Vegetable & Goat's cheese pizza

SERVES 2 SERVES 4 INGREDIENTS cup (75g) 1 cup (150g) self-raising flour

tsp tsp salt (see tip) 2 tsp 1 tbs olive oil

1 tbs cup (65g) passata1 zucchini, cut into ribbons

small small eggplant, cut into ribbons small 1 small red capsicum, thinly sliced20g 40g Goat's cheese, crumbled

1 tsp 2 tsp finely grated lemon rind1 tbs 2 tbs fresh parsley leaves

1 long fresh red chilli, deseeded, thinly sliced

METHOD1. Process the flour, salt, oil and cup (125ml) water in a food processor until

mixture just comes together. Add cup (60ml) water to serve 2. Knead the dough on a lightly floured surface until smooth. Roll the dough out to 1cm thickness.

2. Lightly spray a large oven-proof frying pan (30cm base measurement) with oil and heat over medium heat. Lightly spray a small oven-proof frying pan (15cm base measurement) with oil to serve 2. Transfer pizza dough to pan. Press the dough into base and side of the pan. Cook, uncovered, for 5 minutes or until pizza base is golden and crisp. Preheat grill.

3. Spread passata sauce evenly over the pizza base. Arrange zucchini, eggplant and capsicum over sauce. Season with salt and pepper. Crumble goat’s cheese over the pizza.

4. Transfer pan under grill and cook for 4-5 minutes or until vegetables are tender. Top with lemon rind, parsley and chilli. Serve.

Serve with: 0 SmartPoints® value salad of baby rocket leaves, halved cherry tomatoes and sliced cucumber, drizzled with balsamic vinegar.
