Har mony: ‘The Tuesday Tasting ’

Every week, Hakkasan’s wine team conducts a dedicated tasting session, trying out new wines with at least four different dishes from the menu: if a wine does not work with one dish – even if it is great with the others – it does not make the list.

All our wines (with the exception of the old vintages of fine wines) are continually tasted as the vintages change, to ensure that they complement our cuisine.

wines produced using biodynamic principles

Volcanic Soil: From Santorini, Etna and beyond...Vines grown on volcanic soil are rare, usually grows well on indigenous grapes of the region;

This soil makes the vine stress as it is less fertile but rich in minerals, therefore concentrate the flavours of the grape. Usually, these wines taste not fruity but delicious!

Ancestral vines: Survived and Strong, still producing the best grapes European settlers in the 19th century planted vines in Southern Australia, very few of these vines were able to survive for over 125 years.

Those that did are some of the oldest in the world. These old vines produce less fruit but the character and concentration of the wines put them among the best

of the Southern hemisphere.
