September is a great transition month! The first time I climbed Half Dome was the fall solstice September 21, 2006. It was a glorious sunny fall day, and there I was hiking half

dome with the prestigious author of the book “Half Dome One Best Hike” Mr. Half Dome himself, Rick Deutsch.

Seven years have gone by and I have had the pleasure to hike half dome one more time since the fall of 2006. I believe Rick is up to a total of 64 trips up and back the majestic Half Dome rock mountain in Yosemite National Park, California.

I love the fall time, being out in nature is especially grand as the mornings and evenings are crisp and the daytime is usually warm and sunny. Leaves are changing colors and humans and animals alike are preparing for winter and the eventual shorter days and longer nights. Even though the weather is changing for many of us, this is the time to get into high gear. School is full swing, everyone is back from their vacations, and now it is down to business.

This September, Healthy Beginnings is focusing on energy. Dr. Tony Jensen writes about trapped emotions and the damage they cause us on a cellular level, affecting our biomagnetic field. June Milligan writes about negative thoughts and how they lower our vibration levels. The higher our vibration level the more in-tune we are to our source energy. Dr. Gerber reminds women they need to take care of their adrenal gland, which is the gland that handles stress. It takes energy, endurance and accountability to make sure we receive proper medical treatments, as we learn from Dr. Eslinger; the government/insurance companies are far more interested in serving lobbyist’s needs, rather than focusing on what the individual needs. These are just a few of the articles you will find this month. We hope you enjoy Healthy Beginnings Magazine and find it a great tool in customizing your physical and emotional health care needs. Life is a journey. Make it a healthy one.™

PUBLISHER’SLETTER

Sit down, grab a cup of Joe, and enjoy this month’s

edition of Healthy Beginnings Magazine. On the cover

this month: Coffee. It’s that loveable liquid that many

adults (and teens) reach for each morning. It’s an early

a.m. recharge, or mid-morning energy surge. It’s definitely

viewed as a “get-you-going” kind of brew. For some of us,

it signals our morning routine: get up, get the coffee going

and start getting ready for the day.

The caffeine, of course, is what we actually become

addicted to. Research goes back and forth, and “they”

say it can be helpful, or benign, or harmful, depending

on how much you consume each day. No matter which

category you may (or may not) fall into, it’s one of those

habits shared by many. In fact, green coffee beans are one

of the most traded commodities in the world.

For more info on coffee, check out this month’s Ingredient

Watch on Coffee, and our Herbs and Spices article on

COVERSTORYWritten By Ffjorren Zolfaghar

The important myths of different cultures have a timeless quality to them. In some cases, they have been passed on from one generation to the next for three thousand years or more. Have you ever wondered why these myths have endured for as long as they have? It is because they speak to the mysteries of our soul. Myths help us understand what it means to be human. Like Zeus of Greek mythology, you have probably hurled thunderbolts in moments of great anger. It is likely that you have also played the trickster portrayed by the wily coyote of Native American mythology. And who has not succumbed to the powerful waves of love delivered though cupid’s arrows?

When I was eight years old, I had a fascination with flashlights. I would spend much time in my father’s basement workshop fashioning simple flashlights out of scraps of wood, tin cans, film canisters, or whatever else I could find that would accommodate a battery and small light bulb. I would excitedly take my rudimentary creation to school for show-and-tell where, oddly enough, my classmates would express the same fascination as me.

Why were the flashlights so fascinating to us? I believe they may have symbolized that tender spark of conscious identity that each of us was trying to nourish. We were like the early cavemen discovering how to create fire for the first time. It was a momentous event. Young children need to know that they can penetrate the darkness and not be overwhelmed by it. The light of consciousness helps us do this.

It is interesting how our lives give expression to the themes of the ancient myths. For example, one Greek myth tells the story of Prometheus. Prometheus was a titan who stole fire from the god Zeus and gave it to mankind. For this arrogant and disobedient act he was given a severe punishment. For eternity he was to be chained to the side of a mountain where each day eagles would feast on the flesh of his liver, and each night his liver would grow back. Symbolically, this myth is saying that we must sometimes break the rules (and suffer pain) in order to grow in consciousness.

When I was in fifth grade this story was re-enacted in my own life, though in a modern and less grand scale. Without my father’s permission I removed his flashlight from the entryway closet of

Written By Andy Drymalski, EdD

our home and took it to school one day. What it was I hoped to shed light on there, I no longer remember. In any event, and to my horror, someone stole the flashlight from my locker. How was I going to explain this to my dad?! So much for discretely placing it back in the closet before he discovered it was gone, which he did a few days later. Fortunately for me, the ending of my saga played out better than it did for Prometheus. My dad never chained me to a mountain and, in fact, I don’t remember getting punished at all. Perhaps he had a Promethean attitude himself when he was young.

I suspect that you have also had some intriguing experiences or dreams related to the theme of light. Take some time to reflect on these and what was going on in your life at the time. Consider sharing your memories and reflections with someone else. You will bring more light to the world, and that would make Prometheus smile.

There’s almost nothing worse than experiencing ear pain, itching, loss of hearing, or a

sinus headache.

Ear Candling is an ancient practice, dating back to biblical times in Egypt, the Orient, as well as European cultures. This simple, gentle treatment removes wax from the ear, improving your sense of well-being, physical, mental and even spiritual. The candle is a long hollow tube made from unbleached muslin immersed in an aromatic herbal solution. After it dries, the cone is then dipped into beeswax. The cone or candle is then placed into the ear opening and the top of the cone is lit; soft warm white smoke billows down the tube into the ear and softens the wax. The flame on top of the cone creates a vacuum that pulls out built up wax, toxins, bacteria, dirt and residue from past medications. Ear Candling may also help with a dry hacking cough (a result of a sinus infection), sinus headache, tinnitus, and itchy ear. Today more people are seeking alternatives to digging in the ear with Q-tips or using a hydrogen peroxide flush to clean a blocked ear canal. Ear Candling is a relaxing, natural, non-intrusive treatment.

A common misconception about testosterone is that it is only a guy thing. Nothing could be farther from the truth. Women also make testosterone, much less than men of course, and it is very important for their health. Testosterone (T) does many things for us. It gives muscle tone, promotes bone integrity, artery health, good mood, libido (sex drive), joint health and is great for heart strength.

