SPIKEDMANGOMICHELADA

Lime wedgeTajin spice, for rimming glass (see Note)Ice1 1/2 ounces tequila1 ounce fresh lime juice1 ounce mango purée1/2 tablespoon sambal oelek6 ounces Mexican lager

1. Rub the rim of a beer glass with a lime wedge, then dip into asaucer coated with Tajin spice and twist. Chill glass.

2. Fill the chilled beer glass with ice, add all ingredients and stirgently. Serve immediately.

STRAWBERRYRHUBARBSMASH

3 lemon wedges3-4 mint leaves1 oz. rhubarb simple syrup1 1⁄2 oz. bourbon1 1⁄2 oz. strawberries, washed and hulledSprig of mint for garnish1 strawberry for garnish

Muddle the lemon, mint, strawberries and rhubarb simple syrupin the bottom of a mixing glass. Add ice and bourbon. Shake andstrain into a highball glass filled with ice. Garnish with a sprig ofmint and a strawberry.

PINEAPPLEBREEZE

1 1/2 cups ice cubes 2 (1.5 fluid ounce) jiggers coconut-flavored rum 1/2 (12 ounce) can lemon-lime soda2 fluid ounces pineapple juice, or to taste 2 fluid ounces orange juice, or to taste

Place the ice into a 16-ounce glass. Pour in the rum, lemon-limesoda, pineapple juice, and orange juice. Stir and serve.

THE LYCHEEMARTINI

4 lychee fruits, peeled (1 for garnish)3 ounces vodka or gin1/4 lime2 teaspoons honey

Add 3 peeled lychee to a mixing glass, mix it with the fresh limeand its juice, muddle togehter. Then add in your honey, gin orvodka, and a good amount of ice. Strain into chilled glass.

GREEN GINCOCKTAIL

1 medium bitter melon (about 4 oz.)1 oz. simple syrup3⁄4 oz. fresh lime juice3⁄4 oz. gin2 oz. soda waterLime wheel, to garnish

1. Using a box grater, finely grate the dark green skin of bittermelon into a large bowl lined with cheesecloth. Gather the edgesof the cheesecloth together and twist to squeeze the juice fromthe bitter melon pulp. Pour 1 tablespoon of the bitter melon juiceinto a cocktail shaker and save the rest for more cocktails.

2. Add simple syrup, lime juice, and gin to the shaker, fill with icecubes, and cover. Shake until well-chilled, about 15 seconds, andpour into a tall glass filled with ice. Top the cocktail with sodawater and stir gently to combine. Garnish with a lime wheel justbefore serving.
