Toward the middle of the last century, luxurious Chinese restaurants opened on and around Capón Street, as well

as in other Lima districts. These establishments, the majority of which were run by refined Chinese ladies, had

ponds with colorful fish for decoration and a number of small dining rooms with curtains for privacy. Little by

little, they gained popularity, as their Chinese cuisine was gradually adapted to Peruvian tastes. In a short number

of years, hundreds of smaller Chinese restaurants opened all over the country, each with a proper name on the

door. As the product of a romance between two ancient cultures, which gave life to a new world of flavors, the

cuisine of Peruvian chifas —as these restaurants are called— was born. Madam Tusan is that: a chifa that passes

on the message of its founders. It pays tribute to them, continuing on the path they laid and embracing the ingre-

dients and flavors of both continents, in order to continue bringing good times and tasty food to Peruvian families

and the world. Enjoy your meal!