The Adrenal Connection

The adrenal glands, the pyramidal-shaped structures that sit atop the kidneys, are important for our overall health in many ways. They give us our energy, control our mineral levels, are anti-inflammatory and modulate our response to stress. In women, half of their T is made in the adrenal cortex (outside portion of the adrenal gland), and when they are under stress the T can be converted to cortisol (cortisone), which allows them to have enough energy to get through the day but can also rob them of their libido. It is lack of libido that is the most frequent complaint of women with low T. Osteoporosis, thinning of the bones, shows up on bone scans and lab tests but is generally more of an issue for the elderly, and fracture prevention and can be

improved with supplementing T. Women who are under stress, sleep-deprived, working in a stressful job, taking care of children and family, worrying about finances, not getting vacations frequently describe their sex drive as blah at best, or zero. Some women have never had a libido and engage in intimacy just to accommodate their partners. It is easy to advise patients to simply reduce their stress and take a vacation, everyone is generally friendlier on vacation when the stress is down, but life makes this impossible for many of us.

T Cream to the Rescue

All of the bio-identical hormones are important to replace for energy and libido. Thyroid is important and adrenal hormone support such as DHEA (dehydroepiandrosterone) is also important, which the body converts into T. Progesterone also has a fairly direct pathway to manufacture T. The bio-identical T in the women’s size dose, about 1/10th the male dose, is very effective to restore libido and good mood. Men can use from 5 percent to 10 percent T cream and women can use .5 percent to 3 percent cream. The cream can be applied vaginally several times per week, and to the pelvic floor to improve incontinence

and prolapse of the bladder and uterus. As in all hormone replacement therapy, the dosage is empirical; see what dosage relieves symptoms without side effects. Side effects include acne, facial hair or breast hair, and in extreme cases it can cause hoarseness. Thankfully, jaw line acne is usually the first sign of taking too much T and it resolves with reduction of the dose. Blood tests and 24-hour urine collections for all the hormones--specifically T and DHEA--can be a good starting point, but don’t really reflect the dosage level ultimately needed by the patient.

We have many happy patients and partners when the libido, mood and energy are restored with the proper bio-identical hormone balance, including testosterone when needed.

BOOKREVIEW

This practical easy-to-understand book explains just exactly how to do EFT (Emotional Freedom Technique), the acupressure protocol that is sweeping the country. From New York City to Los Angeles, people are tapping away their stress and anxiety using a process which is a combination of 5000 year old Chinese medicine and modern psychology.

This is a powerful tool for improving your life on multiple levels: mental, emotional and physical. This proven acupressure system address anxiety, chronic pain, addiction, fear, weight control, financial abundance, stress relief and so much more. You can learn it in minutes, do it anywhere and often experience immediate results. Tapping on the end points of the body’s major meridians while saying certain words resets the nervous system, restores the balance of energy in the body and rewires the brain to respond in healthy ways.

This book features step-by-step instructions, exercises and diagrams and also shows you how to tap on a variety of different issues and identify practical applications. Plus, throughout the book, you’ll find real-life stories of healing, ranging from easing chronic pain to overcoming fears and phobias. You can learn even more at thetappingsolution.com.

Dr. Mercola, founder of Mercola.com, the most visited natural-health website in the world says, “This message needs to get out to the world so that we can be empowered to initiate our own healing process. I love the scripts in this book; they break down tapping into an easy-to-do practical process. Simply following the scripts will enable you to let go of major issues immediately.”

Chapters include Overcoming Your Resistance to Change, Tapping Through Your Past, Healing the Body, Releasing Physical Pain, Letting Go of Fear, Guilt and Shame Around Food, Creating Healthy Relationships, Achieving Your Dreams, and Eliminating Phobias. Each chapter has specific examples

of how physical and emotional healing took place quickly, even though people trying it for the first time didn’t even believe this simple tapping system would work.

Harvard Medical School has recently shown that stimulation of selected meridian acupoints decreases activity in the part of the brain associated with fear. In fMRI and PET brain scans, one can clearly see the brain’s “red alert” being called off when acupoints are stimulated. Although acupuncture and acupressure have been used in Asia for thousands of years, until recently we didn’t have any “Western proof” of how it works. But in recent years, researchers have discovered tiny threadlike microscopic channels, which correspond with the traditional acupuncture meridians. Electron microscope images show these tubular structures clearly. Think of them as a fiber-optic network in the body, rapidly carrying a large amount of information, far beyond the speed of the nervous system or chemical systems of the body. So tapping may lie at the intersection of the Eastern practice of acupressure/acupuncture and the Western practices of psychology and other mind-body processes. That intersection may be where true magic is able to happen.

Many of us were taught to think that it takes a certain amount of time to “fix” or change a problem--if we believe it can be fixed at all. But some of us with extensive acupressure experience know how effective this mind-body system is. By tapping on or massaging these acupoints, we’ve seen people learn how to relieve trauma, pain, stress and anxiety, and thereby live a productive, healthier, happier, more content life. Some feel that EFT is one of the biggest breakthroughs in psychology and medicine in a century. So, if you’re looking for a life change and you’re not afraid to try something different that you can do yourself, tapping is for you. After all, your body is already hard-wired for this amazing healing and soothing system. It may be time you put it to use.

DENTALHEALTH

Written By Georgene Chase, DDS

ThIt always makes me laugh when people say, “No offense, but I hate the dentist!” I will invariably say I don’t blame them. Dentists are not fun people to hang out with on a professional basis, especially if it has been a long time since your last check up. Many people had a bad experience at the dentist at some point in their life. My own mother tells me horror stories about when she was a kid (she doesn’t like going to the dentist either). I hear stories all the time about dentists not waiting for their patients to be numb before performing root canals or extractions. The natural reaction to these types of situations is to refrain from going to the dentist altogether. But this is a mistake! While there are many reasons to go to the dentist, I wish to discuss only a few of them.

As with your general health, in dentistry an ounce of prevention is better than a pound of cure. Believe it or not, making sure that your teeth and gums are in good shape is a very important step in total wellness. Gum disease (periodontitis) has been linked to many other maladies, including diabetes and heart disease. While gum disease cannot actually cause these problems, it does make them worse--especially diabetes, where the two diseases feed off of each other. The problem with periodontal

disease is that someone can have it for YEARS and not know it. If the disease process goes unchecked for too long, the bone around the teeth dissolves completely and teeth start to fall out. Periodontal disease is the leading cause of tooth loss in adults. If you are going to your regular checkups, you are likely not in this category. If not, get in to see your dentist soon.

I have people come in to me all the time wanting a second opinion on something another dentist has diagnosed. I will admit there have been times where I have been frustrated with my colleagues and their over-diagnosis of cavities (caries). However, I believe that the vast majority of dentists do their best to take care of their patients to the best of their abilities. If you have gone your whole life without a cavity and your dentist tells you that you have 10 or 12 cavities, go in for a second opinion. It is possible that you do have that many, but barring a crazy change in lifestyle, it is not likely. It is important that you do get looked at, though, because if a small cavity goes untreated for very long, it will become a big cavity, and the larger the cavity the more expensive it becomes. Just because your teeth don’t hurt does not mean that you don’t have cavities. If your tooth has decayed to the point that it hurts, it will likely need more than just a filling.

