Dear Friends,
It is a little late to say Happy New Year – instead, I will say “Welcome to Fresh 2015!” Hopefully you remember the wonderful Christmas Party. If it is a little hazy, make sure to checkout the pictures at http://www.pedditalk.com/photos.asp?page=xmas2014. I trust your Holiday Break was a relaxing one. As many of you know, my 4 kids and my entire family from Germany were at our home for holiday break. Needless to say, I was happy to return to work!
New Year, New Economy
It’s hard to ignore the drop in gas prices. The cost of oil has plummeted to a six-year low. This is great news for consumers! Finally, Americans have a little extra cash to spend on things like home improvements or hobbies – not just filling up the gas tank.
New Economy, New Year
My 2015 prediction for Peddinghaus is that it will be a lighter year than last. Remember, Peddinghaus Corporation is an international company. Roughly 55% of our sales are domestic and 45% are international. The current conditions of our domestic market are not as favorable for the structural steel industry as they were expected to be, and our international sales are challenged by conflict (i.e. Euro, Russia, Isis..etc).
In reaction to these obstacles, Peddinghaus will work to secure new business with new products. In April, we will begin prototype assembly of a combination drill/saw machine built to target the interests of the European market; and, after overcoming a few complications with
the PeddiBot vision system, we can expect to have two new machines in production this year. Remember, we are a company driven by new ideas and new products!
How will all of the “New” affect you in 2015?
In interpretation of a softer market, watch for a slight cutback in overtime hours. Many of you will appreciate a little less overtime. However for you overtime hawks, be prepared.
New Chapter, Same Goal
As we turn the page on 2014, I want to remind you that the quality of Peddinghaus starts on the shop floor, stretches through the office, to our call center, and all the way out into the field. Our price is higher than many of our competitors’, but so is our value. Our customers know when they buy Peddinghaus, they aren’t just buying a quality machine; they are buying a superior partnership. These partnerships are maintained not only by product performance, but also by the way we answer the phone, clean the floor, and continue to make improvements every day.
I want to thank everyone for a wonderful 2014. I know there are many employment options out there. I appreciate that you choose to work for Peddinghaus Corporation.

After 8 years together, Melanie Stueck & John Senerchia tied the knot on August 16, 2014! Their wedding was
held at Cantigny Park in Wheaton, IL
A few months after their wedding, Melanie and her husband John went to Brazil for their honeymoon. They went to three different cities to experience the different
sites Brazil has to offer. Here they are pictured at Cristo Redentor ("Christ the Redeemer") in Rio de Janeiro.

Getting to Know Your Team Member
Jennifer Anderson, PCSC
Say hello to Jennifer Anderson, aka Curly! Jennifer started at PCSC in August 2014 working in our
Purchasing department. Jennifer said she knew PCSC was the place for her during her interview
when she saw a close knit company with employees who cared for and appreciated each
other.
Jennifer and her boyfriend Stan recently purchased a home just down the road from PCSC and they
share their home with her sweet 4 mo old Chocolate Lab/Cane Corso mix puppy, Oscar the Brat! She plans on staying at PCSC for the long
haul and promises to carry her weight!
Jennifer has other talents beside purchasing skills! In her off time she paints, has a B.A in photography
and enjoys creating artistic portraits!
Some of her favs: Drink = Coffee / Food = Her mama's fried chicken (or anything from Chipotle)
Movie = Silence of the Lambs (best movie!)
A few years back Jennifer lived just outside of LA and met several of the actors from Law and Order
SVU, including Ice T!
Her motto to live by is, "Today is a good day!"

