Lemon Blue Berry Layer Cake

Ingredients:

CAKE1 cup (230g) unsalted butter, softened to room temperature1 and 1/4 cups (250g) granulated sugar1/2 cup (100g) light brown sugar4 large eggs, at room temperature*1 Tablespoon vanilla extract3 cups (375g) all-purpose flour, careful not to overmeasure1 Tablespoon baking powder1/2 teaspoon salt1 cup (240ml) buttermilk*zest + juice of 3 medium lemons*1 and 1/2 cups blueberries, fresh (258g) or non-thawed frozen (275g)1 Tablespoon all-purpose flourCREAM CHEESE FROSTING8 ounces (224g) full-fat cream cheese, softened to room temperature1/2 cup (115g) unsalted butter, softened to room temperature3.5 cups (420g) confectioners' sugar1 - 2 Tablespoons (15-30ml) heavy cream*1 teaspoon vanilla extractpinch salt

Preheat the oven to 350F. Spray three 9x2 inch cake pans with nonstick spray. Set aside.

Make the cake. Using a handheld or stand mixer with a paddle attachment, beat the butter on high until creamy - about 1minute. Add granulated and brown sugars and beat on medium-high speed until creamed, about 2-3 minutes. Scrape downthe sides and bottom of the bowl as needed. Add eggs and vanilla. Beat on medium speed until everything is combined,about 2 full minutes. Scrape down the sides and bottom of the bowl as needed. Set aside.

In a large sized bowl, toss together the flour, baking powder, and salt. Slowly add the dry ingredients to the wet ingredients.Beat on low speed for 5 seconds, then add the milk, lemon zest, and lemon juice. Remove from the mixer and stir lightlyuntil everything is just combined. Toss the blueberries in 1 Tablespoon of flour and fold into the batter. Batter is extremelythick. Do not over mix at any point. Over mixing will lend a tough, dense textured crumb.

Spoon batter evenly into 3 prepared cake pans. Bake for about 20-22 minutes or until a toothpick inserted in the centercomes out clean. Mine took 21 minutes. Remove from the oven and allow to cool completely before frosting.

Make the frosting. Using a handheld or stand mixer with a paddle attachment, beat cream cheese and butter together onmedium speed until no lumps remain, about 3 full minutes. Add confectioners' sugar, 1 Tablespoon cream, vanilla extract,and salt with the mixer running on low. Increase to high speed and beat for 3 minutes. Add 1 more Tablespoon of creamto thin out, if desired.

Assemble and frost. First, using a large serrated knife, trim the tops off the cake layers to create a flat surface. Place 1 layeron your cake stand. Evenly cover the top with cream cheese frosting. Top with 2nd layer, more frosting, then the thirdlayer. Top with frosting and spread around the sides. The recipe doesn't make a ton of frosting, just enough for a light frost.Top with blueberries or lemon garnish if desired. Refrigerate for at least 45 minutes before cutting or else the cake mayfall apart as you cut.

Make 1 day in advance if you'd like. Extras keep well in the refrigerator for up to 3 days.

Our God is a mighty God! When you feel overwhelmedand feel like you just can't take any more, remember tolay your problems at the feet of the Lord- and leave it. Henever expected us to carry all our burdens. Sometimes wetry to take on our problems without God and that's whenwe feel overwhelmed. Give it to Him first, before it getsout of control.

Thank you Jesus for carrying my burdens. I trust in you.That's a tough thing for me to do, BUT I must say youhave never failed me. Remember to lay it down and leaveit. Watch to see what happens. Trust Him!

Just Relax...

The Bible clearly teaches thatChristians are not to worry. InPhilippians 4:6, we are com-manded, “Do not be anxious [donot worry] about anything, but ineverything, by prayer and peti-tion, with thanksgiving, presentyour requests to God.” In thisScripture, we learn that weshould bring all of our needs andconcerns to God in prayer ratherthan worry about them. Jesus en-courages us to avoid worryingabout our physical needs likeclothing and food. Jesus assuresus that our heavenly Father willtake care of all our needs(Matthew 6:25-34). Therefore,we have no need to worry aboutanything.