Dental Prevention is Key

If it has been a while since your last dental checkup, I hope this information will give you renewed motivation to see your dentist soon. It really is in your own best interest. If you are embarrassed, don’t be. I assure you that your dentist has seen worse. One of my favorite things is to help people who have been hiding their teeth for years to smile again. Hope to see you soon!

Another good reason to go into the dentist is for cancer screening. This is especially true if you are a tobacco user. Working in people’s mouths all day, every day, gives dentists a unique ability to spot lesions that are out of the ordinary, lesions that your doctor might miss. A small white patch that doesn’t seem to be bothersome may actually be squamous cell carcinoma. Although they are not common, I have diagnosed a few of these. Time is critical with oral cancer. If they are caught early, survival rates are very high. If they are found later, the prognosis drops drastically. Late stage oral cancer kills over 90 percent of patients within five years. Just because you don’t smoke does not mean that you will not get oral cancer. You should still get checked at least once a year.

NURTURE

In many cultures throughout the world, babies and small children share a bed with their parents. While modern western cultures have tended towards separate beds and bedrooms for babies, many parents are choosing co-sIeeping instead. Personally, we all love our family bed. So far, it has been a great choice for our family.

Before our son Eligh was born, we knew we wanted to have him in our room with us. Thinking there would not be enough room in our queen size bed, we got a co-sleeper, so he would have his own bed that was attached to ours. Well, that co-sleeper has been used for many purposes, but my son has never slept

in it. It was very handy as a bedside changing station though.

In the beginning Eligh pretty much wanted to sleep on me or my husband. Even now, sometimes when he’s lying down by himself, he will stretch his feet out to see if he can feel us. If he can, he’ll usually stay asleep. It has been very sweet for all three of us to cuddle up and sleep, and wonderful to wake up to our smiling baby. From the very beginning, Eligh has pretty much slept through the night. Of course, we’ve all had nights when he didn’t sleep as well because of gas or because we were still learning his cycles. Still, for the most part, our nights are peaceful. My son does sometimes want to nurse a little in

Co-sleeping and the Family Bed

15 August 2013 Life’s a journey. Make it a healthy one.® Visit www.HBmag.com

the early morning hours, but because he is next to me, he can do so, and I can sleep comfortably. He usually has to pee in the early hours of the morning too. He will start to get restless in his sleep, and so I’ll get up with him, take his diaper off, and let him pee in the toilet. Often times, he’s asleep or half asleep for this process. Because he’s close by, I can address his needs quickly, before he is fully awake or crying and upset.

Intuitively, it feels the safest for me to have my son close to me at night. I can hear and feel that he’s breathing, and that he’s neither too hot nor too cold. In fact, many studies have suggested that co-sleeping helps prevent Sudden Infant Death Syndrome (SIDS). The parents’ movements and breathing patterns help prevent the baby from lapsing

into an apneic (non-breathing) sleep pattern, from which, in the case of SIDS, the baby does not recover from. While the suggestion is not conclusive, it definitely is thought provoking. There is no other mammal that builds a separate nest for its young in the forest. Becoming a mother has definitely awakened some very primal, protective instincts in me. If my son were sleeping in a separate room right now I’d be up most of the night, not only because he’d wake up crying more often, but also because I’d be way less relaxed.

There are some that have argued that co-sleeping stunts a child’s independence, but many studies actually show the opposite. By honoring our child’s desire for closeness, we are giving them confidence and trust, which nurtures independence in turn. Already my son is very comfortable playing by himself, interacting with others and exploring his world.

Another concern that is often brought up when it comes to co-sleeping is the parent’s ability to maintain their intimacy. While it does require a bit of creativity and spontaneity, it is possible for parents to create some romantic time for themselves, while staying aware of their sleeping child. A little creativity is also a great prescription for a couple that wants to keep the spark in their relationship post-baby.

Of course, there are some definite safety precautions to keep in mind if you decide to share a bed with your baby. You should never co-sleep on a couch or a waterbed; and

be sure to remove any excess pillows that could fall on baby in the night. It is also important to fold down any blankets on the bed, so that baby’s head and chest are uncovered. On cold nights, you can dress baby in cozy pajamas and use a small receiving blanket to keep him or her warm. Railings and other devices that prevent baby from rolling off the edge of the bed are available, but even so, your baby should never be left on the bed unattended. Finally, be sure to avoid consuming alcohol, medication or any other substance that would interfere with your ability to be aware of your child next to you--and to wake up promptly if needed. While the family bed may not be the best choice for everyone, if you do decide to try it, I hope you find it as peaceful, sweet and happy as we have!

Secret Societies have been present on this planet before the ancient Egyptian Mystery Schools and the Pyramid Texts of Egypt (3,000 BC), with scriptures from a far more ancient period. Over eons of time, mystery schools evolved from the purpose of elevating humanity with knowledge and new concepts into today’s secret societies, which tout the withholding of information to gain wealth and power for only the very elite. There are at least four elements to a secret society, which have transcended time and perpetuated the mystique.

For more than 4,000 years, the Egyptian Mystery Schools have epitomized the ultimate secret wisdom and knowledge. As in ancient times, certain contemporary scholars and researchers insist that the great teachers who presided over the ancient mystery schools must have come from some extraordinary place. It has been theorized they were wise masters who survived the destruction of the lost continent of Atlantis. Some have even suggested that the entity known as Osiris was an extraterrestrial astronaut from the Pleiades, who first visited Egypt in the prehistoric times and, because of the differences in our civilization’s early barbaric tribes and the advanced extraterrestrial culture, he was considered a god and became the founder of the mystery schools.

In the time of the Ramses pharaohs (1,300 BC), Egypt shone as a beacon light of civilization throughout the known world. Apprentices undertook the rigors of disciplined study and training of body, soul and spirit to learn and apply the concepts.

The Greek philosopher, Pythagoras (580 BC–500 BC), spent 22 years in Egyptian schools learning the secrets from the powerful magi--astrology, astronomy, mathematics, geometry, music and arts. Later, the Greco-Roman era (Socrates, Hippocrates, Plato) produced a remarkable number of systemized sciences and theologies for the benefit of mankind.

The Freemasons (early 1700s) claim to trace their origins as descendants of the great Masters from the Classical and Biblical world. Freemasons utilized these secrets to contribute to society, as is evident by its involvement in the Revolutionary War and memorializing the concepts of freedom and liberty into the U.S. Constitution and Bill of Rights. Interestingly, a Freemason with purportedly congruent ideas established the Illuminati in 1776. The symbol of the Illuminati, an unfinished pyramid and an all-seeing eye, ultimately found its way to the Seal of the United States (1782), and was later placed on the dollar bill. Rumors still abound that Novus Ordo Seclorum on the banner of the Seal portends the establishment of a New World Order.

