Spanish paella is one of the most typical
dishes of Valencia and Spain. It consists of rice with chicken meat, rabbit, different fresh vegetables . Some ingredients like chicken meat are optional considering that noteverybody likes them. Valencia paella doesn’t contain shellfish.
We recommend you to buy fresh meat in a butcher’s.
600 grams of rice
300 grams of chicken meat
200 grams of rabbit meat
250 grams of beans
A can of crushed tomatoes
A spoon of sweet paprika
A spoonful of food coloring
A garlic clove and 1-2 litres of broth
Salt
Virgin olive oil
Water
First, we clean the vegetables, chicken meat and rabbit. We cut the meat in uniform pieces, thenthe garlic is cut into slices, the onions are cut into cubs. Later we heat the oil, when it is hot, we start to fry the meat. After the meat is done weadd the vegetables and the garlic. After frying all of the ingredients we add a little of paprika. The rice must be cooked in water or if you want tocook it in broth you will need two litres. Once the water or broth is boiled, we can add the rice. To take its peculiar colour, we spill food coloring . The last thing that we must do is let it settled for several minutes, and after all these steps it is ready to eat.