Since worrying should not be apart of a believer's life, how doesone overcome worry? In 1 Peter5:7, we are instructed to “cast allyour anxiety on him because hecares for you.” God does notwant us to carry around the

weight of problems and burdens.In this verse, God is telling us togive Him all of our worries andconcerns. Why does God want totake on our problems? The Biblesays it is because He cares for us.God is concerned about every-thing that happens to us. Noworry is too big or too small forHis attention. When we give Godour problems, He promises togive us the peace which tran-scends all understanding(Philippians 4:7).

Of course, for those who do notknow the Savior, worry and anx-iety will be part of life. But tothose who have given their livesto Him, Jesus promised, “Cometo me, all you who are weary andburdened, and I will give yourest. Take my yoke upon you andlearn from me, for I am gentleand humble in heart, and you willfind rest for your souls. For myyoke is easy and my burden islight” (Matthew 11:28-30).

If you are depressed or having a bad day... ask yourselfwhat you have been thinking about. I assure you, that it isnot positive. Are you dwelling on things that are out ofyour control? Nine times out of ten we do and are thinkingabout things that are far beyond our control or have noteven occurred. Sometimes if a person is sick or there is adeath, that cannot be helped. However, you can choose tobe sad, worried or depressed for days, weeks and years.You can choose to say a prayer, talk to Jesus and moveforward. Sitting and dwelling on anything negative willonly have one result.....negativity. Negativity not onlyhurts you but anyone who comes in contact with you. Idon’t know about you, but I want to be the sunshine inpeople’s lives. I want to make a difference and a positiveimpact. I want people to see me and say, “wow she isreally different”. I want them to wonder what I have thatthey don’t have. It’s simple; Jesus. I have a relationshipwith Jesus. It took 35 years to develop the relationship andmany hard knocks. I still have much to learn. You canchoose to get up or stay down. It’s not as easy as it sounds,but it’s your choice. One thing I can guarantee you is thatyou will always have ups and downs. We all will(Christian or not). This is where your choices play a bigrole in your thinking process. Choose not to dwell on theuntouchable. Be strong. Start practicing now. Ask yourselfwhat you have been thinking. Then stop thinking negativethoughts. Tell yourself “NO” and the devil “NO”. Battleyour mind. You can do this. Practice. A relationship withJesus makes it that much easier. I have learned this thehard way. So when you are upset, depressed, worried,angry, sad or bitter, ask yourself what you have beenthinking. Don’t let the devil control your mind. Get rid ofthat stronghold. You don’t always have to think what youare thinking. When you start to think something negative,say “NO”. Tell the devil that he will not steal your joytoday. If this keeps happening, stop the negative thinkingdead in your thinking process and tell the devil “NO”.

Your joy is up to you. We are not on this earth for too long,so make the best of it. Be happy. Life is all about choicesand practicing making good choices. I have been listeningto Battlefield of the Mind by Joyce Meyer. It was the best$35 that I have spent in a long time. You can buy the book,DVD or CD. Please take the time out to make yourselfhappy. The choice is yours. Get up or stay down.

Godgave us our precious angels as a gift....and remember he mayneed his gift back sooner than later. We are never promisedanother day. None of us. Your child should be one of the mostexciting people in your life. Of course we should put God first.Where is your child on your “totem pole”?

Speaking for myself, my child is the sunshine in my day (alongwith God, and my husband). I am excited to see him, always.Your children won’t stay small forever. Blink your eyes and heor she will be gone to college, on the streets, married, pregnant,having to work, in jail, or dead. Let me think...is there anythingI missed. He or she may be at home longer than expected too.My point is you don’t know what the future holds, but you cancertainly give some love and guidance to help build your child’sfuture. Unfortunately, some children grow up and do the wrongthings and make bad decisions in the process to fill the void theparent created.

If a child is not getting attention, love or guidance from his orher parents, he or she will go find it. You never know what theymay find. Don’t create a void for your child to fill. What kind ofdecisions do you want your child to make? Are you a parent whoguides and loves your child or do you create emptiness? It’snever too late to change. Fill the void now before your childdoes.

