Simmons World Challenge Food for Thought – Health, Hunger, and Humanity
January 3 – 14, 2011
This two-‐week course during semester break in January will address one of the major grand challenges of the 21st century, namely the complexities surrounding the production, equitable distribution, sustainability, and wholesomeness of food. This course is open exclusively to sophomores and is designed to empower students with the knowledge and skill set necessary to tackle demanding problems facing local, national, and international communities. The course will differ significantly from traditional courses in that it will be interdisciplinary and student-‐led. Faculty and graduate students will be available as resources, and use of the library and internet will be an integral part of the curriculum. Students will conduct research to prepare a final paper or video and deliver two presentations. The process of self-‐discovery and an emphasis on creativity are important components. Two 3-‐hour introductory meetings, Dec 3 and 8, are required. Student on-‐campus housing, vouchers for food, and a $1,000 stipend will be provided during the January two-‐credit course, which counts towards the spring 2011 semester load.
