Preparing a mouth-
watering holiday meal is a
monumental task, but one
that can be simplified easily
to avoid a meal-time flop.
"Generally, the biggest
problem in kitchens is dull
knives. Beginning stages of
cooking start with cutting
raw food, and serving often
requires cutting and slicing.
When the knife is dull, the
beginning steps are onerous
and the ending stages are
awkward, and because you
have to press harder to make
the knife move through the
food, fingers are often cut.
"It follows then that a
sharp knife is critical for
preparing the meal and carv-
ing the bird. There is no
better holiday present than a
set of sharp knives and a

Serves 10
1 (10- to 12-pound/4.5- to
5.5- kilogram) turkey
Kosher salt to taste
4 celery ribs, cut into large
chunks
1 Spanish onion, quartered
1/2 lemon, halved again
3 carrots cut into large
chunks
1 bunch thyme (optional)
1 bunch sage (optional)
1/2 cup/110 grams butter,
melted
1 cup dry white wine
2 cups turkey or chicken
stock, preferably
homemade, or water
3 tablespoons flour
1) About 4 hours before you
plan to start roasting, re-
move turkey from refrigera-
tor, rinse, pat dry, and let sit
at room temperature.
2) Preheat oven to 425° F
(or 400° F for convection).
3) Liberally salt interior and
jam 1/2 of the celery, 1/2 of
the onion, lemon and herbs
into bird's cavity. If you
wish, truss bird as you
would a chicken. Rain salt
evenly all over the bird.
4) Add remaining celery,
onion and carrot to pan.
Place bird in low-sided pan
(or elevated on rack in roast-
ing pan; you want plenty of
circulation around the bird)
and put in oven.
5) Roast at high temperature
for 20 minutes. Pour melted
butter evenly over bird and
lower temperature to 375° F
(or 350° F convection).
Continue to roast until the
breast reaches 155° F in 60
to 90 minutes, basting as
you wish.
6) Remove pan from oven.
Show off the bird to your
guests.
After the turkey is cooked,
slice through skin between
legs and breast. Then re-
move each leg at joint. Slice
down vertically through the
center of the breast.
7) The breast should still be
pink; if it looks cold and
raw, return the entire bird to
the oven for 10 minutes. Put
bird on cutting board and
remove each leg at joint.
8) Pour off all but a quarter
cup of fat and juices in the
pan, reserving some of the
fat to make a roux. Pour the
liquid over the roasted vege-
tables still in the pan. Bring
liquid to a simmer on the
stovetop, then return the
legs to the pan and place in
the oven.
9) Roast legs for an addi-
tional 45 to 60 minutes; if
longer than an hour, turn the
oven down to 200° F. The
legs will only get better with
time and can be left in the
oven for up to 4 additional
hours; don't worry about the
breast, we'll reheat in the
stock at the end.
10) Combine flour with re-
served turkey fat to make a
roux.
11) Remove legs and place
pan over high heat on stove-
top.
12) Carve dark meat from
drumsticks and thighs and
place in the hot stock in
roasting pan. Remove each
breast half from the turkey
(be careful not to tear the
skin). Don't worry if the
breast is a little pink; this
means it will be juicy as it
finishes cooking in the hot
stock.
Cut the breast crosswise
into 1/4 to 1/2 inch slices.
Transfer the pieces to the
stock pan. Turn burner to
high and bring stock to a
simmer. Whisk in roux, sim-
mer for a minute or two to
ensure that everything is hot
and the sauce thickens, then
serve.
By following these steps,
you can enjoy your family
and friends, knowing the
meal will be perfect.

With winter weather
comes the desire for a warm
and comfortable home.
1. Seal your home. Inspect
windows, doors and the
exterior of your home for
cracks or leaks. Caulk, patch
or weather-strip any areas
that might leak cold air and
make your heating system
work harder. Seal and insu-
late your ducts and replace
screens with storm windows
and storm doors.
2. Cover windows. Use
drapes and blinds to reduce
heat loss through windows.
However, windows with
direct sunlight may benefit
from having the blinds up
during daylight hours, as
sunlight can help heat the
space.
3. Clean gutters. Clogged
gutters and drains can form
ice dams that prevent your
drainage system from work-
ing properly and lead to
water seeping into your
home. Be certain that dirt
slopes away from your
house to ensure rain or snow
will drain away from the
house.