Getting to Know Your Team Member
Marc Magiera, Chef Extraordinaire
Everyone at our Bradley facility knows Marc! Marc has been with us since Oct 2012 and was
instrumental in the planning and build out of our Peddi Cafe. Marc is always ready and willing to
serve not only the employees, but our customers as well!
In true Peddinghaus style, Marc works hard and plays hard too! His family means everything to him and working in Bradley gave him the opportunity to stop commuting to Chicago and spend more time with them. Marc's wife is Lindsay Parkhurst and
they have a daughter, Lesley "Lucy" Magiera, age 11. They also have a dog, Coconut "I can't stand
that dog!" When he isn't at work you can often find him boating on the Kankakee River or home
practicing the art of salumi & sausage making; Charcuterie!
"I'm a crazy pyromaniac: love fire and burning stuff. Table side service cherries jubilee in school, the instructor ripped the bottle of alcohol out of my
hand and said the Evanston Fire Marshal wouldn't appreciate me using so much alcohol - true story."
Marc's motto to live by, "You soar with the eagles and you shit with the pigeons!"
He reminds us to eat at the cafe more often and bring your friends and family!

TO OUR PEDDINGHAUS FAMILY Hopefully everyone had a good Holiday Season – hopefully not too much snow in Bradley or God forbid too many days where temperatures fell below 40 degrees in Andrews. In the Pocono Mountains in Northeastern PA Doyle Structural Solutions was started in 2009. Draw a 3 hour drive radius circle and that is the area we cover – (from Washington DC – we go to Baltimore Maryland then to Wilmington DE then we go into lovely Pennsylvania thru Philadelphia out west thru Lancaster PA (Amish country) – we go north past the Yuengling Factory – head east thru Bethlehem PA – we then cross the Delaware into the Garden State(New Jersey) cross the George Washington Bridge, we visit the 5 boroughs of New York City – then we head up the New York Thruway to Albany, Schenectady & finally to Syracuse near the Canadian Border. Our customers are great people but sometimes they feel the pressures of the New York City construction industry and get overly excited if a small problem pops up…. ok ok… sometimes we feel the pressure & get overly excited too. Peddinghaus has a wonderful reputation for building a great product and then supporting it. We at Doyle are proud to represent/partner with such quality “Built in the USA” Company. We believe 2015 will even be better – with many factory tours (“Bring the customer to Peddinghaus & meet The People and the sale is done”) in our plans. Focus on Safety - Falls

Falls are the leading cause of accidental death for the elderly and one of the leading causes of employee and guest injuries in a company. According to the National Floor Safety Institute, 55 percent of slips and falls are caused by a hazardous floor, 80 percent of them are
caused by the floor being wet. Anytime we encounter a wet floor in our workplace (or at home for that matter) we
need to stop what we are doing, identify the area with orange cones or yellow tape then get the area clean up as soon as possible. Once the cleanup is complete we need to find out how the area become hazardous and
see what can be done to prevent it from happening again. With as much traffic and visitors as we have in our plants it is imperative that we keep our aisle ways
clear and free of hazards.

River Clean up

Whether it's the thrill of catching a smallmouth on a buzz bait, the serenity of a moonlit kayak ride, or the majesty of a bald eagle flying close enough to hear its wings, our rivers bring a lot of opportunities to the area. Recently my brother and I had
the opportunity to once again participate in the annual Kankakee/Iroquois River clean up. This was the 32nd year for
the cleanup. Even though the number of participants was down this year, the clean up still makes a big difference. It's amazing and kind of disturbing to see how much trash gets pulled out of
the river each year. Who would ever think they would find a washing machine or a truck axle in our river? It's up to all of us to help protect the wonderful resource that we have here in our rivers. Not everybody is as lucky as we are to have them. Our future generations and the wildlife will be better because of it.
The next time you're out enjoying our rivers, however you choose to do so, try to leave them better than you found them.

