Keep cool and hydrated with this great summer salad.
Summer SaladThis watermelon salad takes 5 minutes to prepare and serves 6.
It can easily be transported to your outdoor event and is a great way to use up any extra melon. Try any leftovers atop grilled whitefish -YUM!
Ingredients:4 cups watermelon, cut into ½-inch pieces4 ounces crumbled feta cheese6 leave fresh basil, chopped½ red onion, sliced2 tablespoons Wildtree Strawberry Balsamic Vinegar or your favorite balsamic vinegar6 ounces arugula2 tablespoons almonds, sliced
Directions:Gently toss top 4 ingredients together until combined. Layer arugula on base of plates and top with dressed watermelon salad. Top with almonds. Serve chilled. Calories 170; Fat 4.5g; Saturated Fat 3g; Carbohydrates 31g; Fiber 2g; Protein 5g; Cholesterol 15mg; Sodium 230mg
