This unit/task covers the following:

PC1. take a complete round of MCC area to check readiness of milk collection

PC2. ensure cleanliness of all milk collection equipments as per acceptable

standards

accessories and equipments should be free of fat stains, should be dust

free and odour less

follow the cleaning SOP if there is any equipment/accessory which has

visible fat stains or odour

ensure that milk samplers, plunger or any other equipments are not kept

on the floor

put the samplers and other articles in their designated place/shelves

ensure use of clean sample bottles for collecting milk samples

keep sample bottles upside down without capping in the cleaned simple

tray

use clean, odour free and undamaged nylon sieve/nylon cloth for milk

filteration

PC3. ensure all equipments used for milk collection are switched on and are in

proper working condition

inspect the silos for proper cleanliness dipstick and dipstick socket,

tank corners, agitator paddle

clean the equipments to remove deposition of milk solids, dust

weigh balance readings and rectify the same before next reception

ensure that the electronic weigh scale is certified annually by the weights

and measurements department

ensure that the electronic weigh scale is set to auto tare

PC7. operate analyser for initial quality testing

keep the analyser and vibrator connected to the battery

ensure that the computer, printer and UPS function properly

switch on the analyser and allow it to warm-up for at least 20 minutes

ensure that the analyser is calibrated on a timely basis and before shift

start retested with Gerber tested sample (per shift)

record variation, if any, and note the action performed to correct the

calibration in the log book

PC8. ensure proper maintenance of the lab setup

ensure that stationery and other necessary articels such as chemicals,

reagents (lab setup equipments), and cleaning agents are in place

Description This OS unit is about daily milk collection, milk handling and and post milk collection activities to be performed by the MCC incharge

Scope

This unit/task covers the following:

Milk can collection, unloading and transfer of milk

Milk testing and chilling

Post milk collection activities

Tanker loading/dispatch activities

Performance Criteria(PC) w.r.t. the Scope

Element Performance Criteria

Milk can collection, unloading and transfer of milk

PC1. record milk transporter’s (e.g. individual farmer) arrival time PC2. collect milk procurement sheets from all inward transporters PC3. collect the material indent form (if any) and provide the transporter with

required material subject to availability so that she/he can hand over that to the MCC worker in the next shift

PC4. ensure unloading of cans is done within 5-6 minutes of the vehicle being parked at the receiving dock

PC5. follow standard operating procedure for milk can opening PC6. carry out organoleptic test and identify doubtful cans for further tests PC7. lift the cans using the grip handles provided on the side (this activity must be

carried out by two people working together and rest the neck of the can on the can tipping bar)

PC8. ensure that the milk does not spill during the transfer and is filtered through a clean nylon cloth

PC9. record the total quantity of the milk once all of it has been poured PC10. ensure that the cans are inverted and placed on SS drip saver for recovery of

the milk drops that remain in the can PC11. follow SOP for lid cleaning and sanitization and ensure that the can is washed

thoroughly (activity is done immediately after can opening) PC12. ensure that the cans are covered again before being loaded on to the

transporter vehicle

Milk testing and chilling

PC13. record the electronic weighed data and fat/SNF test data taken from analyser PC14. ensure that the milk samples are tested and the results (%fat, %SNF) are

written on milk procurement sheet and handed over to the transporter PC15. ensure that the identified milk cans which were suspected at the time of

organoleptic testing are tested for COB test (clot on boiling) and adulteration tests

PC16. ensure that the identified adulterated milk can is emptied at the site and record is maintained

PC17. start the milk pump for chilling as per SOP for onward storage in the silo PC18. record the time of starting and temperature of the first lot of the chilled milk

at the outlet of chiller PC19. check the temperature of the outlet of the chiller at the end of milk reception

PC23. ensure that the can dip saver, can tipping bar, can scrubber, can rinsing bowl are washed seperately

PC24. check whether the road milk tanker has been cleaned properly PC25. transfer the milk from silo to the milk hauling/transportation tanker PC26. take a sample from the tanker after the milk has been transferred from the

silo to the tanker and test the sample for fat%, SNF%, temperature, acidity and other tests as per SOP

PC27. ensure that the milk tanker manhole and valve box are sealed properly and the seal number is written on the tanker gate pass

PC28. ensure that the tanker driver acknowledges the quantity of milk loaded in KGs and the quality results (Fat and SNF), temperature, acidity, and seal number on the tanker challan

Description This OS unit is about documenting, record keeping and payment to farmers/suppliers for the procured milk at the MCC.

Scope

This unit/task covers the following:

Documentation of essential records for milk collection

Documentation in case a computerized system is used

Documentation and maintenance of records of storage parameters

Payment to milk producers/suppliers

Performance Criteria(PC) w.r.t. the Scope

PC1. ensure that the below mentioned records are maintained on a continuous basis:

individual milk producer wise can collection and weightment register

fat and SNF reading sample wise register

MCC staff attendance register

MCC worker attendance register

MCC stationery, consumables and testing equipment stock register

MCC stock dispatch register PC2. maintain records of milk and transportation vehicle right from procurement

from catchment areas through the processing unit and to the distribution centers

Hauling/transportation driver’s name and address

Tank ID number

Current tank inspection sticker (or actual inspection sheet)

Appropriate tanker seals (properly numbered and recorded) PC3. record milk temperature, collection time, date of pick-up and bulk milk hauler’s

name and license PC4. document and maintain records of all incoming milk to the processing facility,

PC13. send RMRD report, shift end summary report of MCC workers, variance report and report on sour, curd and rejected milk to the head office

Documentation and maintenance of records of storage parameters

PC14. document and maintain records of parameters such as temperature, quality of the milk before loading in the hauling/transportation vehicle, during storage period and during unloading from the storage facility for each batch of milk following SOP

PC15. maintain record of observations or deviations (if any) related to storage parameters

Payment to milk producers/suppliers

PC18. ensure that a worker analyzes the milk collected from the farmer/supplier for its weight and fat and protein content

PC20. ensure that the worker writes the amount on a proper receipt and hands it over to the farmer/supplier to collect the money after a certain period of time

PC1. comply with food safety and hygiene procedures followed in the organisation PC2. ensure personal hygiene by using of gloves, hairnets, masks, ear plugs,

goggles, shoes, etc. PC3. ensure hygienic processing of milk by inspecting procured milk, processed

milk, etc. for compliance to physical, chemical and microbiological parameters

PC4. clean, maintain and monitor milk hauling vehicles and equipments periodically, using it only for the specified purpose

PC5. use safety equipment such as fire extinguisher, first aid kit and eye-wash station when required

PC6. follow housekeeping practices by having designated area for materials/tools PC7. follow industry standards such as HACCP PC8. attend training on hazard management to understand types of hazards such

as physical, chemical and biological hazards and measures to control and prevent them

Each Performance Criteria (PC) will be assigned marks proportional to its importance in NOS. SSC will also lay down proportion of marks for Theory and Skills Practical for each PC 2. The assessment for the theory part will be based on knowledge bank of questions created by the SSC 3. Individual assessment agencies will create unique question papers for theory part for each candidate at each examination/training center (as per assessment criteria below) 4. Individual assessment agencies will create unique evaulations for skill practical for every student at each examination/training center based on this criteria 5. To pass the Qualification Pack , every trainee should score a minimum of 70% in every NOS 6. In case of successfully passing only certain number of NOS's, the trainee is eligible to take subsequent assessment on the balance NOS's to pass the Qualification Pack
