The testing of culinary talents is taken to the max with two stations at a time constantly playing host to ‘cook offs’ between hotel man-agement universities and school’s students. This year the heat was on full blast in a series of competitions.

Junior chefs were competing from various schools and universities around Lebanon, including A.U.L (Arts, Sciences & Technology University), AUST (American University of Sci-ence & Technology), CIT (Centre International Des Sciences Techniques), ITH (Institution MGR Cortbawi Coeurs Tourisme Hotellerie), LTA (Lycée Technique Ajaltoun), LIU (Leba-nese International University), NDU (Notre Dame University), University of Balamand and USEK (Université St. Esprit Kaslik).

Despite the 2013 crop of olives not being the best season on record, this year’s entrants still provided tough competition for the jury members of the National Extra Virgin Olive Oil Contest.

In its 9th edition this year the jury of nine olive oil tasting ex-perts, which included judges Jamal Al Batsh from Jordan and Tomiko Tanaka from Spain, Faten Adada, Georges FeghaliHiyam Fanous Sinno, Hussein Hoteit, Robert Hajj, Roland Andary and Tamim El Takach from Lebanon were armed with apples, bread and water to make their winning selection of the final four contestants. “There were 39 entrants this year,” said contest coodi-nator Nell Abou-Ghazale, of those 39 producers 11 were selected by the Ministry of Agriculture’s panel and the 11 were then presented to the jury on the morning of Tuesday April 1.

“There were fewer oils this year,” said judge, Robert Hajj, an olive oil assessment specialist, “Though despite the season not being the best some of these are still good.” The selection of a winner, based on taste and smell, took place in the evening of Wednesday April 2.

Hosted by a panel of three international wine experts, this year’s Wine and Bever-age Lab was a toast to the wine industry of Lebanon.

Along with 15 wineries from around Lebanon, 45 wines were blind tested while the hosts, Quentin Sadler, Stephen Quinn and Paul Op Ten Berg, journalists and wine spe-cialists from International Federation of Wine and Spirit Journalists talked about their love of rosé, what Lebanon had to offer and what consumers could be looking for in the years to come.

“Lebanese wines are niche,” said Associate of the International Federation of Wine and Spirit Journalists, Quentin Sadler. “People drinking Lebanese wine outside of Lebanon are already thinking for themselves.”

In its second year, this year’s ‘Art of Service’ competition was heated and exciting when competitors, both still in school and out in the hospitality world, were brought together to show off their skills and talents for the job. Tested on their knowledge of table setting, decoration, cooking and presentation, they were able to showcase their creativity, innovation and competence.

Lebanon’s top Baristas debut at HORECAFor the first time at HORECA, Lebanon’s best baristas were brought together for their toughest challenge. The inauguration of the Best Barista Competition is HORECA’s acknowledgement of how important the coffee drinking community is to hospitality in Leba-non. “Lebanon has amongst the best baristas in the world,” said Awaiki, “but we need more training and more experience, this is a good way to make that known.”

For its second year running, HORECA’s ‘Chairmania’ was a chance for those in the hospitality industry to get a taste of what the top furniture designers in Lebanon have in store. This year’s chair models include cre-ations, as much unique as they are inven-tive, that span from the smooth clean lines of Nizar Sabbah’s ‘Naked’ red chair, to Nasri Choueiry’s ‘Cupcake’ chair, built from a steel oil drum and finished with an upholstered seat. Other designers included Vanda Novel Lakkis with her play on traditional Lebanese cafe chair ‘Poppies in June’ and a new take on the bar stool with Henri Dakkak’s ‘Camé Chair’.

restaurant or hotel interiors in. “It’s all about being comfortable,” said Nathalie Frangi, “and memorable. Whether creating a slow or fast environment for your clientele, you should match up what you’re serving with your interi-or.” And when it comes to hotels, it’s all about functionality: “You have to feel like you could just carry on staying there,” said Frangi.
