Potatoes -- maybe 3 big ones

Onion

Salt

Milk

Light olive oil

Cuts the potatoes in small irregular pieces

Put olive oil in the pan, enough to dip a fingernail into it

Chop a little of the onions & mix

it with the potatoes

I recommend to cry

While chopping the onions....

Fry the potates into the olive oil pan until the are...

......Golden color

Whisk the eggs with the milk and salt

Mix the golden potatoes into the egg mix

Almost zero oil , I use a towel paper to dry it well.

OK!!!! The scariest part ... FLIPPING the omelette !!!

Using a plate bigger than the pan is the recommendation unless you have a lid perch fit for the pan and with no little holes...,you don't want the mix dripping out.

About the onion....,I like it very very small, if your re an onion lover then make big chunks..or bigger chopping...
