FEBRUARY 2016
A MESSAGE FROM THE FOOD & BEVERAGE MANAGER...
January is typically slow in the food and beverage industry, but Rossmere
showed a bit of liveliness this month. Sales exceeded last year’s revenue by
about 20% across the board and we aim to continue this momentum heading
into February. We had a wedding social, a few small events, caterings, two
bonspiels, the launch of Treetops Bistro, Paint Nite, our Member holiday party, a
guest chef dinner, and the multiple curling leagues that contributed to a suc-
cessful January.
Although Treetops Bistro has been slightly slower than expected, the general
feedback has been very positive. Those who have dined and experienced the
2016 edition of Treetops have had nothing but good things to say, and has
agreed to help spread the word. We have several marketing campaigns for
Treetops at the moment (Social Media/Electronic Billboard/The Herald), but the
biggest tool is word of mouth, so I ask you all to assist in letting everyone know
about our hidden gem. Also, if you haven’t been out to dine yet, please do so
because the menu and experience we offer is next to none.
Our Guest Chef Dinner Series continues this month with Chef Beau Schell (of Fort
Gibralter) as he pays homage to Manitoba Wild Game Meat. He has created
a menu that will include dishes with local trout, rabbit, wild boar, elk, and
pheasant. Aside from the meats, Chef is also attempting to source most of his
ingredients locally as well. Dinner is $70/pp with an optional wine pairing for
$30/pp, and there are less than 10 spots left. If you’re not big into the Super
Bowl, this would be a great way to spend a Sunday evening. The following in-
stalment of the Guest Chef Series will be on March 6 where Chef Rob Thomas
will showcase his talents as he prepares a multi-course menu for 35 lucky diners.
We start taking reservations for Chef Rob’s dinner on February 1st.

Valentine’s Weekend

Please contact
Domer for more infor-
mation 204.988.1531
Valentine’s Day is just around the corner, and we are offering a special weekend of
dining. Treetops will be offering a 3 course dinner for 2 for $70 all weekend. We will
start everyone off with a complimentary glass of sparkling wine, bring some fresh
baguette and flavoured butter to your table, and then the menu will consist of a
shared appetizer sampler, your choice of entrée from our Treetops Menu, and a
shared chocolate dessert. Spots are filling out quick, so reserve now before it’s too
late!
Paint Nite has been a huge success here at Rossmere Country Club. If you are not
familiar with Paint Nite, it is a great event where an artist teaches you how to paint
a picture while you enjoy a beverage or two. You also get to take your canvas
home and show it off to your friends and family. The partnership has really benefit-
ed the club as it brings in extra revenue we typically don’t get, and the company
looks after filling the seats. We have Paint Nite here at the club every Wednesday
in February and March, and the organizers have also added a Valentine’s Day edi-
tion. To reserve your seats, simply go to the Paint Nite website at
www.paintnite.com and search for our venue.
In other news, the food and beverage management team will be starting a series
of planning sessions to gear up for the golf season. This will entail new menus for
both the restaurant, banquets and the kiosk, brainstorming on how to improve op-
erations, efficiency on costing, and elevating the member experience. The team
will be meeting twice a month leading up to the spring and will be using feedback
we get from all the members to ensure that your comments/concerns/suggestions
have been heard. We expect to send a survey out in the next month or so. I en-
courage you all to fill one out so we can make proper improvements to your club.
Respectfully yours,
Domer Rafael Food & Beverage Manager