Other modern secret societies include: Skull & Bones (Yale University), Harvard Club, Bilderberg Group, Bohemian Grove and The Brotherhood. The modern definition of a Secret Society is any group that possesses the following:

It has “carefully graded and progressed teachings.” For example, the Freemasons subscribe to a mentor/apprentice teaching process, as members progress through 33 degrees of incremental

teachings to reach “new states of consciousness.”

Teachings are “available only to selected individuals.” The family of current members are given preference, although highly referenced individuals, by invitation only, may join if they pass certain criteria and receive prior approval of members.

Teachings lead to “hidden (and ‘unique’) truths.” Once sworn to secrecy, the wisdom, processes and trained thinking passes from generation to generation through the ages--reading ancient books and writings, understanding and utilizing universal laws, learning formulae for success, wealth, health--concepts so revolutionary they transcend time.

Truths bring “personal benefit beyond the reach and even the understanding of the uninitiated.” Master minds of success known to be members of secret societies were, to name a few: Benjamin Franklin, George Washington and most signors of the U.S. Constitution, Abraham Lincoln, William Howard Taft, Winston Churchill and Thurgood Marshall; and the wealthiest elite in the early 1900s, Nathan Rothschild, Henry Ford, Andrew Carnegie, J.P. Morgan, Marshall Field and John D. Rockefelller.

Pythagoras and the Greek philosophers embraced the secret knowledge, wisdom and techniques passed down from the ancient Egyptian mentors. As the apprentices undertook the rigors of disciplined study and training of body, soul and spirit to learn and apply the concepts, so may we. Becoming a member of a like-minded group for the purpose of reaching “new states of consciousness” will elevate one’s life and ultimately bless the world with new, innovative creations and higher-thinking methodologies. Exclusive clubs exist today to assist those who are looking for ethical financial growth and inspired mental guidance. As the pendulum swings back to a more enlightened time on planet Earth, should we embrace the early Egyptian Mystery Schools’ purpose of utilizing the secret techniques to put forth new concepts in science and the arts for advancing ourselves, which will in turn advance humanity overall.

order to avoid being penalized for not following the rules. But nowhere is there anything that suggests that these agencies have the knowledge or training necessary to make the types of clinical decisions that doctors and hospitals must make every day. There is not a single study to prove that the U.S government does a better job of delivering healthcare than a doctor or hospital does.

In fact, there is plenty of proof to show that federal bureaucrats don’t do a good job of looking after your health. For instance, the FDA, which is (theoretically) responsible for monitoring the use of medications and food to assure the safety of the American public, can’t be bothered to investigate, even when health concerns are brought directly to its attention.

Late last year, the FDA determined that the drug Avastin, which has serious side effects, is not effective for treating breast cancer. Astonishingly, Medicare declared it will still pay for Avastin-at a cost of about $88,000.00 per year for each patient. This is because of the influence of lobbyists for particular financial interests (read drug/insurance companies!), which have very much power over these agencies. It has absolutely nothing to do with ensuring quality medical care.

Unfortunately, it seems that even more of this insanity is coming, not far down the road. That is why I do not take insurance.

The Federal government manipulated itself into a position where it is actually dictating the practice of medicine. It is using its payment system to control the types of medical treatment Americans get, leading to high medical costs and high mortality.

The “codes,” developed by the AMA, are known as the Physicians’ Current Procedural Terminology (CPT) system. The rationale behind using the codes is supposedly to ensure that Medicare (the government) only pays for medically necessary services for disease, disability, infirmity or impairment.

But, saving money doesn’t seem to be the actual reason for the codes. They are currently being used to give the government control over patient treatment protocols.

The CPT codes and International Classification of Disease (ICD) codes, which identify the illness or health problem the person is seeing the doctor for, are promulgated by the federal government and are the code numbers most physicians and hospitals must provide to the government or insurance companies to determine if the physician or hospital will get paid for tests on or treatment of patients. If you don’t follow government guidelines, you don’t get paid.

If the government doesn’t think a test or treatment is “indicated,” the Centers for Medicare and Medicaid (CMS) won’t pay for it, and the doctor and hospital might even be accused of committing a crime (fraud). Even if it saved your life!

Moreover, private insurance companies follow the government’s lead. When doctors or hospitals bill insurance companies, the first question they ask is “Does Medicare/Medicaid approve or pay for this?” If the government doesn’t recognize or pay for prescribed procedures and medicines, then the insurance companies won’t either.

Government agencies spend a lot of time telling doctors and hospitals how to practice medicine, which tests to order, which medications to use, and when patients must be sent home-in

When you’re thinking of an unpleasant relationship, have you ever found yourself thinking, “If she says that, I’ll say this,” or “If he does that, I’ll do this.” We’re planning ahead so that we’ll be “ready” for what they may dish out. But, it never happens exactly that way, does it? In the meantime, we’ve spent our time and energy rehearsing some negative scenario, thereby drawing the essence of negativity to ourselves and lowering our own vibrational frequency.

Worry is negative visualizing--a way of planning ahead for what we don’t want. That little practice session, that script is not powerless. On the contrary, it’s immensely powerful but not in the way we expect. Instead, by drawing to ourselves the essence of what we’re thinking, which is disagreement, conflict, struggle or resistance, we are setting up situations that will mirror those emotions/conditions in some way or another. We are lowering our set-point.

What is a set-point? It’s like a default setting on a computer. It’s the emotional level where we reside on a daily basis. Through observing, remembering, considering and discussing, we’ve practiced thoughts that have actually become beliefs, and they now dominate our point of attraction. Each thought we consider or focus upon causes us to feel an emotional response. So over time, we come to feel certain ways about certain things. That’s our emotional set-point.

Don’t you know people who are always negative, complaining or backbiting? If we respond to them in kind, we’re lowering our vibrational frequency to their level. Over time, our emotional set-point will descend to the same emotional level as theirs. When we get it that our set-point is actually our “attraction point,” then we begin to take control of our life. Also talking about those people, even if we don’t interact with them, will lower our set-point. People with a high emotional set-

point don’t panic when confronted with a challenge. They’ve become observers of human behavior and they take stock of the situation, enjoying the luxury of being able to think and act calmly and deliberately. That’s what we want for ourselves.