Sunrise Farmwouldn’t be the same without ourdaughter, Madison. Madison enjoysgiving farm tours, serving guests in thedining room, and being the “chiefcookie baker”. Our family loves hikingthe local trails to discover the amazingwaterfalls, boating on Lake Jocassee,and attending sports events at ClemsonUniversity.

Worry is our most useless emo-tion. It is unproductive and dan-gerous. ommon Mistakes Made With Back PainC get in line

We often read about what to do for low back pain (LBP),but do we look at LBP from the perspective of what not todo? The following are the 3 biggest problems I see commonpeople make with regards to theirmuscular-skeletal pains.

1) Using heat instead of ice: Ice should always be used asthe first line of defense. It will rarely make LBP worse,whereas heat can! Ice is an anti-inflammatory agent, mean-ing it reduces swelling by pushing painful chemicals andfluids that accumulate away from the injured area. Heatdoes the opposite of ice. It’s a vasodilator meaning it pullsfluids into the area. Sure, it feels good initially, butoften people will say it makes them worse later. That’sbecause the additional fluid build-up in an already inflamedarea is kind of like throwing gasoline on a fire. During anacute injury or exacerbation period, use ice for 72 hours.

After that, as long as there is no superficial swelling, heatcan be used.

2) Ignoring the pain: Though LBP can get better over time,it’s simply impossible to know when or if it will occur. Ageneral rule of thumb is to use the 72 hour acute period torest and ice the injured area. If the pain does not start to easeor progresses, seek medical attention. 3) Bed rest: There is a time to rest and a time forexercise, but knowing what to do, when, is tricky.Most people stick to bed rest for way to long, delay-ing the healing response, or try to push throughthe pain causing more injury. Here are some generalguidelines: A) no more than 48 hours of bed rest; B)walking is usually a great, safe starting activity afteror even during the first 48 hours; C) avoidmovements that cause sharp pains like bending, twist-ing, lifting, or a combination thereof; D) after walk-ing, start with mild movements that decrease pain ofthe affected area and progress from there.

Heat a large pot of water over an outdoor cooker,or medium-high heat indoors. Make sure thecooker comes with a large strainer (so you caneasily lift out when food is finished). Add Old BaySeasoning to taste, garlic, onions, butter and bringto a boil. Cover while boiling and while cooking.First, add potatoes and fresh corn. Cook for about10 minutes. Next, add the sausage. Cook for an-other 5 minutes. Then add the crab legs. Cook for5 more minutes. Last, add the shrimp. Cook foranother 3 or 4 minutes. Careful not to over cook.Mushy shrimp is not good.

Use oven mitts to lift out the strainer. Be carefuland don’t burn yourself. Once you lift the strainer,let it sit out and drain for a couple of minutes.

Get some old newspaper and cover the table. Youcan dump out all the food and dig in. I find theseafood best dipped in hot butter and Texas Petehot sauce. Have a nice cold beverage of choice.

Easter for me as a child was candy, hiding eggs, all thefamily gathering, lots of good food, coloring eggs, pick-led eggs and opening the front door to see that the EasterBunny had left me a basket. Wow! Now that was funtimes. I also would walk down the railroad track to go tochurch to learn about Easter in my pretty little dress. Itwas all fun to me. I was just a young child and only knewwhat I was taught or what I caught. Easter is about all ofthis and more.

Let’s be honest. How do we prioritize when it comes toEaster and our children? Just as I did when I wrote abouthow I remembered Easter as a child. The priority shouldbe learning about how Jesus died for our sins and roseagain. And then about the candy, food, baskets and funactivities. We, as humans, are easily wrapped up in the“trend” of the world and forget about what the bible says.I am guilty of it. We ALL are. Doing what the world saysto do won’t get us into heaven. I can promise you that.

