CHOCOLATE FILLING:

5 large egg yolks

6 tablespoons sugar

3 tablespoons constarch,sifted

1/4 teaspoon fine sea salt

2 cups whole milk

1 teaspoon pure vanillaextract

7 ounces bittersweetchocolate, melted

2 1/2 tablespoons unsaltedbutter, cut into cubes, at roomtempurature

1 Graham Cracker Crust

MARSHMALLOWTOPPING:

6 large egg whites

1/2 teaspoon cream of tartar

1 1/2 cups sugar

1 teaspoon pure vanillaextract

To make the filling:Whisk theegg yolks, sugar, cornstarch, andsalt together in a heatproof bowluntil thick and pale in color. Setaside.In a medium saucepan, bring

the milk to a gentle boil. Whiskabout 1/2 cup of the hot milkinto the egg yolks. Then,continuing to whisk, add theremainder of the milk in a steadystream. Set bowl over a mediumsaucepan of simmering water (do

not let the bottom of the bowltouch the water) and cook theegg-milk mixture, whiskingconstantly until thick and glossy,5-7 minutes.Remove the bowl from the heat

and whisk in the vanilla & meltedchocolate until well combined.Let the filling mixture sit for 2minutes to cool slightly, thenwhisk the butter until the custardis smooth and silky. Place a pieceof plastic wrap directly on top ofthe chocolate filling so that a skindoes not form and let cool for 30minutes, or until it reaches roomtempurature.When filling has cooled pour it

into the prepared crust. Coverthe pie with plastic wrap andplace it in the refrigerator to chillfor at least 3 hours or overnight.To make the marshmallowtopping: Put the egg whites,cream of tartar, and sugar in alarge heatproof bowl, set the bowlover a medium saucepan ofsimmering water (do not let thebottom of the bowl touch thewater) and whisk constantly untilthe sugar is completely dissolvedand the egg whites are warm tothe touch, 3-4 minutes. Themixture will appear pale and

opaque. Rub a little of themixture between your fingers tomake sure the sugar iscompletely dissolved.Transfer the mixture to the

bowl of a stand mixer fitted withthe whisk attachment. Add thevanilla and , starting on lowspeed to high, until themarshmallow topping is glossyand forms stiff peaks, 5-7minutes.Loosly pile the rest of the

marshmallow topping on top anduse a spatula to spread it in bigluscious swirls.The pie is best served the sameday, but it can be covered withplastic wrap and refrigerated forup to 3 days.

Dance Company, is celebrating thecompany's 35th year of the Nutcrackerballet. The ballet has become an essentialpart of the Christmas season in Pascagoula,Mississippi. Casting forthe production is donearound the middle ofAugust. Rehearsals andcostume fittings beginthe following week. The21-member company,cast, and supportinggroup of non-companyparticipants and local"celebrities" rehearseevery week until openingnight. As ArtisticDirector, Jo AnnChristopher (known byher ballet students as"Mrs. Jo Ann") directs allaspects of theNutcracker includingstaging, performance,and even costumedesign. Former MelangeDance Companymember and nowassistant to Mrs. Jo Ann,Dylan Demouey, says"She doesn't give herselfenough credit when itcomes to costumedesign. Mrs. Jo Anndesigns all the costumes,right down to whereevery single sequin isplaced." She worksalongside seamstress,Ruth Steiner, to handmake the costumes. The costumes have asimple, traditional elegance that capturesthe audience's attention in a whimsical way.In its 35 years of production, the

Melange Dance Company's Nutcrackerchoreography has been slightly revised,restaged, and changed, but the tradtionalstory remains the same. It is a huge part of

Pascagoula, Mississippi's local culture. Mrs.Jo Ann tells us, "We are the only balletcompany in Jackson County and our maingoal is to bring the art of ballet andproduction to the community. It is our goal

as well to give the artistsan opportunity toperform in a professionalproduction. TheNutcracker has becomea Jackson Countytradition." The companyalso performs theNutcracker for localschools each year. Theyrotate schools so thatevery child in thecommunity has theopportunity to see theNutcracker. "Many kidsdo not know what true,classical ballet is. Formost, it will be their onlychance to see aprofessional balletperformance. We wantto educate and exposethe local children to theart of dance and givethem the opportunity toparticipate in such amagical event."

We asked Mrs. Jo Ann:

What is your favorite partof the Nutcracker?