There’s another upside to a high emotional set-point: physical health and wellness. Negative thoughts, words and emotions trigger an automatic hormone release in our body. That hormone, cortisol, was designed to help us run from the saber

toothed tiger. But stress is stress, and that part of the brain that causes the release of cortisol/adrenalin doesn’t know the difference between a saber toothed tiger and an argument with a colleague. So it pumps those hormones into your cells, damaging those cells and compromising your immune system. And, unless you’re tapping or using your long leg muscles, the cortisol/adrenalin just sits there. Notice how you shake when you’re upset? That’s the signal to run! But how many of us in today’s world can run up and down the halls at work to release cortisol, or stop the car and run around it for awhile? Not many.

Now, if your set-point is high, you won’t respond with the emotions that cause the flood of cortisol. You’ll be calm, cool and collected. You may remember a time when you would have exploded with anger, but no more.

So how do we raise our set-point?

1) Consciously strive to hold a positive attitude through thinking and talking about what you do want rather than what you don’t. Remember that all positive successful people create something to look forward to.

2) Rehearse positive scenarios. See yourself doing the things that bring you joy. Use your visualization muscles like the professional athletes do. Their contracts require them to spend a certain number of hours every week visualizing their next game. Needless to say they don’t visualize missing the catch and losing the game.

3) Stop gossiping, plotting against others and looking for insults in what other people say to you. Don’t wallow in company politics.

4) Practice acts of kindness--it’s a way to stay in the moment. Give someone else the parking space, give compliments, hold the door for others when they need it, greet people in a friendly way, smile at everyone you meet.

5) Consciously find something to appreciate every day. Gratitude is a powerful force, so look for things to be grateful for, such as your many opportunities, talents and freedoms.

6) Stand up for yourself and make your own choices. Increase your vibrational set-point by standing strong in your power.

By raising your set-point, you’ll not only attract the people, conditions and situations to match, you’ll be happier and healthier than ever. And when challenges come along, you’ll easily be able to handle them in stride. You will have taken your power back.

In the last article, July’s edition, we touched on the basis that emotions can become part of us. Emotions affect our various tissues and energy fields of our body, which is well documented. For example, one device, called the SQUID magnetometer, can detect the tiny magnetic fields created by the biochemical and physiological activities of the body. Using the device, scientists learned that all of the tissues and organs in the body produce specific, magnetic vibrations. They call them biomagnetic fields.

Those emotions can be “trapped “ in our organs, tissues and muscles. For example, when the brain receives negative emotions, it sends tension to those associated tissues; and then those tissues send tension back to the brain, resulting in a negative loop or repeating cycle. Happier thoughts lead to essentially a happier biochemistry; a happier, healthier body. Negative thoughts and stress have been shown to seriously degrade the body and the functioning of the brain, because it’s our thoughts

and emotions that are continuously reassembling, reorganizing and re-creating our body.

If these emotions are not released, and become “trapped “ in the tissues, it will continue to draw those types of emotions to that area; which might affect normal function of those organs or tissues involved.

So, how do you find out if “trapped “ emotions are affecting you at this time?

According to Dr. Bradley Nelson, D.C., the way the trapped emotions are found is through the use of kinesthetic testing or Kinesiology. Muscle testing can tell us about the overall health and balance of our bodies.

A trained chiropractic physician, specializing in recognizing and releasing of “trapped emotions,” will then utilize proper tools and skills to help release the emotions. To release the emotions, the person doesn’t have to divulge any of their personal problems or history in most cases. As an example, when the patient comes in, they are told that as the emotion is being found, they will only receive basic questions. Most emotions only have to be found and recognized; then, they can be released with little discussion. In some cases, the “trapped emotion” will be found and recognized but will need to be investigated deeper. In this case, the patient will be asked questions, and told to think about that emotion. If the patient wants to discuss it with the doctor they can, but it is not necessary. They mainly just need to think about it. Then the doctor will release the emotion. This doesn’t require any physically invasive tools or modalities to release the emotion from the associated tissues.

If you find yourself not able to deal with your ongoing problems or emotions, you will need to seek out the assistance of a good psychologist or therapist, to help you process those emotions.

Emotions will always be a part of life, but if we can keep these “trapped emotions” to a minimum, this will leave you in a more positive and loving energetic state, which will ultimately leave you in a better state of health.

Then, he stopped returning your calls, answering your texts or even speaking to you when you saw him in person. Finally, he placed a restraining order on you to “stay away” from him. How much clearer could he have been? It’s time to move on.”

The man on the roof was unwilling to move. My client was unwilling to move on. Both men were looking for a mystical sign from God to stay or go. Neither one of them remembered that it was their call to make. God had given them free will, to make their own choices. So often in life, we asked why God hasn’t answered our prayers. Why has God abandoned us? But could it be, that our prayers have been answered and that God has clearly revealed to us what is ours to do--we just didn’t like the answer or accept it to be true.

Here’s what I know for sure. God never abandons anyone. God will never give us a problem or a challenge that we cannot push through, go around or rise above. Therefore, we must be willing to accept what we must, change what we can, and have the insight to know when we are called to either stay or to go, and to act accordingly. Moving on is always tough, but as Joel Osteen says, “You must make a decision that you are going to move on. It won’t happen automatically, you will have to rise up and say, ‘I don’t care how hard this is, I don’t care how disappointed I am, I’m not going to let this get the best of me. I’m moving on with my life.’”

There is a legendary story about the man who knew with certainty that God would help survive a disastrous flood. As the floodwaters began to rise, he climbed up onto his roof and when a neighbor came by in a rowboat, the neighbor beckoned him to join him in the rowboat, but the man proclaimed, “God will guide me through this! I put all my faith in God to tell me to either stay or go.” A few hours later, the water continued to rise and the Coast Guard speedboat came by and the captain informed the man that he must abandon his home and join them on the boat, as this might be his last opportunity to be rescued. Again, the man said no and proclaimed, “God will guide me through this! I put all my faith in God to tell me to either stay or go.” Finally, a news helicopter covering the flood noticed the man standing on his roof completely surrounded by water--it would be mere minutes before the entire roof would be covered in water. The helicopter pilot swooped down near the man and tossed a rope out to him and begged him to grab hold of the rope or he’d surely die. Once again the man proclaimed, “God will guide me through this! I put all my faith in God to tell me to either stay or go.”

The water rose, and soon the man did indeed drown. When the man stood before St. Peter, he confessed his disappointment proclaiming that God had indeed abandoned him in his hour of need. St. Peter looked at him and said, “My son, what was it that you expected of God? After all, he sent a rowboat, the Coast Guard and a Helicopter to save you, but you turned them all away.”

I was reminded of this story today, when a coaching client of mine commented, “I’ve been asking for God to show me a sign that my relationship with my partner should either continue or end. I don’t know whether to go or to stay. Why hasn’t God answered my prayer?” I replied, “My son, first your partner asked you to leave his home, take your things and to get out.

