Topics of Discussion

What is cholestrol? Cholestrol in food Food high in cholestrol Types of lipoproteins Types of Fat

Page 4: Cholestrol in foods

Topic 1: What is cholestrol Cholestrol is not fat Fat like substance present in all body

cells Which is need for many essential body

process It helps in digestion of fat Adults manufacture all cholestrol they

need in liver All animals also have the ability to

manufacture cholesterol

Topic 2:Cholestrol in foods As we know all animals make

cholestrol so if we eat any animal product we will consume some extra cholestrol

E.g meat, fish, poultry

Page 6: Cholestrol in foods

Topic 3:Foods high in cholestrol Egg yolks Liver/organ meats Shellfish

Topic 4:Types of lipoproteins Lipoproteins certain amount of

cholestrol circulates in blood. It floats in blood stream in

chemicals package called lipoproteins.

Types: LDL’s HDL’s

Page 8: Cholestrol in foods

Types of Lipoproteins

LDL’s (Low Density Lipoproteins) Takes cholestrol from liver to

where it is needed. If too much LDL’s in circulating in

body it will build up artery walls Build up increase heart disease or

stroke Also called bad cholestrol

Page 9: Cholestrol in foods

Types of lipoproteins

HDL’s (High Density Lipoproteins) Pick up excess cholesterol and

takes it back to liver Keeping it from causing harm Also known as good cholesterol

Topic 5:Types of fat Amount and types of fat eaten

have a greater effect on blood cholesterol

Fats found in food: butter, chicken fat, corn oil are made of different combination of fatty acids

Page 11: Cholestrol in foods

Types of Fat

Fatty Acids: Organic acid units that make up fat

there are 3 types:

1 Saturated

2 Polyunsaturated

3 monounsaturated

Page 12: Cholestrol in foods

Types of Fat

Saturated Fatty Acids Raise the level of LDL’s cholesterol

in blood stream

Food source: Meat, poultry, milk, dairy products

Page 13: Cholestrol in foods

Types of Fat

Polyunsaturated Fatty Acids Fats that seem to lower total

choesterol levels

Food source: Vegetable oils, corn oil, soyabean

oil

Page 14: Cholestrol in foods

Tyes of Fat

Monounsaturated Fatty Acids Lower LDL’s (bad) cholesterol level

& help raise levels of HDL’s (good) cholesterol

Food source: Peanut oil, olive oil

Page 15: Cholestrol in foods

Types of Fat All fats include all 3 kinds of fatty acids but in

varying amounts Each type of fat has a different effect on

cholesterol levelOther Essential Fatty Acids:1 Linolenic Acid2 Linoleic Acid Called essential because body cannot

manufacture them Supplied by food person eat Both polyunsaturated fatty acids Found in natural oil of plants & fish Body needs them for its basic funtion e.g

production of various hormones

Page 16: Cholestrol in foods

Difference b/w fats&oil

Fats that are solid at room temprature are made up mainly of saturated fatty acids

Fats that are liquid at room temprature are made up mainly of unsaturated fatty acids