Our world is a messed up world because of the trendshumans try to follow. I don’t know about you, but I don’twant to ever die. This old body will die and my spirit willremain because I am going to follow Jesus and what thebible says to do. I will have eternal life. That should beenough in it’s self to leave the world behind and do what’sright. I sometimes feel scared when I think of death, butthen I think about who I serve and what I am promised ifI serve him. Wow! What a great trade. Eternal life if youtry to walk in the footsteps of Jesus. I will raise my handto that! I know we are not perfect and will never be. That’sOK. But remember Jesus died for our sins and rose again.So, back to Easter and Jesus. Behind the festive joys,feast, fun and family enjoyment, Easter reminds all of usabout a significant event. The event that Jesus Christ wasresurrected, after having suffered and died. It reminds usthat Christ, who was crucified on, what is now called, theGood Friday, showed himself up on the Easter. So, it is atime to celebrate.

To celebrate that the Lord, who appeared on Earth for thegood of mankind, is always with us. That Jesus wouldresurrect was foretold. The saying came as one of hisprophecies. And, with memories sharpened by hatred, hisenemies were the first to remember his prophesies. Hardlyhad he been buried when they had approached the RomanGovernor Pontius Pilate with a request to guard the tomb.Pilate gave them soldiers and instructed them to secure thetomb. They went, sealed the stone that closed theentrance, and set the guards to keep watch day and night.

During the night of Friday, the day of his Crucifixion,through Sunday, nothing really happened. Then thingsturned differently on the early morning of the Sunday, thethird day since Jesus was crucified. There was a greatuproar and the guards were all struck by lighting, for anangel of the Lord descended from heaven and came androlled back the stone and sat upon it. His face shinninglike lighting and his garments white as snow. At this sightthe solider's trembled with fear and remained as dead men.When they came to their senses there was no point inwatching over an empty tomb any longer. They went toreport to the chief priest about the incident. In reply theywere ask to distort the truth and spread a story that thebody of Jesus was stolen by his own disciples when theguards were asleep during the night.

Meanwhile, early on the following morning, that was Sun-day morning, some holy women started for the tomb.They were surprised to see that the stone had been movedaside. They entered the tomb and found it empty. As theywondered what all this meant, two angels appeared. Theangels told them that Jesus had risen again.

Soon Peter, the chief of Jesus’ twelve apostles got therealong with John, his junior. They found only the linen andthe piece of cloth used to wrap body lied in the emptytomb. Puzzled, they left. But Jesus was yet to appear infront of them.

Instead, Jesus went farther. He turned up to join two ofhis disciples who were journeying from Jerusalem to avillage called Emmaus. However, Jesus did not makehimself known to them. Jesus to them came to beknown as a stranger who had real mastery over theholy Scriptures. Impressed, they invited Jesus to staywith them and share their meal. Jesus agreed. At thetable they recognized Jesus; he disappeared.

In no time the two disciples headed for Jerusalem.When they met the apostles and told them about every-thing happened, Jesus made his appearance. And Jesusconvinced them all that he was alive and asked them ifanything was there to eat. Then he ate in their presenceas a living man does. With this everybody there be-came overwhelmed with joy that their master hadreturned to life. And life again had become meaningfulto the apostles.

Jesus had eaten with them. He talked to them in afamiliar manner and reminded them that he had comefrom heaven, sent by his Father to perform a task.Now, the task had been done by offering his life for thesins of mankind, it is time for the apostles to follow hissuit. Jesus gave the apostles the Holy Spirit: the powerover sin. So one whose sins are forgiven by the apos-tles, would be forgiven by the heaven. After this Jesusleft, as suddenly as he came in.

Jesus returned to the same place on the next Sunday,to make the unbelievers believe. Jesus showed himselfto teach his apostles the lessons and to teach them tolive without him. Jesus did this for a period of fortydays.

On the fortieth day of reappearance, when he felt hehad given the disciples all that he had to, he went backto the heaven. This same Jesus will come back just thesame way He has left. He had left his disciples to carryon his work and to reach his message of love and peaceto all.

As a man was passing the elephants, hesuddenly stopped, confused by the factthat these huge creatures were being heldby only a small rope tied to their front leg.No chains, no cages. It was obvious thatthe elephants could, at anytime, breakaway from their bonds but for some rea-son, they did not.

The man was amazed. These animalscould at any time break free from theirbonds but because they believed theycouldn’t, they were stuck right where theywere.

Like the elephants, how many of us gothrough life hanging onto a belief that wecannot do something, simply because wefailed at it once before?