C hronic long-term unintentional dehydration weakens cells so they don’t function well. Kidneys don’t filter sufficiently, the immune system declines, muscles cramp, brains cannot think clearly nor remember, and the list goes on to include every cell function in the body. This damage can be reversed; if not completely reversed, dehydration damage can be minimized.

Pancreas cells only last a year or so before they are replaced, skin cells die and are replaced after about five weeks, while stomach cells have a life span of two days. This process of cell replacement goes on continually for the entire life of the body. Some people postulate that every seven to ten years one has become practically a whole new person because most of the original cells have been replaced.

For almost 100 years, it has been biology’s mantra that brain cells do not regenerate. Science taught that we are born with a certain number of brain cells, and if some of them get damaged, then it is tough luck because there won’t be any replacements.

But now, Princeton University researchers have found new neuron formation in the cerebral cortex of adult monkeys. It is now believed that similar processes occur in humans, since both species have very similar brain structures.

Medical science also believed a damaged spinal cord meant a person would likely never walk again. In the 1990s, Reggie

Edgerton, of the University of California at Los Angeles, used physical therapy to help spinal patients with partial damage regain voluntary control of their leg muscles. Researchers concluded, “exercise rebuilt the connection between the brain and spinal cord to awaken or even regrow the locomotive neural circuits” the injury had damaged.

Written into the DNA of every living cell is this drive to survive, reproduce and be healthy. It is because of constant cell replacement that bodies damaged by dehydration can become revitalized.

You can pump all the iron your arms can endure, run as far as your legs can carry you, be picky about the food you eat--and down all the vitamins you can stomach--but they can’t make you healthy if you lack sufficient water. Re-hydration is the best health regimen ever devised! Re-hydration is also the method for ensuring the health of those new cells.

Chronic DehydrationPart 13 - Water Is Your Life Preserver

The beauty of re-hydration is that it can be just about cost free, and there are no dire side effects connected with water. The desirable side effect of re-hydration is that you will be far less prone to develop diseases and therefore save yourself a great deal of money, pain and emotional turmoil. Plus you’ll feel much better, especially as your age advances.

All the body needs for a return from dehydration to wellness are the tools to do it. The human body is an organism designed to thrive on water and minerals. We call these minerals electrolytes and they are salt, potassium, calcium and magnesium—combined with water, they are the tools for re-hydration and wellness.

The “kind” of water is the subject of next month’s article. For now, the question is how much water? The rule of thumb is to divide your weight by two, which equals the number of water, in ounces, per day you need to stay hydrated. So, a 160-pound person divided by two equals 80 ounces, or 10 eight-ounce glasses of water per day. If that 160-pound person is chronically dehydrated, that body will need those ten glasses plus two or more per day to begin the reversing process. (Chronic dehydration is easily indicated by dark yellow through orange to even brown urine. B Vitamins and some foods can make urine yellow, so go two days without them, and then check your color again. Some medications can also taint the color of urine.)

“But I hate water!” That’s your brain talking--your body loves it. To help you with that attitude, salt comes to the rescue. Once salt is in your system, you will actively crave water because your body must have it to balance the salt intake. If you begin feeling lots of hunger pangs, don’t be fooled--they are “water pangs,” and will be relieved only by drinking water.

Dr. F. Batmanghelidj recommends a ½ teaspoon of salt for each ten glasses of water. You’ll be drinking water throughout the day and you can divide the salt dosage also. Salt is necessary to keep some water in position around and between your cells. If you have a sudden weight gain one day or your skin seems thick with water, you’re probably retaining water from too much salt. Or it could be not enough potassium to move some of that water from around your cells and into them.

Be sure to check your blood pressure before beginning salt. If your numbers are greater than 120/80, you’ll need to drink your daily water quota for a week or more before adding

salt gradually. Then check your pressure daily to be sure it is not adversely affected by the salt. Those with any serious health condition should check first with their doctor before beginning re-hydration.

If you’re the person keeping restaurants and food processors in business, chances are you’re overloaded with salt. A Burger King Country Pork Sandwich contains 3,310 mg of salt, when the U.S. guidelines call for less than 2,300 mg per day. So, you too would do well to only drink water for a week or two to flush out all that excess salt those ready-to-eat and processed foods contain. In the meantime, you could learn to cook your own food from scratch so you can control how much salt you’re eating. It doesn’t take much savvy to grill or fry a lean pork chop, boil water for pasta, and cut up an apple.

The type of salt you do eat is important. Table salt generally has its trace minerals removed during processing. However, most table salt lists “iodized” on the label, and iodine helps the thyroid regulate the water pumped throughout the body. On the other hand, sea salt contains up to 80 trace minerals. Even though these minerals may be in small amounts, they are necessary for a body dependent on minerals. To solve this dilemma, mix one part iodized table salt with one part sea salt for your dosages. The problem is completely solved by using 100 percent iodized sea salt.

Unfortunately, little research has been done on the body’s need for minerals during re-hydration so there are no guidelines for you to follow with them. Norms have been established based upon the “healthy” general population. But it is speculated that over 70 percent of the general population is dehydrated, so those are not healthy mineral norms! When planning to re-hydrate, you must assess your body often and follow the feedback it gives to arrive at daily dosage levels for you. After re-hydration, when your storehouses are once again replenished, you may need lower dosages of the minerals.

It is helpful to receive confirmation about the program of water and mineral intake you settle upon. And along the way you may want input about dosage adjustments. Dr. Clyde Porter, Reno chiropractor and kinesiologist, says kinesiology is a system of muscle testing to read the body’s requirements. It is widely used in sports to assess the condition of muscles and ligaments after injury. Dr. Porter adds that kinesiology can be carried a step further by asking the body if it needs a certain thing to heal, and getting a strong muscle response signifying a “yes” answer, or a weak muscle response meaning “no.” The body can then be asked about a certain dosage level and receive a yes or no answer through further muscle testing. Some chiropractors are adept with kinesiology and may be able to assist you with your re-hydration program.

While salt holds water around your cells, drawing water into

your cells requires the mineral potassium. The gluconate supplement form seems to produce the best results. Children need 3,000 to 4,500 mg per day depending on age; adults require around 4,700 mg. Foods high in potassium are one cup of raisins with 1,300 mg, one avocado with 975 mg, eight ounces of plain nonfat yogurt has 579 mg, one banana has 422 mg. An overdose of potassium may result in a very acid stomach that no antacid can relieve. The counterpart to potassium is salt, so try 1/16 teaspoon of salt for potassium acid relief. Then lower your potassium dosages because your body’s reserves of it are getting filled.

The mineral calcium also helps get water into your cells. Some report that the mineral boron makes calcium metabolize better. Adults generally require 1,000 mg of calcium per day, but post-menopausal women need more like 1,200 mg to safeguard their bones. Calcium is found in many foods such as dairy and spinach.