Falling leaves and dipping
temperatures signal the turn
of the season and with that
comes the need to prepare
your home for winter. Your
outdoor living space is no
exception; it's an area you
spent months enjoying with
summer barbecues and gath-
erings. All that foot traffic
wear and tear and direct
sunlight can take a toll on any
deck, but with a few easy tips,
you can safeguard this area of
your home and prepare it for
the harsh winter weather
ahead.
•Protect Your Deck-
cessories: Excess moisture
and freezing temperatures can
bring a host of problems for
the items in your outdoor
space, including furniture,
grills and planters. It's impor-
tant to guard these invest-
ments and make sure they
stay protected for years to
come.
For areas that experience
extreme weather, it's best to
store furniture and cushions
indoors to prevent snow accu-
mulation or cover them with a
water-resistant material to
prevent damage from the ele-
ments. For milder climates,
protect smaller outdoor
wooden items, such as garden
boxes, birdhouses and
wooden benches, by sealing
with Thompson's WaterSeal
Waterproofing Wood Protec-
tor-Clear Aerosol.
Before the first freeze, move
plants that can be easily trans-
planted indoors. Outdoor
planters that are too big to
bring inside can be wrapped
with a heavily insulated mate-
rial, like burlap, and moved to
an area of the space that will
allow them to still get enough
direct sunlight.
•Clean Your Grill: Thor-
oughly clean the racks of your
grill with a grill brush and
coat the burners and other
metal parts with cooking oil
to repel moisture and prevent
rust. If it's a gas grill, turn it
on and let the last of the gas
burn off. Remove the tank
from a propane grill and store
outdoors, away from the
house. Tape a plastic bag over
the gas line opening to keep
curious critters from nesting
there. No matter the grill type,
a heavy-duty vinyl cover
should keep it safe and dry all
winter long.

nized-but you can help
change that.
Step 1: Test the waters
Before committing to
adopting your own dog,
volunteer to pet sit for a
friend or foster from a shel-
ter. You can care for a dog
while it grows or recovers
from illness or surgery.
Plus, you can help save lives
by freeing up space in a
shelter.
Step 2: Do your research
Find vet offices close to
home and your job, as well
as low-cost spay/neuter clin-
ics in case your dog isn't
already fixed. Check out
breed restrictions where you
live to ensure that when you
bring your new dog home,
there are no barriers to un-
conditional love.
Step 3: Make a plan
Plan a budget to make sure
your new dog gets what he
or she needs. These costs
can range from pet sitters to
training classes, and from
food and bowls to collars
and a leash. It's also impor-
tant to think about potential
vaccinations and microchips
to keep your new dog happy
and healthy. While loving
an adopted dog comes with
a cost, the lifetime of love in

companion
While it's impossible to
predict which dog will steal
your heart, it can be helpful

ergy is a great complement
to an outdoorsy lifestyle.
However, an older dog may
be a better fit for a low-key
environment. If your heart is
set on a purebred, you'll be
glad to know that about 25
percent of dogs in shelters
are purebred.

A favorite fall recipe sure
to wow any crowd is Pork
Sausage with Angry Or-
chard Grilled Onions and
Mustard. Cooking the sau-
sage in the cider infuses the
meat with apple flavor and
brings a subtle sweetness to
make this dish pop.
Pork Sausage with Angry
Orchard Grilled Onions
and Mustard
6 premade pork sausages
3 bottles Angry Orchard
Crisp Apple Hard Cider
10 garlic cloves
2 large yellow onions
2 tablespoons whole grain
mustard
2 tablespoons Dijon
mustard
2 tablespoons dry mustard,
rehydrated in 2
tablespoons Angry
Orchard
Soft hot dog or hoagie
buns
Heat a grill to medium
high. Pour 3 bottles Angry
Orchard Crisp Apple Cider
into a deep roasting pan and
add 10 garlic cloves and 2
large yellow onions sliced
into 1/2-inch rings. Bring to
a low boil right on the grill,
and cook until the onions
soften, about 15 minutes.
Add the sausages and
enough water to cover, then
bring the liquid to a simmer
and poach until the sausages
are cooked through, about
15 minutes. Remove the
sausages and onions to the
grill grate and cook just
until grill marked, about 4
minutes. Mix the whole
grain, Dijon and dry mus-
tards in a separate bowl.
Serve the sausages on soft
buns with the grilled onions,
poached garlic and cider
mustard.
