1 Bagel, halved and toasted

1 tablespoon Hummus

1 teaspoon Hot Sauce or Hot Pepper

(Encona Caribbean Hot Pepper Sauce OR

Vietnamese Sriracha Sauce OR

1/4 scotch bonnet pepper, chopped)

1/2 cup Rocket or Lettuce

Optional: Fresh Basil, Chopped

1/2 Medium-sized Tomato, Sliced

1/6 Cucumber, Sliced thinly, lengthwise

Cheese, Sliced

Sandwich Meat

(Serrano Ham or Roasted Beef)

d 1. Toast the Bagel *but don't turn the oven off (for step 7)

2. Mix the hummus and the hot sauce and lather it onto both sides of the the bagel

(If you are using the scotch bonnet peppers and sprinkle it over the hummus

spread - wear a glove when you sprinkle it!)

3. Sprinkle the Basil over the hummus spread

4. Pile on the Rocket/Lettuce on one side

5. Layer the other side with the cucumber and tomatoes

6. Lay the meat over the cucumber & tomatoes

7. Cover the meat with cheese and if you'd like, place it in the toaster oven for a

while and let it melt

8. Put the Sangwich together and let it cool for a while before wrapping it up

Tip:The local Tesco wouldcarry all the ingredients at a low price. But for

better quality ingredients, try independent grocery

stores. They might even be cheaper!

Recip

eVegetarian Vietnamese Rice Rolls

Serves 8

Ingredients

500g Dry Short Egg Noodles

(or Noodle-Pastas, broken into shorter strands)

24 Sheets of Vietnamese Rice Paper (16cm diameter)

Seasoning:

1/2 cup Spring Onions, Chopped

1/3 cup Fish Sauce

3 Thai Chilli Peppers, Cut

Method 1. Boil a pot of water

2. Cook the noodles in the water*

* If serving within the same day, cook the noodles until it is

almost al dente. If serving the next day, cook it so it is only

half-cooked. It will absorb the fish sauce mixture as it sits.

3. While the noodles are cooking, prepare the Seasoning

4. Drain the noodles from the water and run it under cold water

for a while

5. Toss the noodles with the Seasoning in a bowl. Let sit for a while.

6. Soak the rice paper in water until it is malleable but not fragile

7. Take the rice paper out and portion a rounded dessertspoon-ful

of seasoned noodles unto the middle.

8. Wrap the rice paper the way one would wrap a spring roll.

Leave it to air for a while to tighten itself around the goodies

in the roll.

9. Keep it in covered in refridgerator until ready to serve.

A Sunday in SpainAll that partying in the week must take a toll on the Spanish, so they adhere to

their religion-rooted tradition of resting on Sundays. This leaves little for

extranjero-s like myself to do around the city. But we still got by, and had a blast doing so.