"I love every part, everypiece of music, andevery set piece. If I hadto say, my favorite thing

about the production would be coming intothe theatre on move in day to an emptystage, no sets, no lights, no costumes... justan empty stage... and we bring the wholeproduction to life. Seeing performers fromages 3 to 63 step onto the stage and makethe Christmas Dream a reality is my favoritepart."

The role of Clara is carefully selectedbased on dancing ability, facial expressions,acting ability, size, and age. Usually a 5thto 7th grade girl. Since the Melange DanceCompany is made up primarily of femaleballerinas, male dancers are brought in toperform male roles. Tyler McCants willperform the role of the Nutcracker this yearand Ryan Arnold will be the Cavalier. Bothof these men were former students of Mrs.Jo Ann's at LeFlore Magnet High School inMobile, Alabama. Tyler is finishing his finalyear as a dance major at University ofSouthern Mississippi with a degree in DancePerformance. Ryan is a graduate ofUniversity of Alabama with degree in DancePerformance. In the past, guest dancershave come from Nashville Ballet, FloridaState University, Bocca Ballet, Miami, andAtlanta.

Southern artist, Walter Anderson, was born in NewOrleans in 1903. His family later moved to OceanSprings, Mississippi. After marrying his wife, Agnes, hefound himself making a living as an artist in a timewhen most people found it hard to make a living at all.He was known to residents of Ocean Springs as thecrazy artist who rode his bicycle everywhere. He passedaway in 1965, but his work lives on at a place calledRealizations. The pieces of Walter Anderson's workdisplayed here perfectly capture the spirit of thisvibrant coastal community.

Prints of Walter Andersondrawings can be purchased in theform of posters, framed art, greetingcards, tote bags, t-shirts, hats,scarves, curtains and so much more.Shoppers can even purchase blackand white prints on heavy paper thatcan be painted with watercolors athome. Clothing and bags purchasedat Realizations can be found all aroundthis quaint little Mississippi town. Theyare staples... not souvenirs.Although Anderson lived an introvertedlife, his art lives on boldly and brightly.

We askedCrystal what she's doingnow and what keeps herinspired, challenged andhappy."I moved from SouthernCaliforia (where I was bornand raised) to Montana 7years ago. And while I'vebeen through variousseasons of life, i never fullyunderstood the truemeaning of seasons untilnow. It's remarkable theway God uses creation tohelp us unfold truth in ourlives. The inevitable comingof the cold and surety ofspring bring hope and faithto life in a whole new way!Since moving to Montana, Ihave recorded one album.While I've continued totravel and write and record,moving to the country wasstill a step back from thehurried and hectic life inthe city and on the road. Now, my son is nearly 20... andmarried! My daughter is 17. They eachgraduated by 17 and are pursuing careersin music and ministry.Today, literally right now, I'm in theprocess of making a new record. Letting thebeauty of creation and the country seepinto new songs about Jesus and life andtruth. I feel so blessed to be able to traveland see the city, but I always come home tomy Montana."What inspires you?

"I'm inspired by such a giant, interestingmix of things. I love the noise and clamorof the city, but I need the quiet too. I lovehearing people's stories and getting to knowwhat's going on in people's heads, but

sitting in the presence of my horses birngs adifferent kind of understanding. I believeGod gave us each such unique minds andabilities and He allows us to see the beautyof HIS heart in countless scenarios."What are your greatest challenges?

"I will say that this work, this work of beingcreative and making music that meanssomething isn't without its challenges. Beingan independent artist, which I chose to beyears ago when my husband and I startedour own record label (Metro One, 1992),can be rewarding but tough. The musicindustry as a whole is terribly political,which makes making headway hard. Thebiggest challenge is a spiritual one. I trulybelieve that any time you do what you'recalled to do in light of Jesus and living withan eternal perspective, you encounteropposition. Call me whatever you want, butI believe in the Bible and the Bible says we

have an enemy that does not wantme to succeed. So often I feelclobbered emotionally, creativelyand spiritually."

What's the best advice you've ever beengiven?" 'Crys, get in the Word. Stay inthe Word. It's by far the BESTthing you can do for your life andministry.' So I try to live by that.Every day, in how I live and whatI do, in what I sing and what Isay. I try to immerse myself in thelife-giving truth of the Word. Ihope my work and life reflect that.I'm not suggesting I have 100%success rate... but I try... I'mtrying."