Magnesium is the fourth electrolyte and it helps calcium do a more efficient job. Its Recommended Daily Allowance for adult males is 420 mg and 320 mg for women. Dr. Oz says around 78 percent of American adults are deficient in it. One cup of kidney beans has 70 mg; one cup of black beans has 120 mg; two whole wheat bread slices have 46 mg; one cup of lentils has 72 mg. Too much magnesium usually results in loose bowels (milk of magnesia has long been used to loosen constipation).

Sometimes you may need other minerals during re-hydration. Zinc helps the electrolytes be more effective and men lose it readily through sperm. As noted before, iodine may be necessary for the thyroid gland to direct the water to its destinations. Dr. Michael Gerber, MD, HMD, maintains that the TSH AND T4 thyroid tests are not reliable, but that the signs, such as high cholesterol, are better indicators of low thyroid, and supplementation may be called for. So enjoy water. Make it a joyful part of your daily routine. Drink it as though your life depended on it.

If you have had success curing or relieving disease through re-hydration, please contact JeanAnn at (775) 828-7194.

chicory root extract is used as a sweetening agent in food products, and may be added to yogurts as a prebiotic.

Chicory has also been used for medicinal purposes. Its volatile oils are effective at eliminating intestinal worms. This is one of the reasons it is also given to farm animals; it is planted for foraging. Herbalists use a decoction of the root as a mild tonic, diuretic and laxative. Chicory enjoys many uses in German folk medicine and has been used as a tonic to treat gallstones, sinus problems, and cuts and bruises. Applied as a poultice, the leaves can help soothe inflammation. It is beneficial to the health of the liver, and the digestive and urinary tracts.

Chicory thrives in deep, rich and roomy soil. Direct seed in the early spring and thin seedlings to a foot apart. Give the plants plenty of water and you can give their roots a boots with a mid-season dose of compost tea. To grow Witloof chicory, or Belgian endive, dig the roots without nicking them, and cut off the leafy tops. Store the roots in a cool dry place. Many gardeners pack them with layers of dry sand. Let the roots stay dormant for at least three months and then plant in a container that is at least 18 inches deep, and hidden from sunlight. In three weeks, pale yellow-green leaves should have formed into cone shaped buds, which may be sliced from the root. If you want to cultivate chicory for the root, it may be harvested in the early fall.

HERBS&SPICES

Written By Allison Prater

Cichorium intybus, or chicory, is a perennial herbaceous plant, most commonly seen with small, bright blue flowers. These flowers are responsible for many of chicory’s other names including, blue daisy, blue dandelion, blue sailors, blueweed and wild bachelor’s buttons. It has also been known as bunk, coffeeweed, hendbeh, horseweed, ragged sailors, succory and wild endive.

This plant can often be seen roadside, as it grows wild throughout its native Europe, and in North America and Australia where it has become naturalized. It is often grown as a forage crop for livestock. Gourmets love this humble herb. The young, blanched leaf clusters called chicons, also known as Witloof chicory or Belgian endive, are a prized ingredient. They can be served raw or slightly braised. They are grown completely underground or indoors, in the absence of light, in order to prevent the leaves from turning green and separating. Only the very tips of the leaves emerge from the soil surface, and the endives are often sold wrapped in paper to preserve the color and flavor. France is the world’s largest producer of endive.

The blue flowers are sometimes used as a garnish, and their buds may be pickled. The more mature, curly chicory leaves, or radicchio, are usually a bit bitter. This is appreciated in certain cuisines in many regions of Italy, Catalonia in Spain, Greece and in Turkey. In the Puglia region, wild chicory leaves are combined with fava bean puree in the traditional local dish Fave e Cicorie Selvatiche. Other famous Italian dishes that feature these greens include Radicchio di Verona and Radicchio di Chioggia. In Albania, the leaves are used as a spinach substitute. The leaves are rich in calcium, iron and copper.

Young chicory roots can be steamed or baked as a vegetable, or roasted, ground, and used a coffee substitute. It is a popular coffee additive in Mediterranean regions, India, South Africa and the southern United States, New Orleans in particular. Some beer brewers use roasted chicory root to flavor stouts. The root contains up to 20 percent of the polysaccharide inulin. Similar to the starches in yacon and Jerusalem artichokes,

Coffee is one of the most widely produced and consumed crops in the world. People are passionate about coffee, and have gone great lengths to be able to drink it. Coffee is yet another popular food whose cultivation, trade and consumption has caused much suffering to humans, animals and ecosystems. Exploitation of workers, low wages, child labor, and exposure to dangerous pesticides are some of the issues facing many people who work on coffee plantations worldwide. Global demand for coffee caused the price of beans to plummet; and coffee farmers and farm workers are the hardest hit. Traditional coffee plantations grow coffee in the shade of the forest. Many of the big coffee

companies now operate sun-grown coffee plantations, which can produce beans faster, but at the expense of precious ecosystems. Deforestation contributes to an increase in greenhouse gasses and to the deaths of many animal and insect species by losing their habitats when the forests are cut down. There has been a 90 percent drop in migratory birds found on sun-grown coffee plantations, as compared with traditional shade-growing ones. Then of course, there are also negative effects for the water, soil and air when toxic pesticides and herbicides are used.

In response to these pressing issues, a more sustainable coffee

Bring your own reusable cup to coffee shops with you to reduce trash.

Using a French press is a wonderful way to reduce trash at home. They do not require paper filters.

If you want to reduce your electricity usage, you can opt for a hand-crank coffee grinder.

Opt out of instant coffees and coffee pods, which draw heavily on our natural resources through multiple steps of processing, transport and packaging.

You don’t even want to hear me get started on the ingredients in some of those powdered mixes...

In the end, choosing to support high quality sustainable coffee rewards you with a better tasting cup of Joe.

market is starting to emerge. Fair trade, and other certifications that are meant to attest to their product’s sustainability, are popping up on coffee bags all over. Here are some guidelines to help you as a consumer suss out the truly green from the green-washing, and help you choose ethically produced coffee.

Choose shade grown coffees, and help preserve our precious forests.

Choose organic to reduce the use of toxic agri-chemicals.

Many coffees are “triple-certified” meaning they are shade grown, organic and fair trade. These are great choices.

Growers’ cooperatives protect workers rights and keep more of the profits than their conventional counterparts.

Choose single origin over blends.

Fair trade coffee seller’s who work with growers’ collectives often have information about who they source their coffee from. The more information the sellers provide about who they are sourcing their coffee from, the better chance you have that the farmers that grew it will get a fair price.

