same delicious recipe has not changed and is continued to be made in the same way today. Using the milk from their own herd of Jersey cows the rich fresh creamy flavour of the milk comes through into the ice cream. Try a Holly Bush Sundae to see for yourself.

Needwood Farm Eggs (Newborough, Burton-upon-Trent, Staffordshire)All our eggs come from free range chickens like ‘Mabel’ (the happy little soul to the left or one of her sisters)

The Responsible Fishing SchemeThe Responsible Fishing Scheme has been developed to raise standards in the catching sector, enabling those within the seafood supply chain to

demonstrate their commitment to the responsible sourcing of seafood. The Holly Bush Inn sources all it’s fish responsibly, whenever possible and is proud to do so.

The Holly Bush Inn (Salt, Stafford, Staffordshire)

Value for money is one of our core values. We make several trips a week in the dark hours of the morning to wholesale markets and buy our produce direct, passing the savings on to our customers. We buy all raw and un-prepped vegetables, whole fresh fish & fresh whole cuts of meat. By cutting out the middle man we can provide high quality British beef, free range chicken and pork at honest prices. We even get our venison wild from “Cannock Chase”.

We don’t like to take ourselves too seriously but we take our work very much so. We insist on keeping as many traditional skills within our kitchen as we can; butchery, fish mongery, dry aging meats, even making all our own sausages!