A few chili recipes for those cold wintery evenings!
BLACK BEAN CHICKEN CHILI
YIELD: 4 gals. + 2 qts. SHELF LIFE: 60 hrs. HOLD TEMP: 155° INGREDIENTS 14 oz. New Mexico chili pods (stems and seeds removed, weigh after seeding) 6 qts. chicken stock 2 cups Pomace olive oil
3 qts. diced yellow onions (diced 3⁄₈" x 3⁄₈")
1 1⁄₂ cups garlic (minced fine, fresh peeled only)
1 qt. canned diced green chilies (drained, measure after draining)
1⁄₄ cup jalapenos (seeded and minced, measure after mincing)
4 - #10 cans black beans (drain, reserve 3 cups bean juice) 1 cup Minor’s chicken base 5 oz. (volume) chili powder
1⁄₄ cup fresh ground cumin (measure after grinding)
2 Tbsp. + 2 tsp. coriander seeds (measure after grinding) PROCEDURE 1. Bring stock to a boil. Remove from heat and soak chili pods for 15 min. Push chilies down so that they are submerged. 2. Using commercial blender process chilies with just enough of your boiling stock where blades of blender can thoroughly grind chili pods. This should be done for a minimum of 30-40 min. until you have a smooth puree the thickness between ketchup and tomato sauce. Combine chili puree with remaining stock. Run through strainer and set aside. 3. Over very high heat, cook onions down until they are light brown and become very sweet. Add chilies, garlic, jalapenos and continue to cook until they begin to stick to the bottom of the pan. Add chili puree and bring to a bubble. 4. Add beans, chicken base, remaining spices, and 3 cups of bean juice. Bring to a simmer and continue to cook for 5 min. --------------------------------------------------------------------------------- Beef Chili 3 fluid ounces vegetable oil or lard 4 pounds ground beef 1 pound onions, medium dice 10 garlic cloves, chopped 2 quarts beef stock 1 pint tomato sauce, canned 10 ounces Poblano chili pepper, small dice 3/4 teaspoon salt 1/2 teaspoon black pepper 5 tablespoons chili powder 1/2 teaspoon cayenne pepper 1/2 teaspoon dried oregano 4 teaspoons cumin, ground 1/2 cup masa harina or cornmeal pinto beans, as needed
1. Heat a rondeau over medium heat and add the oil. Add the meat, onions and garlic. Cook, stirring, until the meat has lost its raw look and is cooking in its own juices. 2. Add 1 quart (1 liter) of the beef stock, the tomato sauce, Poblano chiles, salt, black pepper, chilli powder, cayenne pepper, oregano and cumin. Simmer the chili for 2 hours, skimming the fat and scum occasionally. 3. Make a slurry with the masa harina and 8 fluid ounces (240 milliliters) of cold beef stock. Stir the slurry into the chili. Continue to cook until the meat is very tender, stirring occasionally to prevent it from scorching. Adjust the seasoning with salt, black pepper, chilli powder, cayenne pepper, oregano or ground cumin to taste. Thin the chili with additional beef stock if desired. 4. Cooked pinto beans can be added to the chili or served separately. --------------------------------------------------------------------------------- Coney Island Chili And Here's A Recipe For Classic Coney Island Chili Sauce. 1. Two Pounds Of Ground Beef. 2. One Half Cup Fine Chopped Sweet Onion. 3. One And A Half Cups Ketchup. 4. One Fourth Cup White Granulated Sugar. 5. One Fourth Cup White Vinegar. 6. One Fourth Cup Yellow Mustard. 7. One Level Teaspoon Celery Seed. 8. One Teaspoon Worcestershire Sauce. 9. One Teaspoon Ground Sea Salt. 10. One Teaspoon Ground Black Pepper. In a large skillet cook your ground beef and onions together until your ground beef is brown and done. Just don't burn your onions. Now drain well and pour into a crock pot. Now add in all your other ingredients and stir to mix well. It's real important that you don't burn your onions and that your hamburger gets done so chop the hamburger up real fine while you cook it into very small pieces. Place the lid on the crock pot and cook on the low setting for six hours before you use on your Coney Island Hot Dogs. I think you will find that you have just created the best sauce for Coney Island Hot Dogs that you will ever taste and enjoy. Yes the sauce is that good. ---------------------------------------------------------------------------------

Our Oct - Dec 2014 donation of $850 was sent to Garden of Prayer Youth group in Kankakee! They were thrilled to receive this donation just
in time for their annual Christmas giveway of coats and toys!
Our Jan-Mar 2015 collection of $780 was donated to our local Salvation Army office who
does tremendous work in our community!