Some of the certifications found on coffee packaging have come under criticism for corruption and false representation of actual farmer earnings or environmental impact. For example, the Rainforest Alliance, which is partnered with Kraft foods, Chiquita and McDonald’s, has been criticized for being a cheap avenue for big companies to appear eco-conscious and concerned with worker’s rights when in fact they are neither.

Support local coffee shops in your area. A great place to get organic, shade-grown and fair trade coffee is The Hub Coffee Roasters in Reno. Blind Dog Coffee is another local source for organic coffee beans. Great Basin community Co-op also carries several sustainable options.

The Rainforest Alliance, which is partnered with Kraft foods, Chiquita and McDonald’s, has been criticized for being a cheap avenue for big companies to appear eco-conscious and concerned with worker’s rights when in fact they are neither.

drove through Jackson Hole, Teton National Forest and then to Yellowstone National Park. Once we were there, we both agreed it was worth the long drive! We ate lunch in the Park, and visited Old Faithfull! On our way out of the park, we saw a buffalo, and it was very close to the road and therefore our car. It was so awesome to see it so up-close! We drove all the way to Cody, Wyoming that night, and stayed at a hotel. We also went to a movie.

Day 4:The next morning, we left around 9 am. We drove through Shell Canyon, Bighorn Mountains and then to the Black Hills in South Dakota. We stayed with family there. It was nice not to drive so much that day, being so tired from the day before. We had a nice relaxing night.

Day 5:We woke up earlier than the morning before, put on some clothes and drove through South Dakota. We stopped at Wall Drug, a famous drug store that is more of a museum now, and tourist attraction. We bought some things from some cool stores and had a ton of fun; and we learned a lot of history too! Then we drove to Marion, South Dakota, where my grandpa has a house. We made it to our final destination, tired and ready to get out of the car for more than a day!

It was a very fun road trip, and I will always remember it! I loved being able to hang out with my grandma and see amazing sights!

KIDSCORNER

This summer, I went on an amazing road trip with my grandma! Every summer I go to Minnesota to see my dad, and I have never driven there, but this summer I did; and on the way, I did a bunch of fun activities with my grandma!

Day 1:From Tracy, California, my grandma and I drove to Reno, Nevada. It only took about three hours in the car, which wasn’t bad at all, and we spent the day visiting with my grandma’s friends and running around to different stores and places. It was fun, and nice not to be in the car for so long. We went to sleep that night early because the next morning we would have to drive a lot, and be in the car for a long time!

Day 2:We woke up at six o’clock in the morning and threw on some clothes, or at least my grandma did, I stayed in my pajamas. Not being much of a morning person, I needed some coffee before we left, so we hit up Starbucks before we hit the road for the day. We drove through Salt Lake City and Park City, Utah, all the way to the border of Wyoming (Fort Bridger) that day to stay with some family; but it was nice to spend some time with my grandma in the car, just her and I. That night we slept well, and planned on getting up early in the morning yet again because we needed to visit Yellowstone National Park!

Day 3:We got up early again, and hopped on the road, and unfortunately, the weather was horrible and raining! We

Raw Preserved Lemons“Spicy Style”

The start of a new season is an opportunity to add a new vibe in your diet and life. In nature, fall is the announcement of winter. Animals still have that instinct of gathering and storing foods by the time snow is covering their sources. And that is what our ancestors did to prepare for a time of scarcity. In civilized countries, people don’t have to worry about that problem anymore. As a consequence, a lot of precious knowledge and many preserving techniques vanished in the abundance of the food industry; and with that, so did many health benefits. Preserved foods offer natural probiotics and alive enzymes, because of the fermentation process. These lemons are perfect to add summer flavors to your winter dishes. Preserving your own food is not only easy, but also cheap, fun, beautiful, exciting and…delicious!

WHAT YOU NEED

• A glass jar with a wide mouth that can be sealed

• A sharp knife and cutting board

• Enough organic lemons to fill up the jar (don’t use sprayed and treated lemons!)

• Extra organic lemons to juice

• Spices (cloves, peppercorns, dried pili pili peppers, kaffir lime leaves, cinnamon stick)

• Sea salt or kosher salt (1 to 2 TBSP per lemon, to taste)

Submitted By Marie-Claire Hermans - Ravishing Raw

37 August 2013 Life’s a journey. Make it a healthy one.® Visit www.HBmag.com

HOW TO USE PRESERVED LEMONS

First, rinse the lemon you will use to remove excess salt.

These lemons add beautiful flavors in salads, soups, dressings or Moroccan dishes.

For tajines (cooking), only use the pulp and keep the rind for other uses. It can become bitter.

For raw food dishes and dressings you can use the whole lemon.

To add in salads, make small dices of the rind and pulp.

For dressings, add a piece (to your taste) to the dressing and blend together.

TIPS

Preserved lemons keep well for a year.

Store in the fridge after opening a jar.

Make an amount for one year: it doesn’t take much longer but saves a lot of time in your organization.

Experiment with spices and herbs to find your own favorites.

If you only have a small glass jar, you can cut the lemons in four parts to save space.

Simply sprinkle the salt on top of every layer in that case.

Marie-Claire started “Ravishing Raw” after curing herself from Chronic Fatigue Syndrome and Fibromyalgia, with raw food. As a raw food coach, she specializes in offering professional help to those who are suffering from similar

debilitating conditions. Along with her expertise in jazz music management and booking work, she helps world class artists – challenged by their demanding lifestyle – find solutions to improve their health.

PREPARE

• Sterilize the glass jar by pouring in a little bit of boiling water.

• Wait 30 seconds so the jar can adjust to the heat.

• Now fill up the jar with the rest of the hot water.

• Leave the water in the jar for 10 minutes.

• In the meantime, preheat your oven at 250°F.

• Put the empty jar (without drying) in the warm oven and let sit for 20 minutes.

• Your jar is now sterile.

INSTRUCTIONS FOR PRESERVED LEMONS

• Take the sea salt and mix in the spices with your fingers.

• Wash all lemons.

• Take a lemon and make a vertical cut until about halfway.

• Now rotate the lemon a quarter, turn it upside down, slice again and stop halfway at your first cut.

• The four pieces are still attached in the middle.

• Open up one slice and sprinkle in your salt & spice mix with your other hand.

• Open up the other side and add the mix.

• Do this with every lemon.

• Fill up the jar by packing it firmly with the lemons while pushing them down one by one.

• The lemons will release juice.

• If you can still see any air bubbles, push the lemons down a little more so the air gets out.

• Sprinkle some salt on top of the lemons.

• Close the jar and put it away in a dark cabinet.

• After 3 days, check the jar to see if the lemons released enough juice to cover them all up.

• If they are not covered, pour freshly squeezed organic lemon juice into the jar.

• Now you can leave it alone in a dark cabinet for one month.
